Abstract

Siomai is a minced meat product wrapped in a thin skin made from wheat flour and cooked through a steaming process. In this study there was the addition of composite flour of moringa leaves and chicken liver. This study aims to determine the effect of the addition of moringa leaves and chicken liver composite flour on organoleptic quality, iron (Fe) content and antioxidant capacity in dumplings.This type of research is experimental with a randomized block design (RBD). The treatment given was 5 types of treatment with 3 repetitions. Data analysis used aims to determine the effect of treatment on organoleptic quality, levels of iron (Fe) and antioxidant capacity using analysis of variance (ANOVA). The results showed that there was an influence on organoleptic quality including aroma quality, taste quality, texture quality, overall acceptability, iron (Fe) content, and antioxidant capacity in dumplings. The addition of moringa leaf and chicken liver composite flour as much as 16% per weight of ground chicken meat resulted in the most widely accepted quality with characteristics of a non-pleasant aroma, savory taste, chewy texture, overall acceptance of likes, iron (Fe) content of 2.23 mg/ 100 g and antioxidant capacity of 0.0107%.Keywords : Dumplings, Composite Flour, Moringa Leaves, Chicken Liver, Iron, Antioxidant Capacity

Abstract

Asupan mineral yang kurang  dapat berpengaruh pada peningkatan tekanan darah, terutama kalium, kalsium dan  magnesium sangat penting untuk membantu penurunan tekanan darah, sehingga penderita hipertensi perlu diberikan konseling mengenai diet DASH (Dietary Approach to Stop Hypertension) sebagai salah satu intervensi dalam pengaturan makan. Penelitian ini bertujuan untuk mengetahui pengaruh konseling diet DASH terhadap pengetahuan dan asupan mineral (kalium, kalsium, magnesium) penderita hipertensi di wilayah kerja UPTD Puskesmas II Denpasar Barat. Jenis penelitian adalah eksperimen semu (quasi eksperiment) dengan rancangan One-Group Pretest-Posttest Design. Jumlah sampel sebanyak 47 sampel dengan teknik multi stage random sampling. Penelitian dilakukan pada bulan Desember 2021-Januari 2022. Pengumpulan data menggunakan formulir pengetahuan diet DASH dan food recall 24 jam. Untuk mengetahui pengaruh konseling diet DASH terhadap pengetahuan dan asupan mineral digunakan analisis statistik paired sample t test pada tingkat kepercayaan (α=0,05) pada data berdistribusi normal dan uji wilcoxon pada data yang berdistribusi tidak normal. Bedasarkan hasil uji paired sample t-test terhadap data pengetahuan dan asupan magnesium sebelum dan setelah konseling diet DASH didapatkan hasil terdapat perbedaan signifikan dengan  nilai p0,05. Sedangkan hasil uji asupan kalium dan kalsium menggunakan uji wilcoxon didapatkan hasil terdapat perbedaan signifikan dengan  nilai p0,05. Hasil penelitian menunjukkan bahwa terdapat pengaruh konseling diet DASH terhadap pengetahuan dan asupan mineral (kalium, kalsium, magnesium).

Abstract

Anemia is a condition in which there is a total shortage of red blood cells or hemoglobin levels less than normal or decreased levels of red blood cells/hemoglobin in the blood so that the body's physiological needs are not fulfilled (Nabilla dkk., 2022). This study aims to determine the consumption of iron inhibitors and enhancers in relation to anemia status in female students of SMAN 6 Denpasar Selatan. The type of research used was observational with a cross sectional design. The research sample was 62 class XI students at SMAN 6 South Denpasar. Data collection was carried out by taking hemoglobin levels in female female students and interviews using the SQ FFQ questionnaire on the consumption of iron inhibitors and enhancers. The data collected included data on anemia status, consumption of inhibitors and consumption of iron enhancers in female adolescents. To determine the relationship between anemia status and consumption of iron inhibitors and enhancers. Pearson's correlation analysis was carried out. Anemia categories are divided into 2, namely not anemia (≥12 g/dL) and anemia (12 g/dL). Based on the research, out of 62 samples, there were 48 female students who were not anemic and 14 female students who were anemic.  The lowest hemoglobin level was 9.1 g/dL, the highest was 17.8 g/dL, the average was 15 g/dL. Consumption of tea (96.7%) and spinach (100.0%), and consumption of oranges (100.0%) and chicken meat (100.0%) in the last 1 month. The results showed that there was a relationship between consumption of iron inhibitors and anemia status in young women (p-value = 0.034). For the analysis test results of consumption of iron enhancers with anemia status in young women showed a relationship (p-value = 0.000).

Abstract

Stunting is a major nutritional problem of concern in Indonesia. Stunting is defined as a condition in which the nutritional status of a child is based on the height-for-age index (TB/U) with z-score -2SD. The purpose of this research is to find out relationship between levels of consumption of micronutrients, immunization status and stunting in toddlers aged 12-24 months in Sangkan Gunung Village Sidemen Karangasem Regency. This type of observational research with cross-sectional research design. The research sample consisted of 44 toddlers (12-24 months of age). The type of data used includes primary data, namely stunting status, consumption level of micronutrients (zinc, calcium, phosphorus), immunization status, as well as secondary data, namely the number of children under five and an overview of Sangkan Gunung Village. Sampling using simple random sampling technique. The results of the study found that 18.2% of children under five had stunting nutritional status, with 15.9% having a low consumption of zinc, 18.2% having a low consumption of calcium, 15.9% having a low consumption of phosphorus, and 2.3% having incomplete immunization status. Tthe Pearson Correlation statistical test showed that there was a significant relationship between the consumption level of micronutrients (zinc, calcium, phosphorus) and the stunting status in children under five (p = 0.015, 0.003, 0.004), and there is a non-significant relationship between immunization status and stunting status in toddlers (p = 0,313).Keywords: Stunting, Zinc, Calcium, Phosphorus, Immunization Status

Abstract

Hypertension is one of the serious health problems, it has even become a public health problem and will become a bigger problem if it is not addressed early. A person's blood pressure limit is said to be hypertension if the systolic pressure is more than 140 mmHg and the diastolic pressure is 90 mmHg. Patients with high blood pressure / hypertension are a disease that one of them must maintain daily intake, pay attention to nutritional status so as not to be obese and maintain ideal body weight. One of them must maintain protein intake, because it can affect blood flow in the blood vessels. More nutritional status or obesity can also affect the blood pressure of hypertensive patients. The purpose of the study was to determine the relationship between protein intake and nutritional status with blood pressure of hypertensive patients at Mengwi II Health Center. Observational research type with Cross Sectional design and using Consecutive Sampling technique which amounted to 34 people. Data were collected by interview and measurement methods. Data is presented with frequency tables and cross tables then variable data is tested for normality. The results of the Chi Square correlation analysis test showed that there was a relationship between protein intake and blood pressure of hypertensive patients (p = 0.039). While nutritional status with blood pressure of hypertensive patients, based on the results of the chi square test showed there was a relationship (p = 0.029).

Abstract

Cancer is a disease characterized by abnormal cell growth. WHO data for 2018 states that cancer is the second leading cause of death in the world. Child health is a national problem that needs to be given top priority because it really determines the quality of human resources for future generations. The purpose of this study was to determine the relationship between energy, protein, zinc, and iron consumption levels with nutritional status in pediatric cancer patients undergoing chemotherapy at a halfway house in Denpasar, Bali. The type of research was observational with a cross-sectional study design. The sampling technique is non-random sampling/non-probability sampling by means of accidental sampling. 23 sample obtained in the study at a Rumah Singgah Denpasar. This study used univariate and multivariate analysis with the Spearman rank test. The results obtained were that 100% of the samples had an adequate energy consumption level of 100% of the samples had an adequate level of protein consumption and as many as 82.61% of people had an adequate zinc consumption level of and as many as 73.91% of the sample had an adequate iron consumption level. Judging from the normal nutritional status of 69.57% of the sample and 8.70% were obese.Based on Spearman's rank test, the level of consumption of energy, protein, cannot be analyzed for the relationship with nutritional status. There is no relationship between the level of consumption of zinc and nutritional status, and there is a relationship between the level of consumption of iron and nutritional status.

Abstract

Stunting is a nutritional status based showed by length for age where in the anthropometric standard assesses nutritional status of children, the measurement results are in the range (z-score) -2 SD up to -3 SD (stunted) and -3 SD (severely stunted). This study aims to determine the correlation between exclusive breastmilk practice and consumption of micronutrient with stunting incident in toddler. This research in an observational study with cross sectional design conducted on 45 toddler, with aged arrange 6 – 24 months. Data on consumption were collected using 24 hours recall as many as two times on different days. Exclusive breastmilk practice data, subject and respondent identity were acquired using questionnaire. Degrees of stunting are expressed by length for age z-score. Data analysis was performed using univariate, bivariate analysis using Spearman and Pearson Correlation test. Based on analysis using Spearman and Pearson Correlation shows that there is no relationship between exclusive breastmilk with the incidence of stunting, there is no correlation between the level of iron consumption with incidence of stunting, and there is no correlation between zinc with incidence of stunting. With regard, it is recommended to provide nutritional education effectively to mothers of toddler to increase knowledge about exclusive breastmilk and micronutrients for prevention of stunting.Keywords: Stunting, Exclusive Breastmilk, Micronutrient

Abstract

Diabetes Mellitus (DM) is a disease characterized by the occurrence of Hyperglycemia and carbohydrate metabolism disorders. According to Riskesdas (2018) the prevalence of diabetes in Bali Province reached 1.33% and in Denpasar City reached 1.39%. The purpose of this study was to determine the relationship between knowledge of carbohydrate counting and carbohydrate intake with the control of blood sugar levels in patients with Diabetes Mellitus in UPTD Puskesmas II East Denpasar. This type of study is observational with a cross sectional design. This research was conducted in December 2022 at UPTD UPTD Puskesmas II East Denpasar totaling 37 samples. The sampling technique is Incidental sampling / Accidental Sampling. The data analysis used is chi-square with p value = 0.05. The results obtained knowledge related to carbohydrate counting good category as many as 5 samples (13.5%), enough 3 samples (8.1) and less 29 samples (78.2). Carbohydrate intake was obtained more than 20 samples (54.1%), both 11 samples (29.7%) and less 6 samples (16.2). Blood sugar levels were obtained under control as many as 9 samples (24.3%) and uncontrolled 29 samples ( 75.7%). Based on statistical tests, a relationship was obtained between knowledge related to carbohydrate counting and controlling blood sugar levels p = 0.006 (p 0.05). While there was no relationship between carbohydrate intake andcontrol of blood sugar levels p = 0.269 (p 0.05).

Abstract

Keberhasilan pelayanan gizi dikaitkan dengan daya terima pasien terhadap makanan dengan mengamati sisa makanan. Pengolahan protein nabati bentuk makanan lunak yang cenderung direbus dapat mempengaruhi sisa makanan. Tujuan penelitian ini yaitu mengetahui hubungan tingkat penerimaan protein nabati dengan sisa makanan pasien di ruang rawat inap RSUD Kabupaten Buleleng. Jenis penelitian yaitu observasional dengan rancangan cross sectional. Besar sampel dalam penelitian ini adalah 50. Data tingkat penerimaan protein nabati dikumpulkan dengan wawancara menggunakan bantuan form uji hedonic yang diolah dengan pemberian skor 1-3. Data sisa makanan dikumpulkan dengan food weighing dengan cara pengolahan menghitung selisih berat awal dikurangi berat akhir dibagi berat awal dikali 100%, kategori banyak jika 20% dan sedikit jika 20%. Analisis yang digunakan yaitu Chi Square dengan pendekatan rata-rata. Tingkat penerimaan pasien terhadap menu protein nabati sebagian besar tergolong “agak suka” (96%). Terdapat 4 menu (23,5%) dengan penilaian “tidak suka”, 7 menu (41,2%) “agak suka” dan  6 menu (35,3%) “suka”. 98% sampel memiliki sisa makanan banyak. Terdapat 11 menu (64,7%) tergolong sisa banyak, 6 menu (35,3%) tergolong sisa sedikit. Terdapat hubungan signifikan antara tingkat penerimaan protein nabati dengan sisa makanan (p = 0,002) dan terdapat hubungan signifikan antara tingkat kesukaan menu protein nabati dengan sisa makanan (p = 0,001).

Abstract

Bolu kukus merupakan jenis jajanan pasar, bolu kukus disubstitusi dengan pure labu kuning untuk meningkatkan kandungan vitamin dan mineral. Penelitian ini bertujuan untuk mengetahui pengaruh substitusi tepung terigu dengan pure labu kuning terhadap karakteristik bolu kukus secara organoleptik dan untuk meningkatkan kadar betakaroten dan serat kasar. Jenis penelitian Eksperimental dengan Rancangan Acak Kelompok (RAK), 5 perlakuan dan 3 kali ulangan. Perlakuan P1, P2, P3, P4, dan P5 yang diberikan substitusi pure labu kuning sebanyak 10%, 20%, 30%, 40%, dan 50%. Hasil pengujian organoleptik menunjukan bahwa substitusi pure labu kuning yang berbeda, berpengaruh nyata. Semakin tinggi substitusi pure labu kuning maka terjadi peningkatan kadar betakaroten dan kadar serat. Substitusi pure labu kuning pada perlakuan P4 (40%) dan P5 (50%) merupakan perlakuan terbaik dilihat dari nilai rata-rata secara organoleptik yaitu warna 4.40 (suka) dan 4.43 (sangat suka), aroma 4.96 (suka) dan 4.93 (suka), rasa 4.24 (suka) dan 4.24 (sangat suka), tekstur 4.23 (suka) dan 4.24 (sangat suka), penerimaan secara keseluruhan 4.22 (sangat suka) dan 4.38 (sangat suka), mutu warna 2.97 (kuning) dan 2.98 (kuning), mutu tekstur dengan nilai rata-rata 2.72 (lembut) dan 2.80 (lembut), dengan kadar betakaroten sebesar 51.24 mg/ 100g dan 57.78 mg/ 100g, kadar serat kasar sebesar 4.46%bb dan 4.67%bb.
