Abstract

Coffee farmers typically prune coffee leaves 2-3 times a year to promote healthier and more productive coffee plants; however, this leaf waste negatively impacts the community. This initiative aims to empower local communities by providing training and skills in processing coffee leaf waste into economically valuable herbal tea products. The outcome of this community service activity is herbal tea made from coffee leaves, packaged similarly to commercial tea products. The target community has gained an understanding of the health benefits of this herbal tea, and their skills in producing coffee leaf herbal tea have improved significantly.

Abstract

Improving the quality of cocoa beans poses a great challenge when dealing with raw unfermented beans, as this process requires a relatively longer time. Furthermore, the roasting process, which is crucial in flavor development, can reduce the polyphenol content and antioxidant activity of cocoa beans. This study aimed to analyze the effects of different cocoa bean fermentation and puffing gun roasting methods on physicochemical characteristics of cocoa nibs. This research was carried out with two types of treatment: variations in puffing pressure (3, 4, and 5 Bar) and type of coco beans as raw material (unfermented, spontaneously fermented, and fermented using ragi tape). The results showed that carbohydrate content increased with increasing pressure of puffing gun; but otherwise, increasing puffing pressure decreased water content, fat content, total polyphenols, antioxidant activity, and hedonic scores for taste and aroma. The type of raw material treatment significantly influenced ash content, carbohydrates, L* (lightness) and a* (redness) color intensity, fat content, antioxidant activity, taste, and aroma. Cocoa nibs fermented spontaneously and roasted at a pressure of 3 Bar had the highest fat content, antioxidant activity, and the most favorable sensory scores for taste and aroma. The results of this study provide important insight for developing cocoa bean processing techniques that preserve desirable physicochemical properties and improve consumer preference.

Abstract

Buah semangka memiliki kandungan air yang tinggi, yang menyebabkan buah tersebut mudah rusak dan memiliki umur simpan yang pendek. Salah satu metode pengolahan yang potensial untuk diterapkan pada buah semangka adalah pembuatan nata. Penelitian ini bertujuan untuk mengevaluasi pengaruh konsentrasi gula pasir dan bagian buah semangka (Citrullus lanatus) terhadap karakteristik fisik dan kimia nata de Citrullus. Penelitian ini menggunakan Rancangan Acak Lengkap Faktorial (RALF) dengan dua faktor perlakuan, yaitu konsentrasi gula pasir pada tiga taraf (A1: 8%, A2: 10%, A3: 12%) dan bagian buah semangka pada dua taraf (B1: daging buah dan B2: albedo/kulit buah).  Hasil penelitian menunjukkan bahwa konsentrasi gula pasir berpengaruh signifikan terhadap rendemen, kadar air, dan kadar gula total. Bagian buah semangka juga berpengaruh signifikan terhadap ketebalan, rendemen, kadar air, dan kadar gula total. Selain itu, interaksi antara konsentrasi gula pasir dan bagian buah semangka memberikan pengaruh signifikan terhadap kadar air dan kadar gula total. Perlakuan terbaik diperoleh pada konsentrasi gula pasir 8% dengan bagian albedo/kulit semangka, yang menghasilkan nata dengan ketebalan 8,72 mm, rendemen 85,69%, kadar air 97,52%, kadar gula total 8,17° Brix, dan rasio C/N sebesar 19,92.

Abstract

Sari tempe memiliki karakteristik sensori yang mirip seperti sari kedelai dengan rasa dan aroma khas tempe. Penelitian ini bertujuan untuk mengetahui pengaruh lama fermentasi tempe dan perbandingan tempe dan air terhadap karakteristik sari tempe. Penelitian ini menggunakan metode Rancangan Acak Lengkap (RAL) Faktorial dengan 2 faktor perlakuan yaitu lama fermentasi tempe (24 jam, 48 jam, 72 jam) dan perbandingan tempe dan air (1:3; 1:5; 1:7) dengan 3 kali ulangan dan uji lanjut beda nyata jujur (BNJ). Hasil penelitian menunjukkan bahwa lama fermentasi tempe berpengaruh nyata terhadap viskositas, kadar protein, pH larutan, aktivitas antioksidan, total padatan terlarut dan sensoris sari tempe. Perbandingan tempe dan air berpengaruh nyata terhadap viskositas, kadar protein, pH larutan, aktivitas antioksidan, total padatan terlarut dan sensoris sari tempe. Interaksi lama fermentasi tempe dan perbandingan tempe dan air berpengaruh nyata terhadap viskositas, kadar protein, pH larutan, aktivitas antioksidan, total padatan terlarut dan sensoris sari tempe. Hasil sari tempe terbaik yaitu pada perlakuan lama fermentasi 48 jam dan rasio tempe dan air 1:3. Karakteristik yang dihasilkan yaitu viskositas 6,07 mPa.s, kadar protein 3,53%, pH 6,2 , aktivitas antioksidan IC50 110,8 µg/mL dan total padatan terlarut 4,47 Brix.

Abstract

Seiring bertambahnya usia, lansia mengalami penurunan fungsi fisiologis yang meningkatkan risiko penyakit tidak menular (PTM) seperti hipertensi, diabetes melitus, artritis, dan penyakit jantung. Data menunjukkan bahwa kasus PTM di Indonesia terus meningkat, dengan hipertensi dan diabetes sebagai penyakit terbanyak. Gaya hidup tidak sehat menjadi faktor utama penyebabnya. Diabetes pada lansia juga sering tidak terdeteksi karena gejalanya tidak khas. Selain itu, lansia juga rentan terhadap penyakit jantung koroner dan gangguan kognitif. Di wilayah mitra, masih banyak lansia yang tidak rutin memeriksakan tekanan darah, gula darah, dan asam urat, serta kurang mengikuti aktivitas fisik seperti senam. Oleh karena itu, dibutuhkan intervensi untuk meningkatkan kesadaran dan derajat kesehatan lansia melalui kegiatan pemeriksaan serta senam rutin. Tujuan kegiatan pengabdian kepada Masyarakat untuk meningkatkan kesadaran lansia mengenai pentingnya menjaga kesehatan. Metode pangabdian melalui penyuluhan tentang pentingnya menjaga pola makan, aktivitas fisik (senam lansia), dan pemeriksaan kesehatan rutin (pemeriksaan tekanan darah, gula darah serta asam urat). Khalayak sasaran adalah lansia laki-laki dan perempuan usia 60-90 tahun, sebanyak 40 orang. Peserta kegiatan Sebagian besar adalah Perempuan. Hasil pemeriksaan Kesehatan menunjukkan 38 orang (95%) lansia memiliki kadar gula darah normal, 5% mengalami diabetes. Hasil pemeriksaan tekanan darah, sebanyak 20 orang (50%), lansia mengalami hipertensi dan kadar asam urat tinggi sebanyak 34 orang (85%). Sebagian besar lansia mengalami hipertensi, diabetes, dan hiperuremia.

Abstract

Tuberculosis (TB) is still one of the infectious diseases with the highest mortality rate in the world. WHO stated that Indonesia is the third country in the world with the most TB cases. Semarang is the third province in Indonesia with the highest TB cases. Although the mortality rate is high, in reality TB can be treated and prevented. Anti-TB drugs as TB treatment agents can cause side effects, one of which is a decrease in the number of platelets. The purpose of this study was to determine the difference in the number of platelets in TB patients before starting treatment and after one month of treatment with Anti-TB drugs. The study population was new tuberculosis patients. The study sample was taken according to the established criteria and obtained as many as 24 people, who were examined twice, namely before treatment and after 1 month of treatment. The results of this study stated that the average number of platelets before starting TB treatment was 340.875 cells/μL and after one month of treatment with Anti-TB drugs was 281.958 cells/μL. The Wilcoxon test showed a P value = 0.009. There was a significant difference in the number of platelets before starting TB treatment and after one month of treatment with Anti-TB drugs. TB treatment can affect blood conditions, including platelets. Thus, patients and their families are expected to better  understand the importance of carrying out routine checks and not stopping treatment without medical consultation.

Abstract

The purpose of this study was to assess the physical, chemical, and sensory features of super red dragon fruit jam using a completely randomized design (CRD) with one factor and six treatments in triplicates. The treatment was CMC concentration (0%, 0.1%, 0.2%, 0.3%, 0.4%, and 0.5%). Physical factors (viscosity and spreadability), chemical properties (total soluble solids, pH, and moisture content), and sensory properties (hedonic texture test) were all evaluated, using analysis of variance (ANOVA). Treatments with a significant effect (p < 0.05) were further tested using the Honest Significant Difference (HSD) test for physical and chemical characteristics, and the Tukey test for sensory characteristics (p < 0.05). CMC concentration significantly impacted (p < 0.05) viscosity, spreadability, total dissolved solids, pH, moisture content, and hedonic texture test findings. The 0.3% CMC treatment had the highest sensory score (3.48), viscosity (63.60 Pa·s), spreadability (21.37 cm), and chemical properties (total soluble solids 65.20 °Brix, pH 3.44, moisture content 31.57%). The total soluble solids and pH values in the 0.3% CMC treatment of super red dragon fruit jam met the SNI 3746-2008 requirements. This study suggests ways to increase the economic value of super red dragon fruit through jam processing, potentially reducing farmer losses and expanding the usage of CMC with other fruit varieties to diversify fruit jam products. Abstract

The rapid advancement of digital technology has significantly transformed the education sector, including Islamic educational institutions. These institutions are urged to adapt through institutional reform to remain relevant in the digital era. This study employed a qualitative approach using literature review and participatory observation. Data were collected from relevant academic publications (2019–2024), institutional reports, and observations at selected Islamic educational institutions. The findings reveal that Islamic educational institutions face several challenges in the digitalization process, including the digital divide, resistance to change, limited infrastructure, and insufficient digital competencies among teachers. However, the digital era also presents substantial opportunities, such as broader access to learning resources, flexible learning environments, improved institutional management, and global collaboration. Institutional reform in Islamic education requires strategic efforts such as infrastructure development, human resource digital literacy enhancement, curriculum integration with digital competencies, and the use of digital platforms for da'wah and religious moderation. These efforts are essential to maximize the potential of digital transformation while maintaining Islamic values.

Abstract

This study aims to examine the internationalization efforts carried out by Pesantren Al Ittifaqiah, including aspects of the curriculum, collaboration with international institutions, and development of the competence of students and educators. The research method used is a qualitative approach with data collection through interviews, observations, and documentation. The results of the study show that Pesantren Al Ittifaqiah has integrated a traditional Islamic based curriculum with international education programs, such as teaching foreign languages (Arabic and English) and organizing student exchange programs abroad. In addition, this pesantren also collaborates with various international educational institutions to develop academic programs and improve the capacity of educators. The internationalization of this pesantren has a positive impact on improving the quality of students, especially in terms of language skills, global insight, and academic competence. However, this process also faces various challenges, such as limited facilities, the need to adapt to global culture, and limited funding. This study concludes that the internationalization of Islamic boarding schools not only strengthens the position of Al Ittifaqiah Islamic Boarding School in the national Islamic education arena, but also opens up opportunities for students to compete at the global level without losing their Islamic identity.

Abstract

Based on data from Riskesdas 2013, in line with increasing age the prevalence of joint disease has increased. The trigger is abnormal metabolic processes in the body and 10% of cases occur in postmenopausal women because the production of the hormone estrogen is disrupted. If treatment is not carried out, it will result in chronic gouty arthritis, resulting in paralysis. The purpose of this study was to determine the description of uric acid levels in postmenopausal women in Berahan Kulon Village, Wedung District, Demak Regency. The research method used is an observational study with a cross sectional approach. Of the 20 research subjects, 1 research subject had low uric acid levels, 9 research subjects had normal uric acid levels, and 10 research subjects had high uric acid levels. High uric acid levels were dominated by the age group 51-55 years, menopause duration 6-10 years and > 10 years, no history of heredity, and consumption of foods high in uric acid 3-5 times/week and > 5 times/week. The conclusion of this study is that 5% of postmenopausal women have low uric acid levels, 45% have normal uric acid levels, and 50% have high uric acid levels.
