Abstract

Introduction: The use of synthetic preservatives such as formalin in food products, especially tofu, has raised serious health concerns, including the risk of cancer. Objective: As a solution, this study aims to evaluate the potential combination of bay leaf extract (Syzygium polyanthum) and garlic (Allium sativum) as a natural preservative to replace synthetic preservatives in tofu. Method: The study was conducted using a completely randomized block design (RCBD) with variations in extract concentration and tofu storage duration, as well as testing of physicochemical, microbiological, and sensory characteristics. Results and Discussion: The results showed that bay leaf extract produced a dark green color with a strong aroma, while garlic extract maintained a white color with a distinctive aroma without changes in texture. The combination of both extracts gave a complex aroma but showed black spots and mold growth on the 6th day of storage. Microbiologically, the combination of bay leaf and garlic extracts effectively reduced the number of Escherichia coli to below the detection limit, but slightly increased the total coliform count. Conclusion: The conclusion of the results is there the combination of bay leaf and garlic extracts can improve the sensory quality of tofu and reduce pathogenic bacteria, but further management is needed to ensure the microbiological safety of the product.

Abstract

Abstract

Ventilasi tidak memadai meningkatkan risiko 21,49 kali (OR=21,49; p=0,333) dan pencahayaan buruk meningkatkan risiko 73,11 kali (OR=73,11; p=0,028).

Abstract

Introduction: Welding work in the construction sector carries a high risk of workplace accidents that may require emergency response, including sudden cardiac arrest. Basic life support is a vital skill to sustain victims until medical assistance arrives. Objective: This study analyzed the relationship between basic life support training and welders’ knowledge and attitudes toward managing workplace accidents in the erection area of PT X, Karimun Regency. Method: This quantitative study used a cross-sectional design and involved 32 welders recruited through total sampling. Data were collected using a questionnaire that had been tested for validity and reliability, then analyzed using univariate and bivariate analyses with the Chi-square test at a significance level of 0.05. Result and Discussion: A significant association was found between basic life support training and workers’ knowledge (p < 0.001); 94.4% of trained workers demonstrated a high level of knowledge. However, no significant association was identified between training and workers’ attitudes (p = 0.145), although a tendency toward more positive attitudes was observed among trained workers. Conclusions: Basic life support training plays an important role in improving welders’ knowledge, whereas developing positive attitudes may require additional strategies such as simulation-based practice, habituation, and reinforcement of a safety culture
