Abstract

The progress in Asia, AWGS (2019) re-establishes that the incidence of sarcopenia can be seen based on decrease in muscle strength. The new diagnosis was "possible sarcopenia" with the aim of early detection for the elderly. Objective: To analyze the muscle strength of elderly with T2DM based on AWGS indicators (age, muscle mass, intake of energy, fat and carbohydrate, physical activity and sedentary activity) in the Air Itam Community Health Center. Method: cross-sectional study involving 90 of elderly people, aged ≥ 55 years. Data was obtained from interviews, measurements of muscle mass and HGS, IPAQ questionnaires, and 1x24 hour food recall. Results: The average muscle strength of elderly with T2DM in the low category was 58.9% (53 people). It means that the elderly had been diagnosed with "possible sarcopenia". The results of statistical test analysis also stated that there was relationship between variables age, muscle mass, intake of energy, fat and carbohydrates, as well as physical activity and sedentary activity with muscle strength in the elderly (p value < 0.05). Conclusion: Elderly with T2DM are diagnosed with "possible sarcopenia" of 58.9%. Recommendation: research nutritional interventions through physical activity and food intake to maintain muscle strength.

Abstract

Food safety is an essential aspect of the restaurant industry, which heavily relies on employees’ knowledge and attitudes in implementing proper procedures. Awareness of food safety not only influences the quality of the food served but also affects consumer health and the restaurant’s reputation. This study aims to evaluate the effectiveness of three educational media—2D posters, 3D animated videos, and applicative media (Food Safety Puzzle)—in improving the knowledge and attitudes of restaurant employees, who in this case are culinary students on duty at the restaurant, regarding food safety. The method used was an experimental design with Wilcoxon Signed Rank Test analysis to assess changes in respondents’ knowledge and attitudes before and after the educational intervention. The results showed that all educational media successfully improved employees’ knowledge significantly. Specifically, 100% of respondents achieved an “Excellent” level of knowledge after using the 2D poster. Additionally, the applicative media (Food Safety Puzzle) had the greatest impact on attitudes, with 60% of respondents reaching the “Excellent” category after the educational session. In conclusion, a multifaceted approach in delivering food safety education proved effective in enhancing the knowledge and attitudes of restaurant employees. Therefore, it is recommended that restaurants implement various educational media in their training programs. Further research is also needed to explore the long-term effects of food safety education programs to ensure that employees consistently apply the knowledge gained in their daily practices.

Abstract

Bayi usia enam bulan memiliki kebutuhan gizi yang meningkat sehingga tidak tercukupi lagi oleh air susu ibu oleh karena itu diperlukan adanya pemberian (MP-ASI). Tujuannya menganalisis pengaruh pendapatan keluarga, pola asuh dan ketepatan pemberian MPASI. Penelitian ini merupakan penelitian kuantitatif menggunakan survey analitik, dengan desain Cross Sectiona.l Populasi dalam penelitian adalah anak umur 6-24 bulan di lokasi penelitian di Puskesmas Sangurara Kota Palu Provinsi Sulawesi Tengah Tahun 2024 berjumlah 624 orang diambil dari data Puskesmas Sangurara. Teknik pengambilan sampel adalah teknik proporsional sampling yaitu tekhnik pengambilan sampel secara representatif dan setiap subjek ditentukan secara seimbang dengan jumlah sampel 87 orang. Analisis Data menggunakan univariat dan bivariat dengan Uji Regresi Logistik serta multivariat dengan Uji Manova. Hasil penelitian adalah ada pengaruh antara pengetahuan (sig=0,000), pendapatan keluarga (sig =0,042), pola asuh (sig=0,007) dan ketepatan pemberian MPASI terhadap status gizi anak umur 6-24 bulan diwilayah kerja Puskesmas sangurara Kota Palu. Kesimpulan ada pengaruh pengetahuan ibu, pendapatan keluarga, pola asuh dan ketepatan pemberian MPASI.

Abstract

Nutrition counseling is education for patients to maintain food intake according to needs. Adequate intake of macronutrients and fiber in patients with type 2 diabetes mellitus complicated by dyslipidemia is expected to maintain blood glucose control and lipid profile in good condition. The aim of this study was to determine the intake of macronutrients and fiber in patients with type 2 diabetes mellitus complicated by dyslipidemia at RSUD dr. Soekardjo Tasikmalaya who has undergone nutritional counseling and has never undergone nutritional counseling. This type of research was observational with descriptive analysis on 87 patients with type 2 diabetes mellitus complicated by dyslipidemia, namely 43 patients who had undergone nutritional counseling and 43 patients who had never undergone nutritional counseling. Sampling used purposive sampling technique. Data collection was carried out by filling out questionnaires on respondent characteristics (history of nutritional counseling, gender, age, education, employment, nutritional status) obtained by interview, anthropometric measurements (body weight and height) and intake of macronutrients and fiber with formula foods. 24 hour recall. The results of the study showed that macronutrient intake in patients who underwent nutritional counseling and who did not undergo nutritional counseling, including protein and carbohydrates, was included in the deficit category. Meanwhile, fat intake is included in the category above requirements. Fiber intake is included in the severe deficit category. This shows that there is a need to increase nutritional programs related to education for patients with type 2 diabetes mellitus with complications so that nutritional intake can be met according to needs with good dietary management.

Abstract

  Posyandu plays a crucial role in monitoring the growth and development of infants and toddlers through monthly anthropometric measurements and nutrition and health counseling. Accurate anthropometric data are essential for developing effective nutrition policies. However, measurement techniques performed by Posyandu cadres are often inaccurate, partly due to limited training support. This study aims to examine the effect of training on the knowledge and skills of posyandu cadres about nutrition and anthropometry. A literature search was conducted using Google Scholar with keywords such as “training”, “posyandu cadres” or “posyandu officers”, “skills”, “knowledge”, “anthropometry”, “infants”, “toddlers”. Literature was selected based on the specific inclusion criteria, which included quantitative experimental studies published between 2020 and 2024 focused on posyandu cadres in Indonesia. Studies were excluded if they were not original research, did not examine changes in the knowledge and skills of Posyandu cadres, or did not utilize appropriate data collection instruments. Four studies demonstrated that training positively impacted cadres’ skills in taking anthropometric measurements. One study showed an improvement in the cadres’ ability to detect stunting, and another found an increase in the cadres’ knowledge scores following training. The findings of this study indicate that training for Posyandu cadres can significantly enhance their knowledge of nutrition and their skills in anthropometric measurement, which may influence future policies and interventions.

Abstract

Stunted refers to a growth disorder that can progress into stunting if not addressed promptly. This condition impacts children's linear growth but can still be improved through appropriate nutritional interventions and proper management support. Objective: This study aimed to analyze the effect of different forms of supplementary feeding based on local food sources on the increase in height of stunted toddlers in Semarang Regency. This research employed a quantitative method with a quasi-experimental design using a pretest-posttest two-group approach. A total of 20 stunted toddlers aged 12–59 months were selected through purposive sampling, with 10 subjects assigned to the regular food-based PMT group and 10 subjects to the enteral food-based PMT group. Results: In the regular food-based PMT group, the average height increased from 83.6 cm to 84.4 cm (p = 0.033), while in the enteral PMT group, the average height increased from 81.2 cm to 81.7 cm (p = 0.035). The mean increase in height was 0.8 cm for the regular food-based PMT group and 0.5 cm for the enteral PMT group. The Mann-Whitney U Test showed a p-value of 0.300, indicating no significant difference between the two groups. However, descriptively, the regular food-based PMT group exhibited a higher average increase compared to the enteral PMT group. Supplementary feeding in both regular and enteral food-based forms derived from local food sources was effective in increasing the height of stunted toddlers. However, no significant difference in effectiveness was found between the two forms of PMT within the two-week intervention period.

Abstract

Diabetes mellitus is a disease in Indonesia whose prevalence will continue to increase. Local food has the potential as an antidiabetic and antihyperglycemic. Pumpkin contains antioxidants that play a role in lowering blood sugar. In addition, fiber intake through nuts can help lower HbA1c levels. The purpose of this study was to determine and analyze viscosity, osmolality, flowability, nutritional content, and organoleptic tests. This study used an experimental method, by making 2 formulas and determining F2 as the recommended formula. The results of the analysis of nutritional substances were 1008.7 kcal of energy, 54.3 grams of protein, 29.5 grams of fat, 136.3 grams of carbohydrates, glycemic index 25.1, viscosity test 909.6 cP, osmolality 368 mOsm/Kg, flowability 0.01 cc/second, and no sediment. This enteral formula has the potential as a low glycemic index enteral food

Abstract

Patient with liver cirrhosis experience metabolic changes in their bodies, including hypermetabolism and gluconeogenesis. These conditions lead to an increased need for nutrients, particularly albumin and Branched-Chain Amino Acids (BCAAs), which consist of isoleucine, leucine, and valine. Local foods can serve as raw materials for making enteral blenderized products for liver cirrhosis patients, such as tempeh and snakehead fish. This study aims to develop an enteral blenderized product, including formulation, viscosity testing, osmolality testing, flowability testing, sedimentation testing, and organoleptic testing, based on local foods like pumpkin, tempeh, and snakehead fish for liver cirrhosis. The study is an experimental research with two treatments, namely variations in the ratio of tempeh to snakehead fish, F1 (30:20) and F2 (25:25). Viscosity testing was conducted using a viscometer, osmolality testing with an Osmotech device, flowability testing with a 14 French catheter, sedimentation testing for 12 hours, and organoleptic testing using a 1–5 scale evaluated by 15 panelists. Viscosity analysis used the t-Independent test, and organoleptic test analysis used the Kruskal-Wallis test. There were differences in viscosity between F1 and F2 with a p-value < 0.05, osmolality of F2 was lower compared to F1, flowability of F2 was faster than F1, and F2 had no sedimentation after 3 hours. The results of the organoleptic test showed no difference between F1 and F2 with a p-value > 0.05. F2 is the selected formulation which is better than each test.

Abstract

High-energy high-protein (HEHP) diets are essential to support the recovery of patients at risk of malnutrition. However, lactose-reduced HEHP enteral formulas are still rarely available in hospitals, despite the fact that many patients experience lactose intolerance. This condition can lead to digestive discomfort when consuming milk-based formulas. To address this issue, researchers developed a blenderized enteral formula using local ingredients—pumpkin, tempeh, and duck eggs—called BELATE, which is naturally low in lactose. This study aims to describe the physical quality, estimated nutritional content, flow rate, and viscosity of the BELATE formula, as well as assess its sensory acceptability. Methods: This was an experimental study with a descriptive approach. The BELATE formula was analyzed for its estimated nutritional composition, viscosity, energy density, flow rate, and production cost. Sensory evaluation was conducted using a paired t-test. In 1000 ml, the BELATE formula provides 1036.3 kcal with 31.5 g of protein (12.2%), 42.5 g of fat (36.9%), and 133.3 g of carbohydrates (51.5%), resulting in an energy density of 1.03 kcal/ml. The viscosity was measured at 23.43 cP, with osmolality of 352 mOsm/kg. Flow rate tests showed 1.13 ml/sec using a 12 Fr tube and 1.78 ml/sec with a 14 Fr tube. Overall, the BELATE formula was well accepted, with an average organoleptic score of 3.87 ± 0.64. The BELATE enteral formula, made from duck eggs, pumpkin, and tempeh, meets the recommended standards for HEHP enteral nutrition in terms of viscosity, osmolality, and energy density, and it is well received by panelists.

Abstract

Liver cirrhosis is a chronic condition that often leads to malnutrition due to impaired intake, absorption, and metabolism. Malnutrition worsens disease progression and increases the risk of complications and mortality. Enteral nutrition is a key strategy to meet the nutritional needs of these patients; however, the high cost of commercial enteral formulas limits accessibility, especially in resource-constrained settings. This study aimed to develop and evaluate a locally sourced, high Branched-Chain Amino Acid (BCAA) enteral formula as a more affordable alternative for patients with liver cirrhosis. An experimental design was employed, and the study was conducted at the Nutrition Laboratory of Universitas Muhammadiyah Surakarta in May 2025. The formula was developed using pumpkin, chicken eggs, soy milk, and either tempeh (F1) or tuna (F2), and compared to a commercial enteral formula (FEK). Nutritional content was analyzed using Nutrisurvey 2007, osmolality with an Advanced Instruments osmometer, viscosity with a BrookField D-11+Pro viscometer, and flow rate using a 14 French nasogastric tube. Organoleptic tests were conducted using a hedonic scale and analyzed with Kruskal-Wallis and Mann-Whitney tests via SPSS 22.0. Formula F1 provided 1305.6 kcal of energy, 49 g of protein, 38.3 g of fat, 196.2 g of carbohydrates, and 9.3 g of BCAA, with an energy density of 1.3 kcal/cc. F1 showed an osmolality of 368 mOsm/kg, viscosity of 50.34 cP, and a flow rate of 1.00 cc/second, all meeting recommended standards. Sensory evaluation indicated that F1 was significantly preferred over F2 and FEK in terms of color, aroma, taste, texture, and overall acceptability (p < 0.05). The formula also offers a more affordable option without compromising nutritional quality. F1 is a promising alternative enteral formula based on local food ingredients for patients with liver cirrhosis, offering good nutritional value, excellent acceptability, and greater affordability.
