Abstract

High-protein milk is a nutrient-dense food with potential bioactive compounds that are thought to affect intake quality to weight gain and improvement of nutritional status. The study aimed to analyze the effect of high protein milk intervention on energy and macronutrient intake, weight gain, nutritional status, and the relationship between the level of product consumption compliance with weight gain and nutritional status. This study is a Randomized Control Trial (RCT). Subjects were divided into two groups: the treatment group (high protein milk and nutrition education intervention) and the control group (nutrition education intervention). The results showed a significant increase in energy and protein intake in the treatment group (p> 0,05) compared to the control group. The weight of the treatment group increased significantly (p=0,008; 3,93±2,78kg) compared to the control group. The BMI of the treatment group increased significantly after 90 days of intervention (p= 0,000; 0,74±0.54kg/m2). The level of compliance of the subjects included in the high category (>70%). Still, there was no correlation between the level of adherence to high milk consumption with weight gain and subject status. In conclusion, high protein milk can increase energy and protein intake, affecting weight gain and improvement in children aged 15-17 years.

Abstract

Traditional coconut oil of mandar is oil extracted from coconut flesh through a heating process. Repeated use of cooking oil has the potential to reduce the oil’s quality, characterized by an increase in free fatty acid levels. The study aimed to analyze the fatty acid composition and the effect of repeated use on the quality of traditional coconut oil from mandar. This study was an experimental design with a completely randomized design (CRD). The frying technique used was deep fat frying with a total of 9 liters of oil. The product being fried was kepok banana, with a total weight of 9 kg, fried at 180°C for 10 minutes in each cycle. There was a 5-minute interval between frying cycles, and a total of 9 cycles were performed on the same day. The parameters analyzed in this research were free fatty acid content and fatty acid profile of traditional coconut oil of Mandar. The results showed that the fatty acid profile was dominated by saturated fatty acids (76,49%) and a small portion of unsaturated fatty acids (0,59%). The level of ALB in traditional coconut oil of mandar did not exhibit significant differences (p>0,05) from the initial use up to the 9th repetition. Thus, traditional coconut oil from Mandar remains suitable for frying purposes for up to 9 cycles.

Abstract

Selada air (Nasturtium Officinale R.Br) are widely found in Indonesia and have potential as antioxidants. The purpose of this study was to analyze the levels of flavonoids and antioxidant activity of Selada air extract. Selada air were extracted by maceration method with 70% ethanol as solvent. The flavonoid content of the extract was measured by the UV-Vis Spectrophotometry method, while the antioxidant activity of the extract was determined by the DPPH method. The results of this study indicate that the ethanol extract of the Selad air has a flavonoid content of 13,9 mgQE/g extract and the antioxidant activity of the compound obtained an IC50 value of 102,26 ppm with a moderate antioxidant category. Abstract

Angka stunting Polewali Mandar hingga Tahun 2022 berdasarkan data nasional masih menunjukkan masalah yang cukup tinggi. Desa Nepo kecamatan Wonomulyo merupakan salah satu desa yang berada di, Kabupaten Polewali Mandar, Sulawesi Barat, Indonesia. Alternatif pencegahan dan penanganan stunting ialah dengan perbaikan gizi dengan meningkatkan pengetahuan ibu tentang pengaturan makanan bergizi untuk balita serta pemanfaatan bahan pangan lokal. Tujuan dari pelaksanaan program pengabdian kepada masyarakat ini adalah pemberdayaan masyarakat dalam upaya pencegahan stunting melalui peningkatkan pengetahuan dan keterampilan untuk mengolah ikan tuna sebagai bahan pangan lokal menjadi olahan kudapan pendamping ASI bernilai gizi tinggi. Metode yang digunakan dalam pengabdian masyarakat ini adalah dengan penyuluhan menggunakan metode ceramah dan diskusi dengan media lembar balik. Kegiatan ini dapat meningkatkan keterampilan pengolahan pangan lokal berbasis ikan tuna menggunakan metode demonstrasi pembuatan kudapan. Hasil yang diharapkan dari kegiatan ini adalah terjadi peningkatan pengetahuan dan meningkatkan keterampilan ibu dalam penggunaan pangan lokal berbasis ikan tuna.

Abstract

Stunting merupakan salah satu masalah kesehatan yang mendesak di Indonesia, termasuk di Desa Balombong, Sulawesi Barat, dengan angka prevalensi mencapai 40,6% pada tahun 2022, dua kali lipat dari standar WHO. Penyebab utama stunting di desa ini adalah kurangnya gizi seimbang selama masa pertumbuhan anak serta keterbatasan akses ibu balita terhadap informasi gizi dan cara mengolah makanan pendamping ASI (MP-ASI). Untuk itu kegiatan pengabdian ini bertujuan untuk meningkatkan keterampilan ibu balita dalam mengolah MP-ASI berbasis pangan lokal dan memperkenalkan aplikasi SIBAYI sebagai sumber informasi gizi. Pelatihan ini meliputi pengenalan stunting, dampaknya, serta solusi berupa penggunaan MP-ASI yang tepat dan bernutrisi. Demonstrasi pembuatan MP-ASI berbahan lokal, seperti ikan laut, serta pelatihan penggunaan aplikasi SIBAYI dilakukan untuk membantu ibu balita mengakses resep sehat dan informasi gizi anak. Evaluasi awal, proses, dan akhir dilakukan untuk mengukur peningkatan pemahaman dan keterampilan peserta. Hasilnya menunjukkan adanya peningkatan signifikan dalam pengetahuan mengenai stunting, pemanfaatan bahan pangan lokal, serta penggunaan teknologi dalam pengelolaan gizi anak. Meskipun beberapa peserta masih menghadapi tantangan dalam penggunaan aplikasi, pelatihan ini berhasil meningkatkan kepercayaan diri dan kemampuan ibu balita dalam menyediakan MP-ASI yang bergizi. Program ini diharapkan dapat berkontribusi dalam penurunan angka stunting di Desa Balombong dengan dukungan berkelanjutan dari semua pihak.

Abstract

The purpose of this study was to determine the effect of fish-based snacks on increasing hemoglobin (Hb) levels in adolescent girls with anemia. The study was conducted using the Quasi Experiment method with a randomized pretest-posttest control group design. The population was all female students with anemia at SMPN 1 Campalagian who were obtained from the results of hemoglobin level examinations using an Hb-meter and were willing to become respondents by filling out informed consent. Sampling was carried out using probability sampling. The treatment group was given fish-based snacks and iron tablets, while the control group was only given iron tablets for 4 weeks each. The research data were analyzed using the Kruskall-Wallis test. The results of the study on the Hb levels of subjects in each group increased significantly, allegedly because both groups received intensive iron tablet intervention from the school, so that both showed improvements in blood hemoglobin levels. The body weight (BW) and nutritional status of the subjects did not show significant differences until the end of the intervention, but based on the difference in changes in body weight (BW) in the treatment group there was a tendency for improvement compared to the control group with weight gain (BW). Providing high protein intake will affect weight gain and can significantly affect the hemoglobin (Hb) levels in the blood of adolescent girls.

Abstract

Stunting remains a major public health concern in Indonesia, particularly among children under five. A key contributing factor is limited maternal competence, including insufficient knowledge of the appropriate age to introduce complementary feeding, poor understanding of dietary variety, and inconsistent feeding practices. This study aimed to evaluate the effectiveness of two educational interventions—cooking demonstrations and emotional demonstrations (emo-demo)—in improving maternal knowledge, attitudes, and practices regarding local food-based complementary feeding. A quasi-experimental study was conducted in Majene Regency, West Sulawesi, involving 184 mothers of children aged 6–24 months. Participants were randomly assigned to either the cooking demonstration group or the emo-demo group. Data were collected at baseline and during three follow-up time points. Maternal competence was assessed using validated indicators covering knowledge, attitude, and behavior. Data analysis employed repeated measures ANOVA, the Friedman test, and Generalized Estimating Equations (GEE). Both interventions significantly improved maternal competence. However, the cooking demonstration group consistently achieved higher mean scores in all post-intervention assessments (p < 0.001). Improved maternal behavior was positively associated with weight-for-age in children, although no significant associations were found with height-for-age or weight-for-height indicators. Contextual, interactive, and hands-on educational approaches such as cooking demonstrations proved more effective in enhancing maternal competence for stunting prevention. Integrating culturally relevant, food-based learning into community health programs offers a promising and sustainable strategy to improve child nutrition, especially in regions rich in local food resources. Moreover, these educational interventions may also be incorporated into health education curricula at various academic levels to strengthen future health professionals’ competencies in nutrition promotion and stunting prevention.

Abstract

Minyak kelapa tradisional merupakan produk pangan lokal masyarakat Mandar yang diproduksi secara turun-temurun tanpa pemanasan tinggi, sehingga berpotensi mempertahankan senyawa bioaktif alami yang berperan sebagai antioksidan. Penelitian ini bertujuan menganalisis dan membandingkan potensi aktivitas antioksidan VCO-TM dan MTMF. Penelitian dilakukan secara eksperimental laboratorium menggunakan metode DPPH (2,2-diphenyl-1-picrylhydrazyl) melalui pengukuran spektrofotometri UV-Vis pada panjang gelombang maksimum 517 nm untuk menentukan nilai Inhibition Concentration 50 persen (IC??). Analisis dilakukan pada seri konsentrasi 2–10 ppm dengan menggunakan asam askorbat sebagai kontrol positif. Hasil penelitian menunjukkan bahwa MTMF memiliki nilai IC?? sebesar 6,22 ppm, diikuti oleh asam askorbat sebesar 10,63 ppm dan VCO-TM sebesar 48,21 ppm, yang seluruhnya termasuk dalam kategori aktivitas antioksidan sangat kuat. Hasil uji One Way ANOVA menunjukkan nilai p = 0,063 (p > 0,05), yang berarti tidak terdapat perbedaan yang signifikan secara statistik di antara ketiga sampel. Meskipun demikian, nilai IC?? yang lebih rendah pada MTMF menunjukkan kecenderungan aktivitas antioksidan yang lebih tinggi, sehingga mengindikasikan bahwa proses fermentasi tradisional Mandar berpotensi meningkatkan kandungan senyawa bioaktif pada minyak kelapa dan menghasilkan aktivitas antioksidan yang sangat kuat.

Abstract

Iron deficiency anemia remains a common health problem experienced by adolescent girls and can impact learning concentration and productivity. Efforts to improve nutritional literacy are one of the important strategies in preventing anemia in adolescents. This community service activity aims to enhance the knowledge and skills of adolescent girls in anemia prevention through the GEMARI Program (Gerakan Mencegah Anemia Remaja Putri/Movement to Prevent Anemia in Adolescent Girls), which was developed from previous research findings. The activity was carried out at SMP Negeri 1 Campalagian, targeting 24 adolescent girls. The activity methods included nutrition education on anemia prevention, an interactive question-and-answer session, and training on making fish-based snacks as a source of animal protein and iron. Furthermore, training on the use of health measurement tools (hemoglobin meters, scales, and height measuring devices) was also provided to the school health unit (UKS) teachers.Knowledge evaluation was conducted using pretest and posttest. The results showed an increase in participants' knowledge after the education, where the "poor knowledge" category decreased from 54.17% to 25.00%, while the "sufficient knowledge" category increased from 20.83% to 54.17%. These findings indicate that practical-based nutrition education utilizing local food is capable of improving adolescent girls' nutritional literacy in their efforts to prevent anemia. This activity is expected to serve as a model for sustainable school-based intervention to support adolescent health programs and the strengthening of the School Health Unit (UKS).
