Abstract

This study aims to determine the effect of substitution of jackfruit seed flour and lemuru fish meal on physical quality and analysis of nutritional content (Protein, Calcium, Zinc, Fe) in cookies. This research method used experimental method with completely randomized design (CRD) treatment with 3 treatments and 2 repetitions. The results of the analysis of jackfruit and lemuru seed cookies per 100 grams contain 41.25 grams of Protein, 261 mg of Calcium, 75 mg of Zinc and 4 mg of Fe. In conclusion, jackfruit and lemuru seed cookies can be used as PMT for school children to meet the needs of protein, carbohydrates and calcium. Abstract

This research aims to investigate the problem of stunting in Indonesia and analyze the relevant challenges and solutions in dealing with this problem in the new era. Stunting, which is defined as stunted growth in children under the age of five, has become a serious problem in Indonesia with long-term adverse effects on children's health and development. The method used is a qualitative method with descriptive analysis. The results of the study show that the stunting rate in Indonesia is still high, even though there has been a decline in recent years. The challenges faced in efforts to reduce stunting include long-term malnutrition, ineffective parenting styles, inadequate knowledge about balanced nutritional diets, lack of postpartum care, persistent infectious diseases in children, and poor sanitation. In facing this challenge, comprehensive and integrated solutions are needed, including specific and sensitive interventions, cross-sectoral approaches, empowering women, and making policies and programs that support stunting prevention. In conclusion, stunting in Indonesia remains a complex problem that requires coordinated cross-sector collaboration. In addressing this challenge in the modern era, a holistic and sustainable intervention strategy is needed to reduce the prevalence of stunting and ensure optimal growth and development of children in Indonesia. Abstract

The subgrade of fish crackers known as amplang refers to some parts of amplang that do not meet the standard but can still be consumed and sold at a lower price, so it has contributed to the decrease in company profits. This study intends to develop a food seasoning powder created from the subgrade of amplang fish crackers with the addition of red spinach (Amaranthus tricolor L.). Five formulations were developed with amplang powder and red spinach powder in the range of 36.66% to 66.66% and 0% to 30%, respectively. The best formulation is chosen based on sensory evaluation, followed by nutritional analysis and storage stability. Formulation 4 was chosen as the best, which consists of 41.60% subgrade amplang powder with 25% red spinach powder. The proximate analysis showed the F4 contained 6.18% moisture, 0.64% ash, 9.83% crude fat, 12.69% protein, 9.88% crude fibre, 47.27% dietary fibre, 61.46% carbohydrate, and a calorie content of 404.83 kcal/100 g, which significantly increased in ash, protein, and crude fibre contents compared to the control sample. Water activity (AW), colour and microbiological status showed no significant changes (p > 0.05) throughout the eight weeks of storage indicated that sample was stable during storage periods. Therefore, the development of this seasoning powder can be used as an alternative for amplang subgrade to be upgraded with better acceptability and enhance its nutritional value, which is beneficial to the consumer.

Abstract

Sabah is the main seaweed producer in Malaysia especially red seaweeds which are commercially cultivated for the production of food gum known as carrageenan. Seaweeds are also high in phytochemical such as antioxidant compounds.  Three seaweeds species from the Semporna Seawater, Sabah, namely Kappaphycus alvarezii, Caulerpa lentillifera and Sargassum polycystum were chosen for this study for the analysis of their antioxidant activities.  K. alvarezii species is commercially cultivated whereas the other two (C. lentillifera and S. polycystum) are wild species.  All seaweeds species underwent drying process in a cabinet dryer prior to the analyses.  Six types of solvents which were water, ethanol, methanol, chloroform, ethyl acetate and hexane were used for the extraction process. Every concentrated, extracted solutions were then measured for their antioxidant activities based on total phenolic content (TPC), diphenylpicrylhydrazyl (DPPH) radical scavenging activity, ferric reducing antioxidant power (FRAP) and β-carotene bleaching assay. Results showed that TPC of S. polycystum was significantly higher (p<0.05) than K. alvarezii but not significantly different (P>0.05) from C. lentillifera. Even though the extraction yield of water was the highest, but the greatest antioxidant activity values were seen in methanolic extraction in comparison to the other solvents in TPC, DPPH and FRAP. This indicated that most of the antioxidant compounds in all the three seaweed samples are polar. However, high antioxidant activity in terms of β-carotene bleaching assay were seen in other solvent extractions, which were chloroform, hexane and ethyl acetate. This indicated that seaweed also contain non-polar antioxidant compounds such as β-carotene. Overall, the best extraction method of antioxidant compounds in seaweed samples was using methanol as the extractant.

Abstract

Satu dari tiga anak di Indonesia mengalami stunting. Stunting dapat berdampak pada perkembangan motorik dan verbal, meningkatkan penyakit degeneratif, morbiditas dan mortalitas. Selain itu, stunting akan menyebabkan pertumbuhan dan perkembangan sel neuron terhambat, sehingga mempengaruhi perkembangan kognitif pada anak. Dampak yang ditimbulkan oleh stunting terhadap perkembangan kognitif pada anak berbeda-beda, oleh karena itu penelitian ini bertujuan untuk mengetahui apa saja dampak stunting terhadap kemampuan kognitif pada anak. Metode yang digunakan adalah tinjauan literatur sistematis yang diambil dari jurnal nasional dan internasional. Berdasarkan hasil review, ditemukan bahwa stunting memiliki implikasi biologis terhadap perkembangan otak dan neurologis yang diterjemahkan ke dalam penurunan nilai kognitif. Stunting yang parah dengan Z-skor -3SD dari indeks panjang badan menurut umur atau tinggi badan menurut umur anak memiliki dampak negatif terhadap tumbuh kembang anak. Selain itu, anak yang mengalami stunting pada 2 tahun pertama kehidupannya cenderung memiliki IQ non-verbal di bawah 89 dan IQ 4,57 kali lebih rendah dari IQ anak yang tidak mengalami stunting. Disimpulkan bahwa stunting memberikan pengaruh negatif terhadap kemampuan kognitif anak yang berdampak pada prestasi belajar.

Abstract

This study aimed to determine the effect of maternal empowerment on improving fish consumption patterns to increase protein intake, calcium, zinc, and Z-score height by age when stunting children. The type of this research is Quasi-Experimental with pre and post-test control group design. The results showed an increase in maternal knowledge, increased intake of protein, calcium, and zinc as well as an increase in TB scores / After the intervention in the case group, compared to the control group, there were no differences in protein, calcium intake and Z-score TB / U, an increase in maternal empowerment increased intake of children stunting and the same as intake of children not stunting. Conclusion There is a significant difference in the average value of protein intake, calcium, zinc, and Z-score before and after providing maternal empowerment interventions to improve fish consumption patterns in children aged 13-36 months. Abstract

The purpose of this study was to determine the effectiveness of the training in improving the knowledge, attitudes, and behavior of elementary school students as a cadre of school hawker supervisors in Lubuk Pakam. The method in this study uses the action research method, using the student facilitator and explaining the training model. The results of the empowerment research with the student facilitator and teaching training model can improve the knowledge, attitudes, and actions of the young cadres, there are significant differences in the values of knowledge, attitudes and activities based on cycle I namely (p = 0.001, p = 0.001, and p = 0.001), and in the second cycle (p = 0.001, p = 0.001, and p = 0.001). In conclusion, the training carried out on Muhammadiyah elementary school students is useful as a cadre of child food supervisors of school snacks. Abstract

This study aimed to determine the knowledge and attitudes of healthy snack children through snake and ladder games in Lubuk Pakam sub-district. This research is a quantitative study with a quasi-experimental design of two groups of the pretest-posttest system. The results showed that by using the statistical test, the value of p = 0.000 <0.05. Based on the pretest and post-test results on 54 students, the average change in knowledge before the intervention was 12.8, and the closest intervention was 15.5. The shift in attitude before the intervention was 10.2, and after the intervention was 12.8. In conclusion, there is the influence of snake and ladder game counseling on healthy snack foods on elementary school children's knowledge and attitudes. Abstract

The aim of the current research is to review and provide a more comprehensive assessment of the relationship between the anti-diabetic effects of Anthocyanins in humans, whether consumed as a dietary supplement, purifying agent, flavonoid mixture, or extract. In this narrative review, eighteen recent clinical studies that have been published over the last five years studying the therapeutic effects of Anthocyanins in the diet in diabetes are described. Research results show that anthocyanin supplements can control blood glucose, glycated hemoglobin and other diabetes markers. Additionally, larger doses of Anthocyanins were shown to have better effects on diabetes treatment. There is evidence in this review that diets rich in Anthocyanins may increase the risk of diabetes, especially in people at risk. Additionally, research should focus on various clinical biomarkers, the ideal time frame for intervention, and the effect of Anthocyanins in both controlled and uncontrolled diabetes patients. In conclusion, clinical studies show that Anthocyanins can influence many targets related to diabetes mellitus simultaneously. Additionally, use of ACN during diabetes or hyperglycemia appears to be safe and effective. Keywords: Diabetes, Anthocyanin, Metabolism, Food
