Abstract

  Tujuan kegiatan pengabdian masyarakat ini yaitu untuk meningkatkan pengetahuan terkait sindrom metabolik dan sikap terhadap inovasi produk nasi dengan pewarnaan alami. Kegiatan pengabdian berupa edukasi dengan metode ceramah dan demo masak kepada 28 masyarakat berusia 25-65 tahun di Desa Sungaibuntu, Karawang. Edukasi yang diberikan mengenai faktor risiko dan upaya pencegahan sindrom metabolik serta manfaat dan cara pembuatan nasi dengan pewarnaan alami. Selain itu, kegiatan ini juga meliputi demonstrasi pembuatan nasi dengan pewarnaan alami (kulit manggis, bunga telang, dan kunyit). Perubahan pengetahuan dan sikap dinilai dengan  pre-post test menggunakan uji statistik paired sample t-test. Hasil kegiatan menunjukkan pengetahuan masyarakat mengenai sindrom metabolik meningkat signifikan (p < 0,05). Selain itu, sikap terhadap nasi yang diberikan pewarnaan alami juga meningkat signifikan (p < 0,05).

Abstract

Sindrom metabolik merupakan salah satu tantangan serius dalam kesehatan masyarakat yang berhubungan dengan meningkatnya risiko penyakit kardiovaskuler dan diabetes. Kegiatan pengabdian ini bertujuan untuk meningkatkan pengetahuan mengenai sindrom metabolik pada wanita dewasa pedesaan melalui edukasi. Metode kegiatan pengabdian berupa edukasi berbasis ceramah kepada 22 wanita dewasa yang tinggal di pedesaan Karawang sebagai sasaran kegiatan. Kegiatan pengabdian ini juga berupa pengukuran indeks massa tubuh dan lingkar perut untuk menilai status gizi sasaran. Edukasi yang diberikan berkaitan dengan faktor risiko, kriteria, dan upaya pencegahan sindrom metabolik. Perubahan pengetahuan sasaran dinilai dengan pre-post test. Uji Wilcoxon digunakan untuk melihat perbedaan pengetahuan antara sebelum dan setelah edukasi. Hasil kegiatan menunjukkan sebagian besar sasaran memiliki status gizi obesitas (59,1%), dan obesitas sentral (72,6%). Kategori pengetahuan terkait sindrom metabolik sasaran hanya pada tingkat rendah dan sedang, baik sebelum maupun setelah edukasi. Sebanyak 4.5% sasaran mengalami peningkatan tingkat pengetahuan menjadi kategori sedang, namun secara statistik tidak signifikan (p > 0,05).

Abstract

Gout is a non-communicable disease caused by several factors, such as excessive intake of high purine, obesity and kidney disorders. Pre elderly age has a risk of gout, especially in women due to menopause. Purpose : The purpose of this study was to analyze the correlation of food consumption frequency high in purine, physical activity and nutritional status with levels of uric acid on pre elderly. Materials and Methods : Analytical observational research with cross sectional design and purposive sampling technique. Tools and materials use the Easy Touch GCU Meter Device to check uric acid levels, Food Frequency Questionnaire (FFQ) forms, International Physical Activity Questionnaire (IPAQ) forms, as well as direct measurements with digital body scales and height to determine the nutritional status of pre elderly. The subjects in this study were pre elderly aged 45-59 years, number 74 subjects, male and female, who resided in the West Cikarang Region. Result : The results of the statistical test between consumption of food with high purin and nutritional status were obtained ρ values 0,009 and 0,000 <0,05. Then the results of the analysis of moderate food consumption and physical activity are obtained ρ values 0,125 and 0,063 > 0,05. Conclusion : There is a significant relationship between high purine food consumption and nutritional status with uric acid levels and there is no meaningful relationship between moderate consumption of purine foods and physical activity with uric acid levels. Advice that can be taken is the importance of early health checks by checking uric acid levels, maintaining a diet and controlling nutritional status. For the next research, education can be involve stakeholders to improve the high purine intake and nutritional status of pre elderly or older people.

Abstract

Stunting menggambarkan kondisi kekurangan gizi kronis yang mengurangi kebutuhan nutrisi tubuh, termasuk otak. Hal ini membuat perkembangan otak kurang optimal, sehingga dapat memengaruhi perkembangan kognitif anak, prestasi akademik dan kemampuan belajar, yang juga memengaruhi prestasi belajar anak di sekolah. Tujuan penelitian ini yaitu menganalisis hubungan antara frekuensi konsumsi jajanan dan kualitas tidur dengan kejadian stunting serta prestasi belajar pada anak di SD Negeri Bojong Menteng IV Bekasi. Penelitian ini menggunakan rancangan analirik observasional cross sectional study. Instrument yang digunakan dalam penelitian ini berupa microtoise, formulir food frequency questionnaire (FFQ), Pittsburgh Sleep Quality Index (PSQI) questionnaire, dan nilai UTS. Besar sampel diambil menggunakan rumus Lemeshow sebanyak 77 siswa dengan tambahan drop out 10% menjadi 85 siswa. Hasil penelitian menyatakan bahwa tidak terdapat hubungan antara frekuensi konsumsi jajanan dan kualitas tidur dengan kejadian stunting, terdapat hubungan antara frekuensi konsumsi jajanan dengan prestasi belajar, serta tidak terdapat hubungan antara kualitas tidur dengan prestasi belajar.

Abstract

According to Riskesdas in 2018, the prevalence of prediabetes in Indonesia reached 26,3% of the adult population. An increase in blood sugar can be caused by consuming foods or drinks with high sugar, physical activity, stress factors, smoking habits and alcohol consumption. This study aims to analyze the relationship between sugar sweetened beverage consumption habits, physical activity and stress levels with the incidence of prediabetes in adults in Sukaluyu Village. This research uses a cross sectional design. The sample was determined using a purposive sampling technique of 81 respondents. Consumption of sugar sweetened beverages using the SQ FFQ form, physical activity using the GPAQ form and stress levels using the DASS 42 form. The results showed that there was no relationship between the habit of consuming sugar sweetened beverages (p-value=0,120), physical activity (p-value=0,713) and stress level (p-value=0,324) with fasting blood sugar levels as indicators of prediabetes. The conclusion of this study is that there is no significant relationship between sugar sweetened beverage consumption habits, physical activity and stress levels with the incidence of prediabetes in adults in Sukaluyu Village.

Abstract

This study investigated the differences in metabolic syndrome risk factors and psychological stress levels among school teachers in rural and urban areas during the COVID-19 pandemic in Indonesia. Waist circumference, High-Density Lipoprotein (HDL) and triglyceride levels, hypertension status, and fasting blood glucose were measured in 71 participants. The results showed higher rates of large waist circumference and hypertension in rural areas, and higher rates of low HDL, high triglyceride, and high fasting blood glucose in urban areas. In addition, a greater percentage of individuals in both rural and urban areas experienced high level of stress. These findings suggest different health risks associated with living in different areas during the pandemic.

Abstract

Food safety is an essential aspect of the restaurant industry, which heavily relies on employees’ knowledge and attitudes in implementing proper procedures. Awareness of food safety not only influences the quality of the food served but also affects consumer health and the restaurant’s reputation. This study aims to evaluate the effectiveness of three educational media—2D posters, 3D animated videos, and applicative media (Food Safety Puzzle)—in improving the knowledge and attitudes of restaurant employees, who in this case are culinary students on duty at the restaurant, regarding food safety. The method used was an experimental design with Wilcoxon Signed Rank Test analysis to assess changes in respondents’ knowledge and attitudes before and after the educational intervention. The results showed that all educational media successfully improved employees’ knowledge significantly. Specifically, 100% of respondents achieved an “Excellent” level of knowledge after using the 2D poster. Additionally, the applicative media (Food Safety Puzzle) had the greatest impact on attitudes, with 60% of respondents reaching the “Excellent” category after the educational session. In conclusion, a multifaceted approach in delivering food safety education proved effective in enhancing the knowledge and attitudes of restaurant employees. Therefore, it is recommended that restaurants implement various educational media in their training programs. Further research is also needed to explore the long-term effects of food safety education programs to ensure that employees consistently apply the knowledge gained in their daily practices.

Abstract

Abstrak: Remaja putri rentan mengalami double malnutrition, yakni obesitas dan anemia, yang berdampak pada kesehatan reproduksi dan kualitas hidup; Pengabdian ini bertujuan meningkatkan kapasitas Duta SAE dan kader pendukung Kampung SAE dalam pencegahan obesitas, anemia, serta promosi kesehatan reproduksi; Kegiatan dilakukan melalui penyuluhan tentang obesitas, anemia, dan kesehatan reproduksi kepada 18 peserta, dilanjutkan dengan demo dan simulasi pengolahan pangan lokal. Evaluasi efektivitas dilakukan dengan pre-test dan post-test; Terdapat peningkatan pengetahuan peserta. Sebanyak 83,3% (15 orang) meraih nilai 100, 11,1% (2 orang) nilai 90, dan 5,6% (1 orang) nilai 80. Tidak ada nilai di bawah 80 pada post-test. Rata-rata skor meningkat dari 92,22 menjadi 97,78; nilai minimum naik dari 70 ke 80, sementara maksimum tetap 100. Hasil ini menunjukkan peningkatan hardskill peserta dalam memahami pencegahan anemia dan obesitas.Abstract: Adolescent girls are vulnerable to double malnutrition, namely obesity and anemia, which affect reproductive health and quality of life. This service aims to improve the capacity of SAE Ambassadors and SAE Village supporters in preventing obesity and anemia, as well as promoting reproductive health. The activity was carried out through counseling on obesity, anemia, and reproductive health to 18 participants, followed by demonstrations and simulations of local food processing. The effectiveness was evaluated through pre-tests and post-tests. There was an increase in the participants' knowledge. A total of 83.3% (15 people) scored 100, 11.1% (2 people) scored 90, and 5.6% (1 person) scored 80. No one scored below 80 on the post-test. The average score increased from 92.22 to 97.78; the minimum score rose from 70 to 80, while the maximum remained at 100. These results indicate an improvement in participants' hard skills in understanding the prevention of anemia and obesity.
