Abstract

Dangke adalah produk olahan susu dan makanan khas dari daerah Enrekang, Sulawesi Selatan. Susu kerbau ditandai dengan kandungan padatan yang lebih tinggi, dan mengandung lebih banyak lipid, protein, laktosa, maupun mineral. Mengonsumsi produk susu dapat melindungi diri dari penyakit dan komplikasi yang terkait dengan kelebihan berat badan dan obesitas. Tujuan dalam penelitian ini yaitu untuk mengetahui kandungan makronutrien pada makanan tradisional dangke. Penelitian ini menggunakan desain penelitian deskriptif dengan pemeriksaan kadar sampel dangke berupa karbohidrat, lemak, protein, serat kasar, dan air di laboratorium. Analisis kadar karbohidrat dilakukan dengan metode luff schoorl, lemak dengan metode ekstraksi, protein dengan metode kjehdal, serat kasar dengan metode gravimetrik, dan air dengan metode gravimetrik. Berdasarkan hasil penelitian didapatkan kandungan makronutrien dangke yaitu pada karbohidrat 4,70 %, Lemak 13,32%, Protein 14,02 %, Serat Kasar 9,72 %, Air 47,94 %. Kesimpulan dari hasil penelitian yaitu bahwa kadar makronutrien dangke didapatkan nilai tertinggi berturut-turut yaitu kadar air 47,94 %, kadar protein 14,02 %, kadar lemak 13,32 %, kadar serat kasar 9,72 % , dan kadar karbohidrat 4,70 %.

Abstract

Blood sugar or known as blood glucose is the main nutritional element used for the metabolism of glucose cells in the body. Some of the effects of people who fast can be seen such as feeling weak, tired and tired. So to restore energy to people who are fasting, food is needed that can restore stamina, such as dates. In this study, we will look at the presentation of the increase or effectiveness of a person's blood sugar levels after breaking the fast by consuming Ajwa and Sukari dates. Research Objectives: This study aims to determine fasting blood sugar levels after consuming Ajwa dates and Sukari dates. Research Method: The type of research used by researchers is quantitative research. With an experimental research design on fasting blood sugar levels at Booarding School MTQ Syafi’i Makassar which was given ajwa and sukari dates. The sample management used was a one group pre test-post design by looking at the comparison of fasting blood sugar levels after consuming dates and before consuming dates. With a population of 20 people and this population was taken using a total sampling technique, carried out in August 2022. Results: It can be concluded from the results of the research I conducted that the fasting blood sugar level before consuming Ajwa dates was 96,750 ± 8.4 and after consuming Ajwa dates 147,850 ± 9.85, Fasting blood sugar levels before consuming Sukari dates were 92.85 ± 7.5 and after consuming dates 152.2 ± 7.12.

Abstract

Stunting is a growth and development disorder in children due to chronic malnutrition and recurrent infections, which is characterized by their length or height being below a Z-score of -2 SD. The number of children under five at risk of stunting in Indonesia is still around 4.7 million. Classification of Stunting according to the nutritional status of children, both boys and girls. The macronutrient intake that most influences the occurrence of stunting is protein intake. Protein deficiency in children can cause low growth and bone maturity, which can lead to various medical conditions, one of which is stunting. The research method for this journal was a Literature Review via Google Scholar, NCBI and sciencedirect.com using the keywords Stunting, Protein, Children, then a total of 9 articles that met the inclusion criteria were reviewed. This research concludes that there is a relationship between protein intake and the incidence of stunting. This is characterized by lower protein intake in children who are stunted compared to children who are not stunted.

Abstract

Background: According to the World Health Organization (WHO) that Indonesia ranks 3rd with the highest number of dyspepsia sufferers after America and England with 450 dyspepsia sufferers. According to the 2017 health data profile, dyspepsia is included in the top ten inpatient diseases.Objective: To determine the characteristics of dyspepsia patients undergoing endoscopy at the Ibnu Sina Hospital Makassar. Research methods: The research design used was descriptive research with a cross sectional approach using secondary data at the medical record installation at Ibnu Sina Hospital, Makassar. Research result: Of the 85 samples in the study, most were in the middle age of 45-54 years, namely 58 patients (68.2%), in the area of ​​origin the highest was the province of South Sulawesi, namely 80 patients (94%), the most gender was female, namely 38 patients (44.7%), the highest complaints were complaints (cough, tightness, and chest pain) namely 85 patients (100%), the largest laboratory results were laboratory results (hemoglobin, urea, SGOT and SGPT) namely 80 patients (80% ), the most common indication for endoscopy was chronic dyspepsia, namely 72 patients (84.7%), the most clinical diagnosis was functional dyspepsia, namely 32 patients (37%), the most endoscopy diagnosis was erosive gastritis, namely 38 patients (100%). Conclusion: Characteristics of patients with dyspepsia symptoms undergoing endoscopy at Ibn Sina Hospital Makassar, namely middle age, female sex, complaints of heartburn, endoscopy indications for chronic dyspepsia, clinical diagnosis of functional dyspepsia, and endoscopy diagnosis of erosive gastritis.

Abstract

According to the World Health Organization (WHO), leprosy is a chronic infectious disease that attacks the skin and peripheral nerves caused by Mycobacterium Leprae. Leprosy or what is known as Morbus Hansen can occur in all age groups, several other factors are thought to contribute to the increase in leprosy cases, one of which is age, gender, type of leprosy, education, employment and socio-economic factors. The aim of this literature is to determine the characteristics of leprosy. The research method used in the results of this research is Literature Review or literature review. Related keywords are "characteristics, leprosy". Search the Internet for this research article via accesses such as Google Scholar, Pubmed, and ScienceDirect. The research results show that from 10 journals, leprosy can occur at any age. However, in the economically active age, the most incidents are found in the age category, namely 30-60 years. Where the incidence rate in men is higher than in women. Other research shows that leprosy is a multibasilar type, which indicates that it is due to late diagnosis and the connection between poverty and lack of knowledge which causes leprosy to continue to spread.

Abstract

Diabetic ulcer can cause infection and decrease the quality of life of sufferers. In patients with diabetic ulcers, it is not uncommon to ignore the nutrients consumed. Though nutrition is very important. If nutritional needs are not met, it can cause several conditions such as anemia (especially iron deficiency anemia), hypoalbuminemia ( due to lack of protein intake ), and malnutrition. In addition, the lack of nutrition intake also affects the inflammatory process in the wound healing phase of diabetic ulcer which, if it continues, can cause more severe infection to the sepsis stage. This literature review aiming to summarize the latest information related to research on nutrition in diabetes ulcer patients. The method used in this study is Literature Reviews by including research on nutrition in diabetes ulcer patients. The keywords used were “ nutrition, macronutrient, micronutrient, diabetes ulcer, diabetic foot ulcers, and venous ulcers ” on websites Google Scholar, Gale, and Pubmed. Results : The results of 32 journals showed inadequate intake of macronutrients (carbohydrates, proteins, and fats ) and micronutrients ( vitamins) and minerals ) in patients with diabetic ulcer which can inhibit the diabetic wound healing process. Nutrients consumed both macronutrients and micronutrients are each needed by the body because they play an important role as a source of energy and play a role in the wound healing process

Abstract

SD Inpres Parang, located in Kelurahan Lanna, Kecamatan Parangloe, Kabupaten Gowa, educates 244 students. Observations revealed that the school canteen provides unhealthy snacks containing sweeteners, preservatives, and food coloring. Regular consumption of these snacks can increase the risk of non-communicable diseases such as early-onset diabetes mellitus. The purpose of this activity is to educate students, teachers, and canteen managers about healthy, halal, and thoyib snacks to raise awareness of the importance of choosing safe snacks and to protect students from health risks at an early age. Education was also provided to food vendors on the importance of maintaining food safety and nutrition. The methods used included socialization and education through lectures, Q&A sessions, and engaging communication media such as animated videos, educational games, and standing banners. The results showed strong support from stakeholders, including the school principal, teachers, canteen managers, students, and university students, which ensured the smooth implementation of the program. Prior coordination, both offline and online, helped clarify the roles of each party. Awareness of the importance of healthy, halal, and thoyib snacks increased, and there was a stronger commitment to creating a healthier school environment.

Abstract

Background: Obesity is the excessive accumulation of fat in the body which disrupts health with the risk of metabolic system disorders in the form of increased cholesterol and triglycerides in the blood. The prevalence of obesity in Makassar City is 24.05%, which is the highest prevalence in South Sulawesi. Dangke contains Lactic Acid Bacteria in the form of probiotics which have the ability to anti-inflammatory mechanisms and fat metabolism in the body. Purpose: To determine the effect of dangke on changes in total cholesterol and triglyceride levels in obese white rats. Method: Pure experimental research design with Pre Post Randomized Clinical Trial Design. Data analysis used the independent T test/Mann-Whitney test and paired T test/Wilcoxon Signed Rank Test with a value of <0.05. Results: Comparison of total cholesterol and triglyceride levels before and after intervention in the control group showed p-values of 0.12 and 0.01, meaning there was no significant change in cholesterol and there was a significant change in triglycerides. Comparison of total cholesterol and triglyceride levels before and after intervention in the dangke group p-values were 0.47 and 0.12, meaning there was no significant change in total cholesterol and triglyceride levels. The difference in total cholesterol and triglyceride levels before the intervention in the control and dangke groups showed p-values of 0.37 and 0.78, meaning there was no significant change in total cholesterol and triglyceride levels. The difference in total cholesterol and triglyceride levels after intervention in the control and dangke groups obtained p-values of 0.38 and 0.32, which means there was no significant change in total cholesterol and triglyceride levels. Conclusion: There was no significant change in total cholesterol and triglyceride levels in the control and dangke groups when given dangke, but there was a tendency to decrease total cholesterol and triglyceride levels after the intervention in the dangke group.

Abstract

Health services are basically aimed at carrying out prevention and treatment efforts for a disease, including medical services based on the basis of individual relationships between doctors and patients who need healing for their illnesses. This study was conducted with the aim of knowing the 10 most common diseases in primary care facilities for the period January 2024 - December 2024 at the UMI medical faculty educational facility. Furthermore, this study uses a qualitative research type with a descriptive research design, using secondary data obtained from medical records, the sampling technique used in this study is the total sampling technique. And the data analysis technique uses univariate analysis techniques carried out by induction, namely by drawing general conclusions based on research that has been done at the beginning. The results of the study stated that the 10 most common diseases were obtained in all health centers that are educational facilities for the UMI medical faculty. With cases of non-communicable diseases. Non-communicable diseases include hypertension (25.91%), non-insulin DM (11.21%), diabetes mellitus (9.3%), gastritis (4.46%), myalgia (3.28%), and dermatitis (3.13%). Meanwhile, the infectious diseases listed are common cold (14.05%), acute rhinitis (13.82%), ARI (9.06%), and cough (5.76%).

Abstract

Obesity is defined as a metabolic disorder characterised by an increase in body fat mass and can lead to various chronic diseases. Dangke, a traditional fermented food from Enrekang, contains lactic acid bacteria which have been shown to have the potential to aid weight loss (Jones et al., 2022). The objective of this study was to ascertain the impact of dangke administration on the Body Mass Index (Lee Index) in male Sprague Dawley obese white rats (Rattus norvegicus). The present study was an experimental laboratory study with a pre-post-test design, incorporating a control group. The study involved 30 rats, which were divided into three groups: control, low-dose treatment (1.8 g/200 g BW), and high-dose treatment (3.6 g/200 g BW). Dangke was administered the substance for a period of 14 days via a feeding tube. The subsequent analysis of the data employed a range of statistical tests, including the Shapiro-Wilk, Levene, Paired Sample T-test, and One Way ANOVA. The findings indicated that there was no statistically significant difference in the control group (p = 0.893). However, the low-dose (p = 0.001) and high-dose (p = 0.004) groups demonstrated a substantial decrease in the Lee Index, indicating a dose-dependent response. The results of the analysis of variance (ANOVA) test following treatment indicated a significant difference between the groups (p = 0.002). The LSD follow-up test revealed a significant difference between the control group and the two treatment groups, but not between the low and high doses. The present study concluded that dangke significantly reduced the Lee Index in obese rats, although increasing the dose did not provide a significant additional effect. It is hypothesised that Dangke has the potential to be an alternative fermented nutritional intervention to aid weight loss.
