Abstract

ABSTRACT. It was reported that the Camellia tea contained of poliphenol 25-35 percent and other compounds which is goodfor health. Whereas bioactive compound i.e. Catechin and its derivatives ofgreen tea have been reported to have a beneficial effects on human health for example as anti cancer to prevent stroke and heart disease. The objectives ofthis research were to study the effect ofvariety and processing ofcamelliamulberry tea on bioactive compounds i. e. catechin and its derivatives; and to conduct organoleptic test. The Clone Gambung 7 and 9 of Camellia sinensis var. assamica; Kanva and Morus multicaulis of varieties of mulberry were used as main ingredients. Mulberry leaves were processed by enzymatic oxidative and non enzymatic oxydative, while Camellia leaves processed with non- enzymatic oxidative reaction. Thereafter, Camellia and mulberry was mixed in to ratio I: 1 (w/w, db). The chemical analysis for the content of theaflavin, tannin, cafein, catechin and its derivatives and organoleptic test were successfully conducted. The study showed the theaflavin, tannin and cafein content for fresh mulberry are 0,0690 and 0,0555 percent (db); 0,229 and 0,451 percent(db); 0,683 and 0.465 percent (db), correspo'ldingly. Theaflavin and tannin compounds of mulberry tea were found least content than Camellia-mulberry tea. There are three good formulas of Camellia-mulberry tea: start with a high rank M multicaulis-nonoxidizedGambung 7; Kanva-nonoxidized-Gambung 9 and M multicaulis-nonoxidized-Gambung 7, where mean value oftheaflavin mid tannin are 2.7968 percent db; 2.7/73 percent db; and 2.6575 percent db, correspondingly. A highest value of catechin was found in M multicaulis-oxidized-Gambung 7 (2.85%). The highest value of total catechin Kanvanonoxidized- Gambung 9 (3.91%), andfollowed by M multicaulis-nonoxidized-Gambung 7 (2.57%); and was M multicaulis-oxidized-Gambung 7 (2.33%). Abstract

ABSTRACT. The aim of this research was to produce cincau copper-derivative chlorophyll powder and to observe its phYSico-chemical properties and the effect on blood lipid profile of5 month male New Zealand White rabbits. The blood lipid profile observed were total cholesterol, triglyceride, HDL (high-denSity lipoprotein) cholesterol, and LDL (low-density lipoprotein) cholesterol. A two months treatment was conducted A randomblock design was applied with the following treatment on each experimental unit: PO (basal diet, negative control), PI (basal diet with cholesterol 0.1% (wlw) added, positive control), P2 (basal diet with cholesterol 0.1% (wlw) and 16.7 mglkg-body weight/d natural chlorophyll powder added), P3 (basal diet with cholesterol 0.1% (wlw) and 16.7 mglkgbody weight/d copper-derivative of chlorophyll powder added), P4 (basal diet withcholesterol 0.1% (wlw) and 50.1 mglkg-body weightld copper-derivative of chlorophyll powder added}, P5 (basal diet with cholesterol 0.1% (wlw), and 16.7 mglkg-body weight/dcommercial chlorophyll powder added The results of study showed that cincau leaves chlorophyll extract solution with Cu1+ 100 mglL level produce the cincau copper-derivate chlorophyll powder with highest pH, solubility, and greenness compared to other copper levels. Feeding with copper-derivative of chlorophyll cincau powder (P3) most likely decreased total cholesterol, triglycerides, LDL cholesterol increased the HDL cholesterol,and decreased atherosclerosis risk after 2 month as compare to feeding contain of natural chlorophyll (P2). Abstract

ABSTRACT. The objective of  this study  was to investigate the efficacy of  iron and zinc supplementation on anemic status and zinc status of children aged 6-24 months. The study was a double-blind, randomized, placebo-controlled trial in which 173 children aged 6-24 months were randomly assigned to receive 15 mg Fe+ 15 mg Zn daily 30 mg Fe+30 mg Zn weekly or placebo for 5 months. As expected, no significant difference in the baseline hemoglobin and serum zinc concentration and nutrient intake between the three supplementation groups. In the children aged 6-24 months, micronutrient deficiencies were prevalent. Almost 50% of the children were anemic, and 20% of them were zinc deficient. The anemic children had a 2.5-fold greater risk of  zinc deficient than did the non-anemic children. This could indicate the existence of concurrent nutritional deficiencies. At the end of the 5mo supplementation period, the daily and weekly Fe+Zn supplementation tend to increased hemoglobin concentrations, but there were no significant difference compared with the placebo. The daily and weekly Fe+Zn supplementation did not significantly affect serum zinc concentration compared with the placebo.   Keyword: suplementasi, anemia, besi dan seng.

Abstract

ABSTRACT. The role of fitosterol in preventing cholesterol absorption and reducing atherosclerosis risk has been reported. This research was conducted to evaluate the effect of wheat germ sterol on the concentration of total cholesterol, LDL, HDL, triglycerides, and lesion formation in mice. In this research work. Sprague Dawley mice at the age of 2 months  (productive age) were used A random block design was employed with the following treatment on each experimental unit: Po (basal diet, negative contra/), PI (basal diet with cholesterol added, positive control), P2 (basal diet with cholesterol and ground wheat germ added), P3 (basal diet with cholesterol and wheat germ oil added). P4 (basal diet with cholesterol and wheat germ sterol added). 'and P5 (basal diet with cholesterol and wheat germ sterol supplemented margarine). Each mouse was d.esigned to intake 0.0343 g ofsterol daily, except those of negative control (Po) and positive control (PI). In order to increase cholesterol concentration in blood serum ofmice, 20 mglkg-body weight per day ofpropyltiourasil (PTU) was added into each diet. A set oftests was carried out to observe the concentrations of total cholesterol. LDL, HDL, and tryglycerides in blood serum of test animals, and mouse aorta micrographs. Results showed that wheat germ sterol could prevent the increase ofcholesterol in the blood ofmice. Feeding with sterol (P4) or sterol-supplemented margarine (P5) prevented the increase of total cholesterol after I month of experimentation, however, only P4 sustained the same condition after 2 months ofexperimentation. Feeding with wheat germ sterol (P4) was also the only treatment that prevented the increase of LDL cholesterol after 2 month of experimentation, and it was not different significantly with negative control (Po). Results of experimentation also showed that the concentration of HDL in serum blood of mice was not affected by wheat germ sterol. Unsurprisingly, there was no lesion ofatherosclerosis observed in all treatments used in this research. This result confirmed that mouse is resistant to atherosclerosis. Abstract

ABSTRACT. The objective of this study was to analyze the effect of snack intervention on blood glucose level and memory improvement ofelementary school's students, Subjects of this study were 184 students offour (4) elementary schools (grade 6, 5 and 4) at Bogor District, West Java. The study employed a quasi-experimental design and followed experimental procedures to control the subject's food intake and motoric activity during the study period At the day of intervention, both control and intervention's subjects were ordered not to have breakfast at home. Intervention's subjects were provided with snack (buras, at 10.00 AM) which contained 381.7 kcal energy and 5 g protein, but control's subjects were not. Two types ofpsychological test (word andfigure) were applied twice (at 09.00 and 11.00 AM). Then, at the same time, subject's blood was taken to determine blood glucose, haemoglobin, and hematocrite levels. Interviews with subjects and their mothers were carried out to collect socioeconomic data and dietary intake. Result of the study indicated that snack intervention increased significantly (p<O.OI) blood glucose level (20.8 mgld/) approximately 1 hour after snack given. Blood glucose level significantly (p<O.OI) affected the word's and figure's memory performance. The higher the blood glucose level the better the memory performance. Abstract

ABSTRACT. The main objectives of this study were to analyze zinc status, nutrient dietary, quality zinc content, zinc intake, and determinant factor of zinc status. The research was based on previous study on "Effect of Multi-nutrients Fortified Food Supplementation for Pregnant Women and Child Growth and Development" and  some additional data of food  zinc content. Logistic regression was applied for determinants analysis. The results show that zinc serum level was 0.9±04mgll. The prevalence of zinc deficiency was 21.8%. Food intake ofpregnant women was very low (30.8% of suggested serving). Zinc content offood ranged from O.2mg (fried tempeh) to 22.9mg (local snail) per 100g oft he dried foods. Zinc intake was 6.3mglday, similar to 32.8% recommended dietary allowance (RDA). The subjects who have zinc intake lower than it's RDA (l9.3mglday) were 99.2%. Abstract

ABSTRACT. Iodine Deficiency Disorders (IDD) prevalence ofpregnant women is 16% and this would have consequence of risk during delivery and  nutritional status of the children. The aims ofthis study was to measure the effect ofiodized oil and beta carotene on the nutritional, iodine and thyroid stimulating hormone (TSH) status of pregnant women and to determine nutrition, iodine and cyanide intakes from food consumed by pregnant women. Research design ofthe study was quasi experiment. Pregnant women on the first trimester were chosen and divided into three groups. The first group was given iodized oil at 200mg iodine, the second group was treated with iodized oil at 30mg iodine every month for 6 months, and the third group was given as group 2 plus beta-carotene at 30mg each month for six months. Data collected were nutrients, iodine, and cyanide intake from food consumed and the parameter measured were serum TSH, urine iodine excretion (UIE), body weight and upper arm circumference. Chi Square, ANOVA and Kruskall Wallis were applied for statistical analysis. Iodine consumed by pregnant women was closed to the recommended daily allowance (RDA). iodized oil supplement could increase the UIE for 2 times at trimester 3 ofthe pregnancy. Furthermore, the treatment could redure the TSH value during pregnancy. The supplement could supply iodine during pregnancy. Keywords: iodine, hipothyroid, beta caroten, nutritional status

Abstract

ABSTRACT. The objetive of this study was to evaluate the effect offeeding with multimicronutrients fortified foods on anemia status and weight gain ofpregnan womrql. This study was carried out in three sub-districts in Bogor, i. e.: Leuwiliang, Leuwisadeng and Ciampea. A double blind randomized control trial was assigned on this study. About 210 pregnant women from these sub-districts were selected for this study and devided into 2groups, (1) 70 pregnant women received fortified foods with multi-micronutrients i.e. iron, iodine, zinc, folic acid, vitamin C, and vitamin A, and (2) 70 pregnant mothers received nonfortifiedfoods, each for 6 mounths. Product chosen as intervention carrier consisted of vermicelli, milk, and biscuit. Distribution ofproducts were carried out every week to thetarget pregnant women. The results of the study showed: (a) intervention could reduce prevalence ofanemia as much as 28% compared with placebo (b) Intervention affected the micronutrients consumption andfulfilled: iron 55,5% RDA, vitamin A 65% RDA, vitamin C 126% RDA, folat 15,3% RDA, zinc 26,7% RDA, iodium 26,3%, (c) intervention didn'tinfluence weight gain during pregnancy.

Abstract

Milk consumption during adolescence is considered an early means of preventing osteoporosis in adults. Osteoporosis is a systemic skeletal disease characterized by low bonedensity and microarchitectural deterioration of bone tissues, with a consequent increase in bone fragility and suspectibility to fracture. Augmenting bone mass during adolescence has beensuggested as a strategy to prevent osteoporosis. because adolescents may represent the final opportunity for substantially increasing bone mass before skeletal consolidation. The purpose of this Study was 10 determine effects of fresh and high calcium milk on blood calcium concentraJion and bone density. Variables measured in this study were blood calciumconcentration. bone density of spine and bone density of whole body. The study using 55 adolescent boys thal had 17 to 19 years old (students of TPB [PB) and was conducted at TPBIPB dormitory in four months. The design of this study is nesled randomized design with two factors are kind of mil (fresh milk, high calcium milk) and volume of each kind of milk (250 ml,500 ml, 750 mI). Results of the study indicated that fresh and high calcium milk in this research not significant effects (P>0.05) on blood calcium concentration and bone density of whole body.But, high calcium milk consunlption was able to increase bone density. It was found that high calcium consumption shawed very highly significant effect (P<O.OI) on bone density of spinewith 1.79% contributions. Based on general linear model equation. bone density of trunk can be estimated by high calcium milk consumption.

Abstract

Velva kweni is one aflhe low fat frozen desserts, was made from kweni puree, sugar, and stabilizers and was freezed in ice cream votator to ohtain fine texture. The purpose of this researchs is to study utilization of stabilizer's combination in making velva kweni and the change of quality during storage. The organoleptic test on colour, flavour, taste, texture and melting quality showed that stabilizer's combination didn't influence preference on colour, flavour, taste, texture, and melting quality, but influenced hedonic quality of colour, flavour and texture. Stabilizer's combination influenced overrun and melting velvo kweni. Velva kweni which use CMC-Carrageenan (1:2) gave the highest overrun (25.05%). The highest melting was given velva velva kweni which use CMC-Carrageenan (1:1), that is 19 minutes 6 second. The best product was produced velva kweni which use CMC-Carrageenan (I: 1) and this velva would be stored. The results of hedonic and hedonic quality test showed that duration of storage didn 't influence preference on colour, flavour, toste, lexture and melting quality. Overrun and melling velva kweni were not Influenced duralion of storage. In contrast, duration of storage influenced decreasing water content, incerasing total soluble solid, increasing pH, decreasing total acid and decreasing vitamin C content. Overrun velva kweni during storage was 25.01-25.28%, melting 14.85-15.25 minutes, water content 76.43-77.99%, total soluble solid 14.96-19.98%, pH 3.75-3.90, total acid 0.350-0.371% and vitamin C content 17.39-23 mg/ 100g.
