Abstract

Stunting among children under five years of age remains a major public health concern and reflects long-term nutritional deficiencies, often linked to poor environmental health conditions. The North Aceh District reports a stunting prevalence higher than the provincial and national averages, indicating a critical research gap regarding the environmental determinants contributing to this burden in the region. This study aimed to analyze the association between environmental health factors and the risk of stunting among children under five years of age in North Aceh District. This quantitative cross-sectional study was conducted from April to August 2025 in the working areas of the Simpang Keramat and Kuta Makmur Public Health Centers. A total of 90 children under five were selected through purposive sampling. Data were collected using structured questionnaires and through direct observations. Instrument validity and reliability were assessed prior to data collection. Statistical analyses were performed using the chi-square test. The prevalence of stunting among children under five years of age was 54.4%. Significant associations were found between stunting and clean water availability (OR = 4.8; p < 0.001), latrine availability (OR = 5.1; p = 0.002), waste management practices (OR = 8.5; p < 0.001), household waste disposal (OR = 4.9; p < 0.001), and the presence of helminth eggs in feces (OR = 5.0; p = 0.001). Overall, inadequate household waste management was the strongest environmental determinant of child stunting. In conclusion, environmental sanitation conditions, particularly household waste management, play a substantial role in the risk of stunting in children under five years of age. Strengthening community-based sanitation interventions and improving household waste management practices may effectively reduce infection-related risks and lower the prevalence of stunting in North Aceh District.

Abstract

Stunting in early childhood remains a major public health issue in developing countries, including Indonesia. In addition to undernutrition, excessive intake of simple carbohydrates may disrupt the endocrine pathways crucial for linear growth. This study examined the association between simple carbohydrate consumption and growth biomarkers insulin-like growth factor 1 (IGF-1), leptin, and growth hormone as predictors of stunting risk in children aged 12–36 months of age. A cross-sectional observational study was conducted with 250 children from urban and rural settings. Dietary intake was assessed using a validated 24-hour recall, and biomarker levels were measured using ELISA. The results showed an average daily energy intake of 1,350 kcal, with 65% derived from carbohydrates, predominantly simple sugars and refined starches. Stunted children exhibited significantly lower concentrations of IGF-1, leptin, and growth hormone (p < 0.01), with strong inverse correlations between simple carbohydrate intake and biomarker levels (r = –0.45 for IGF-1; r = –0.38 for growth hormone [GH]). Multiple regression analysis confirmed that a higher intake of simple carbohydrates significantly predicted lower biomarker levels and reduced height-for-age z-scores (HAZ). These findings highlight the importance of dietary quality, emphasizing the need to reduce simple carbohydrate intake to support hormonal balance and optimal linear growth in early childhood.

Abstract

Inappropriate complementary feeding negatively affects children under two years. Parity, education, and maternal knowledge were associated with inappropriate complementary feeding. This study aimed to analyze the relationship between parity, education, and maternal knowledge of complementary feeding at the Jeulingke Primary Health Center in Banda Aceh, Indonesia. This analytical, observational study used a cross-sectional design. Data will be collected from September to October 2024 through interviews using questionnaires and 1 × 24-hour food recalls. This study included 76 mothers selected using consecutive sampling at seven integrated health service points in the Jeulingke Primary Health Center area. Statistical analysis was performed using Spearman’s test with a 90% confidence interval and an alpha level of 0.1. The study showed that 65.8% of the mothers provided appropriate complementary feeding practices. Parity was not significantly associated with complementary feeding (p = 0.194; r = -0.151). Maternal education (p = 0.049; r = 0.227) and knowledge (p = 0.028; r = 0.253) had weak relationships with complementary feeding practices. In conclusion, to implement appropriate complementary feeding, the education and knowledge of mothers as primary providers of complementary feeding at the Jeulingke Primary Health Center in Banda Aceh must be improved.

Abstract

Aceh is an Indonesian province with a persistently high prevalence of stunting. Spatial analysis of the prevalence of stunting and the performance of specific nutrition interventions provides essential evidence for identifying priority areas for action. Mapping intervention coverage enables local governments to determine strategic measures tailored to district needs. This study aimed to map and analyze the relationship between stunting prevalence and the coverage of specific nutrition interventions, including (1) supplementary feeding for pregnant women, (2) iron–folic acid supplementation for pregnant women, (3) iron supplementation for adolescent girls, (4) exclusive breastfeeding, (5) supplementary feeding for underweight children, (6) growth monitoring, and (7) basic immunization. A cross-sectional design was applied to 23 districts/cities in Aceh. Secondary data were obtained from the 2022 Indonesian Nutrition Status Survey (INSS) and Aceh Provincial Health Office profile. Spatial mapping was conducted using overlay techniques, followed by linear regression analysis to assess the association between intervention coverage and district-level stunting prevalence. Supplementary feeding of pregnant women was significantly associated with stunting prevalence (p= 0.040). No significant associations were observed for iron folic acid supplementation in pregnant women (p= 0.961), iron supplementation in adolescent girls (p= 0.066), exclusive breastfeeding (p= 0.559), supplementary feeding for underweight children (p= 0.347), growth monitoring (p= 0.318), or basic immunization (p= 0.219). In conclusion, supplementary feeding for pregnant women is significantly associated with stunting prevalence, underscoring its critical role in specific nutritional interventions and its relevance in developing targeted regional policies

Abstract

Diabetes mellitus is a significant global health challenge, necessitating the exploration of novel therapeutics from natural sources for its treatment. This study aimed to identify the bioactive compounds in a combinatorial methanolic extract of corn silk (Zea mays L.) and jasmine flowers (Jasminum sambac) and predict their antidiabetic potential. The extract was analyzed using Liquid Chromatography-Tandem Mass Spectrometry (LC-MS/MS). The identified compounds were evaluated in silico via molecular docking simulations against key antidiabetic protein targets: Glucagon-Like Peptide 1 (GLP-1), Insulin-like Growth Factor 1 (IGF-1), Glucose Transporter 4 (GLUT4), alpha-glucosidase, and superoxide dismutase (SOD). The analysis focused on the binding energy (ΔG). A total of 44 metabolites were identified in this study. Molecular docking results indicated that rothindin exhibited the highest binding affinity for GLUT4, with a binding energy of -9.9 kcal/mol. Rothindin and Chlorogenic Acid also showed significant potential as modulators of GLUT4 and α-glucosidase, respectively. In conclusion, the combined extract contains bioactive compounds, particularly roxindin and chlorogenic acid, which demonstrate significant in silico potential as antidiabetic agents.

Abstract

This study aimed to develop a functional food innovation by incorporating Arabica coffee into traditional Bhoi cakes to address the demand for healthier dietary options among Generation Z. This study applied a Research and Development (R&D) approach using a 4D model (define, design, develop, and disseminate). The study was conducted from January to May 2025 at the Food Technology and Nutritional Chemistry Laboratory of Banda Aceh. Ten experts and 80 untrained panelists were recruited through purposive sampling. Arabica coffee powder was substituted at 5%, 7.5%, and 10% of the flour weight. The proximate composition, antioxidant activity (UV-Vis spectrophotometry), and sensory attributes of the samples were analyzed. Statistical analyses were performed using paired t-tests at a 5% significance level. The results showed that 10% substitution significantly increased the antioxidant activity (34.7 ± 1.2 mg GAE/g) compared to that in the control (18.5 ± 0.9 mg GAE/g, p < 0.01). Sensory evaluation also indicated higher preference scores for color, aroma, taste, and texture at the 10% level (p < 0.05). In conclusion, the Arabica coffee-based Bhoi cake demonstrates the feasibility of enriching traditional foods with functional properties while preserving their cultural identity. This innovation may serve as a model for developing functional foods based on local culinary heritage.

Abstract

The Free Nutritious Meal (MBG) Program is a national initiative aimed at meeting students’ balanced nutritional needs. However, evidence on the adequacy of energy and nutrient intake from MBG menus for adolescents is limited. This study aimed to analyze the energy and nutrient adequacy of two MBG menu variants with and without milk based on the Recommended Dietary Allowances (RDA) for adolescents aged 16–18 years in Makassar. This cross-sectional study was conducted from August to September 2025 in four high schools that implemented the MBG program. Researchers conducted composite sampling of four daily menu items. Data were collected through menu observation and nutrient analysis using NutriSurvey. Univariate analyses were performed. The results indicated that the menu with milk provided 742 kcal (28% RDA) and 34.9 g of protein (46.5% RDA), whereas the menu without milk provided 610 kcal (23% RDA) and 28.4 g of protein (38% RDA). Both menus supplied more than 50% of the RDA for iron, but the carbohydrate contributions remained below 25% of the RDA. The low carbohydrate contribution suggests the need to adjust staple food portions in the MBG menu guidelines. In conclusion, the addition of milk improved the energy and protein adequacy of the MBG menus. The optimization of nutrient-dense local foods is recommended to support program sustainability and balanced nutrition in schools.

Abstract

Congenital Heart Disease (CHD) is a structural and functional abnormality of the heart that occurs at birth. If left untreated, CHD can lead to heart failure, respiratory infection, and malnutrition. Data on nutritional status, anemia, leukocyte count, and serum 25-hydroxy vitamin D [25(OH)D] levels in pediatric CHD patients with heart failure remain limited.  This study aimed to analyze the correlation between nutritional status, anemia, leukocyte count, and serum 25-Hydroxy vitamin D levels, and heart failure in children with CHD. A cross-sectional study was conducted at three hospitals in Banda Aceh from August 1, 2022, to July 31, 2023. Pediatric patients with CHD underwent anthropometric, echocardiographic, and laboratory examinations. The exclusion criteria included renal, urinary, endocrine, and hematologic-oncological disorders. Data were analyzed using SPSS version 26.0, and the Mann–Whitney U test was applied for nonparametric variables. Results: Of the 128 patients with CHD (46.1% men), 78.9% had heart failure. Poor nutritional status was found in 49.2% of patients, and anemia in 51.6%, with many showing abnormal leukocyte counts and low serum 25(OH)D levels. Low serum 25(OH)D levels (p=0.010; OR=6.7) and abnormal leukocyte counts (p=0.000; OR=55.6) were significantly associated with heart failure. In conclusion, low serum 25(OH)D levels and abnormal leukocyte counts significantly increase the risk of heart failure in children with CHD.

Abstract

Anemia frequently occurs in patients with cancer and can worsen due to chemotherapy. The literature on non-pharmacological interventions to increase hemoglobin levels in patients with head and neck cancer following chemotherapy remains limited. This study aimed to measure the effect of beetroot juice supplementation on changes in hemoglobin levels in patients with head and neck cancer who had undergone chemotherapy. Methods: An experimental study with a one-group pretest–posttest design was conducted at dr. Zainoel Abidin General Hospital, Banda Aceh (July–November 2024). The sample consisted of all head and neck cancer patients undergoing chemotherapy cycles I–VI (total sampling, n=40), divided into two treatment groups: 100 g beetroot juice (n=20) and 200 g beetroot juice (n = 20). Hemoglobin levels were measured before and 14 days after the intervention. The analysis was performed using paired t-tests and effect sizes (Cohen’s d). Results: Administration of 100 g of beetroot juice did not significantly alter hemoglobin levels, with an average difference of −0.24 g/dL (p = 0.241). In contrast, the 200-gram dose resulted in a significant increase in hemoglobin levels, with an average difference of +0.44 g/dL (p = 0.016) after 14 days of intervention. Furthermore, the estimated Cohen’s d (pooled SD) was 0.51, indicating a moderate effect. In conclusion, the administration of 200 g beetroot juice for 14 days was associated with a small but statistically significant increase in hemoglobin levels in patients with head and neck cancer who underwent chemotherapy. Further studies in the form of RCTs with larger sample sizes and stricter compliance monitoring are needed to confirm these findings and assess their clinical relevance.

Abstract

Non-Alcoholic Fatty Liver Disease (NAFLD) is the accumulation of fat in the liver not caused by alcohol consumption and is now a leading cause of chronic liver disease globally. Intermittent fasting has the potential to improve the metabolic parameters associated with NAFLD; however, more scientific evidence is needed to confirm this. This review aims to examine the role of intermittent fasting in the management of NAFLD based on existing research. The method used was A scoping review was conducted with a literature search through the PubMed and ScienceDirect databases, and article selection was performed using the PRISMA flow. The inclusion criteria were randomized controlled trials (RCTs) or clinical trials published between 2014 and 2024, resulting in seven articles meeting the criteria. The results showed that various IF methods, such as 5:2 fasting, Alternate-Day Fasting and Time-Restricted Eating, can reduce body weight, waist circumference, fat mass, and several biochemical parameters, such as triglycerides, LDL, total cholesterol, ALT, AST, and inflammatory markers. However, its effectiveness on biochemical parameters still requires further study due to the limited number of studies that comprehensively address these parameters. In conclusion, IF is considered safe for patients with NAFLD and may be a strategic approach to improve NAFLD.
