Abstract

Face masks are cosmetics that used to brighten facial skin and protect against free radical damage while maintaining skin's youthfulness. Eucheuma cottonii seaweed is a seaweed that has useful content for the skin, including high antioxidant content, and could use as an essential ingredient in facial masks. The aim of this study to determine the effect of different ratios of seaweed addition to pH, time of drying, and organoleptic preparation, while the benefits of this research were as information material about the use of Eucheuma cottonii seaweed as a natural mask and IPTEK contribution to Central Sulawesi. The research carried out in August 2017 at the Basic Laboratory and the Laboratory of Applied Marine Products Processing Technology, Palu Polytechnic. This research used Randomized Group Desig for Organoleptic and Completely Randomized Design for pH and drying time, with 5 treatments each repeated 3 times, so there are 15 experimental units. The pH value of Eucheuma cottonii seaweed facial masks on each treatment showed that there was no significant difference in the pH value of 7.2 for each treatment. In contrast, for the dried treatment was the best, A5 treatment with a drying time of 20.6 minutes. The quality of Eucheuma cottonii seaweed based on each treatment that was by the applied standards, so the best concentration was on A5 treatment. The pH value, drying time, and organoleptic preparations in this study generally meet the quality standards of masks set by the Indonesian National Standards and supported by existing research results.

Abstract

Syrup is a kind of drink in the form of a thick solution with diverse flavors that are not directly drunk but must be diluted first. Dilution is needed because the sugar content in syrup is high, which is between 55% - 65%. The making of syrup can be added with coloring and citric acid to add color and flavor. The purpose of this study was to determine the panelists' acceptance of the manufacture of syrup using raw materials of mangrove fruit. While the benefits of this study researchers are expected to improve their knowledge and skills in processing Mangrove Pedada Fruit (Sonneratia caseolaris) so that they are able to develop the science and technology of processing Mangrove Pedada Fruit (Sonneratia caseolaris) in Central Sulawesi. This research will be carried out in December 2019, at the Applied Marine Products Processing Technology Laboratory, Palu Polytechnic. This study uses RAK (Randomized Block Design) with 3X organploptic test replications, the treatment applied is the addition of mango juice in the production of mangrove fruit syrup (Sonneratia caseolaris) consisting of 5 treatments, each Mangrove juice 0 ml, 150 ml, 175 ml, 200 ml and 250 ml. What was observed was organoleptic which included thickness, color, taste and aroma. Pedada Mangrove Syrup (Sonneratia caseolaris) with the addition of Mango juice (Mangifera indica) is best obtained in the treatment of p1 with an orange color, aroma, taste and thickness that resembles juice in general. Further research needs to be done about the shelf life of Pedada Mangrove Fruit Syrup (Sonneratia caseolaris) with the addition of different Mango Juice (Mangifera indica).

Abstract

Rumput laut merupakan komoditas laut yang memiliki nilai ekonomis tinggi. Jenis rumput laut yang sering dibudidayakan adalah jenis Eucheuma cottonii, Permen merupakan jajanan yang banyak diminati di kalangan anak-anak hingga orang dewasa. Guna meningkatkan nilai tambah dari rumput laut maka peneliti mencoba membuat permen Hard candy dari tepung rumput laut dan menambahkan ekstrak daun jambu mente sebagai anti bakteri. Tujuan dari penelitian ini untuk mengetahui pengaruh penambahan ekstrak daun jambu mente terhadap jumlah total koloni bakteri dan sensori permen herbal rumput laut. Penelitian ini merupakan penelitian eksperimental laboratoris parameter yang di gunakan yaitu uji Total Plate Count (TPC) dan uji sensori yang meliputi warna, aroma, tekstur, dan rasa. Rancangan percobaan yang digunakan adalah RAK dengan 5 taraf perlakuan yaitu P1 (0 ml), P2 (10 ml), P3 (20 ml), P4 (30 ml), P5 (40 ml). Jumlah total mikroba terendah terdapat pada perlakuan P5 (2,26 x 103), sampel warna yang disukai yaitu P3(4.67), sampel aroma yang disukai yaitu P5 (4.13), sampel tekstur yang disukai yaitu P5 (4.80), sampel rasa yang disuukai yaitu P1 (4.73). Penambahan ekstrak daun jambu mente pada permen herbal rumput laut sangat berpengaruh terhadap total koloni bakteri karena terjadi penurunan jumlah total koloni bakteri seiring dengan banyaknya ekstrak daun jambu mente yang di tambahkan. Berdasarkan hasil uji sensori permen herbal rumput laut yang ditambahkan ekstrak daun jambu mente mendapatkan hasil memberi pengaruh nyata terhadap warna, tekstur dan rasa pada permen herbal rumput laut, tetapi tidak memberi pengaruh nyata pada aroma permen herbal rumput laut. Berdasarkan hal tersebut dapat diketahui bahwa perlakuan terbaik permen herbal rumput laut dengan penambahan ekstrak daun jambu mente terdapat pada sampel P5 dimana memiliki total mikroba paling terendah yaitu 2,26 x 103 Koloni/g dan sampel P5 memiliki aroma, tekstur, dan rasa yang disukai panelis.

Abstract

Kegiatan ini mempunyai tujuan untuk mengembangkan pengetahuan dan keterampilan peternak dalam meramu “jamu ternak” berdasarkan formulasi ransum, yaitu penyusunan berdasarkan angka kecukupan nutrisi ternak. Kegiatan program Pengabdian kepada Masyarakat (PKM) ini dilaksanakan pada tanggal 22 November 2022 di “Kelompok Ternak Balanipa” Kelurahan Balanipa Kecamatan Balanipa Kabupaten Polewali Mandar.  Anggota kelompok mitra adalah kelompok peternak ayam dan sapi. Pelaksanaan pelatihan, meliputi 1.  Pemberian materi pelatihan dengan topik “Manajemen Usaha Kecil”. Memperkenalkan mitra mengenai manajemen usaha kecil, di dalamnya menjelaskan tentang aspek pemasaran, aspek produksi, aspek permodalan dan keuangan, dan aspek sumber daya manusia. 2. Pemberian materi pelatihan dengan topik “Pembuatan jamu ternak”.  Pada sesi ini disampaikan 2 topik materi yaitu pembuatan jamu untuk ternak sapi dan ternak unggas.    Setelah dilakukan penyuluhan dan pelatihan, terjadi penambahan pengetahuan dan kesadaran para anggota kelompok ternak “KT Balanipa” Kelurahan Balanipa Kecamatan Balanipa Kabupaten Polewali Mandar tentang pentingnya manajemen usaha kelompok ternak dan pembuatan jamu ternak.  Hal tersebut dapat dilihat dari perbandingan skor hasil kuesioner awal dan akhir dari 17 anggota kelompok ternak, terdapat peningkatan pengetahuan peternak dari 25%  menjadi 70% yang paham dan tahu betul tentang jamu ternak dan kelebihan-kelebihannya jika diberikan pada ternak. This activity aims to develop the knowledge and skills of breeders in concocting "livestock herbs" based on a ration formula, namely preparation based on livestock nutritional adequacy figures. This PKM program activity was carried out on November 22, 2022, at the "Balanipa Cattle Group" in Balanipa Village, Balanipa District, Polewali Mandar Regency. Members of the partner group are groups of chicken and cattle breeders. Implementation of training, including 1. Provision of training materials on the topic "Small Business Management." Introducing partners regarding small business management, in which they explain marketing, production, capital, financial, and human resource aspects. 2. Provision of training materials on "Making herbal medicine for livestock". In this session, two material topics were presented, namely the manufacture of herbal medicine for cattle and poultry. After counseling and training, additional knowledge and awareness of the members of the livestock group "KT Balanipa" Balanipa Village, Balanipa District, Polewali Mandar Regency was carried out regarding the importance of managing livestock groups and making livestock herbal medicine. This can be seen from comparing the scores of the initial and final questionnaire results of 17 members of the livestock group. There was an increase in farmers' knowledge from 25% to 70% who understood and knew very well about herbal medicine and its advantages when given to livestock.

Abstract

Tilapia fish are susceptible to the process of decay, within 2 hours after death the tilapia fish will experience a decline in physical quality. Starfruit extract contains active compounds, namely saponins, triterpenoids and several minerals which are antibacterial substances. This research aims to determine the effect of starfruit extract on the total microbial test, water content and pH of tilapia during room temperature storage. Data analysis used a Completely Randomized Design (CRD). Data were analyzed descriptively for total microbial testing using the Indonesian National Standard calculation method SNI 2332.3-2015 and SNI 01-2346-2006. The differences in treatment in this study were made by differences in the concentration of starfruit extract. The concentration of starfruit juice given was 0 gr (P1), 40 g (P2), 60 gr (P3), 80 gr (P4) and 100 gr (P5) with four repetitions. The samples were then stored at room temperature for 8 hours. Based on the research results, it can be seen that starfruit extract has an influence on the total microbial value, Based on the research results, it can be seen that starfruit extract has an influence on the total microbial value, pH value and water content value of tilapia fish. The number of bacterial colonies in the treatment with the highest amount of extract (100 grams) with the lowest total microbial value was 2.49 x 105 colonies/g. Also, the pH value and water content of all treatments given starfruit extract were still included in the standards for fresh fish. Keywords: Tilapia, Wuluh Starfruit, Total Microbes

Abstract

Abstrak Ikan merupakan salah satu komoditi hewani yang memiliki kandungan gizi yang lengkap seperti; protein, karbohidrat, lemak, vitamin dan mineral, yang sangat dibutuhkan dalam tubuh manusia, namun ikan mudah mengalami pembusukan (perishable food). Agar ikan sampai ke tangan konsumen dalam keadaan baik diperlukan upaya untuk menghambat peroses pembusukan dengan cara pengawetan. Salah satunya dengan menggunakan garam.Tujuan penelitian ini adalah untuk mengetahui pengaruh tiga jenis garam berbeda terhadap kadar air dan mutu sensori ikan asin layang. Penelitian ini menggunakan metode RAK (rancangan acak kelompok) untuk uji sensori, RAL (rancangan acak lengkap) untuk uji kadar air, pH dan rendemen untuk menentukan berat awal dan berat akhir pada tiap perlakuan. Perlakuan yang di terapkan adalah pengaruh kosentrasi berbagai jenis garam pada pembuatan ikan asin kering yang terdiri atas lima taraf masing – masing yaitu ikan asin dengan penambahan tiga jenis garam sebanyak 15 % dari berat ikan. Adapun perlakuan dalam penelitian ini yaitu P1= garam halus, P2= garam garapan, P3= garam batu, yang di ulangi sebanyak lima kali. Berdasarkan hasil penelitian, maka dapat ditarik kesimpulan bahwa perlakuan tiga jenis garam berpengaruh terhadap hasil uji kadar air, uji pH dan hasil uji sensori penampakan. Sedangkan hasil uji sensori aroma, tekstur, tingkat kesukaan dan jamur tidak memberikan pengaruh yang nyata. Ikan layang asin yang terbaik terdapat pada perlakuan P3 karena memiliki nilai rata-rata sensori tertinggi dibandingkan perlakuan lainnya dan memiliki nilai kadar air dan pH yang telah memenuhi Standar Nasional Indonesia (SNI). Abstract

Purpose: This study aims to determine the optimal ratio of tembang fish flour addition to enhance the nutritional value of biscuits while maintaining their quality. Methodology: The research was conducted from June to July 2022 at the Applied Marine Product Processing Technology Laboratory and the Basic Laboratory of Politeknik Palu, Central Sulawesi Province. A Completely Randomized Design (CRD) was used for moisture content tests, and a Randomized Block Design (RBD) was used for organoleptic tests with five treatments of tembang fish flour addition: P1 (0 g), P2 (10 g), P3 (15 g), P4 (20 g), and P5 (25 g), each repeated three times. Results: The study found that the best addition of tembang fish flour in biscuits was P4, with a preference level of 'Like' (score 4) and moisture content below the maximum standard for biscuits (3.5% per 100 grams). Findings: Tembang fish biscuits are economical and significantly cheaper than other brands. Novelty: This research explores the use of tembang fish flour to diversify and enhance the nutritional profile of biscuits. Originality: The study offers detailed analysis and evidence of the nutritional and economic benefits of adding tembang fish flour to biscuits. Conclusions: Adding tembang fish flour improves the nutritional value and quality of biscuits, making them a viable and economical alternative. Type of Paper: Empirical Research Article

Abstract

The process of processing smoked fish that does not pay attention to sanitation and hygiene standards, as well as open storage next to the road body, causes dust, germs, and bacteria to contaminate the quality of processed smoked flying fish in the Somba culinary tourism center. This study aims to evaluate the microbiological quality of smoked flying fish based on Total Plate Count (ALT) and water content to assess its compliance with food safety standards. This study used a combination method of sequential exploratory model, which is a combination research method that combines qualitative and quantitative research methods sequentially. Data collection was carried out by purposive sampling, and the parameters for this sampling were based on the 10 stalls with the most production and customers. The results showed that out of 10 samples, there were only four samples that met the SNI requirements of a maximum of 1.0×105 colonies/g, including samples S2 (2.74×104), S5 (2.53×104), S9 (2.33×104) and S10 (2.38×104). In contrast, the results of the water content test show that out of 10 samples, there are only three smoked flying fish samples that have a water content value that matches the maximum limit of smoked fish based on SNI, which is a maximum of 60% including samples S2, S5, and S9
