Abstract

An adaptive approach is required in the process of kitchen skills education for students with Down Syndrome to help them understand and master practical skills. The goal of this teaching activity is to increase the independence of Down Syndrome students through the visual learning method, especially at the service activity location, SLB Ngamprah Raya in West Bandung Regency. This method was chosen because students with Down Syndrome tend to have stronger visual comprehension, despite experiencing cognitive and physical limitations. This service activity involves cooking training using high-protein, gluten-free, and casein-free ingredients from Nusantara gastronomy, featuring a menu of Sate Lilit and Seaweed Jelly Ice. Through the visual approach, students can more easily understand the steps of cooking and improve their fine motor skills. The results of the activity show improvements in students' practical skills and confidence, as well as social benefits gained from participating in group activities. This indicates that visual learning is effective in supporting the development of life skills for students with special needs.

Abstract

This study aimed to determine the association between Dietary Diversity Scores (DDS) and nutritional status among adolescent girls with anemia. Seventy-one adolescent girls aged 15−17 years from high schools in Bandung were selected using Probability Proportional to Size (PPS). The data on the sociodemographic characteristics, health and nutritional status, and DDS of the subjects were collected. Results showed that the mean DDS was classified as high. There was no significant association between DDS and BMI-for-age Z-score (BAZ) and Waist-Hip Ratio (WHR) in adolescent girls with anemia (p>0.05). Therefore, DDS was not associated with nutritional status in adolescent girls with anemia.

Abstract

Background: Chronic Energy Deficiency (CED) is a significant nutritional issue affecting women of reproductive age, including future brides. This condition can have negative effects on reproductive health and the well-being of future descent. CED often arises from insufficient nutrient intake and negative perceptions of body image, which can result in unhealthy eating behaviors. In Bandung City, the Cibiru District has the highest prevalence of malnutrition among future brides. Objectives: This study aimed to analyze the relationship between body image perception and nutrient adequacy (energy, protein, fat, and carbohydrate) with the incidence of chronic energy deficiency among future brides. Methods: This study used a cross-sectional design and involved 41 respondents who were recruited through consecutive sampling. Data collection included Measuring Mid-Upper Arm Circumference (MUAC), conducting 2x24-hour food recall interviews, and administering the MBSRQ-AS. The dataset was examined using both univariate and bivariate analyses, with Pearson’s and Spearman’s correlation tests employed to assess relationships. Results: Among the respondents, 29.3% were identified as experiencing chronic energy deficiency, while over half reported a positive body image. However, most respondents did not meet the recommended intake levels for energy and macronutrients. Of all the variables assessed, only adequate fat intake was significantly related to chronic energy deficiency in future brides (p=0.029; r=0.341). Conclusion: Adequate fat intake is weakly positively related to chronic energy deficiency among future brides. No significant associations were observed between chronic energy deficiency and body image perception or the adequacy of energy, protein, and carbohydrate intake. Therefore, future brides are recommended to meet their nutritional needs, especially fat intake from healthy sources such as mackerel, skipjack tuna, sardines, avocado, and peanuts, to prevent the occurrence of Chronic Energy Deficiency (CED).

Abstract

Students at Husainiyah Islamic Boarding School in Cicalengka rely entirely on meals provided within a closed environment, making their nutrient intake and meal satisfaction important factors that may influence their nutritional status. This study aimed to analyze the association between protein and fat intake, as well as satisfaction with meal services, and the students’ nutritional status. This research used a quantitative method with a cross-sectional design, involving 60 students aged 12–18 years selected through total sampling. Dietary intake of protein and fat was assessed using two-day 24-hour food recall, while satisfaction levels were measured using a Likert scale. Nutritional status was evaluated based on BMI-for-age. Data were analyzed using the chi-square test. Findings showed that 30% of participants had inadequate protein intake, and 41.7% had insufficient fat intake, although 73.3% of them had a normal nutritional status. Half of the students expressed satisfaction with the meal service, while the other half were dissatisfied. The statistical analysis indicated a significant relationship (p-value<0.05) between protein and fat intake and nutritional status. However, satisfaction with meal services was not significantly associated with nutritional status. In conclusion, intake of protein and fat significantly correlates with nutritional status, while satisfaction does not.
