Abstract

The specific objectives of the research were 1) to analyze zinc content of rice, 2) to analyze effect of cooking on zinc content of rice and 3) to identify the effect of cooking methods of rice on bioavailability of zinc. Zinc bioavailability was indicated by serum alkaline phosphatase activity, zinc serum and growth of Wistar rats. Boiled, steamed and puffed of Membramos, Cisadanes and Brown rice were used in this research. The results of this study showed that cooking methods affect zinc in rice. Zinc content decreased after cooking in all of cooking methods. The lost of zinc was found highest in puffed rice and lowest in steamed rice. When rats fed those rice-based diets, zinc serum was for all of treatments not significantly different. Measurement of serum alkaline phosphatase activity of rats fed steamed and boiled rice was significantly higher than control, but not for rats fed puffed rice. All rats fed treatment diets have higher growth than those fed control. Zinc bioavailability was found lower in puffed rice than steamed and boiled. Steamed rice has zinc bioavailability better than that of boiled and puffed.

Abstract

The study show result that the average educational level, the average expenses of consumption, the average level of the eating habits, the average body mass index in both area are clearly different. The average level of nutrition knowledge and health of the elderly in the rural areas proved differently with those in the urban. The average of teeth amount of the elderly in the rural is not clearly different with those in the urban. Almost all the average level of consumption of the nutrient elements (Energi, Protein, Vit.A, Vit.C, Ca, Fe) in both area, none of them reach 100,00 % of the Recommended Dietary Allowances, except for the level of consumption of Phosphor and Vit.B1 (urban). of the elderly people in both area categorized into good nutrition status, and both clearly different. The eating habits do not affect the nutrition status of the elderly people. The factors that affects towards the eating habit of the elderly people are knowledge and health.

Abstract

The objective of this research are to know the best level substitution of wheat flour by taro flour in making cookies, to know the nutrient contain of cookies and consumer acceptability of cookies had substitution by taro flour. Substitution of taro flour were 0%, 10%, 20% and 30%. The result of this research showed that taro flour contained moisture 5,72%, ash 2,24%, fat 2,01%, protein 3,90%, carbohydrate 91,70%, crude fibre 2,70% and calorie 400,91 Kal. The cookies contained moisture 2,93-3,38%, ash 1,53-1,83%, fat 35,37-39,87%, protein 6,35-7,28%, crude fibre 0,66-1,15%, carbohydrate 51,44-55,92% and calorie 570,81-593,24 Kal. The panellist like the cookies produced and the best level substitution is 20%.

Abstract

The aim of this study is to analyze the impact of economiccrisis on agricultural household and the act to anticipate its alleviation. This research was conducted in East Java province that has potential food crop and horticultural product and in Bali province which is potential in estate crops and handicrafts, with 60 household samples in each province. The results of this research are: (1) Food crop household is income is the smallest in term of absolut value; (2) horticultural house hold get the most severe impact of the economic crisis, in contrast, estate crop household getsthe positive impact from the economic crisis, and (3) the effort to aleviate the crisis is with drawing and using the saving, borrowing to formal/informal credit institutions, managing household consumption pattern.

Abstract

The purpose of this study was to examine the consumers¡¦ attitudes toward orange juice products of two different brands. The organoleptic tests were conducted for collecting the data from respondents who were purposively selected in Bogor. The respondents were asked to evaluate six attributes of orange juice products on a 5 point scale, based on the Ideal-Point Model of Attitude. The results showed that of the six attributes, the orange content perceived to be the most important attribute. The Ideal-Point Attitude Model scores for BUAVITA brands were lowe than that of ABC Brands, indicating that respondents were more favorable toward BUAVITA dan ABC orange juice

Abstract

The goal of study is to investigate the long-term effect of storing chili in term of storing chili in term of its quality. Emphasis will be specifically focused on three (3) types of chili, Sambal Terasi, Sambal Pecel, and Sambal Rujak. Treatment of product follows a single uniform methodology process; storing in regular room temperature without preservatives, packed in a thin plastic wrap, and sealed in a thick plastic wrap. This study began in April of 1999 and ended in May of 2000. The emphasis of this study concentrates on physical and microbiological analysis. Sambal Kacang can be stored up to five (5) months, where the acceptance capacity by panelists is in the range of 87 ¡V 100 %. Sambal Terasi can only be stored up to 1 (0ne) month. In terms of taste and aroma, Sambal Terasi has an acceptance rate of 50-60% by the second month, but demonstrates an increase of water level and protein, which is expected to increase bacterial growth. Sambal Rujak has the longest storage capacity exceeding eight (8) months. Panelists give an acceptance rate of 83 ¡V 100 %. Sambal Rujak can reach this storage life span due to its high level of sugar. On the other hand, Sambal Kacang spoils faster because of the presence of the rancidity development. In conclusion, the microbiological analysis of Sambal Kacang seems to be complex because its month-to-month development fluctuates, whereas the microbiological analysis of Sambal Terasi and Sambal Rujak supports organoleptic testing results.

Abstract

The objective of this research is to identify of availability, consumption, and waste of food; consumption level energy, protein, vitamin B1, B6 and B12; nutritional status schizophrenia patient; and analysis relationship between consumption level energy and protein with nutritional status schizophrenia patient.. This research was conducted in Psychiatric Hospital Palu, from February to April 2001. The total samples were 32 persons. Primary data were characteristic samples; kind and total food of availability, consumption, waste of food; and weigh/high body samples. The result of this research showed that kind of menu have composition were rice, side fish, vegetables, fruits and milk. Average of energy and protein consumption level each were 116,44% and 120,49% by Recomended Dietary Allowance (RDA) ang also thiamine (B1) 87,89%, but pyridoxines (B6) and cyan cobalt amine (B12) each 53,37% and 65% that lessthan of RDA. Mayority of the samples had good nutritional status (59,4%). Statistical analysis showed that consumption level of energy and protein has negative correlations with nutritional status

Abstract

The Objectives of this study were to anaylize the influence of family strength on pregnancy quality. The data were analyzed from the study of "Effect of multinutrient fortified food suplement on pregnancy outcomes", which had been done previously by the Departement of Community Nutrition and Family Resources of IPB. Some additional information on family strength was also collected retrospectively. Of the 615 pregnant mothers in Luwiliang district (19 villages) and Cibungbulang district (15 villages), 233 mothers met the sample criterias were selected Pregnancy quality was measured by pregnancy weight gain. Family strength data (q=0.7) consisted of informations on physical resources, non-physical resources. Family problems, capping mechanism, physical well-being, social well-being, and psychologycal well-being. Applying a multiple linear regression model, body weight at the beginning of pregnancy and family strength has a significant effect on pregnancy weight gain. The items of Family strength are health factor, family goal, free from anger, and social support. The above results implied that, increasing family strength should he the important factor in pregnancy quality.

Abstract

Based on the family theory of structural functionalism, family is the first and the main porosity of human resource development. Family is the basic unit of society. The objectives of this study were to develop a measurement of family strength with high reliability and validity and to formulate policy implications to increase the family strength. 233 families from Leuwiliang district (19 villages) and Cibungbulang district (15 villages) were analyzed. Family strength data consisted of informations on physical resources, non-physical resources, family problems, copping mechanism, physical well-being, social welll-being, and psychological well-being. Applying Alpha Cronbach analysis, the family strength measurement had internal consistency coeficient of reliability 0.7 and applying factor analysis and Lisrel (Linear Structural Relationship) shared that there were there major latent variables of family strength, viz physical, social, and psychological. Strengthening the family should be an entegrated part of social economic, and family funcitioning development.

Abstract

The Depression of the 1930s was followed ahalf century later by the depression of the 1980s.Voydanoff (1990) noted that the restructuring ofthe American economy during the late 1980s wasaccompanied by increasing le\.els of economicdistress. Aspects of economic distress, includingemployment instability, emplo~ment uncertainty,economic deprivation, and economic strain havebeen found to be related to individual adjustmentand family relations. Thus. changes in theeconomy during the 1980s ha1.e resulted inchanges in family life (Voydanoff, 1990). Forexample, McVeigh and Shostak ( 1978) reportedthat poverty is associated with a lack of decenthousing and an inadequate diet Other correlatesof poverty include low educational attainment anda lack of proper medical care.
