Abstract

Tahu merupakan makanan tradisional Indonesia yang memiliki banyak keunggulan sebagai bahan pangan dan prosespembuatannya sangat sederhana. Namun demikian, pengetahuan masyarakat tentang tahu dan cara membuat tahu yangsehat masih rendah. Oleh sebab itu, pengabdian pada masyarakat ini bertujuan untuk meningkatkan pengetahuanmasyarakat tentang tahu sebagai makanan yang sehat dan cara pembuatan nya. Kegiatan pengabdian dilakukan padawarga WKRI Paroki St. Maria Fatima, Sentul City, Bogor 16810 dengan menggunakan metode penyuluhan,demonstrasi, dan pendampingan. Monitoring dilakukan untuk mengukur tingkat keberhasilan peserta dalammemproduksi tahu sehat. Persepsi peserta tentang tahu dievaluasi melalui metode survei dan peningkatan pengetahuandiukur melalui test (pretest dan post test). Hasil penyuluhan, demonstrasi, dan pendampingan berhasil meningkatkanketerampilan peserta yang terlihat dari keberhasilan peserta dalam mengikuti prosedur pembuatan tahu. Hasil tersebutjuga diperkuat oleh hasil monitoring dimana seluruh peserta berhasil membuat tahu yang sehat. Hasil surveimenunjukkan peningkatan pengetahuan peserta tentang tahu sehat dan peningkatan motivasi peserta dalammemproduksi tahu sehat secara mandiri. Penilaian peserta tentang jalannya kegiatan pengabdian sangat baik terutamadalam meningkatkan pengetahuan (89% menyatakan sangat setuju dan sisanya setuju). Kemampuan fasilitator dalammenyampaikan materi juga dinilai baik oleh peserta (53% menyatakan sangat setuju dan sisanya setuju). Sebagaitindak lanjut peserta menyatakan bahwa mereka akan membagikan pengetahuan kepada teman dan keluarga. Salahsatu bukti nyata dari keberhasilan pelatihan ini ialah salah satu peserta yang menjadi pengusaha tahu.

Abstract

The mlx56 gene family is found exclusively in the mulberry (Morus spp.) plant, and its role is to defend against insect herbivores, yet it had never been discovered from Indonesia, which has been cultivating mulberry silkworm's (Bombyx mori) feed in order to produce silks. This research focused on studying the expression of mlx56 gene family in local mulberry plants from Bogor, West Java, using different plant organs which were leaf, stem, and root. Each sample was collected from four species of mulberry; Morus alba var. kanva-2, M. alba var. multicaulis, M. bombycis var. lembang, and M. cathayana. Genomic RNA samples were collected and synthesized into cDNA, amplification was done using eight primers of the mlx56 gene family and the products were sequenced. Sequences were then analyzed by BLAST. Results showed diverse mlx56 gene family expression among species of mulberry and plant organs. The mlx56-2, mlx56-4, and mlx56-7, were mostly expressed in all species and organs. The gene mlx56-3, which was not discovered in the previous study, was expressed in M. cathayana leaf and root also in the roots of other species. It was identified as chitinase-like protein LA along with mlx56-5, while other genes were identified as mlx56 based on BLAST.

Abstract

Tempeh is a traditional Indonesian food that has many advantages as food and the process of making it is quite simple. However, the community knowledge about tempeh and the skills to produce healthy tempeh are still low. This community service aimed to increase the knowledge about tempeh and to improve the skills of its manufacturers in making healthy and good quality tempeh. The activities were carried out for mothers living in Villa Dago Tol complex, Ciputat, South Tangerang 15414, by using the methods of counseling, demonstration, and mentoring. Monitoring was conducted to measure the success rate of participants in producing healthy tempeh. The level of community knowledge about tempeh was evaluated through survey method. The results of counseling, demonstration, and mentoring succeeded in improving the participant skills as seen from the participants' success in following the healthy tempeh-making procedure. The results were also reinforced by the results of monitoring where all participants managed to create healthy tempeh. Survey results showed participants’ increasing knowledge of healthy tempeh and motivation in producing healthy tempeh. Assessment of participants showed good results, especially in improving knowledge (73% stated strongly agree and the rest agree). The ability of the facilitators in delivering the material was also considered good by the participants (92% stated strongly agree and the rest agree). As a follow-up, the participants suggested that the training be extended to the other communities and the training also include a variety of topics such as the manufacturing of tofu, healthy food processing, sewing, and many others.

Abstract

Tofu is a traditional Indonesian food that has many advantages and is made with a very simple manufacturing process. However, knowledge about tofu and the process of making hygienic and healthy tofu is still low in Indonesia. Therefore, the present community service aims to improve public knowledge about tofu as a healthy food and how tofu is made. The community service activities were implemented to residents of the WKRI at Paroki St. Ignatius Loyola, Semplak, Bogor 16310, which consisted of counseling, demonstration, and mentoring methods. Monitoring was conducted to measure the level of success achieved by participants in producing healthy tofu. Participants' perceptions about tofu were evaluated through a survey method and improving knowledge was measured through tests (pretest and posttest). The results of counseling, demonstration, and mentoring succeeded in improving the participants' skills as evidenced by their success in making hygienic and healthy tofu. The survey results showed participants' improving knowledge about hygienic and healthy tofu and participants’ higher motivation to produce hygienic and healthy tofu independently. All participants appreciated the community service activities. They also appreciated the exceptional ability of the facilitator in delivering the materials.

Abstract

The accession of mulberry (Morus sp.) with salinity tolerance unavailable in Indonesia is needed to overcome the problem of marginal land, especially in the saline areas of the country. Therefore, this research aims to determine the accession of salinity tolerance of mulberry from 6 origins in Indonesia based on growth and physiological parameters. The method used was a factorial randomized block design with the first treatment of stem cutting-derived mulberry accession being M1, M2, M3, M4, M5, M6, and M7, while the second was the concentration of NaCl at 0 mM, 40 mM, 60 mM, and 80 mM. The results showed that M2 accession from Bogor was categorized as tolerance to high salt stress, and M1 was classified as sensitive accession. Increasing salt concentration causes a decrease in growth parameters. It also decreased physiological parameters such as leaf and media relative water content while increasing dissolved sugars. Genotypic scores indicate salinity tolerance and the potential number of leaves, while Na+ content and leaf necrosis percentage showed sodium toxicity in the leaf. Therefore, genotypic score, Na+/K+ ratio, and leaf necrosis percentage are the best parameters to select and identify mulberry accession with high salt stress tolerance.

Abstract

Tempe merupakan makanan fermentasi asli Indonesia yang murah dan mengandung gizi. Pembuatan tempe yang higienis sangat menunjang kualitas tempe yang baik untuk dikonsumsi. Pemahaman dalam pembuatan tempe yang higienis dan tersedianya masakan berbasis tempe masih menjadi permasalahan bagi masyarakat Indonesia, salah satunya di daerah Ciomas. Dalam rangka mengatasi tantangan ini, kegiatan pengabdian kepada masyarakat yang dilakukan bertujuan memberikan pemahaman yang lebih baik kepada mitra, yaitu ibu-ibu PKK warga RT 4, RW 10, Desa Ciomas, Bogor, Jawa Barat, tentang pembuatan tempe yang aman dan higienis serta pembuatan inovasi masakan berbasis tempe sehingga dapat meningkatkan ekonomi masyarakat. Kegiatan pengabdian ini dilakukan dalam tiga tahapan, yaitu pelatihan pembuatan tempe higienis pada 28 Juli 2023, peningkatan kemampuan masyarakat berinovasi makanan berbasis tempe pada 17 Agustus 2023, serta pembentukan komunitas masyarakat tempe pada 2 September 2023. Kegiatan tahap 1 diikuti oleh 36 peserta yang telah mengikuti pelatihan dan dapat membuat tempe sendiri. Hal ini dibuktikan dengan 100% peserta dapat membuat tempe. Kegiatan lomba kreasi aneka olahan tempe dilaksanakan pada tahap ke-2 dan menghasilkan masakan berbasis tempe yang siap dijual. Pada kegiatan tahap ke-3 dilakukan penyebaran kuesioner untuk mengukur keberhasilan rangkaian kegiatan pengabdian. Hasil kuesioner menunjukkan bahwa ada peningkatan pengetahuan tentang tempe dan keterampilan dalam memproduksi tempe secara mandiri sehingga mampu mengoptimalkan potensi bisnis tempe. Pada kegiatan tahap ke-3 juga dibentuk komunitas masyarakat tempe, yaitu desa wisata ”Kampung Tempe Ciomas.” Komunitas masyarakat tersebut diharapkan mampu meningkatkan ekonomi mitra.

Abstract

Hidroponik dapat menjadi salah satu sarana pembelajaran tambahan bagi para siwa/i untuk mencapai pembangunan berkelanjutan/sustainable development goals (SDGs). Dengan adanya kegiatan pengabdian kepada siswa/i SMP Athalia yang dilakukan oleh tim dosen Fakultas Teknobiologi bersama mahasiswa, perangkat hidroponik yang tadinya tidak dapat dimanfaatkan karena tanaman terkena air hujan sehingga menyebabkan tanaman merunduk dan minimnya pengetahuan terkait hidroponik dapat teratasi. Pelatihan dilaksanakan secara luring yang meliputi teori dan praktik teknik hidroponik yang diharapkan dapat memaksimalkan pemanfaatan fasilitas hidroponik yang telah ada. Hasil monitor selama empat minggu dengan menggunakan tanaman sawi hijau, bayam merah, dan sawi pagoda dengan parameter tinggi daun, jumlah daun, dan bobot basah tanaman menghasilkan bayam merah memiliki pertumbuhan terbaik dengan bobot basah sebesar 17,26 gram. Evaluasi dan kuesioner kegiatan dilakukan dalam bentuk Microsoft Forms. Evaluasi pengetahuan serta pemahaman dari para siswa/i menunjukkan perubahan signifikan yang dapat dilihat dari peningkatan jumlah jawaban benar para siswa/i yang sebelumnya kurang tepat menjadi hampir keseluruhan siswa/i benar. Keseluruhan kegiatan workshop sudah berlangsung dengan cukup baik dan memadai, baik dalam hal perlengkapan, kesiapan, persiapan, maupun dari segi panitia.

Abstract

The Villa Ciomas RW 10 Farmer Group (PokTan Vici 10), actively engaged in urban farming in Ciomas Rahayu Village, Bogor, West Java, has been utilizing a small plot of land located next to the Cisindangbarang River. Their urban farming area already includes a small fishpond but lacks aquaponics equipment. The community service team aims to enhance the utility of the urban farming facilities by installing aquaponics equipment, providing workshops on basic hydroponics and aquaponics knowledge, exploring its business potential, and offering hands-on hydroponics and aquaponics cultivation practice. Throughout the program, the team also conducts monitoring and guidance to ensure successful implementation and address any challenges encountered during the training program. The hydroponic/aquaponics equipment installation was successful; however, nutrient supply from the fishponds only was initially suboptimal, prompting the addition of hydroponic nutrients. Hydroponic techniques were also introduced for vegetable cultivation. Based on a questionnaire analysis conducted before and after the training, the program positively impacted participants, significantly enhancing their knowledge and aquaponic skills (Wilcoxon signed-rank test, p<0.05). In conclusion, the aquaponics equipment was successfully installed, and participants gained foundational knowledge and skills in aquaponics, enabling them to independently manage aquaponics systems through to harvest. Looking ahead, the community members plan to explore business opportunities in selling hydroponics/aquaponics products.

Abstract

Salinity stress disrupts redox homeostasis in plants, leading to notable changes in the levels of bioactive compounds. These compounds are recognized for their significant role in inhibiting the α-glucosidase enzyme, which is relevant in glycemic control. Detailed insights into how salinity stress modulates α-glucosidase inhibition in mulberry leaves remain scarce. This study aims to investigate the effects of salinity stress on α-glucosidase inhibitory activity in mulberry leaf extracts, and to identify accessions exhibiting the most potent inhibitory properties. In vitro assays were employed to conduct qualitative phytochemical analyses and to quantify total phenolic content, total flavonoid content, and α-glucosidase enzyme activity. The results demonstrate that high salinity stress enhances the inhibitory activity of mulberry leaf extracts against the α-glucosidase enzyme. Notably, the MB2-3 sample exhibited the most favorable IC50 value (0.59 µg/mL), coupled with a substantial phenolic content (141.9 mg GAE/g extract) and the highest content of flavonoid observed among all tested samples (619.56 mg QE/g extract). Collectively, these findings highlight the capacity of salinity stress to augment both the inhibitory potential of mulberry extracts against α-glucosidase and the accumulation of phenolic and flavonoid compounds, with sample MB2-3 displaying auspicious attributes.

Abstract

Hydroponics can be an additional learning tool for the community to achieve sustainable development goals. With the community service activities for the residents of Kampung Tempe Ciomas carried out by a team of lecturers from the Faculty of Biotechnology and Faculty of Economics and Business together with students, residents can gain additional knowledge and skills in planting hydroponically, where the harvest can then be used for consumption or as a production result with profitable aspect. The training was carried out offline, including the theory and practice of hydroponic techniques which are expected to maximize the use of existing hydroponic facilities. The monitoring results were carried out after planting for 45 days using lettuce and bok choy plants with parameters of plant height, number of leaves, root length, and wet weight of the plant. From the harvested results, Group 2 obtained the highest wet weight for lettuce at 141.14 grams, while Group 3 obtained the highest wet weight for bok choy at 143 grams. The evaluation and questionnaire for the activity were conducted using Microsoft Forms. The evaluation showed positive results in assessing the residents knowledge and understanding of hydroponic practices, the quality of tools and materials, as well as their interest in continuing hydroponic practices. Overall, the workshop activities can be considered to have gone quite well and adequately.
