Abstract

This study investigates the antioxidant potential and chemical profile of kombucha made from green tea leaves and roselle flowers, analyzing pH, alcohol content, and the impact of fermentation time. Kombucha was prepared with green tea and a 1:1 mixture of green tea and roselle, with samples analyzed on days 1, 4, 8, 12, 16, and 24. Antioxidant activity, pH, and alcohol content were measured, and statistical analyses including one-way ANOVA, Tukey HSD, and Spearman correlation tests were conducted. Results indicated that the combination kombucha exhibited higher antioxidant activity (96.39% DPPH inhibition) compared to green tea kombucha (79.62%). There was no significant difference in pH and alcohol content between the two types (p > 0.05). A strong negative correlation was found between pH and fermentation time (-0.589, p < 0.001) and pH and alcohol content (-0.571, p < 0.001), while a strong positive correlation was observed between % inhibition and fermentation time (0.637, p < 0.001). The findings suggest that combining green tea and roselle enhances antioxidant activity in kombucha, and fermentation time significantly affects antioxidant activity, pH, and alcohol content.

Abstract

Cangkuak is a fermented food made from meat with betung bamboo shoots or kluwak, salt and rice. The fermentation process is carried out without adding microbial cultures (spontaneous) for one to three weeks in a tightly closed container. cangkuak's manufacturing technique, ingredient formulation and constituent ingredients are unique, resulting in a final product with different characteristics. Research on the presence of microbes in fermented food products (fish, milk, vegetables) has been widely conducted, but information on exploring the presence of natural microflora and the in vitro potential of fermenting bacteria in cangkuak has never been reported. This research was conducted using a survey method and the resulting data were presented descriptively. It was found that the natural microflora found in the three samples of cangkuak in Kuantan Mudik was dominated by bacteria, with the highest proportion of bacterial groups in the three cangkuak samples being fermentative bacteria (2.0 - 6.30x105 cfu/g), cellulolytic bacteria (3.30 - 5.90x105 cfu/g), amylolytic bacteria (1.70 - 4.40x105 cfu/g), proteolytic bacteria (0.12 - 7.90x105 cfu/g), lipolytic bacteria (0.08 - 0.12x105 cfu/g). Six potential fermentative isolates were obtained as evidenced by the calculation of index values, namely DK-I1 (1.59), DR-I1 (1.36), DR-I2 (2.49), DR-I3 (1.19), DKR-I1 (2.41), and DKR-I2 (2.96).

Abstract

Hypertension is a major global health issue that significantly contributes to morbidity and mortality. This study examines the relationship between knowledge and attitudes towards preventing hypertension recurrence among hypertensive patients in Indonesia. Utilizing a cross-sectional design, data were collected from 49 hypertensive patients through questionnaires assessing knowledge and attitudes. The results reveal a significant correlation between good knowledge and positive attitudes, with 65% of those with good knowledge exhibiting a positive attitude compared to 35% among those with poor knowledge. The odds ratio (OR=1.643, p=0.000) indicates that patients with better knowledge are significantly more likely to have a positive attitude towards hypertension prevention. These findings underscore the importance of educational interventions in improving health outcomes. Tailored educational programs that address psychological and nutritional aspects, as well as social support mechanisms, are recommended to enhance patient knowledge and foster positive health behaviors. This study highlights the need for continuous patient education and support to reduce the recurrence of hypertension. Public health strategies should focus on integrating comprehensive educational approaches to empower patients and improve adherence to hypertension management practices. The significant role of education in shaping health attitudes and behaviors emphasizes its critical place in public health initiatives aimed at combating hypertension.

Abstract

Bioethanol is an energy source obtained through fermentation. In bioethanol production, Persea americana seeds are used as a fermentation medium because they contain lots of carbohydrates. This research aims to determine the effect of additional nutrients (NPK and urea fertilizer) required by Saccharomyces cerevisiae by varying the nutritional variables in the form of NPK and urea fertilizer. The process of making bioethanol goes through stages: making Persea americana seed flour, hydrolysis process using 6% HCl, then fermentation process, and distillation process. This research was carried out with the addition of Nutrients in the form of NPK and Urea Fertilizer with 5 treatments, namely: A) 100% yeast (no addition of Nutrients); B) 100% NPK (4 g); C) 100% Urea Fertilizer (4 g); D) 50% NPK and 50% Urea Fertilizer (4 g NPK and 4 g Urea Fertilizer); and E) 75% NPK and 25% Urea Fertilizer (3 g NPK and 1 g Urea Fertilizer), and varying the length of fermentation time to 13, 19, and 25 days. Success parameters are assessed through the bioethanol yield produced by each treatment. The research results showed that the highest bioethanol (29.7 ± 0.47%) was composition E (NPK 75% and Urea Fertilizer 25%) with a fermentation time of 25 days.

Abstract

Hypertension is number one worldwide disease which lead to death. Initially hypertension is caused by changes in the walls of blood vessels. These vascular changes are due to the accumulation of ROS (Reactive Oxygen Species). ROS is the result of the balance between antioxidants and oxidants, but uncontrolled conditions will cause vascular damage. One of ROS product from metabolism which could played role in downregulation antioxidant gene expression is hydrogen peroxide. Hydrogen peroxide could be neutralized by catalase enzyme. Studies about catalase expression in hypertension subject is still limited. This research aims to determine mRNA relative expression catalase in hypertension. In this case control study, thrity subject hypertension and normotension subject were recruited within the age of 50-60 years. Hypertension subject was chosen according to JNC 8. Two millilitres vein blood was isolated into RNA. mRNA expression was detected by qRT PCR with 2 steps. Relative expression was determined using livak method. The data was analyzed using Mann Withney test with GraphPad software. Research results show that (1) catalase mRNA relative expression was 0,6 fold in hypertension; (2) catalase relative expression was not significantly lower in hypertension; (3) other antioxidants might have other mechanism to detoxify ROS and prevent hypertension.
