Abstract

Obesity is one of nutritional problem in adolescents. obesity among adolescents may be associated with the selection of snacks that are high in caloric density. he utilization of local food ingredients, such as red bean flour and porang flour, in the development of snack bars has the potential to provide a healthy alternative snack that supports adolescents’ nutritional needs. The purpose of this study was to develop a snack bar formulated from red bean flour and porang flour as the primary ingredients. The research was conducted on 3 snack bar formulations with varying compositions of red bean flour and porang flour, F1 (95:5), F2 (96:4), and F3 (97:3). Organoleptic and hedonic quality tests were assessed to determine the level of panelists' preference. Testing was conducted on 26 semi-trained panelists. The collected data were analyzed using One-Way ANOVA and Duncan Test for significant results (p<0.05). The results of organoleptic tests on color, aroma, texture, taste and overall the most preferred red bean - porang snack bar were F2 with a color preference value of 4.23, aroma 4.46, texture 3.92, taste 4.26, and overall 4.50. Meanwhile, the hedonic quality test on taste showed no statistical difference (p = 0.920), but the hedonic quality test on texture showed a significant difference (p=0.002). Organoleptic evaluation and acceptability of the red bean-porang snack bar reported that the best formulation was F2, with a proportion of 96g red bean flour and 4g porang flour. This was indicated by the highest scores for each organoleptic aspect.

Abstract

Overnutrition remains a major public health concern in Indonesia, with increasing prevalence among young adults. Fast food consumption, characterized by high fat and low nutrient content, has been associated with various behavioral and environmental determinants, including media exposure. This study aimed to analyze the association between fast food–related media exposure and consumption frequency among young adults. A cross-sectional study was conducted among 158 individuals aged 19–29 years in Kepulauan Riau, Indonesia, using purposive sampling. Data were collected through a structured electronic questionnaire assessing media exposure and frequency of fast food consumption. Statistical analysis was performed using Spearman’s rank correlation test. The results showed that the majority of respondents were highly influenced in fast food–related media exposure (68.4%) and reported frequently in fast food consumption frequency (51.9%). However, no significant correlation was found between media exposure and consumption frequency (p = 0.296), with a very weak positive correlation coefficient (r = 0.084). These findings suggest that media exposure alone is not a strong determinant of fast food consumption behavior. Other factors such as individual preferences, social influences, and environmental conditions may play a more substantial role. Future interventions should adopt a multifactorial approach by addressing not only media exposure but also individual, social, and environmental determinants of dietary behavior. Strengthening nutrition education and improving healthy food accessibility are essential to reduce fast food consumption among young adults.

Abstract

Badan Pengawas Obat dan Makanan (BPOM) reported that 20.62% of identified food product labels did not meet the provisions. This results in low compliance with reading information labels and nutritional composition among the public. Low compliance with reading information and nutritional labels can occur due to disinterest in information resulting in poor understanding of food product labels. This study aims to analyze the relationship between attitudes towards health and food product labels with compliance with reading food product labels. This research involved 47 students of the undergraduate nutrition study program. Data on attitudes towards health and nutritional labels were obtained using a respondent agreement level form. Data on label reading compliance was obtained from questionnaire. The chi square test is used to analyze the relationship between variables. The research results showed that the majority of respondents (63.8%) had a positive attitude regarding the level of approval of health and food product labels. There is no significant relationship between attitudes towards health and food product labels and compliance with reading nutritional value information labels (p=0.330). Nutrition students are expected to increase their positive attitude towards reading nutritional value information labels through education or practice reading food labels.

Abstract

Abstract

Diabetes Mellitus (DM) is a metabolic disorder characterized by high blood sugar levels due to impaired insulin secretion, which results in impaired metabolism of fats (lipids), proteins, and carbohydrates. (Yulyastuti et al., 2021). Purple sweet potato (Ipomoea batatas L.) has the carbohydrates contained in purple sweet potatoes are on the Low Glycamix Index, so consumption will not drastically increase blood glucose. This study used a quasi-experimental method with a One Group Pretest-Posttest Design and serves to examine the impact of giving purple sweet potato getuk on blood glucose control in Type 2 Diabetes Mellitus patients. The sample size was 15 people and was selected using a purposive sampling technique. Data collection included data on age, gender, and blood glucose levels before and after the intervention. Data analysis used a Paired T-Test. The results showed that respondents' blood glucose levels increased from an average of 95.67 ± 4.73 mg / dL (pre-test) to 100.33 ± 3.26 mg / dL (post-test). The effect of purple sweet potato getuk on controlling blood glucose in patients with Type 2 Diabetes Mellitus was obtained from the results of the p-value = 0.001 (<0.05). In conclusion, blood glucose levels before the intervention were different from those after the intervention (p = 0.001), which means that the administration of purple sweet potato getuk had an effect on controlling blood glucose levels in Type 2 Diabetes Mellitus patients.

Abstract

Hypertension is a health problem that requires particular attention among older adults, as it is associated with an increased risk of cardiovascular disease. An unhealthy dietary pattern is one of the modifiable risk factors, including the habit of consuming fast food, which generally contains high amounts of sodium and saturated fat. The research aimed to determined the relationship among fast food consumptio requency and the occurrence of hypertension among older adults aged 46059 years. An observational analytic study with a cross-sectional approach was applied in the Sei Langkai Public Health Center, Batam City. Atotal of 105 participants were picked used purposive sampling based on prefetermined inclusion and exclusion criteria. Information on fast food consumption frequency was collected used a food frequency questionnaire (FFQ), hhile blood pressure was measured used a sphygmomanometer. The data were analyzed using the pearson correlation test. The outcomes revealed 89,5% of participants were categorizes as frequent fast food consumers during the purvious month. The most commonly consumed food were fried food and padang rice dishes, each accounting for 52.4%, followed by instant noodles at 51,4%. Based on blood pressure measurements, 32.4% of respondents were classified as prehypertensive ande 30.4% as having stage 1 hypertension. The pearson correlation test yielded a p-value 0f 0.440, no significant relationship among fast food consumption frequency and the occurrence of hypertension. Prevention of hypertension should nevertheless be encouraged by limiting high-sodium foods, increasig fruit and vegetable intake, and undergoing reguler blood pressure checks.
