Abstract

Giving infants under six months of age only breast milk and no other fluids is known as exclusive breastfeeding. In Indonesia, 56.9% of women exclusively breastfeed, while 75.37% of women exclusively breastfeed in the province of Lampung. Aside from knowledge, attitudes, and behavior, factors that contribute to the lack of exclusive breastfeeding include productive age, employment, beliefs, family support, and health professionals. This research objective was to determine the correlation between maternal attitudes, family support, and early marriage with the success of exclusive breastfeeding in the working area of Kesumadadi Public Health Center in 2023.The type of research used is quantitative observational, with a cross- sectional research design. Sampling used a simple random sampling technique using the interview method. The statistical test used is chi-square with a degree of 95%.This study was carried out in the Kesumadadi Community Health Center Working Area between October 2023 and January 2024. The study's findings showed that 36 moms (or59%) had completed high school, 47 women (or77%) were stay-at-home moms, and 58 mothers (or95.1%) were adult (19-45 years old). In the Kesumadadi Public Health Center working area, statistical tests reveal a strong association between early marriage (p=0.039), family support (p=0.002), and mother attitudes (p=0.037) and the effectiveness of exclusive breastfeeding. It is hoped that moms will be able to continue exclusively breastfeeding their children, and that relatives will be able to assist these mothers financially and emotionally.

Abstract

Abon tuna fish as a product developed to increase nutritional value, especially iron, requires the addition of vegetables such as katuk leaves. Katuk leaves are known as breast milk facilitating vegetables. In addition, katuk leaves are also iron-rich vegetables to prevent anemia because the mineral content in katuk leaves is quite high, especially Fe which can be used to prevent fatigue due to anemia. This study aims to determine the acceptability and protein and iron content of shredded tuna fish (Thunnus sp.) with the addition of katuk leaves (Sauropus androgynus). This research method is pre-experimental research with a post test group design approach. In this study, shredded tuna fish products were developed with the addition of katuk leaves with three treatment concentrations of 15%, 20% and 25%. This research was conducted in January - February 2023 at the Organoleptic Test Laboratory of the Nutrition Department of the Makassar Poltekkes Kemenkes with 30 untrained panelists. Analysis of protein and iron content using Micro Kjeldahl and AAS (Atomic Absorption Spectrophotometry) methods. The results of the acceptability test were carried out using the Kruskall wallis test and continued with the Mann Whitney test. In the liking test, the most preferred color, aroma and taste were F1, the most preferred texture was F2. The highest protein content in F1 amounted to 39.72 g/100 g and iron in F3 amounted to 4.74 mg/100 g. Further studies need to be conducted on the utilization of shredded products

Abstract

A leading cause of death in Indonesia, with a fatality rate as high as 17.0%, is breast cancer. Energy consumption affects how proteins are metabolized during the growth of muscle mass, and eating both plant- and animal-based proteins is important for maintaining and increasing muscle mass. The purpose of this study was to look into the relationship between the amount of muscle mass and the calorie intake and consumption of animal and vegetable proteins among breast cancer patients. Using the quota sampling technique, 56 out of 291 patients with stage 2 breast cancer, ages 22 to 26, were selected for the study sample The research design was cross-sectional. Muscle mass was measured with a Karada Scan, and data on energy intake, animal protein, and vegetable protein were collected using a 3x24-hour recall. Analysis was done using the Spearman Rank test. The average calorie intake was determined to be 888.28 kcal, with 18.43 g of animal protein and 21.10 g of vegetable protein. Animal and vegetable protein did correlate (p-value = 0.000 and 0.001, respectively) with muscle mass, however energy and muscle mass did not (p-value = 0.664).

Abstract

Compementary Food (PMT) is food given to toddlers to meet the nutritional requirements that toddlers get from the daily food. Toddler Additional Food is nutrition supplementation in the form of additional food such as nuggets, meatballs, sausages, etc. for toddlers 6 – 59 months in the underweight category. In this research, used local food and functional foods are mackerel fish and tempeh flour to raw materials in complementary food of nuggets for toddlers of obtaining high protein content and other nutrients. This research is a quantitative with experimental methods using a completely randomized design with one factor, namely the formulation of tempeh flour nuggets with the addition of mackerel with three formulations. The object studied was the nugget treatment carried out in this research, the differences in the composition of the raw materials and the nugget characteristics. Formulation of three nugget for organoleptic quality test with 40 panelists mothers of toddlers. From the results of the organoleptic quality test, can be concluded that formulation 02 nuggets have the highest value can interpreted as being acceptable compared to formulation 01 or 03 nuggets from the aspects of taste, color, smell, and texture. The nugget formulation most preferred by the panelists explained that the protein content was 11.96%, which was higher than the control nugget (without the addition of tempeh flour and mackerel fish) on 4.85%. For toddlers aged 1 - 5 years who consume two nuggets equivalent to 60 grams every day can meet the daily protein of 35.9% - 28.7% of the protein requirement based on the 2019 Recommended Dietary Allowances (RDA).

Abstract

The production of crackers is still predominantly based on cereals from grains, resulting in relatively low protein content. Fish crackers, on the other hand, are processed foods that already contain animal protein based on previous research, but consumer panels have indicated that the aroma is still considered unpleasant. Therefore, the addition of a food ingredient containing plant protein that can neutralize the aroma is necessary. One such source of plant protein rich in fiber that can neutralize the aroma is mung bean flour. This study aims to determine the acceptance, protein, and fiber content of fish crackers with the addition of mung bean flour (Vigna radiata). This study employed a pre-experimental design with a one-shot case study design, utilizing three treatment formulas with mung bean flour ratios of 40% (F1), 50% (F2), and 60% (F3), with a standard formula without the addition of mung bean flour as the control (F0). The results showed that the addition of mung bean flour could affect the acceptance of fish crackers based on aroma (p=0.017) and taste (p=0.000), while color (p=0.131) and texture (p=0.435) were not significantly affected. The selected formula based on the accumulation of panelist preference acceptance percentages of 92-96% was Formula 1 (with 40% mung bean flour addition), which had a protein content of 16.63% and fiber content of 26.96%.

Abstract

The stunting rate in Indonesia is still relatively high, reaching 21.6% in 2022, including one district in South Sulawesi, namely Jeneponto Regency, where the stunting rate is still high, namely 39.8%. On the other hand, personal hygiene, history of infectious diseases and protein intake are still considered poor. This study aims to determine the relationship between personal hygiene, history of infectious diseases and protein intake with the incidence of stunting. This research is a cross sectional study. The sample for this research was 80 toddlers aged 6-24 months. This research was conducted in Bontomatene Village, Jeneponto Regency. The research instruments were a questionnaire and recall form. The analysis used is the chi square test. The results of the analysis showed that most of the samples had good personal hygiene, 73.8% and 26.2% had poor personal hygiene. History of infectious disease in the Yes category was 68.8% and the No category was 31.2%. Poor protein intake is 50% and 50% is good. The results of statistical tests show that there is no relationship between personal hygiene and the incidence of stunting (p= 0.810), there is no relationship between a history of infectious disease and the incidence of stunting (p= 0.672) and there is a relationship between protein intake and the incidence of stunting (p= 0.002) in the village Bontomatene, Jeneponto Regency. Mothers and caregivers need to increase their children's protein intake by feeding them animal and vegetable protein sources according to their age requirements, through the use of local foods.

Abstract

Chronic Energy Deficiency (CED) is a condition where there is a chronic lack of food which can result in health problems. Factors that influence the occurrence of Chronic Energy Deficiency (CED) in a person are a lack of nutritional intake, either for economic reasons or psychosocial reasons such as appearance or body shape. This study aims to determine the relationship between eating patterns and the incidence of chronic energy deficiency in adolescent girls. This research is an analytical observational study using a cross sectional research design with a proportionate stratified random sampling method. The sample was 78 Madrasah Aliyah Kanaeng students who were selected as samples. The statistical analysis used is Chi Square. The results showed that the sample had a poor diet as many as 44 people (56.4%), the good diet category was 34 people (43.6%), the sample had a KEK nutritional status as many as 57 people (73.1%) and the normal category was as many as 21 people (26.9%). The results of statistical tests show that there is a significant relationship between diet and the incidence of chronic energy deficiency (p value = 0.048). Future research can conduct research on other factors that can influence the incidence of CED in adolescent girls besides diet

Abstract

Dry noodles are generally made from wheat flour as the main ingredient, which is high in energy and low in other nutrients. The use of wheat flour also causes dependence on wheat imports. This study aims to determine the chemical characteristics of dried noodles substituted with yellow sweet potato flour and cork fish flour, which include moisture content, ash content, beta carotene and calcium. This type of research is a pre-experiment with a one-shot study case research design consisting of one standard formula and three treatment formulas with a concentration (%) of wheat flour: yellow sweet potato flour: cork fish flour each F0 (100:0:0), F1 (65:30:5), F2 (65:25:10), and F3 (65:20:15). Determination of moisture content was tested using the oven method, ash content using the dry sowing method, beta carotene content using the spectrophometer method, and calcium using the AAS method. The results showed that there was an increase in moisture content of 16.64%, ash content of 83.88%, beta carotene increased by 202.89% and calcium by 53.42% in dried noodles with substitutions of yellow sweet potato flour and cork fish flour compared to standard dried noodles. These results are supported by significant treatment differences in water content ρ-value = 0.008, ash content ρ-value = 0.001, beta carotene ρ-value = 0.001 and calcium ρ-value = 0.005. It is recommended for further research to pay attention to the process of making yellow sweet potato flour and processing dry noodles to maintain or minimise the decrease and damage to beta carotene levels.

Abstract

Breast milk is the best food for infants because it contains complete nutritional values to support infant growth and development. However, anatomical abnormalities in the nipple such as inverted nipple and psychological factors of post partum depression affect the success of breastfeeding practices.  This study was design  to determine the effect of post partum depression and inverted nipple grade 1 on breastfeeding practices. This study was used a case study method with a nutritional needs management approach for breastfeeding mothers on respondents who breastfeed babies aged 16 months, the Edinburgh Postnatal Depression Scale (EPDS) questionnaire is used to assess post partum depression and if the EPDS score ≥ 10 then the mother is indicated to have post partum depression. Data regarding inverted nipple in mothers using secondary data. Food recall 1 x 2 4 hours was used to assess the mother's food consumption pattern followed by calculation of the level of nutrient fulfilment to quantitatively assess the mother's macronutrient intake in terms  adequate or inadequate category. The total EDPS score was 13 so that the mother was included in post partum depression and based on secondary data and Aesthetic Surgery diagnosis guidelines, the mother was categorised as having inverted nipple grade 1. Both factors can hinder the continuity of breastfeeding practices. Support from husband and family as well as using the breast pump method on inverted nipples can help mothers to produce adequate amounts of breast milk. Quantitative analysis of the level of fulfilment of maternal nutrients in the adequate category, namely energy intake of 113% (good), protein intake of 113% (good), fat intake of 82% (moderate) and carbohydrate intake of 111% (good). Post partum depression and inverted nipple can inhibit breastfeeding practices, so premarital counselling and education about psychological disorders and anatomical abnormalities of the nipple during antenatal care (ANC) are needed for mothers and husbands to increase the success of breastfeeding practices for infants.

Abstract

Nutrition is one of the important components of the health sector that plays a crucial role in public health. Good nutrition is the foundation for individuals to reach their full potential. This study aimed to determine and analyze the effect of nutrition education based on Uno block game on improving knowledge and attitude of primary school children before and after receiving nutrition education. The study design was a quasi-experiment with a pre-test post-test design conducted at MI DDI Ujung Lare Parepare. The sample size was 44 participants. Knowledge and attitude towards nutrition were collected through questionnaires, and statistical analysis was performed using the Wilcoxon test. The results showed that the age of the students was mostly 10 years old (68.2%), the majority of students were in grade 4 (52.3%), and male students comprised 59.1% of the sample. The majority of fathers were entrepreneurs (27.3%), while the majority of mothers were civil servants/military/police officers (45.5%). The level of knowledge of students before and after receiving nutrition education was 63.6%. The level of attitude towards nutrition of students before and after receiving education was 95.5% and 100%, respectively. The statistical analysis showed that there was a significant difference in knowledge before and after receiving nutrition education (p=0.000). However, there was no significant difference in attitude before and after education (p=0.157). In conclusion, there was a significant improvement in nutrition knowledge after receiving education based on the Uno block game. However, there was no significant improvement in attitude towards nutrition. Further research is recommended to develop this study based on the Uno block game.
