Abstract

Biofilters have advantages in waste treatment, but limitations related to the formation time of biofilms, which play an important role in reducing pollutants in wastewater. The addition of biocatalysts such as ecoenzymes can be an innovative solution in accelerating biofilm formation. This study aimed to examine the effectiveness of adding ecoenzyme to biofilter in accelerating biofilm formation. This research is quantitative with an experimental approach using a completely randomized design (CRD), The test was conducted by adding 10% orange peel ecoenzyme, where the characteristic test shows that this ecoenzyme is better quality than those made from vegetable waste. Data collection was carried out through: (1) Field observation, (2) In-situ measurement, and (3) Microscopic observation. The data was analyzed descriptively to examine the quality of ecoenzymes, meanwhile, biofilm development was observed microscopically. The result found the ecoenzyme has a distinctive fermented aroma, is dark brown colour, pH < 4 and normal temperature, this indicates that the ecoenzyme is of good quality.  Identification of lactic acid bacteria (LAB) revealed 53 colonies with large and small round morphology and a cloudy white colour. Lactobacillus bacteria dominated, both Gram-positive and Gram-negative found, rod-shaped, and large round colonies. Based on microscopic observation, biofilm formation in the control group was slower than in the samples treated with 10% ecoenzyme, a biofilm formation began to appear on the first day. While in the control samples it only appeared on the third day. This indicates that the ecoenzyme addition may accelerate biofilm formation.

Abstract

Adolescent girls undergo rapid physical and psychosocial changes, resulting in increased nutritional needs and a higher susceptibility to iron-deficiency anemia, especially at the onset of menstruation. This makes them an important target group for nutrition interventions. This study aimed to assess the effectiveness of TikTok-based nutrition education videos in enhancing adolescent girls' knowledge of diverse diets and balanced nutrition. A pretest-posttest design was used, with no control group, and involved 146 students aged 12-18 years from two schools in Moilong District, Banggai Regency, Central Sulawesi, Indonesia. Participants attended four sessions over eight weeks, each featuring two TikTok videos on topics such as balanced nutrition, anemia prevention, physical activity, healthy eating habits, and menstrual hygiene management. Nutrition knowledge was assessed before and after the intervention using a structured questionnaire, and the data were analyzed using paired t-tests. The results showed a statistically significant increase in nutrition knowledge (p < 0.05). At SMAN 1 Moilong, knowledge scores improved from 40-85 to 70-90, while at SMPN 4 Toili, scores increased from 40-75 to 70-100. These findings demonstrate that short, contextually relevant TikTok videos are effective in improving adolescent girls' nutrition knowledge. Schools and health services are encouraged to incorporate TikTok-based content into routine nutrition education programs, complemented by digital literacy support.

Abstract

Buni fruit (Antidesma bunius L.) is a native Indonesian plant that contains anthocyanin, flavonoid, and phenolic compounds, so it has the potential as a source of natural antioxidants that are beneficial for health. This study aims to evaluate the antioxidant activity of extracts taken using various extraction methods because they can affect the results, composition of bioactive compounds, and the ability to scavenge free radicals. Buni fruit simplicia was extracted using 96% ethanol through three extraction techniques, namely maceration, soxhletation, and reflux. In vitro antioxidant activity testing was carried out using the DPPH method by determining the IC₅₀ value. The reflux method gave the highest yield (13.99%) when compared to maceration (9.42%) and soxhletation (12.60%). However, the extract from the maceration method had an IC₅₀ value (74.445 µg/mL) indicating the strongest antioxidant activity compared to soxhletation (155.104 µg/mL) and reflux (161.894 µg/mL). The results of one-way ANOVA analysis showed that the extraction method did not have a significant effect on the percentage of DPPH inhibition (p>0.05). This indicates that differences in extraction methods have not been able to produce statistically significant differences in antioxidant activity.

Abstract

This study examined the relationship between household food security, the Ministry of Social Affairs’ ATENSI food assistance, and the nutritional status of people living with HIV (PLHIV) in WPA Turen, Malang, Indonesia. Conducted in November 2025, this cross-sectional quantitative study involved 110 ATENSI recipients. Data were collected via questionnaires and Body Mass Index (BMI) measurements, then analyzed using Chi-square tests. Most respondents were socio-economically vulnerable: 86.4% earned below IDR 3,000,000 monthly, and nearly half were unemployed. Nutritionally, 60.9% had normal status, 23.6% were underweight, and 15.5% were overweight. Furthermore, 65.5% considered the ATENSI assistance inadequate for their household needs. A significant association was found between household food security and nutritional status (p=0.005), showing that food-insecure PLHIV were more likely to be underweight. However, the relationship between ATENSI assistance and nutritional status was not significant (p=0.238), likely because the assistance is only distributed annually, limiting its long-term impact. In conclusion, while household food security critically determines PLHIV nutritional status, annual assistance is insufficient. The study recommends shifting to monthly or quarterly distributions, alongside food diversification, nutrition education, and economic empowerment programs to address underlying poverty and improve health outcomes.

Abstract

Anemia during pregnancy remains a major public health concern and is influenced not only by iron intake but also by dietary patterns that modulate inflammatory processes. The Dietary Inflammatory Index (DII) is a validated tool used to quantify the inflammatory potential of an individual’s diet and may be associated with hemoglobin (Hb) levels. This study aimed to examine the association between DII scores and hemoglobin levels among pregnant women in Asahan Regency, Indonesia. A cross-sectional study was conducted among 170 pregnant women selected through purposive sampling. Dietary intake was assessed using a semi-quantitative food frequency questionnaire (SQ-FFQ), and DII scores were calculated using 28 out of 45 validated dietary parameters. Hemoglobin levels were obtained from laboratory measurements. Normality testing using the Kolmogorov–Smirnov test showed that both variables were not normally distributed; therefore, Spearman’s correlation analysis was applied. The median hemoglobin level was 11.45 g/dL, while the median DII score was –3.94, indicating a predominantly anti-inflammatory dietary pattern. Spearman’s correlation analysis revealed a strong and significant negative association between DII score and hemoglobin level (ρ = –0.536; p < 0.001), indicating that higher pro-inflammatory dietary potential was associated with lower hemoglobin concentrations. Multivariable analysis adjusting for maternal age, gestational age, parity, and mid-upper arm circumference (MUAC) confirmed that DII score remained an independent predictor of hemoglobin level. These findings highlight the importance of promoting anti-inflammatory dietary patterns during pregnancy to support optimal hemoglobin status and reduce the risk of anemia. Incorporating dietary inflammatory assessment into antenatal nutrition programs may strengthen anemia prevention strategies and improve maternal health outcomes.

Abstract

The increasing trend of consuming ultra-processed foods, such as instant noodles, necessitates the development of healthier and more functional food alternatives. This study aimed to develop functional dry noodles by partially substituting wheat flour with local Banten ingredients: Beneng taro, red beans, and Moringa leaves. The experiment utilized a completely randomized design (CRD) with three substitution treatment levels (F1, F2, F3) replicated three times. The nutritional quality of each formula was determined through proximate analysis and dietary fiber content. Sensory quality was assessed using hedonic and quality hedonic tests involving 30 semi-trained panelists. The selected formula was determined through a combined scoring of nutritional and sensory analysis results, followed by Glycemic Index (GI) testing. Based on the scoring, Formula F3 with a ratio of wheat flour : taro flour : red bean flour : moringa leaf flour : taro starch, namely F3 (50 g:17.5 g:17.5 g:5 g:10 g) was selected as the optimal formula, containing per 100g: 389.98 kcal energy, 13.52 g protein, 4.06 g fat, 60.93 g carbohydrate, and 11.08 g dietary fiber. Sensory evaluation showed that panelists liked the color and aroma parameters of F3, and slightly liked the texture, taste, and overall attributes. F3 meets the nutrition label claims as a "source of protein" (22.53% ALG - Acuan Label Gizi/Nutrition Label Reference) and "high in fiber" (36.93% ALG). Furthermore, F3 yielded a Glycemic Index of 62.19 (medium category) with a Glycemic Load of 18.94 (medium category). Thus, this functional dry noodle product has the potential to be a healthy food alternative, serving as a source of protein and high in fiber, while exhibiting a controlled glycemic response.

Abstract

This study aimed to assess the association of food diversity and diet quality with metabolic syndrome (MetS) among fishermen communities in coastal Indonesia. An analytical observational case–control design was conducted among 120 adult fishermen (60 MetS cases and 60 controls) in Lhokseumawe, Aceh. MetS was diagnosed based on International Diabetes Federation criteria. Dietary diversity was measured using the Individual Dietary Diversity Score (IDDS) through two non-consecutive 24-hour recalls, and diet quality was evaluated using the Healthy Diet Indicator (HDI). Bivariate and multivariate logistic regression analyses were performed to determine dietary predictors of MetS, adjusting for age, gender, and physical activity. Fishermen with MetS showed a higher prevalence of low dietary diversity (IDDS ≤3: 33.3% vs. 20.0%, p = 0.048) and poor diet quality (HDI ≤4: 58.3% vs. 33.3%, p = 0.010) compared to controls. Multivariate analysis confirmed that low dietary diversity (AOR = 2.10; 95% CI: 1.05–4.50; p = 0.038) and poor diet quality (AOR = 2.80; 95% CI: 1.25–6.20; p = 0.012) were independently associated with MetS. Socioeconomic factors, including age, household size, education, and income, were not significantly associated with MetS. Low dietary diversity and poor diet quality are significant predictors of MetS among fishermen. Nutrition interventions aimed at improving both dietary variety and overall diet quality may effectively reduce metabolic risks in labor-intensive coastal communities.

Abstract

There are still limited studies assessing nutrient intake, especially micronutrients, among stunted children under five. Indonesia also does not yet have official indicators to evaluate diet quality in young children. This study aimed to analyze the differences in diet quality, macro-and micronutrient adequacy, and estimated bioavailability of zinc and iron in stunted and normal toddlers. Using a comparative cross-sectional design, the study was conducted at Purwasari and Kampung Manggis Community Health Centers from August 1 to 26, 2025, involving 60 stunted and 60 normal children. Diet quality was assessed using an Indonesian-adapted Healthy Eating Index (HEI 2–5 years). The results showed significant differences between stunted and normal toddlers in maternal education (p=0.001), paternal education (p=0.043), paternal occupation (p=0.045), parity (p=0.028), per capita income (p=0.006), birth weight (p=0.003), and history of infectious diseases (p=0.019). Diet quality components that differed significantly included vegetables and green vegetables (p=0.031), fruits and fruit juices (p=0.009), and dietary diversity (p=0.003), with normal toddlers demonstrating higher scores. Normal toddlers also had significantly higher adequacy of macronutrients and micronutrients (p<0.05). Estimated iron and zinc absorption were significantly lower among stunted toddlers (iron p=0.019; zinc p=0.010), although overall iron and zinc bioavailability categories did not differ significantly between groups. Stunting among Indonesian toddlers is associated with unfavorable socioeconomic conditions, lower birth weight, history of infectious diseases, needs improvement diet quality, and reduced estimated micronutrient absorption. Interventions should prioritize improving dietary quality, increasing vitamin C intake to enhance iron absorption, and limiting dietary inhibitors such as tea, alongside broader strategies addressing household socioeconomic factors and child health.

Abstract

The manufacturing sector, particularly the textile industry, faces high occupational accident risks due to inadequate Occupational Health and Safety (OHS) culture. This study evaluates the safety climate in the textile industry and examines the relationship between the seven dimensions of the NOSACQ-50 framework and the overall safety climate. Utilizing a descriptive quantitative, cross-sectional approach, data was collected from 100 purposively sampled workers through the NOSACQ-50 questionnaire, direct workplace observations, and interviews. Data was analyzed using univariate and bivariate (Spearman's rank) methods. Univariate results indicated a "good" overall safety climate with an average score of 3.06 across all dimensions. However, the dimension concerning OHS communication and coworker competence scored the lowest (2.95), identifying a specific area for improvement. Bivariate analysis revealed highly significant correlations between specific dimensions and the overall safety climate. Notably, employee commitment to OHS components demonstrated a very strong relationship (r = 0.783). Furthermore, employee safety priorities and workplace hazard control also exhibited a very strong and significant correlation with the safety climate (r = 0.787). In conclusion, while the general safety climate is good, prioritizing improvements in OHS communication is necessary. Fostering employee commitment and safety priorities plays a crucial role in maintaining a positive safety climate.

Abstract

Stunting among toddlers remains a persistent public health problem in low- and middle-income countries and is strongly associated with chronic undernutrition, including inadequate intake of omega-3 long-chain polyunsaturated fatty acids such as docosahexaenoic acid (DHA), which are essential for optimal growth and development. Lemuru fish (Sardinella lemuru), a locally abundant and affordable source rich in DHA, has considerable potential as the basis for food based snacks in sustainable nutrition interventions. In this study, stunted toddlers in the intervention group received the lemuru fish–based snack daily for 12 weeks (each serving provided 31.35 mg DHA); DHA distribution was performed once weekly. This study aimed to evaluate the effect of lemuru fish–based local snacks on Height-for-Age Z-score (HAZ) and DHA levels among stunted toddlers. A quasi-experimental study with a pretest–posttest control group design was conducted involving 28 stunted toddlers, equally divided into an intervention group (n = 14) and a control group (n = 14). The intervention group received lemuru fish–based snacks during the intervention period, while the control group received no supplementation. Measurements of HAZ and DHA levels were obtained before and after the intervention. Bivariate analyses indicated greater improvements in HAZ and DHA levels in the intervention group compared with the control group. After adjustment for child and household characteristics using a general linear model (ANCOVA), the intervention was associated with significant improvements in HAZ (B = 0.247; p = 0.038) and DHA levels (B = 7.554 mg/dL; p = 0.017). These findings indicate that lemuru fish–based local snacks effectively improve linear growth and DHA status and represent a promising, locally sourced strategy for stunting prevention and management.
