Abstract

Guidelines on Hygiene Sanitation Requirements for Snack Food through Ministry of Health Decree No. 942 / Menkes / SK / VII / 2003 has been issued, including its supporting regulations. The national movement towards safe, qualified and nutritious snacks food by the government through the Vice President of the Republic of Indonesia has been declared since January 31, 2011. But the incidence of national poisoning that occurred in 2014 based on group ofcauses factors, the food ranked the highest. The purpose of this research is to analyze the risk factors of physical, chemical, and microbiological contamination on snacks food. Type of observational research is cross sectional approach. Object / population is all snack foods sold in Town squares of Magetan, Ngawi, Ponorogo and Madiun. The selected sample is siomay snack food. Analysis technique used is descriptive percentage. Bivariate analysis is done to get an idea of whether there is a relationship between independent variables with other independent variables, and between each independent variable with the dependent variable. In the analysis, it is used cross tabs and Chi-square test. Multivariate analysis is used to analyze the role of independent variables together with dependent variable. The result of physical examination is generally got bad result, chemical examination got good result and microbiology examination of germs resulted bad result, so food of siomay snacks is generally declared not worth consuming.

Abstract

One of the pollutants produced by motor vehicles is lead (Pb). Lead (Pb) is a toxic anddangerous heavy metal to the environment and have a systemic impact in human bodies. Lead (Pb) canenter the body through inhalation, snacks sold on the roadside without cover. This will be even moredangerous if the food is exposed for a long time. The purpose of this research was to determine the levelsof lead (Pb) in snacks based on exposure time during peddling in Madiun square in 2014.The research followed pre-experimental design using posttest only protocol. Data collection wasdone by sampling, documentation and observation. The population under study was the food peddlers offried soybean cakes along the roadside around Madiun square. The samples to be examined were friedsoybean cakes, in 3 replications and to be performed 3 times in each treatment and the exposure time ofthe 9 samples. Sampling was drawn by random sampling and data was to subjected to descriptiveanalysis.The results obtained from this research include the facts that all samples did contain heavymetals lead (Pb). The average levels of lead (Pb) before exposure was 0.01 .rnq / I, after an hourexposure was 0,021 mg / I, and after 2 hours of exposure was 0,033 mg / I. The concentration of lead(Pb) remained below the designated requirement, the Threshold Limit Value established by the DirectorGeneral of POMNo. HK.00.06.1.52.4011 regarding the maximum limit of lead metal contamination in food.One way ANOVA statistical test results obtained (p) a so that HO means no Significant differencebetween exposure times i.e. a hours, 1 hour, and 2 hours in term of the lead content.The conclusion of this study is: there was no significant difference in lead content in snacks,namely the soybean cakes with the exposure time of 0 hours, 1 hour, and 2 hours, although there was anincrease based on the length of exposure time. Pedlers are encouraged to use a cloth cover / Stelling toreduce contamination of lead (Pb). Further research is necessaryto study the aerial concentration of leadin Madiun square.

Abstract

Tempura is a kind of snack well liked by children because they are delicious and its inexpensive.Being so inexpensive there is always a possibility that some aspects of food quality are compromised. Thisresearch was intended to learn on the quality of tempura snacks on the basis of their physical, chemicaland microbiological aspects.This was considered as a descriptive research, focusing on the quality of tempura snacks sold byvendors in the vicinity of SON Bogem I, to be riviewed from physical aspects (color, smell, taste, andtexture), chemical (borax and formalin) and microbiological aspects (bacterial count). The population to bestudied were all tempura snacks sold by vendors in the vicinity of SON Bogem I. In this research 3 samplesof tempura snacks were taken. These samples were selected using simple random sampling. .The result indicated that the physical quality of all sample were poor. On inspection of chemicalquality all samples were positive for borax and formalin contents. Examination of the bacterial count onsamples tempura snacks resulted in a mean of sample 1 as 493.3 colonies/gram, sample 2 was 133.7colonies/gram and sample 3 was 560 colonies/gram. Therefore, according the quality standard desionatedin Surat Keputusan Kepala Badan POM RI No. HK.00.06.1.52.4011 Tahun 2009 Tentang Penetapan BatasCemaran Mikroba dan Kimla Oalam Makanan, that is 100,000 colonies/gram, this meant that sample 2exceeded the limit.This research concluded that based on their physical, chemical and microbiological aspects,tempura snacks sold by vendors in the vicinity of SON Bogem I, kecamatan Sukomoro kabupaten Magetanshould be disqualified for consumption. The study is warning the community to be more selective andtaking a good care in buying of snacks, specially of tempura snacks.

Abstract

Socialization is generally known as a learning process, this occurs because it is human nature that we will never be satisfied with something we don't know. This socialization is a form of effort to provide an explanation of an object that will be accepted by the subject. Socialization is usually carried out in an association agenda, whether formal or non-formal, so that socialization is considered very important for the community so that goals can be achieved. Based on preliminary information from the Plaosan Community Health Center, it is known that the highest incidence of diarrhea occurs in Nitikan Village. There were 12 cases of diarrhea in 2021, 15 in 2022 and 5 in January – April 2023. This research method uses lecture, question and answer, pre test, post test, demonstration methods. to society. The target of the socialization is 30 Nitikan Village Health cadres. Location of extension activities in Nitikan Village. The time for counseling/socialization is July 3 2023, at 09.00 – finish. The socialization officer is a lecturer at the Magetan Campus Sanitation Study Program and is assisted by students. From the results of counseling about diarrheal diseases to health cadres in Nitikan Village, Plaosan District, it was found that, their knowledge before the counseling was in the good category and after following the counseling was in the good category, meaning there was an increase in knowledge about diarrheal diseases.

Abstract

Jambi City, as the capital of Jambi Province, has seen rapid development of new residential areas. However, not all areas are served by the municipal water supply (PDAM), leading to the storage of water outside homes. The presence of vacant land has further contributed to the proliferation of mosquitoes, and the expansion of residential areas is suspected to increase cases of dengue fever (DHF). This situation is favorable for Aedes aegypti mosquitoes, which thrive near clean water sources. This study is a descriptive survey using a cross-sectional method to describe the density level of Aedes sp. larvae. The research was conducted from October to December 2023 in Pinang Merah Subdistrict, Jambi City, and larval identification was carried out in the Environmental Health Department Laboratory of the Jambi Health Polytechnic (Poltekkes Kemenkes Jambi). Water storage containers found to contain larvae included metal drums, plastic drums, and cement-coated ponds, with a prevalence of 33.3%. The presence of larvae outside homes is closely related to breeding sites that collect rainwater, which then become larval habitats. From the analysis, a House Index (HI) of 25% and a Larvae-Free Index of 75% were obtained. The study concludes that the density of Aedes sp. larvae in water storage containers in Pinang Merah Subdistrict is at a moderate level.

Abstract

Liquid waste from the tofu industry is one of the significant sources of pollution in Indonesia, with high BOD and TSS content. High BOD and TSS can damage environmental quality and aquatic ecosystems if not managed properly. This study aims to evaluate the effectiveness of tamarind seed core in reducing BOD and TSS. The results showed that increasing the dose of tamarind seed and the coagulation-flocculation process time effectively reduced BOD and TSS. A dose of 8 g/L with 45 minutes resulted in a reduction of BOD by 64.8% and TSS by 60.3%. Increasing the coagulant dose accelerates the flocculation and adsorption process, thereby reducing contaminants. The use of tamarind seed as a natural coagulant shows an environmentally friendly potential for industrial wastewater treatment. Tamarind seeds are effective as a biocoagulant in reducing BOD and TSS of tofu factory wastewater, with higher doses and process time giving the best results.

Abstract

Perilaku hidup bersih dan sehat di lingkungan sekolah adalah praktik kebiasaan hidup bersih dan sehat dalam kehidupan sehari-hari baik selama siswa berada di kelas maupun di luar kelas. PHBS di sekolah perlu mendapatkan perhatian terutama anak usia tingkat sekolah dasar, karena masa tersebut anak-anak rentan terhadap penyakit infeksi dan masih tingginya in absentia siswa dikarenakan penyakit berbasis lingkungan. Tujuan dalam kegiatan pengabdian masyarakat ini adalah meningkatkan pengetahuan siswa sekolah dasar mengenai PHBS. Metode yang digunakan pre-test dilanjutkan ceramah dan tanya jawab menggunakan power point mengenai pencegahan Stuntung, selanjutnya diakhiri dengan post-test. Hasil dalam kegiatan pengabdian masyarakat ini responden yang memperoleh skor baik padapre-test sebesar 71,8% meningkat menjadi 96,8% responden pada hasil skor post-test. Sehingga didapatkan simpulan terdapat peningkatan skor responden antara pre-test dan post-test. Perlu adanya promosi kesehatan yang lebih intensif tentang CTPS sehingga adanya perubahan perilaku pada siswa.

Abstract

Pulmonary Tuberculosis (Pulmonary TB) is an infectious disease that is still a health challenge in the community, especially in environments with inadequate sanitation. This community service program aims to improve community knowledge, attitudes, and skills in the prevention and eradication of pulmonary TB through education and environmental intervention in Pacalan Village, Plaosan District, Magetan Regency. The methods used include surveys of home conditions of pulmonary TB patients, health counseling, and physical interventions in the form of installing glass tiles to improve lighting and air circulation. This activity involved lecturers and students of the Sanitation Study Program of the Ministry of Health Surabaya, Magetan Campus and local health workers. The results of the activity showed an increase in public understanding of the symptoms, ways of transmission, and preventive measures for pulmonary TB. In addition, the intervention of installing glass tiles in the homes of people with Pulmonary TB has succeeded in improving the quality of ventilation and lighting, creating a healthier environment. In conclusion, an educational approach combined with physical intervention can increase public awareness and participation in the prevention of pulmonary TB. This program is expected to help reduce the incidence of pulmonary TB in the region and become a model for other regions with similar problems
