Abstract

Hypercholesterolemia was a condition where the occurrence of fat metabolism disorders is characterized by an increase in total cholesterol levels in the blood that exceeds normal levels. High cholesterol levels will cause blockages in blood vessels and disrupt circulation of the circulatory system. One non-pharmacological therapy that can help reduce cholesterol levels is the provision of tomato and carrots pudding. Tomatoes and carrots are plants that contain antioxidants including carotenoids, vitamin C, vitamin E and lycopene and fiber which are good for reducing total cholesterol in the blood. This study aim to determine the effect of giving tomato and carrot pudding in reducing total cholesterol levels in outpatient hypercholesterolemia patients at Siti Khadijah Hospital, Palembang City. The method used in this study was a quasi-experimental study with a pre-test and post-test with control group design. The sample in this study was taken by purposive sampling with a total sample of treatment and control groups of 30 people each. Provision of tomato and carrot pudding is done for 7 days. Data analysis uses paired sample t-test and independent sample t-test. The Results of research showed an average difference in total cholesterol levels in the treatment group of 40.9 mg / dl (p-value = 0,000) and in the control group of 21.36 mg / dl (p-value = 0,000). Statistical test results (independent t-test) obtained p value <0.05 (0.001). The Conclusion from this study was tomato and carrot pudding have a significant effect in reducing total cholesterol levels in hypercholesterolemia patients.

Abstract

Abstrak Tujuan penelitian ini yaitu untuk mengetahui pengaruh substitusi umbi gembi terhadap nilai gizi dan mutu organoleptik kue umbi gembili. Metode yang digunakan dalam penelitian ini menggunakan metode eksperimental dengan satu faktor yang dicoba, yaitu proporsi tepung terigu dengan tepung umbi gembili yang terdiri dari 6 taraf yaitu: G1 = 100 : 0; G2 = 90 : 10; G3 = 80 : 20; G4 = 70 : 30; G5 = 60 : 40; G6 = 50 : 50. Rancangan yang digunakan dalam penelitian ini yaitu Rancangan Acak Lengkap (RAL) dengan 3 kali ulangan. Data dianalisis menggunakan Analysis of Variance (ANOVA) pada taraf keyakinan (level of confidence) 95% (α = 0,5%), apabila menunjukkan pengeruh nyata dilanjutkan dengan uji jarak berganda Duncan’s (Duncan’s Multiple Range Test) dengan tingkat keyakianan 95%. Hasil penelitian menunjukkan bahwa terdapat pengaruh proporsi tepung terigu dan tepung umbi gembili terhadap kadar air dan kadar protein dimana p<0,05. Proporsi tepung terigu dan tepung umbi gembili berpengaruh nyata terhadap mutu organoleptik kue yaitu Rasa (p<0,05), Warna (p<0,05) dan Tekstur (p<0,05) kue. Abstract The purpose of this research is to know the influence of a run tuber substitution against the nutritional value and quality of organoleptic cookies tuber gembili. The method used in this research is using an experimental method with a single factor that is tried, namely the proportion of wheat flour with tuber flour that consists of 6 levels: G1 = 100:0; G2 = 90:10; G3 = 80:20; G4 = 70:30; G5 = 60:40; G6 = 50:50. The draft used in this study was the complete randomized draft (RAL) with 3 times repeated. The Data was analyzed using Analysis of Variance (ANOVA) at a level of confidence of 95% (α = 0.5%), when it showed a real scraping followed by the double-spaced test of Dunn's (Dunn's Multiple Range Test) with a key rate of 95%. The results showed that there were influences in the proportion of wheat flour and bulb gembili to moisture content and protein levels where P is < 0.05. The proportion of wheat flour and tuber flour has a real effect on the quality of organoleptic cookies namely taste (P < 0.05), Color (p < 0.05) and Texture (p < 0.05) kue.

Abstract

Hypertension is a condition when the condition of the blood in the blood vessels increases chronically. This happens because the heart works harder to pump blood to meet the body's oxygen and nutritional needs. The purpose of this study was to determine the effect of sweet starfruit juice (Averrhoa carambola) on blood pressure reduction in hypertensive patients. Using a literature review research method through a journal review on the effect of giving sweet starfruit juice (Averrhoa carambola) on blood pressure in patients with hypertension. Article searches are accessed from Google Scholar data. This narrative literature review was carried out on several research articles and literature review articles published in the last ten years. From the results of the data search conducted through this literature review, there are six sources of data obtained which are related to the effect of giving sweet starfruit juice (Averrhoa carambola) on blood pressure in hypertensive patients. From giving sweet starfruit juice to hypertensive patients, many have resulted in a decrease in blood pressure after giving sweet starfruit juice to hypertensive patients. Of the six data sources reviewed, there was a decrease in blood pressure after giving starfruit juice to hypertensive patients. Giving star fruit juice is a simple way that can help reduce the risk of hypertension.

Abstract

ABSTRAK Diare merupakan penyakit yang paling banyak menimpa pada anak. Diare pada anak dapat terjadi karena berbagai sebab sedangkan stunting merupakan kondisi gagal tumbuh pada bayi (usia 0-11 bulan) dan anak balita (usia 12-59 bulan) akibat dari kekurangan gizi kronis terutama dalam 1.000 hari pertama kehidupan sehingga anak terlalu pendek untuk usianya. Tujuan dari penelitian ini adalah untuk mengetahui hubungan tingkat pendidikan ibu dan diare dengan kejadian stunting di Puskesmas Tungoi. Jenis penelitian ini bersifat analitik observasional dengan desain kasus cross sectional dan dilaksanakan di wilayah kerja Puskesmas Tungoi Kecamatan Lolayan Kabupaten Bolaang Mongondow tanggal 10 Februari sampai 24 Februari 2020. Teknik pengambilan sampel yaitu purposive sampling dengan jumlah sampel 34 balita dan menggunakan uji Fisher’s Exact Test. Hasil penelitian menunjukkan bahwa tidak terdapat hubungan yang bermakna antara tingkat pendidikan ibu terhadap kejadian stunting pada anak 3-5 tahun di Puskesmas Tungoi dengan nilai p=0.196. Untuk penyakit diare, tidak terdapat hubungan yang bermakna antara penyakit diare terhadap kejadian stunting pada anak 3-5 tahun di Puskesmas Tungoi dengan nilai p=0.317. Abstrack Stunting is a condition of failure to thrive in infants (ages 0-11 months) and toddlers (ages 12-59 months) due to chronic malnutrition, especially in the first 1,000 days of life, so the child is too short. for her age. Toddlers are said to be short if the z-score for body length according to age (PB / U) or age height (height / age) is less than -2SD / standard deviation (stunted) and less than -3SD (severe stunted). The purpose of this study was to see the relationship between maternal education level and diarrhea with the incidence of stunting at Tungoi Health Center. This type of analytic observational research with cross sectional case design. This study describes the relationship between maternal education level and diarrheal disease on the incidence of stunting in children aged 3-5 years at Tungoi Health Center. The research was conducted in the working area of ​​the Tungoi Community Health Center, Lolayan District, Bolaang Mongondow Regency on February 10 to February 24, 2020. The sampling technique was purposive sampling with a sample size of 34 children under five and using Fisher's exact test. The results showed that there was no relationship between the level of maternal education and the incidence of stunting in children under 3-5 years old at the Tungoi Health Center with a value of p = 0.196. For diarrheal diseases, there is no close relationship between diarrheal disease and the incidence of stunting in children 3-5 years at the Tungoi Health Center with a value of p = 0.317.

Abstract

ABSTRAK Malnutrisi merupakan keadaan kurangnya asupan zat gizi baik makronutrien maupun mikronutrien, jika dibandingkan dengan kebutuhan hariannya. Salah satu masalah gizi kurang dengan prevalensi tinggi di Indonesia adalah stunting. Stunting merupakan hasil dari gagalnya pertumbuhan anak sehingga tinggi badan anak sangat rendah dan tidak sesuai dengan perbandingan usianya. Penelitian bertujuan untuk memberikan suplementasi makanan ringan (snack) berbahan dasar pangan lokal tepung tulang ikan malalugis (Decapterus SPP) dan Bihun dalam meningkatkan status gizi anak balita stunting usia 1-2 tahun. Jenis penelitian adalah penelitian bersifat quasy eksperiment one group design pre and post test. Sampel berjumlah 37 anak balita stunting 1 – 2 tahun. Pengambilan sampel dilakukan dengan cara total sampling. Data karakteristik dikumpulkan dengan wawancara menggunakan kuesioner, data komsumsi zat gizi mengunakan formulir recall 24 jam sebelum dan sesudah intervensi. pengukuran tinggi badan menggunakan mikrotois. Uji statistik yang digunakan uji t-tes pada tingkat kepercayaan 95% dan batas kemaknaan p<0,05. Hasil penelitian rata-rata nilai tinggi badan sampel sebelum intervensi sebesar 77,63 cm dan nilai tinggi badan sesudah intervensi adalah 78,17 cm, peningkatan nilai tinggi badan 0,54 cm sesudah dilakukan inervensi. Derajat z-scor stunting sebelum dilakukan intervensi 21 sampel (56,76%) dengan derajat stunting -2SD dan 16 sampel (43,24%) dengan derajat stunting -3SD. Setelah intervensi derajat z-skor stunting sampel tidak mengalami perubahan. Ada perbedaan tinggi badan sebelum dan sesudah intervensi pada anak balita stunting. Ada perbedaan konsumsi zat gizi (Energi, Protein, Karbohidrat, Lemak, Kalsium dan Zink) sebelum dan sesudah intervensi. One of the malnutrition problems with high prevalence in Indonesia is stunting. Stunting is the result of failure to develop a child so that the child's height is very low and does not match the age ratio. This study aims to provide snack supplementation made from local food, malalugis fish bone meal (Decapterus SPP) and vermicelli in improving the nutritional status of stunting children aged 1-2 years. This type of research is a quasy experimental one group design pre and post test. The sample consisted of 37 children under five with 1 - 2 years of stunting. Sampling was done by total sampling. Characteristic data were collected by interview using a questionnaire, nutritional consumption data using a 24-hour recall form before and after the intervention. measurement of height using microtois. The statistical test used was the t-test at the 95% confidence level and the limit of significance p <0.05. The results of the study the average height value of the sample before the intervention was 77.63 cm and the height value after the intervention was 78.17 cm, an increase in the height value of 0.54 cm after the intervention was carried out. The degree of stunting z-score before intervention was 21 samples (56.76%) with a stunting degree of -2SD and 16 samples (43.24%) with a stunting degree of -3SD. After the intervention, the stunting degree of the sample did not change. There are differences in height before and after the intervention in stunting children under five. There were differences in the consumption of nutrients (energy, protein, carbohydrates, fat, calcium and zinc) before and after the intervention.

Abstract

ABSTRACT Geographically, Indonesia is in an area prone to natural disasters, including disasters caused by volcanic eruptions, because it has so many volcanoes. The impact causes residents to evacuate, leave their homes and live in refugee camps with all the limitations, in the form of food problems, clean water facilities, and medicines, resulting in emergencies in health and nutrition issues. Objective: the compilation of toddler food menus using local food products in overcoming the nutritional problems of children 3-5 years after a volcanic eruption. Method: The research design was a Research and Development Research of a 7-day menu recipe that was carried out at the Nutrition Culinary Laboratory Department of Nutrition Polytechnic Ministry of Health of Manado. The data is processed by doing an Acceptance Test by conducting a Hedonic Test and Acceptance Test. Results: shows the average results obtained from assessments for the quality and quality of each menu including: staple food, animal side dishes, vegetable side dishes, vegetables, fruit and beverages according to the results. so that it can be used in areas that have experienced volcanic eruptions or other disasters. The needs of the average energy and nutrients have met the requirements for children aged 3-5 years, namely Energy: 1350-1400 kcal, Carbohydrates: 215-220 gr, Protein: 20 25 gr and Fat: 45-50 gr. Conclusion : Today's diet pattern7 can be used to overcome nutritional problems in children aged 3-5 years who experience catastrophic volcanic eruptions both standard and nutritional needs Key word: Menu Pattern,Local Food,Children 3-5 Years, Mountain Eruption ABSTRAK Secara geografis Indonesia berada pada daerah yang rawan bencana alam, termasuk bencana akibat gunung meletus, karena memiliki banyak sekali gunung berapi. Dampaknya menyebabkan penduduk harus mengungsi, meninggalkan tempat tinggalnya dan hidup di pengungsian dengan segala keterbatasan, berupa masalah makanan, sarana air bersih, dan obat-obatan, sehingga mengakibatkan kedaruratan dalam masalah kesehatan dan gizi. Tujuan : tersusunnya menu makan anak balita menggunakan produk pangan lokal dalam mengatasi masalah gizi anak 3-5 tahun pasca erupsi gunung. Metode : Disain penelitian adalah Penelitian Pengembangan (Research and Development) resep menu 7 hari yang dilaksanakan di Laboratorium Kuliner Gizi Jurusan Gizi Poltekkes Kemenkes Manado. Data diolah dengan melakukan Uji Daya Terima (Acceptance Test) dengan melakukan Uji Kesukaan (Hedonik) dan Uji Daya Terima. Hasil : menunjukkan hasil rata-rata diperoleh dari penilaian untuk kualitas dan mutunya setiap menu meliputi : makanan pokok, lauk hewani, lauk nabati, sayuran, buah dan minuman sesuai. sehingga dapat dipakai pada daerah yang mengalami bencana erupsi gunung ataupun bencana lainnya. Kebutuhan rata – rata energi dan zat gizi telah memenuhi persyaratan untuk anak berumur 3 – 5 tahun yaitu Energi : 1350 – 1400 kkal, Karbohidrat : 215 – 220, Protein : 20 25 gr dan Lemak : 45 – 50 gr. Abstract

Stunting is a major public health problem in low and middle income countries. Overcoming malnourished toddlers. Can be done by providing energy and protein-dense formulas. Consumption of Moringa leaves is an alternative to overcome cases of malnutrition in Indonesia. This type of experimental research uses organoleptic test research design to measure the preference level of stunting toddler food formulas. The results of the test of the level of preference for the color, taste, texture and aroma of Moringa porridge were carried out three times in the test, there were many who chose to like the 30.0% color test, in the taste test many chose to like it a little (45.0%), for the texture test many chose like 40.0% and for the aroma test, many people prefer to like it (32.5%). Conclusion: Moringa porridge has an influence on physical characteristics, organoleptic hedonic color, taste, texture and aroma. The more moringa powder used, the lower the color brightness of the moringa pulp and also the texture. The higher the addition of Moringa leaf powder will have an effect on the increase in aroma and bitter taste.

Abstract

Background: Cempedak is a fruit that is one of Indonesia’s native plants. Cempedak fruit containsa lot of water amount up as much as 67% which makes the fruit easily rotten and can not be stored for a long period of time. In Kalimantan, people often process cempedak as a traditional food called mandai. Mandai fermentation process is part of the efforts to preserve food to be available for a long time as well as an efforts to use waste from the consumption of cempedak fruit. Method: This type of research is a pure experiment with several treatments. In this research,several variables were used to examine the physical properties, organoleptic properties and vitamin C level. The experimental design provided is thr Complete Randomized Design (CRD) with one unit of experiment, 3 treatment variations and 3 repetitions. With the use of salt solution concentrations of 5%, 10% and 15%. Results: The results stated that the concentration of salt solution had an effect on the physicalproperties of the mandai, thus are in color, aroma, taste and texture. The results of organoleptic research stated that there is an effect of the concentration of salt solution on the cempedak skin on the level of color preference, aroma, taste, texture and overall the mandai with the most preferred salt solution concentration level, is the mandai with 5% salt solution. There is no effect of the concentration of salt solution on the cempedak skin on the vitamin C levels. Conclusion: There is an influence on the physical and organoleptic properties of mandai and thereis no effect of the salt solution concentration on mandai vitamin C levels.

Abstract

ABSTRACT Background: Prevalence of anemia in woman aged > 15 years old is 22,7 %. Anemia in adolescent girls is one of the health problems in Indonesia, which must be solved immediately. It will be a risk on their pregnancy and birthing. Knowledge of woman about anemia is quite low. The government efforts to reduce the prevalence of anemia through prevention and treatment programs for anemia in adolescents and woman reproductive age, by iron supplementation through school institutions. Objective: To know the effect of anemia prevention and control programs on increased knowledge, complience to iron splement consumption and Hb levels. Methods: This study was quasi-experimental study with one group pretest post-test design. The research was conducted since July until October 2019. The sample in this study were 52 female students of MAN Labuan Bajo NTT who met the inclusion criteria. Knowledge was taken by means of a test using a questionnaire, compliance was taken from the iron supplement consumption and Hb levels were taken with Easy Touch GCHb.. Statistical analysis used the Dependent t-test. Result: The results showed an increase in the value of knowledge after intervention 9.49 and an increase in Hb levels by 0.75 gr / dl. There was no difference in the number of tablets taken after the intervention. Conclusion: Prevention and treatment of anemia programe increases knowledge and Hb levels. Complience of iron suplement consumption is high because of supervision from teacher.

Abstract

Abstract Young women are at higher risk of developing anemia compared to adolescent males because each month is subjected to menstrual cycles and has wrong eating habits such as lack of protein intake, iron intake and vitamin C intake which plays an important role in preventing anemia. The purpose to know the relation of protein intake, iron, and vitamin C with the incidence of anemia in the student college Poltekkes in Aceh Kemenkes. This type of research using Cross sectional method is performed in January 2020 in the Department of Nutrition Poltekkes Kemenkes Aceh. The process of collecting the intake data using a SQ-FFQ questionnaire and calculated with the nutrisurvey software while Hb Using the Easy Touchtool. Then data is processed by testing the statistical Chi-Square. Most of protein intake is adequate 48sample (84,2%),iron intake isdecrease 49 sample (86%),vitamin C is adequate 32 sample (56,1%). There is a significant connection between intake of proteins with the incidence of anemia. While iron and vitamin C with the incidence of anemia has no significant relation. It is expected to student of D-IV Nutrition in Health Polytechnic of Aceh can increase the intake of iron and vitamin C to prevent anemia.
