Abstract

Daun kelor (Moringa oleifera) dalam kondisi kering mengandung gizi yang lebih tinggi, seperti protein, serat, karbohidrat, dan kalsium, dibandingkan kondisi basah. Potensi ini dimanfaatkan untuk menghasilkan tepung daun kelor yang digunakan menjadi bahan substitusi pada produk puff pastry stick. Penelitian ini bertujuan untuk (1) mengkarakterisasi sifat kimiawi produk berupa kadar air, kadar abu, kadar protein, dan serat kasar, (2) menganalisis organoleptik melalui metode hedonik berdasarkan warna, aroma, rasa, dan tekstur, serta (3) menentukan formulasi terbaik menggunakan metode Bayes dengan variasi penambahan tepung daun kelor: F0 (tanpa tepung daun kelor), F1 (2,5 g tepung daun kelor), F2 (5 g tepung daun kelor), F3 (7,5 g tepung daun kelor), dan F4 (10 g tepung daun kelor). Hasil karakterisasi kimiawi menunjukkan bahwa puff pastry stick dengan kelima formulasi memenuhi standar mutu SNI untuk cookies, kecuali pada kadar protein formula F0 dan serat kasar. Uji organoleptik yang melibatkan 30 panelis menunjukkan bahwa formula F1 (penambahan 2,5 g tepung daun kelor) paling disukai berdasarkan warna, aroma, rasa, dan tekstur. Dengan demikian, formulasi terbaik pada penelitian ini adalah F1, yang memberikan keseimbangan nutrisi dan tingkat penerimaan organoleptik yang optimal.

Abstract

Cuka apel adalah produk alami yang dihasilkan melalui proses fermentasi alkohol dari bahan baku apel. Kualitas cuka apel dipengaruhi oleh beberapa faktor, seperti pH, konsentrasi gula, dan jumlah ragi yang digunakan dalam proses fermentasi. Penentuan kualitas cuka apel yang akurat memerlukan metode yang mampu menangani ketidakpastian dalam parameter-parameter tersebut. Salah satu metode yang dapat digunakan adalah Sistem Inferensi Fuzzy (FIS), yang dapat menangani ketidakpastian linguistik dan numerik. Dalam penelitian ini, desain sistem penentuan kualitas cuka apel dikembangkan menggunakan dua tipe FIS, yaitu FIS tipe 1 dan tipe 2. FIS tipe 1 digunakan untuk menangani ketidakpastian dengan tingkat rendah, sementara FIS tipe 2 dirancang untuk menangani ketidakpastian yang lebih kompleks. Hasil penelitian menunjukkan bahwa FIS tipe 2 lebih efektif dalam menentukan kualitas cuka apel karena dapat menangani berbagai tingkat ketidakpastian pada input dan menghasilkan keputusan yang lebih tepat.

Abstract

Crude Palm Oil (CPO) is a vital commodity derived from the processing of sterilized oil palm mesocarp extracted from Fresh Fruit Bunches (FFB), serving as a primary raw material in the edible oil industry. The quality of CPO is critically influenced by parameters such as Free Fatty Acid (FFA), moisture content, and impurities, which directly affect its stability, shelf life, and market value. Despite established quality standards, many CPO production facilities continue to face inconsistencies in these parameters due to variations in harvesting practices, post-harvest handling, and processing conditions, yet few studies have explored plant-specific root causes. This study aimed to evaluate the quality of CPO at XYZ Co. in Barito Kuala Regency by analyzing FFA levels, moisture content, and impurity content through a qualitative-descriptive approach, including field observations, staff interviews, and analysis using bar charts and fishbone diagrams, with data collected from October 2023 to January 2024. Results showed that FFA levels remained within the company's standard of 5%, ranging from 3.9% to 4.06%; moisture content varied between 0.25% and 0.35%, with some values exceeding the limit; while impurity levels surpassed the 0.030% threshold in two observation periods. Fishbone diagram analysis identified human error, substandard raw materials, poor machine maintenance, and non-compliance with standard operating procedures as key contributing factors. The study recommends improvements in supervision, operator training, equipment maintenance, and SOP implementation to enhance and maintain consistent CPO quality

Abstract

Transparent solid soap is a widely used cleansing product, yet formulation improvements are needed to enhance antibacterial activity while maintaining skin safety. This study aimed to investigate the effect of adding sweet flag rhizome extract (Acorus calamus L.) on the physicochemical properties, foam stability, pH, and antibacterial activity of transparent solid soap. Four soap formulations were prepared with varying extract concentrations: F0 (control, without extract), F1 (0.1 g), F2 (0.3 g), and F3 (0.5 g). The evaluated parameters included moisture content, total fatty acid content, free alkali, free fatty acids, foam stability, pH, skin irritation, and bacterial inhibition zone diameter. Data were statistically analyzed using one-way ANOVA and Duncan's Multiple Range Test (DMRT) at a 95% confidence level. The results showed that the addition of sweet flag extract significantly (p < 0.01) affected all tested parameters. The F3 formulation exhibited the highest antibacterial activity with an inhibition zone diameter of 15.5 mm but exceeded the SNI (Indonesian National Standard) limits for moisture content and pH, indicating a potential risk of skin irritation. However, skin irritation tests revealed that formulations containing the extract did not cause noticeable irritation in most panelists. It can be concluded that sweet flag rhizome extract has potential as an antibacterial agent in transparent solid soap formulations, although further optimization is required to reduce pH and free alkali levels to ensure product safety.

Abstract

This study aims to analyze the quality control of Goat milk powder products at Indo Natural Farm using a Statistical Quality Control (SQC) approach through the application of Pareto and Fishbone diagrams. The research was conducted using a descriptive qualitative approach supported by quantitative data, in which product defect data such as clumping, inappropriate color, insufficient content, and damaged packaging were collected during January–February 2025. The Pareto diagram was used to determine problem priorities based on the frequency of defects, while the Fishbone diagram was applied to identify the root causes of major product defects. The analysis showed that the most dominant defects were clumping powder (28%) and insufficient content (26%), so improvement efforts were focused on these two issues. The main contributing factors included inconsistencies in the drying process, operator errors, raw material quality, and suboptimal control of the production environment. Recommendations for improvement include enhanced operator training, process standardization, and better environmental control. The application of these methods proved effective in minimizing defects and improving the quality of Goat milk powder products at Indo Natural Farm.

Abstract

Penelitian ini bertujuan untuk menganalisis efektivitas dan efisiensi kinerja mesin screw press di PT. XYZ dengan pendekatan Total Productive Maintenance (TPM) menggunakan metode Overall Equipment Effectiveness (OEE). Data diperoleh selama dua bulan, yaitu November dan Desember 2024, mencakup waktu perawatan, perbaikan, produksi, dan jumlah produk cacat. Hasil penelitian menunjukkan bahwa rata-rata nilai OEE mesin screw press sebesar 71,23%, yang masih berada di bawah standar internasional sebesar 85%. Nilai availability dan quality rate telah melampaui standar, yaitu masing-masing 93,35% dan 99,98%, sementara performance rate masih rendah sebesar 76,90%. Rendahnya nilai OEE disebabkan oleh tingginya downtime dan rendahnya efisiensi kinerja mesin akibat usia mesin dan bahan baku yang tidak optimal. Berdasarkan hal tersebut, maka perlu adanya peningkatan jadwal perawatan dan peremajaan mesin guna mencapai efisiensi produksi yang lebih tinggi.

Abstract

Pencemaran air oleh logam berat mangan (Mn) merupakan masalah serius di berbagai wilayah perairan. Salah satu metode yang efektif untuk menurunkan konsentrasi logam berat ini adalah melalui proses adsorpsi menggunakan karbon aktif. Penelitian ini memanfaatkan limbah sawi putih (Brassica pekinensia L.) sebagai bahan baku karbon aktif yang dihasilkan melalui pirolisis pada suhu 400 °C selama 1 jam, kemudian diaktivasi menggunakan larutan HCl 1N. Pengaruh variasi waktu kontak (0, 30, 60, 90, dan 120 menit) dan massa adsorben (0,2–1,0 gram) terhadap efisiensi dan kapasitas adsorpsi ion Mn dianalisis. Hasil penelitian menunjukkan bahwa karbon aktif memiliki kadar air 11,09%, sesuai standar SNI 06-3730-1995. Waktu kontak optimum untuk adsorpsi ion Mn adalah 90 menit, dengan efisiensi 64,7% dan kapasitas adsorpsi 6,47 mg/g. Variasi massa adsorben optimum 1,0 gram menghasilkan efisiensi tertinggi 68,37% dan kapasitas adsorpsi 5,12 mg/g. Hasil ini menunjukkan bahwa karbon aktif dari limbah sawi putih memiliki potensi yang baik sebagai adsorben untuk penyerapan ion logam Mn.

Abstract

Metilen biru (MB) merupakan salah satu pewarna sintetis yang sering digunakan pada industri tekstil dan senyawa ini mempunyai gugus benzene sehingga sulit terdegradasi secara alami. Zat warna metilen biru (MB) perlu diolah terlebih dahulu menggunakan proses adsorbsi sebelum dibuang ke lingkungan. Penelitian ini bertujuan untuk menghasilkan karbon aktif dari alga coklat yang dimodifikasi permukaannya dengan oksida besi (Fe₂O₃), serta mengevaluasi pengaruh variasi massa adsorben terhadap kapasitas adsorpsi terhadap zat warna metilen biru (MB). Proses adsorbsi zat warna metilen biru (MB) dilakukan pada sebuah reaktor tangki berpengaduk (CSTR) selama 120 menit pada suhu 30 0C dengan kecepatan pengadukan 350 rpm. Hasil penelitian menunjukkan bahwa semakin banyak massa karbon aktif yang ditambahkan akan meningkatkan kapasitas penjerapan metilen biru (MB). kapasitas penjerapan maksimum diperoleh pada proses adsorbsi menggunakan karbon aktif 0,5gram dengan kapasitas penjerapan sebesar 69,59%. Selain itu, penambahan Fe2O3 pada karbon aktif juga dapat meningkatkan kapasitas pejerapan metilen biru (MB). kapasitas penjerapan maksimum sebesar 75,21% diperoleh pada proses adsorbsi menggunakan karbon aktif Fe2O3 selama 100 menit.

Abstract

The availability of clean water is a vital element in the operational processes of palm oil mills, serving both processing and domestic needs. PT. PKIS operates a Water Treatment Plant (WTP) to treat raw water from reservoirs into clean water that meets quality standards. However, the existing manual monitoring system for water quality poses a risk of delays in detecting fluctuations in critical parameters such as pH and turbidity. This study aims to design and implement an Internet of Things (IoT)-based water quality monitoring system capable of real-time monitoring of pH and turbidity parameters. The system design was conducted over five months within the industrial environment of PT. PKIS, utilizing pH and turbidity sensors integrated with an ESP32 microcontroller and the Blynk application platform for data visualization. The testing results indicate that the pH sensor demonstrates a satisfactory accuracy level with a margin of error of 2,20%, while the turbidity sensor exhibits suboptimal performance with a margin of error of 1,30%. The implementation of this system is expected to enhance the effectiveness of water quality monitoring, expedite decision-making processes, and ensure that the treated water meets the established standards, thereby supporting the sustainability of palm oil industry operations.

Abstract

“Jantan” banana (Musa acuminata Colla) and “selengek” fish (Anodontostoma chacunda) have high nutritional value, so they have the potential to be used as additional ingredients in cookie processing. This study aimed to analyse the quality characteristics of banana flour and selengek fish flour-based cookies. The research design used was factorial with variations in the composition of male banana flour and “selengek” fish flour, namely 75: 25, 80 : 20, 85 : 15, 90 : 10, 95 : 5, and 100 : 0. Chemical analysis (moisture content, protein content, and fibre content) and organoleptic test (colour, taste, aroma, and texture) were conducted on the cookies produced. Processing of cookies with the addition of male banana flour and selengek fish flour produced cookies with yields between 40.58% to 41.20%, moisture content between 6.11% to 8.58%, protein content 4.23% to 5.69%, and fibre content 5.00% to 6.19%. Sensory test analysis showed that panelists' hedonic level for banana flour and “selengek” fishmeal cookies ranged from 3.35 to 2.40 for colour parameters, 2.40 to 3.70 for taste parameters, 2.90 to 4.04 for texture and 2.40 to 3.35 for aroma parameters.
