Abstract

Fish bone waste can be utilized as catfish bone meal for additional ingredients in making snack bars. This study aims to determine the level of consumer acceptance, as well as to determine the macro nutrients of snack bars with the addition of catfish bone meal. Product manufacturing begins with the manufacture of catfish bone flour and then making 4 snack bar formulations and followed by hedonic test / sensory test. Data were analyzed using the One Way Annova test with a significance level of 0.05 and if there was a significant difference, it was continued with the Duncan test. Calculation of nutritional value was carried out using the Proximate analysis method to determine the content of water, ash, protein, fat and carbohydrates using the SNI 01-2891-1992 method, and calcium analysis using the Inductively Coupled Plasma-Optical Emission Spectrometry (ICP-OES) method. The addition of catfish bone meal did not significantly affect the color, aroma, taste or texture attributes of snack bars (p>0.05). The selected product based on the results of hedonic and content tests is P2 (with the addition of 10 g catfish bone meal) with a slightly brownish beige color, sweet taste, has a distinctive aroma of snack bars with a slightly hard texture. The nutritional content of the selected product is 13.46% moisture content, 3.7% ash content, 20.45% protein, 17.89% fat, 19.95% carbohydrate and 628.52 mg/ 100 g calcium.

Abstract

Complementary feeding practices that are not optimal are one of the causing factors of stunting. The purpose of this study was to determine the relationship between complementary feeding practice and stunting among children in Kampar Districts. Complementary feeding practices include early age of giving complementary feeding, texture, frequency, portion, hygiene, and responsive feeding. Kampar is a high contributor to fish resources but has also been a locus for stunting for several years. The cross-sectional study with a population of all children aged 6-23 months. The proportionate stratified random sampling technique was used with a total sample is 100 children. Body length was measured using a length board, feeding practices were obtained through observation using a checklist sheet, and nutritional intake through food recall for 1x24 hours. Data analysis was univariate and bivariate using the chi-square test. There are 17% stunted and 83% non-stunted. As many as 29% received early complementary feeding, 70% texture was inappropriate, 66% frequency was inappropriate, 69% portion was inappropriate, 83% menu did not vary, 95% was not hygienic, 38% was unresponsive and inadequate intake. There was a significant relationship between responsive feeding and nutritional status (p<0.05)

Abstract

Background: A vegan vegetarian is one of type indigenous vegetarians who only consume plant-based foods and its processed food products. Vegetarians tend to consume protein and iron less than RDA. Inadequate protein and iron consumption will lead to anemia. Women tend to have the highest risk for anemia, especially female adolescents.Subject: To describe protein and iron intake with HB levels in vegan vegetarian female adolescents of Indonesian Vegetarian Society (IVS) Pekanbaru.Methods: A descriptive study with cross-sectional design. The research was conducted from November 2018 to June 2019 at the secretariat of the Indonesian Vegetarian Society (IVS) Pekanbaru. The subjetcs were 22 female adolescents who were obtained by total sampling method. Hemoglobin levels were measured using easy touch GCU, dietary intake were obtained by food recall and calculated with the Nutrisurvey 2007.Result: The results showed the inadequate protein intake were 54.5%, inadequate iron intake were 68.2% and hemoglobin levels which classified as anemia were 63.63%.Conclusin: About 62.11% roespondents tend t have inadequate protein and iron intake and classified as anemia.

Abstract

Kegiatan pengabdian kepada masyarakat ini bertujuan untuk meningkatkan kapasitas kader posyandu dalam upaya pencegahan stunting di Desa Balai Makam, Kabupaten Bengkalis. Metode yang digunakan berupa pelatihan dengan ceramah, handout presentasi, pemutaran video edukasi, diskusi, role play, dan pendalaman teknis pelaksanaan penyuluhan gizi. Hasil observasi menunjukkan peningkatan kapasitas kader, terutama pada kemampuan menyampaikan informasi hasil plotting dan pemberian edukasi gizi sesuai usia balita, dari 0% sebelum pelatihan menjadi 100% setelah pelatihan. Aktivitas lain, seperti pendataan balita, plotting pada KIA, dan pemberian PMT penyuluhan, sudah dilaksanakan dengan baik sebelum pelatihan dan tetap konsisten setelah pelatihan. Pelatihan ini juga membentuk kader sebagai edukator yang dipercaya masyarakat. Dampak jangka pendek dari kegiatan ini adalah meningkatnya kemampuan kader dalam penyuluhan gizi, sedangkan dampak jangka panjang yang diharapkan adalah perbaikan status gizi ibu hamil dan balita.

Abstract

Introduction : Providing nutritional education about healthy foods during childhood not only prevents several causes of major disease and death, but can also reduce health costs and improve the quality of human life. Therefore, elementary school children need to receive education regarding school children's snacks. Researchers have developed nutrition education media in the form of Prilension Stickers (Principles of Balanced and Safe Nutrition) which contain short messages regarding the grouping of healthy snacks according to the principles of balanced nutrition. The objectives of the research is analyze the effect of education on students' ability to identify school children's snacks with the principles of balanced and safe nutrition. Method : This research method is a quasi-experimental pre-post test which analyzes students' ability to identify school children's snacks before and after being given education using Prilension Stickers. The research data consisted of 61 respondents who were students at SDN 2 Pekanbaru City, with a sampling technique using simple random sampling. The data analysis uses SPSS, The Wilcoxon Signed Rank test to evaluate paired samples (scores before and after education). Results : The test Wilcoxon signed rank results show that there is an effect of nutrition education on school children's snacks with Prilension Stickers on students' ability to identify school children's snacks with the principles of balanced and safe nutrition (Sig. < 0.005). Conclusion : It is important to provide nutritional education to increase knowledge in order to change school children's snacking habits and improve children's nutritional status.
