Abstract

Nutrition problems in Indonesia are already classified as multiple nutritional problems, namely the problem of undernutrition and overweight obesity. In 2010 the prevalence of overweight and obesity in Aceh province was 11.2 percent and in 2013 was 14.8 percent (8.9 percent fat and 5.9 percent very fat) resulting in an increase of 3.6 percent. Food intake is one factor that can cause cause overweight and obesity. This study wanted to analyze the factors of food intake in children aged 7-12 years become the cause of overweight and obesity. This study was an observational analytic study with cross sectional design aimed at assessing relationship of food intake on obesity-related weight status in first-fifth grade elementary school children aged 7-12 years at Kabupaten Aceh Barat. The sample size is 289 students. Determination of child obesity status using Body Mass Index based on Age (IMT/U), that is overweight and obesity if IMT/U>1.0 SD. Data of food intake was obtained through interview using 24-hour food recall form for 3 days. From 289 respondents, 51.90% were overweight and obesity. Factors related to the incidence of overweight and obesity are energy and fat intake (OR = 4.56 and 4.03).

Abstract

University life is a critical period of change in eating habits. Weight gain is a serious problem among youths who are experiencing a change in university life. Universities are potentially important settings for promotion of healthy diet and weight management practice for healthy future. Present study aimed to assess physical activity, eating habits and their association with body mass index (BMI) in dietetics students at Universiti Sultan Zainal Abidin (UniSZA). A total of 126 students were involved in answering a set of survey questions as well as weight and height measurements. Data were analyzed using SPSS version 22.0. Result showed that, 9.5% of dietetics students were obese and 25.4% were overweight. Breakfast was the most frequently skipped meal (71.4%) with the main reason of time management followed by busyness in attending lectures and doing readings. Majority of students (73%) will take a snack when they skipped their meal time. Most of the students consume fruits sometimes (55.6%) and 37.3% of them also consume vegetables sometimes. Most of the students (37.3%) consumes fast food one to three times per month. More than half of the students (59.5%) prefer to eat with friends. Majority of students have moderate physical activity (42.9%). However, this study also did not show association between physical activity, eating habits and BMI. In a nutshell, health programs are necessary to create awareness of nutrition and a healthy lifestyle among youth as the arising of obesity incidence among youth is worrying.

Abstract

ABSTRACTThe nutritional problem has happened in Indonesia. One of them is toddler malnutrition. Children who are malnourished have a low immune system. Thus it is susceptible to infectious diseases. Factors that can prevent nutritional problems in toddlers include the age of weaning and the toddler's immune system. Breastfeeding until the two-years-old, weaning, and body resistance will also affect the toddler's nutritional status. The research aimed to identify the risk factors of disease history on toddler stunting's nutritional status in Pidie Jaya District. The research's implementation was descriptive-analytic with a cross-sectional research design with a sample size of 34 people—data on weaning patterns and disease history obtained through interviews with questionnaires. Anthropometry measurements obtained the nutritional status data of toddlers. Analysis used chi-square test. Based on the results, most of the 14.7% of toddlers had a history of fever, 52.95% of unwilling toddlers. Toddlers with well nutritional status with weight-for-age index 64.7%, skinny nutritional status with weight-for-height index 55.9%, short nutritional status with height-for-age 52.9%, and regular dietary status with BMI-for age index 73.5%. Conclusion there was an influence of children's history disease in the last three months on nutritional status in the index height-for-age P-value = <0.015 (<0.05) with OR 6.0, but there was no influence of sick history on nutritional status with index weight-for-age, weight-for-age and BMI-for-age (P-value >0.05). It was important for the mother to implement a healthy lifestyle, environmental hygiene, and hygiene of the food history to become better.

Abstract

Seafood is a nutrient-dense food that is needed by children in their infancy. Sea fish is rich in protein, vitamins and minerals as well as omega 3 fatty acids which are very important for the growth of both body cells and brain cells. Several factors are identified as the cause of low fish consumption in Indonesia, among others, the lack of public understanding of nutrition and the benefits of fish consumption for health and intelligence, socio-economy and culture. So that it affects the parenting style of parents in providing food intake to children. The large protein content in fish is expected to be able to improve the nutritional needs of the Indonesian people and the increase in fish consumption is also expected to have an effect on increasing the intelligence of the Indonesian people. The research aimed to determine the relationship between parenting and fish consumption among school-age children in Aceh Barat District. This study was a cross-sectional study. The sample in this study amounted to 173 elementary school age children in grades IV and V. The data was collected by means of direct interviews which included the patterns of upbringing and fish consumption. Data analysis includes univariate and bivariate analysis with independent sample t-test. From 173 children, it was found that 80.3% of children consumed fish well, while only 19.7% of children with poor fish consumption. Maternal parenting affects children's fish consumption with an OR = 12.865 (95% CI 4.933-3.552) so that maternal parenting has a 12.86 times chance of influencing fish consumption in children.

Abstract

One of the fried food processed products that are often found in roadside fried sellers is tempeh. This study aims to study the effect of CMC addition on the results of coating pick-up dan frying loss of fried battered tempeh. Hydrocolloids used were carboxyl methylcellulose (CMC) and pectin with concentrations of addition to the batter as much as 0.3%, 0.5%, 1% of the overall weight of the mixture. Temperature and tempeh frying time is at a temperature of 180oC and for 6 minutes. The results showed fried battered tempeh with the addition of CMC to its batters has good quality measured from the percentage of coating pick-up samples.

Abstract

Anemia in Pregnant Women is a health problem during pregnancy. Where the state of decreased hemoglobin levels and the number of red blood cells below normal values. Increased need for iron nearly tripled for the needs of mothers and fetuses during pregnancy, anemia in pregnant women has an impact on morbidity and maternal death, the risk of low birth weight, premature birth. Anemia can also be avoided by consuming foods that often contain animal protein and vegetable protein. Iron (Fe) intake, knowledge, and family support have an important role in the incidence of anemia in pregnancy. This type of research is a cross sectional survey. The study was conducted in Johan Pahlawan Sub-district, West Aceh District. The population is all pregnant women trimester II and III of 54 pregnant women. Taking in total sampling, data analysis used Univariate analysis and Bivariate (Chi-Square test). The results of the study obtained a relationship between the knowledge factor with the P-value = 0.001 and the Family Support factor with a P-value = 0.004 with the incidence of anemia in pregnant women. Expected mothers are expected to know the importance of consuming iron (Fe) intake, extensive knowledge about the dangers of anemia during pregnancy and the importance of family support for pregnant women to avoid anemia.

Abstract

Indonesia has experienced 115 extraordinary events (KLB) due to food poisoning. In addition, it is also known that food poisoning in Indonesia is caused by household processed food products amounting to 40.87% and processed food products amounting to 24.35%. The food home industry in West Aceh is as many as 48 businesses while in Johan Pahlawan District there are as many as 40 businesses. This study aims to determine the relationship between entrepreneurial behavior in the application of sanitation hygiene and food management in the home industry in Johanahlawan subdistrict, Aceh Barat district. This research is a descriptive analytic study with a cross sectional design, with a population of 40 with the sample in this study are 40 home industry entrepreneurs in johan Pahlawan district. The sampling technique in this study using the total sampling method. Based on the research results, it shows that the independent variables (attitude and action) have a relationship with food management where Pvalue <α (0.05) while Knowledge has no relationship where Pvalue> α (0.05).To related agencies, to further improve counseling, supervision and monitoring of household Home Industry and to household Home Industry entrepreneurs to further increase their awareness of the importance of managing food well.

Abstract

Adequacy of nutrition is needed by a person from the womb to adulthood. Pregnant women are one of the groups of people who are prone to malnutrition. One of the nutritional problems in pregnant women is iron anemia (Fe). Pregnant women are said to be anemic if their Hb level is <11 g / dl, anemia can also occur due to an increased need for a person's body, for example during menstruation, pregnancy and childbirth, while the iron that enters is only a little, it is highly recommended to consume food that comes from animal protein such as fish. , meat, eggs and milk. Objective: to examine the relationship between the adequacy of animal protein consumption on hemoglobin (Hb) levels of pregnant women in Johan Pahlawan District, West Aceh Regency. Methods: This study is a quantitative study with a cross sectional design. The population in this study were all pregnant women in the second and third trimesters who were recorded at Puskesmas Johan Pahlawan and Suak Ribee, West Aceh district in February 2020, totaling 165 people, the sampling technique used the purposive sampling method using the Slovin formula with a sample of 62 people. The results showed that there was a significant relationship between the consumption of animal protein intake and hemoglobin levels in pregnant women with a p value = 0.022. Abstract

To improve the nutritional quality of individuals and communities through improving consumption patterns, it could be obtained by the achievement of household nutrition indicators in Kecamatan Mila Kabupaten Pidie. The intensity of households consuming iodized salt has decreased by year in 2017 (51%), 2018 (44%), and 2019 (31%). This condition resulted in 10 person having disorders due to iodine deficiency, 9 of them suffering goiter and 1 person suffering thyroid disease. The purpose of this study was to determine the factors associated with the use of iodized salt by housewives in Kecamatan Mila, Kabupaten Pidie in 2020. This study used a cross-sectional analysis method. The result showed that based on univariate analysis family knowledge and support were the most related variables with the use of iodized salt, while the health education variable (1.00) has no significant relationship with the use of iodized salt (p-value = 0.00).

Abstract

Avocados and apples are one of the foods high in soluble fiber that can be processed into functional drinks as an alternative food in overcoming hypercholesterolemia. Knowing the soluble fiber content and acceptability in the combination of avocado and apple juice. This study used an experimental method with a randomized design, consisting of 3 formulas, namely 50:50, 60:40, and 70:30 with 4 treatments. Water soluble fiber content by using enzymatic test. Acceptance test on 30 women of childbearing age. Data analysis used one way ANOVA test. The average soluble fiber content in the juice combination formula were 50:50 (8,19 g), 60:40 (9,81 g) and 70:30 (11,01 g). The acceptability test for the 50:50 and 60:40 formulas was rated somewhat like to like with an average rating on each parameter, which was 2,77 to 3,73. The combination of avocado and apple juice contributes 25,61 – 37,98% of fiber to the WUS RDA. The most preferred formula in the acceptability test assessment was 50:50 with an average fiber content of 8,19 g which was able to meet 28,26 – 27,32% of the daily fiber requirement.
