Abstract

Tea or Camellia sinensis is reported to contain as many as 4000 bioactive components, one of third are polyphenols. Polyphenols found in tea or Camellia sinensis are catechins, which consist of several types, one of which is Epigallocathecin-3-gallate (EGCG). Assessment of catechin and EGCG levels using HPLC due to considerations of efficiency, speed, and reduction of analysis costs which are also characteristic of HPLC. The aim of this study was to determine and compare the phytochemical content of catechin and EGCG compounds in white and green tea using the HPLC method. The research design used was a comparative analytical design. The main materials used were white tea and green tea from the Tea and Kina Research Center (PPTK), Gambung. The test conducted was a phytochemical examination of catechins and EGCG of white and green tea using the HPLC method in two replication. The results showed that the average catechin content in white tea was greater than that in green tea, which is 2.057±0,12% (w/b) in white tea, and 1.328±0,03% (w/b) in green tea. EGCG content in white tea has an average of 9.349±0,09% (w/b) and is greater than the average EGCG content in green tea which is only 8.037±0,05% (w/b).  This is also reinforced by the statistical analysis results using an independent sample t-test of catechin and EGCG content in white and green tea which showed a significant difference. The conclusion is white tea has a greater catechin and EGCG content compared to green tea.

Abstract

Fermentation has a great potential to increase gamma amynobutiric acid (GABA) content, one of which is fermented milk. In particular, fermentation by lactic acid bacteria can produce GABA in its most natural and suitable form. The purpose of this study was to examine the potential of Lactobacillus plantarum PH715 to produce GABA as a starter for fermented milk. Temperature and incubation time are factors that affect the production of GABA in fermented milk. The pH measurement with pH meter, population with scatter method, GABA content produced was analysed quantitatively using UPLC. Based on the observation, L. plantarum PH715 is a gram-positive bacteria, bacil-shaped, purple in colour, catalase negative and does not produce gas. The pH value at the fermentation time of 48 hours with a temperature of 37°C and 43°C has met the pH requirements as fermented milk, which are 4.21 and 4.25. The population of L. plantarum PH715 at incubation times of 0, 12, 24, 36 and 48 hours at temperatures of 37°C and 43 °C met the probiotic requirements. The highest GABA content of fermented milk by L. plantarum PH715 was at an incubation temperature of 37°C for 48 hours with the addition of 2% MSG at 2.09mg/mL.

Abstract

School-age children often do not pay attention to the quality and quantity of their food consumption. Therefore, nutrition education about healthy food is needed to increase their knowledge and attitudes in choosing healthy food to support their growth and development. This study aimed to analyze the effect of nutrition education through the media "Interactive Book" on knowledge and attitudes about healthy food in children aged 9-12 years. This research was conducted in several areas in Serang City, Banten. A quasi-experimental was designed with one group pretest-posttest. The subjects of this study used 35 children. Data analysis used paired sample t-test. The results showed there was an increase in knowledge and attitude scores after being given education with interactive book media (post-test 1). In posttest 2 there was a slight decrease in the average score, but both were still in the good category. The results of the paired t-test analysis showed that there was a significant difference in knowledge and attitude scores between before and after being given education. Interactive book media is proven to increase the knowledge and attitudes of school-age children. This media can be used as an effective nutrition education media for school children aged 9-12 years

Abstract

Primary dysmenorrhea is menstrual pain in the absence of genital abnormalities that appear in a person after their ovulation cycle has remained. The peak of the incidence of dysmenorrhea is in adolescence, which is 15-25 years. The purpose of this study was to determine the relationship between iron intake, calcium intake, and physical activity with primary dysmenorrhea in UHAMKA students. This research was a quantitative study with a cross-sectional design, and used univariate and bivariate data analysis.   The sample consisted of 289 people. The dependent variables in this study were primary dysmenorrhea while the independent variables in this study were iron intake, calcium intake, physical activity, and nutritional status. Dysmenorrhea data collection was taken using the WaLIDD Score questionnaire. Iron and calcium intake data were taken with the Semi Quantitative Food Frequency Questionnaire (SQ-FFQ) questionnaire. Physical activity data was taken using the International Physical Activity Questionnaire (IPAQ) questionnaire. Nutritional status indicator used BMI. The results showed that most of the subjects had primary dysmenorrhea and had insufficient intake of iron and calcium. More than half of the subjects had a moderate level of physical activity and normal nutritional status. The chi-square test showed that there was significant relationship between iron intake, calcium intake, and nutritional status, but there was no significant relationship between physical activity  with primary dysmenorrhea. Therefore, intake of iron and calcium must be increased and BMI must be maintained within normal category to prevent primary dysmenorrhea.

Abstract

Noodle products consumed by the public are currently not supported by a balanced nutritional value. Dried catfish noodle product with pumpkin flour substitution has high protein content and low water content according to SNI, but this product has not been analyzed for macro and micro nutrients. The aim of the study was to analyze the macro and micro nutrient content in dried catfish noodles substituted with pumpkin flour. This type of research is pre-experimental design with a one-shot case study design. Analysis of macronutrients using proximate analysis, Kjeldahl method. Analysis of protein and micronutrients used the AAS method. Dry noodles have a water content of 7.51% - 9.68%, ash content 1.46% -2.84, energy 383.005 kcal, protein 7.78 grams, fat 4.865 grams and carbohydrates 67.025 grams. The need for macronutrients aged 4-6 years when consuming 1 serving contributes 13.67% energy, 35.56% protein, 4.87% fat and 15.23% carbohydrates. Dried catfish noodles substituted with pumpkin flour also contain micronutrients consisting of 2.155 mg zinc, 4.16 mg iron, 36.87 mg calcium, 0.01% albumin and 4,066.88 µg beta-carotene. Referring to SNI and BPOM, this dry noodle is a high-protein processed food and a source of vitamins and minerals for zinc, iron and beta-carotene. While the levels of calcium and albumin do not meet BPOM requirements because the nutrient content is <15% ALG.

Abstract

The government of Indonesia is targeting an integrated reduction in nutrition problems. Household food security as one of the indicators of nutritional fulfillment in children both in quantity and quality is an interesting issue to see its relationship. This study aimed to see the relationship between food security and dietary diversity on the nutritional status of children aged 12-59 months in Cibaliung subdistrict, Pandeglang. The cross-sectional study was the design, and 98 children were selected purposively to be the sample. Household Food Insecurity Access Scale (HFIAS) was used to classify households in food security conditions. The two non-consecutive days of 24-hour recall method was used to obtain and classify dietary diversity scores based on WHO indicator. Data on nutritional status was obtained by measuring body weight and length/height as assessed by the z-score including Weight for Age, Height for Age, and Weight for Height z-score. The Chi-square test and Spearman Rank were used to see the relationship between variables. The result showed that the proportion of underweight is 27.6%, stunting is 44.9%, and wasting is 13.3%. There was a significant correlation between food security, and all indexed (p,0.05), WFA (r=0.491), HFA (r=0.416), and WFH (r=0.291). Other results showed the association between dietary diversity and nutritional status of WFA and WFH (p<0.05). The availability of food in the household is a determinant of fulfilling the intake which determines the nutritional status. So that, the interventions are needed to require the intake of children starting from the availability of food at the household level.

Abstract

Rosella effervescent tablet is an effervescent product in the form of tablet made from roselle petal extract. This study aimed to evaluate the antioxidant content of the resulting effervescent tablets and the effect of effervescent tablets on the in vivo immune system. The technique for making effervescent tablets used the wet granulation method. Immune system analysis used rat test animals. The type of rat is Sprague Dawley. There were three treatment groups, each group consisted of 5 rats. The first group was the standard group, group 2 was the positive control group which was given Stimuno Forte at a dose of 1.35 mg/kg BW, and the treatment group 3 was given roselle effervescent tablets at a dose of 8.1 mg/kg BW by sonde for 28 days. Blood sampling (leukocytes, differential leukocytes, lymphoid organs (spleen and liver), total serum protein, and serum albumin) was performed on day 0 and day 29. The chemical test results of the effervescent tablets showed an IC50 of 10.35 ppm, a vitamin C content of 2.28 mg/tablet, and an anthocyanin content of 22.12 mg/L. The results of the research on rosella effervescent tablets at a dose of 8.1 mg/kg BW provided a protective effect on the immune system of rat with an average parameter of leukocyte count of 7.58×103/µL, total serum protein of 10.25 g/dl, and relative liver weight of 3. 11% and still within the normal range of Sprague Dawley rats.

Abstract

Currently, Indonesia has a triple burden of nutritional problems, namely stunting, wasting and obesity as well as micronutrient deficiencies such as anemia. This study aims to analyze the relationship between intake of macronutrients and nutritional status based on BMI. This study uses a cross sectional design. Data collection was carried out in September-October 2021 in Palembang with a sample of 129 young women selected by purposive sampling. The variables to be examined in this study were the nutritional status of female adolescents based on BMI, while energy, protein, fat and carbohydrate intake was measured using the semi-quantitative food frequency questionnaire method. Data analysis used the Chi Square test to see the relationship between variables. The results of the analysis showed that there was a relationship between protein intake and the nutritional status of female adolescents (p<0.05), while energy, carbohydrate and fat intake were not related to nutritional status (p> 0.05). This proves that protein intake is very important for young women to support growth.

Abstract

Ischaemic stroke patients tend to be malnourished. Diet satisfaction based on food waste can be used to evaluate food intake in hospitalized patients. A previous study found that there was a correlation between food waste and hospital length of stay. The aim of the study was to explore the association between diet satisfaction and hospital length of stay in ischaemic stroke patients at National Brain Centre Hospital Prof.Dr.dr Mahar Mardjono Jakarta. Design of the study was cohort retrospective. The study recruited 103 ischaemic stroke patients aged from 18 to 59 years old. Data was analysed by using chi-square test. The percentage of ischaemic stroke patients who had prolonged length-of-stay or >5 days was 34%. The proportion of low food waste was higher in patients who stayed at hospital ≤5 days (70%) than >5 days (30%). It may conclude that most patients with a short-hospitalized length of stay had low food waste.  High food waste was a risk factor for hospital length of stay (RR=1.59, CI: 0.927-2.742), but the correlation between diet satisfaction based on food waste and hospital length of stay was not significant (p=0.112).

Abstract

The patient's acceptance of the food served during medication in the hospital is an indicator of the success of hospital services. According to the Ministry of Health of the Republic of Indonesia in 2013, hospital food service was unsuccessful if the patient's plate waste was >20% because the standard said plate waste ≤20% was used as an indicator of nutrition services for every hospital in Indonesia. The study aimed to determine the relationship between the type of diet, food acceptability, plate waste, and patient satisfaction at X Hospital in Jakarta. This research used a descriptive method which is observational and cross-sectional. This study was conducted on 62 patients for 12 days. During the study, the highest treatment diet which is received by the patient is a balanced diet of about 40.3%. This hospital found that plate waste and food acceptability are classified as good, about 77.4%. The food components that are served by the hospital consist of animal protein, plant-based protein, vegetables, and fruit. The results showed that plate waste consisted of 14.2% of rice, 14.2% of animal protein, 8.4% of plant-based protein, 24.9% of vegetables, and 5% fruit. The results of bivariate analysis using the chi-square statistical test indicated no relationship between the type of diet and food acceptability with patient satisfaction. Besides, the statistical test revealed a significant relationship between plate waste and patient satisfaction at X Hospital Jakarta.
