Abstract

The increase of the community consumption of animal food origin, especially chicken, is continuing to rise. In the process of animal slaughter in slaughterhouse, there are the high numbers of fraudulence, which affect to the food security issues. Therefore, the government made the regulation not only the central government regulations but also the local government regulations regarding poultry slaughterhouse license in order to the poultry slaughterhouse could be operated with the standard of hygiene, food safety, halal matter, animal welfare, and not pollute and disrupt the environment. In addition to the existing of the permit of local governments, it is expected to do monitoring and controlling easier to the slaughterhouse in their territory. But, there are still many chicken carcass those are distributed on the market which are derived from illegal (does not have formal permission) poultry slaughterhouse so that the hygiene and the halal matter are doubtful. The purpose of this study is to find the obstacles in regulations of the building of poultry slaughterhouse, which led many slaughterhouse, especially small and medium sized slaughterhouse, and trouble in getting license of the building of slaughterhouse legally. It is to be expected that this research can be the input for the government in making  policy to ease the small and medium poultry slaughterhouse in legalizing their business. In addition, the research is expected to draw the situation and condition  to the stakeholders of poultry slaughterhouse about the procedures and regulations in the region, especially debotabek, in building of the industry of poultry slaughterhouse.

Abstract

One of the popular livestock product in Indonesia is chicken meat. Poultry farm use antibiotics to treatment of poultry disease, therapy, supportive or prevention and food additive to improve chicken performance. However, use antibiotic not suitable with regulation can be residues to poultry product. The residues can affect various disease such as allergy, toxicity, affecting intestinal flora, immune response, resistance to microorganisms and etc. The purpose of this study is to know about how many case of residue antibiotic in indonesia and improve awareness poultry farmers and consumer about the dangerous of antibiotics in poultry product. In 1993- 2004 case about antibiotics residues in poultry product in indonesia was found. The range of antibiotic residues found in chicken meat is 8% -70%. The case antibiotics residues in poultry product found in some area with different various types antibiotics. Antibiotics residues case in 2011-2016 in Indonesia was decrease, even some research not found the antibiotics residues case in poultry product. But, another researcher found antibiotics residues from tetraciclyn in poultry product with small concentration (4,1% and 4,17%). While, antibiotics residues case in chicken liver is more than antibiotics residues case in chicken meat (4.17% -83.3%).

Abstract

Indonesia local duck has the potential to produce meat, but its growth is still slow. Therefore it needs the effort to improve the performance. One of the effort is using feed additive in the diet. Feed additive aimed to be appetizer and improve performance. Materials that can be used as feed additive are beluntas and kenikir because of their active compounds that can increase the appetite. This study aimedto examine the performances of local duck fed beluntas or kenikir as feed additive. The experimental design used was randomized design with 7 treatments and 5 replications. The treatment was the addition of beluntas or kenikir leaf meal in the diet during 1, 2or 3 weeks before being slaughtered. Variables observed were feed consumption, fenolik and tanin consumption, body weight, weight gain, percentage of carcass, chest, thigh, and abdominal fat. The results showed that the effects of beluntas or kenikir were not significant on performance (feed consumption, fenolik consumption, tanin consumption, body weight, and feed conversion) as well on carcass quality (carcass, abdominal fat, meat-bones of chest and thigh). Feeding beluntas or kenikir leaf meal 1% for 1, 2 or 3 week as feed additive did not improve the performances of local duck.

Abstract

The objective of this research was to predict swamp buffalo weight using simple linier body measurement. The height of wither (TB), height of hip (TP), heart girth (LiD), width of chest (LD), dept of chest (DD), width of hip (LP), thurl length (PK), width of rump (LK), body length (PB) were measured in centimeters using measuring rib, one meter ruler, and measuring stick, whereas body weight was determined in kilograms using two tons weighing scale. Linier body measurement ratio between male and female swamp buffaloes was analyzed using t-test analysis. The relationship between linier measurement variables were analyzed using correlation analyisis. Body weight estimator was estimated using best subset regression, linier regression and multiple linier regression analysis. Result of T-test analysis showed that linier body measurement between male and female buffaloes have significant difference in hearth girth, height of hip and body length.  Result of coefficient analysis showed that heart girth and height of hip have a highly correlation with body weight of male and female swamp buffalo. Estimation of swamp buffalo body weight could be estimated through multiple regression with heart girth and height of hip variables. It could be concluded that weight of swamp buffalo can be estimated using multiple linier regression formula, BB = 3.6435LiD + 0.1208TP - 265.43 for male swamp buffalo and BB = 4.1783LiD – 0.3086TP - 305,19 for female swamp buffalo.

Abstract

Duck eggsplay a role inmaking salted eggs. This is becausethe duck eggshavea higherfat contentandlowerwater contentthanthose from chicken eggs or another poultry eggs. However, saltiness and grittiness level of salted eggs that were prefered byconsumers are still unknown. So the aim of this study was to evaluate the physical, chemiccal and organoleptic characteristics of salted eggs by salting with pressure level and salt concentration different.180 fresh duck eggswere used. This research used factorial pattern of complete randomize design 3x2. As treatments were pressure levels (0 bar, 1.5 bar, and 3 bar) and salt concentrations (20% and 25%).The parameters that observed included physical characteristic (grittiness level of salted egg yolk), chemical characteristics (contents of water and NaClin eggwhite and yolk), and organoleptic characteristics (general appearance, saltiness and grittiness of salted eggs). Data of physical and chemical characteristics were descriptivelly analyzed, while data of organoleptic characteristics were non-parametric statistically analyzed. The high level of pressure and the salt concentration that used in salting eggs produced salted eggs with the value of grittiness and NaCl content were high, but the value of water content was low. Combination of treatment without pressure (0 bar) with 20% and 25% salt concentrations, and on 1.5 bar pressure level with 20% salt concentration produced the salted egg that more prefered by panelists.

Abstract

Nitrate or nitrite that used on dendeng making as antioxidant agent and color stabilizer could forming toxic compound (nitrosamine). The Formation of nitrosamine could be inhibited by addition of natural antioxidant that contained in the fruits such as strawberry (Fragaria ananassa). The aim of this study was to evaluate the influence of stawberry as curing ingredient on physical properties and antioxidant activity of dendeng. Dendeng was made by addition of spices and combination of nitrite (0 ppm and 125 ppm) and strawberry (0%, 10%, 20%, 30%) addition. Sample for analysis used fried dendeng. The result showed that pH value  were  affected  by  additon  of  nitrite  and  strawberry    (P<0.01),  but  the objective color was affected by addition of nitrite only. Strawberry addition affected antioxidant activity of dendeng that was evaluated by scavenging activity on radical DPPH and antioxidant capacity (P<0.05). Interaction factor affected water activity and total phenolic content of dendeng (P<0.05). As conclusion strawberry addition up to 30% could be used as curing agent on dendeng making and increased antioxidant activity on dendeng product.
