Abstract

The red dragon fruit peel (Hylocereus polyrhizus), which is often discarded as waste around 30–35% of the total fruit, has potential as a natural food colorant. One innovative use is as a raw material for marshmallow, a soft, spongy candy typically made from sugar, gelatine, colouring, and flavouring agents. Sugar addition plays a role in sweetness, texture, and appearance enhancement. Additionally, lemon juice can be used as a natural flavour due to its bioactive compounds such as flavonoids, limonoids, and high vitamin C content. This study aims to investigate the effect of different concentrations of granulated sugar and lemon juice on the physicochemical characteristics of marshmallow made from red dragon fruit peel. The study employed a randomized complete block design (RCBD) with two factors: sugar concentration (27%, 35%, 43%) and lemon juice concentration (0.7%, 1.3%, 1.9%) with three replications. Parameters observed included moisture content, ash content, vitamin C, total sugar, whiteness index, and hardness. The results showed no interaction between sugar and lemon juice. Sugar concentration significantly affected moisture content, ash content, total sugar, whiteness index, and hardness of the marshmallow. In contrast, lemon juice concentration did not have a significant effect on all measured parameters. Furthermore, vitamin C content showed no significant differences among treatments.

Abstract

Kombucha is probiotic baverage, made from tea with sugar and starter SCOBY with time fermentation 4-14 days. Time of fermentation can be affects to physical and chemical properties of kombucha. This probiotic baverage has the potential to increase immunity and body resistance. Pineapple commonly consumed fresh or processed products, the part of pineapple that’s not consumed was skin and liver as 47%. The chemical component in pineapple skin was flavonoid, bromelain, 17,53% carbohydrates and 17% glucoses that can be used as kombucha. This research purpose to determine the effect of kombucha pineapple skin juice on the 7th day and 14th day fermentation. This research used a RBD with two factors, the first factor was sucrose concentration (5%, 10%, 15% and 20%) and second factor was starter SCOBY concentration (10% and 15%). This data were analyzed using ANOVA and minitab 17. The results on the 7th day showed sucore concentration has significant effect on the pH value, total Acid and TDS. Meanwhile starter SCOBY concentration had a signicantly effect on total acid and TDS but not signigicantly effect on the pH value. On the 14th day showed that sucrose and starter SCOBY has significantly effect to total acid, pH value and TDS.

Abstract

The purpose of the research to determine the effect of probiotics on the proximate content of vaname shrimp (Litopenaeus vannamei). This Research used CRD (Completely Randomized Design) with treatments including P1: conventional cultivation (without probiotics), P2: Probiotic Bio Lacto, P3: Tricodherma sp, P4: GSO4 Probiotic, P5: Tricodherma sp + Probiotic GSO4, and P6: Tricodherma sp + Probiotic Bio Lacto which was done 3 times. Data were analyzed using ANOVA followed by BNJ 5%. The results showed that giving probiotics to vaname shrimp only significantly affected the fat content, while it had no significant effect on water content, ash content, protein and carbohydrate content. The results of the data obtained on the fat content of the lowest value in the treatment of probiotics GSO4 with a value of 1.16 ± 0.14%, and the highest value in the treatment of probiotics Bio Lacto with a value of 4.18 ± 0.76%.

Abstract

Siwalan (Borassus flabellifer L.) atau lontar adalah tanaman palem yang dipanen di musim kemarau, untuk meningkatkan diversifikasi dan olahan buah siwalan maka diformulasikan minuman serbuk. Penelitian ini bertujuan menentukan karakteristik fiisk minuman serbuk buah siwalan berdasarkan konsentrasi tween 80 dan lama pengeringan. Penelitian ini menggunakan RAK faktorial, faktor pertama konsentrasi tween 80 (0,5%; 1%,1,5%) dan faktor kedua lama pengeringan (6 jam, 8 jam, 10 jam). Data dianalisis ANOVA dilanjutkan uji BNJ taraf signifikansi 5% apabila terdapat perbedaan nyata. Hasil penelitian menunjukkan pada konsentrasi tween 80 1% dan lama pengeringan 8 jam menunjukkan nilai rendemen 20.23±1.85%, nilai kelarutan 46.31±7.79% dan kadar air 5.99±1.53

Abstract

Straw mushrooms (Volvariella volvacea) and oyster mushrooms (Pleurotus ostreatus) contain natural glutamic acid which has the ability to provide a high-quality taste that is similar to the taste produced by Monosodium glutamate, making it suitable for use as a natural flavoring powder. This research uses RAK which is arranged factorially, namely the blanching method and the proportion of straw mushrooms (Volvariella volvacea) and oyster mushrooms (Pleurotus ostreatus). Based on the analysis of variance, it was found that there was an interaction between the blanching method and the proportion of straw and oyster mushrooms on physical analysis, namely yield, chemical analysis, namely water content and protein content and had no significant effect on organoleptic analysis. The best treatment results were the natural mushroom flavoring treatment with steamed blanching treatment and a mushroom proportion of 50%:50% (B1P2) which showed a yield of 3.69%, a lightness value of 74.31, a redness value of 5.74, a yellowness value of 14.30, water content 6.94%, protein content 41.36%, color organoleptic test 3.87 (like – really like), taste organoleptic test 3.20 (like) and aroma organoleptic test 3.20 (like). Abstract

Belimbing wuluh (Averrhoa bilimbi L.) buah memiliki rasa asam, tinggi vitamin C, antioksidan, serat dan mineral. selama ini hanya digunaka bumbu masakan, perlu pengembangan turunan produk berbasis bilimbi  di masyarakat. Desa sumorame khususnya RW XI memiliki taman toga dan kelompok asman toga yang mudah di temukan dilingkungan sekitar rumah dan di taman asman toga. Belimbing wuluh mudah ditemukan dan melimpah sehingga perlu dilakukan diversifikasi. Diversifikasi bilimbi bertujuan agar belimbing wuluh memiliki nilai tambah dan dijadikan komoditas unggulan mitra. Hasil dari pengabdian ini adalah peningkatan kemampuan mitra tentang proses rekayasa diversifikasi produk berbasis belimbing wuluh.

Abstract

Pangan merupakan kebutuhan primer, yang harus aman, sehat, bermutu, layak dan terjangkau. Pangan halal saat ini menjadi halal mandatory yang harus diterapkan. sertifikasi halal menjadi salah satu kewajiban bagi pengusaha makanan minuman. syarat mendapatkan sertifikasi halal adalah memiliki legalitas usaha. pendampingan ini ditujukan kepada asosisasi pengusaha Nasyiatul (APUNA), baru 10 % pengusaha yang memliki legalitas sehingga perlu dilakukan pendampingan legalitas usaha dan penerapan GMP. Adapun hasil dari pengabdian ini adalah peningkatan kemampuan mitra tentang keamanan pangan. Keberlanjutan kegiatan ini monitoring penerapan produksi yang sesuai dengan standar Good Manufacturing Practice / GMP sehingga makanan yang dikomersialkan aman dan halal.

Abstract

PEF (Pulsed Electric Fields) adalah proses non termal yang melibatkan penggunaan pulse pendek (µs-ms) dengan voltase tinggi pada material yang diletakkan di antara dua elektroda. PEF dapat digunakan untuk proses ekstraksi. Hal ini dikarenakan PEF menyebabkan elektroporasi membran sel. Mekanisme elektroporasi yang disebabkan oleh PEF mekanismenya terbagi menjadi tiga fase, yaitu fase 1 (inisiasi pembentukan pori-pori dan destabilisasi sementara struktur membrane), fase 2 (pori-pori mengembang dan teragregasi), dan fase 3 (tahap final elektroporasi). Beberapa hasil penelitian menunjukkan bahwa PEF dapat digunakan untuk ekstraksi pigmen betanin dengan kekuatan medan Listrik antara 1-20 kV/cm.

Abstract

Osmosis salah satu metode membuat sari buah dengan merendam buah dengan gula sehingga terjadi plasmolisis, air dan komponen buah keluar melalui membran semi permeabel. Buah naga merah (Hylocereus polyrhizus) tinggi antioksidan, pigmen betasianin. Kebaharuan penelitian ini mengukur tingkat kesukaan panelis dan mutu minuman sari buah. Tujuan penelitian ini adalah karakterisasi mutu organoleptik minuman buah naga merah dan tingkat kesukaan panelis. Penelitian dilaksanakan dengan uji organoleptik hedonik, data yang diperoleh duji friedman, dilanjutkan perlakuan terbaik. Hasil Hasil menunjukkan bahwa pada lama waktu osmosis 24 jam dan konsentrasi sukrosa 50% rerata organoleptik meliputi warna 3,13, aroma 3,77 dan rasa 3,47.

Abstract

Cookies juga merupakan salah satu produk bakery yang disukai masyarakat Indonesia sebagai makanan ringan. Formulasi yang digunakan adalah 30%, 50%, dan 70% tepung umbi ungu, dengan bahan tambahan tepung terigu, margarin, gula halus, dan kuning telur. Uji organoleptik melibatkan 30 panelis yang menilai aroma, rasa, dan tekstur. Hasil menunjukkan bahwa formulasi dengan 30% tepung umbi ungu lebih disukai secara keseluruhan dibanding formulasi lainnya. Parameter aroma dan rasa tidak menunjukkan perbedaan signifikan berdasarkan analisis ANOVA, namun parameter tekstur menunjukkan perbedaan nyata, di mana formulasi 30% menghasilkan tekstur paling renyah. Cookies dengan tepung umbi ungu berpotensi menjadi alternatif makanan ringan yang rendah gluten dengan kandungan serat tinggi.
