Abstract

Chronic Energy Deficiency (CED) is a nutritional issue with long-term implications for the health and productivity of adolescent girls. This study aimed to analyze the determinants associated with CED among seventh- and eighth-grade students at SMP Negeri 44 Surabaya. Using an analytical observational design with a cross-sectional approach, the study involved 69 respondents selected via stratified random sampling. Data were collected through mid-upper arm circumference measurements, dietary intake questionnaires, assessments of nutritional knowledge, physical activity, and sociodemographic factors. Statistical analysis was conducted using the Chi-square test. The results showed a CED prevalence of 81.2%, with most respondents experiencing deficits in energy (89.9%) and carbohydrate intake (98.6%). Significant associations were found between energy intake (p=0.012), carbohydrate intake (p=0.037), and nutritional knowledge (p=0.015) with CED status. Other variables, including protein and fat intake, physical activity, parental education and income, and body image perception, were not significantly associated. The study concludes that low energy and carbohydrate intake, along with limited nutritional knowledge, are key contributors to CED. School-based nutritional interventions and parental involvement are essential strategies to prevent CED in adolescents.

Abstract

Iron deficiency anemia is a nutritional problem often affecting adolescent girls, leading to decreased concentration, fatigue, and developmental disorders. This study aimed to evaluate the acceptability and iron content of Beanka Crackers as an alternative nutritious snack for anemia prevention. An experimental design with three formulations was used: BKC0 (75 g wheat flour), BKC1 (45 g wheat flour, 25 g mung bean flour, 5 g kale leaf powder), and BKC2 (30 g wheat flour, 35 g mung bean flour, 10 g kale leaf powder). Acceptability was tested with 30 panelists using a hedonic scale to assess color, taste, aroma, and texture. Iron content was analyzed with Atomic Absorption Spectroscopy (AAS). Data were evaluated using the Kruskal-Wallis and Mann-Whitney tests. Results showed significant differences (p < 0.05) in color, taste, and texture, but not aroma. BKC1 achieved the highest overall acceptability (3.84) and texture score (4.07), compared with BKC0 and BKC2. BKC1 also contained the highest iron concentration at 0.0457 mg/g. In conclusion, BKC1 demonstrated the best acceptability and potential as an iron-rich snack for adolescents. Further product refinement is recommended to enhance sensory quality and strengthen its application as a functional food for anemia prevention.

Abstract

This cross-sectional study aimed to analyze menu variations, macronutrient intake (energy, protein, fat, and carbohydrates), and nutritional status among students living in the Ministry of Health Polytechnic Dormitory, Surabaya. A total of 76 students were selected using proportional stratified random sampling. Data collection included a menu variation questionnaire, seven-day menu cycle observation, 2×24-hour food recall interviews, and anthropometric measurements (weight and height) to calculate Body Mass Index (BMI). Results showed that menu variation was classified as quite varied (55.3%). However, most respondents experienced deficits in energy (82.9%), fat (42.1%), and carbohydrates (98.7%), while normal protein intake was achieved by 52.6% of students. Dormitory meals contributed approximately 70% of daily energy needs, with the remaining 30% obtained from outside food purchases. Most students had a monthly allowance between IDR 500,000–IDR 1,000,000. Nutritional status assessment revealed that 56.6% were in the normal BMI category, 15.8% were underweight (wasting), and 17.1% were obese. Statistical analysis using Spearman Rank correlation indicated no significant relationship between menu variation and nutrient intake, or between nutrient intake and nutritional status (p > 0.05). These findings highlight the need for improved dormitory menu planning and nutrition education to enhance dietary adequacy and support students’ health.

Abstract

Hygiene and sanitation are essential to ensuring food safety, particularly in the catering industry. The knowledge, attitudes, and practices (KAP) of food handlers significantly influence the quality and safety of food served. A preliminary study at “PJ” Catering Surabaya found that while food handlers had generally good knowledge, their attitudes and practices remained suboptimal. This gap between knowledge and practice is critical, as it increases the risk of food contamination, threatens consumer health, and can undermine trust in catering services. This study aimed to assess the hygiene and sanitation-related KAP of food handlers during food processing. A descriptive cross-sectional design was used, involving all seven food handlers through total sampling. Knowledge and attitudes were measured using structured questionnaires, and practices were observed directly. Data were analyzed descriptively using frequency distribution. Results showed that 71.4% of respondents had good knowledge and 71.4% had good attitudes. However, practices in ingredient selection, storage, and food serving were only sufficient (42.85–57.15%). These findings emphasize the need for continuous training and regular supervision to improve hygiene and sanitation practices. Strengthening these aspects is essential to ensuring consistent food safety, maintaining service quality, and protecting consumer health in catering operations.

Abstract

Introduction:  Approximately 66.6% of programs providing information, education and communication have been carried out to prevent stunting, but need to improve according to the need of target audience. After the covid-19 pandemic, there are challenges for outreach the IEC activities with an approach that directly reaches the family level. Aims: This study aims to find methods and themes of the IEC module that are more desirable by the community in preventing stunting. Methods: Qualitative research method with FGD (Focus Group Discussion) in 2 urban village locations in the city of Surabaya, followed by In-depth Interviews on several key informants. The descriptive analysis was divided into three stages, namely reduction, data presentation, and thematic conclusion drawing. Results: Based on the results of the FGD, 3 desired module topics were obtained, namely (1) early detection of stunting independently at the family level (2) the dangers of stunting for the growth and development of children's intelligence and (3) good eating behavior to prevent stunting. The method chosen is an interactive emo demo method with games while learning. Study showed that the emo demo approach was better at the family level considering that many mothers with stunting children often did not come to the posyandu. Conclusion:  The early detection, the cognitive dangers and the diet in preventing stunting were three themes chosen by community with emo demo method to deliver in the family level.The strength of this approach is to invite mothers to learn through playing and raising awareness in preventing stunting.

Abstract

Pregnancy is a critical period in which adequate nutrition is essential for both maternal and fetal health. This study aimed to evaluate the effect of natural product-enriched noodles, combining snakehead fish (Channa striata), Moringa oleifera leaves and okra (Abelmoschus esculentus), on the hemoglobin, hematocrit, and blood protein levels of pregnant women with chronic energy deficiency (CED). Stunting remains a significant public health problem in Indonesia, with a prevalence of 28.9% in Surabaya in 2021. Protein deficiency and anemia during pregnancy increase the risk of intrauterine growth restriction, low birth weight, and stunting. It was hypothesized that the combined nutritional properties of these ingredients — high protein and albumin from snakehead fish, iron and antioxidants from Moringa, and bioactive compounds from okra would synergistically improve maternal nutritional status. A Pre-Experimental One Group Pretest-Posttest Design was employed at Sidosermo Community Health Center, Surabaya, from June to September 2025. All 15 eligible pregnant women with CED at the study site were enrolled using total sampling (n=15); the small sample size and absence of a control group represent key study limitations affecting generalizability and causal inference. Participants consumed protein-enriched noodles made from modified cassava flour, snakehead fish, Moringa leaves, and okra three times per week for one month, a frequency and dose based on prior food-based supplementation programs in pregnant women. The noodle product was confirmed to be high in protein (14.22%) and microbiologically safe. Post-intervention, the number of anemia cases decreased from 11 to 4 participants, hematocrit normalized in 4 of 11 previously low cases, and blood protein levels normalized in 10 of 15 participants. As no inferential statistical analysis was performed, these findings should be interpreted with caution. These results suggest that locally sourced nutritional interventions have the potential to improve maternal nutritional status and contribute to reducing stunting prevalence in Indonesia.

Abstract

Overweight in women of reproductive age increases the risk of insulin resistance. Betatrophin, a hormone related to lipid and glucose metabolism, is considered a potential metabolic associated with insulin resistance risk. Despite increasing evidence linking betatrophin with insulin resistance and obesity, data regarding its association with dietary intake, body composition, and lipid profile among young overweight women in Indonesia remain limited. This study aimed to examine the correlation between dietary intake, physical activity, body composition, lipid profile, and menstrual cycle with betatrophin levels in overweight women aged 20–30 years. A cross-sectional study was conducted on overweight participants within this age group. Dietary intake was collected using repeated 24-hour recalls, while physical activity and menstrual patterns were obtained through questionnaires. Body composition, including fat and muscle mass, was measured using bioelectrical impedance analysis (BIA). Serum lipid profile and betatrophin concentrations were analyzed by ELISA. Spearman’s correlation test was applied to determine the relationships among variables. Betatrophin levels showed positive correlations with energy intake (r=0.566; p=0.0001) and fat intake (r=0.366; p=0.028). Fat intake and body fat percentage were positively correlated with total cholesterol and LDL, while muscle mass showed negative correlations with both. Although women with irregular menstrual cycles tended to have higher betatrophin levels, the difference was not significant. These findings suggest that dietary fat, energy intake, and body composition correlated to metabolic markers related to insulin resistance risk in overweight young women

Abstract

Adolescents frequently consume school snacks, which may pose health risks if safety standards are not maintained. This study aimed to assess the knowledge, attitudes, and practices (KAP) of students at SMP Negeri 1 Palu regarding school snack food safety. A descriptive-analytical design was conducted in August 2023 with 256 students from grades 7–9. Data were collected using a standardized KAP questionnaire provided by the Indonesian Food and Drug Monitoring Agency (BPOM RI) via Google Forms, administered under the supervision of trained PJAS cadres. Ethical approval was obtained from the Research Ethics Committee of Poltekkes Kemenkes Palu. Data were analyzed using SPSS 22.0 with univariate and bivariate methods. Results indicated that the majority of students demonstrated good knowledge (83.5%) about food registration, expiration dates, hygiene, and contamination risks. Positive attitudes toward safe food handling were observed in 89.8% of respondents, while safe practices, including avoidance of expired foods and contaminated packaging, were reported by 90% of students. However, occasional lapses were noted in utensil usage and purchasing from sick vendors. The findings highlight that students are generally aware of key food safety principles, but targeted educational interventions are needed to reinforce consistent safe practices. Implementing regular food safety education, canteen audits, and parental involvement may further enhance food safety compliance, contributing to improved adolescent health outcomes and safer school food environments

Abstract

Fructooligosaccharides (FOS) are a prominent class of prebiotics that confer significant health benefits. Utilizing local resources like Beneng taro (Xanthosoma undipes K.Koch) for FOS production offers a sustainable strategy to enhance food security and add economic value to underutilized regional crops. This study investigated the potential of Beneng taro as a novel substrate for FOS production utilizing a crude inulinase preparation from Aspergillus niger, based on the hypothesis that optimizing enzymatic conditions can maximize FOS yield and polymerization quality. To systematically evaluate multi-factor interactions with minimal experimental runs, a D-Optimal Response Surface Methodology (RSM) was justified and employed. The experimental setup incorporated three independent variables (crude inulinase dosage, hydrolysis temperature, and hydrolysis time) with all trials performed in triplicate to ensure statistical robustness. The statistical model successfully predicted the optimal hydrolysis conditions, achieving 0.733 as desirability value. Verification experiments performed under these optimized conditions validated the model's predictive accuracy, yielding a high-quality product with the target total sugar, reducing sugar, and degree of polymerization. These findings demonstrate the viability of Beneng taro as a sustainable substrate for optimized prebiotic production, bridging local agricultural potential with functional food development.

Abstract

The prevalence of stunting in Indonesia is still high. One of the factors that indirectly causes stunting is maternal factors due to the short distance between births, so, one of the efforts to accelerate the prevention and reduction of stunting is postpartum contraceptive. The problems with the use of contraceptives are unmet need. One of the factors causing unmet need is family planning education and counselling, which is not optimal. Decision-making on family planning is mainly done by the husband, who rarely accompanies his wife during counselling. Researchers have produced Si KB Pintar as a medium that clients and husbands can use to discuss contraceptives after being given family planning counselling. The purpose of the research is to determine the perception and use of contraceptive in Si KB Pintar users. This study uses a mixed-methods design in Cirebon City, Indonesia. The sample used a snowball sampling of 19 people interviewed. Data collection uses semi-structured interviews. The research instruments included  Si KB Pintar, in-depth interview guides, voice recorders, and questionnaires. Inductive thematic analysis was carried out, and the data was grouped into several themes, quantitative data (contraceptive use) were analyzed using descriptive statistics. According to the informant, the appearance Si KB Pintar is attractive, complete information, easy to use and understand, a medium for discussing with the husband, very useful, increasing the knowledge of mothers and husbands about family planning, and helping to make decisions about family planning. Most of informants (42%) use the long-term contraceptive method (IUD and Implant).
