Abstract

Introduction: The COVID-19 pandemic has significantly impacted food security and accessibility in Central Java Province. This study aims to analyze the effects of the pandemic on food accessibility in three dimensions—physical, economic, and social—and on food security. Methods: The study was conducted in five cities and regencies with high COVID-19 case rates. The research method employs Structural Equation Modeling-Partial Least Square (SEM-PLS) to identify relationships between latent and manifest variables. Primary data were collected from 348 respondents, while secondary data were obtained from relevant agencies. Results: The findings reveal that the COVID-19 pandemic situation indirectly positively affects food security through improved physical access to food, supported by government policies such as large-scale social restrictions (PSBB) and community activity restrictions (PPKM), which allowed markets to operate with health protocols. However, economic and social access to food was not significantly impacted by the pandemic. Physical access was shown to have a direct positive impact on food security, while economic access was highly influenced by the respondents’ economic conditions. Conclusion: In conclusion, food accessibility—particularly physical access—plays a crucial role in maintaining food security during the pandemic in Central Java.

Abstract

Introduction: The presence of ecotourism is more oriented toward environmental conservation, utilization of natural resources, cultural preservation, and economic benefits. However, post-COVID-19 pandemic tourist visits to the Kampung Blekok mangrove ecotourism have not recovered, and the condition of the ecotourism is not maintained and is damaged. This research aims to analyze the influence of digital marketing, electronic word of mouth, and interest in visiting on the decision to visit the Kampung Blekok mangrove ecotourism. Methods: Data collection on ecotourism behavior was obtained from 172 respondents using a questionnaire. The data analysis technique used was Structural Equation Modeling Partial Least Squares (SEM-PLS) with WarpPLS version 8.0. Results: The results of the research analysis show that digital marketing and eWOM produce a positive and significant influence on visit intention and decision. The mediating role of visiting interest in the relationship between digital marketing and eWOM on visiting decisions is partial. Mangrove ecotourism managers in Kampung Blekok can optimize digital marketing and eWOM strategies, and adapt to current tourism situations and trends. Conclusion: Digital marketing and eWOM are important in shaping visit interest and determining tourist decisions. Changes in tourist behavior using digital media can be a tool for progressing the ecotourism business by increasing tourists' visiting decisions.

Abstract

Introduction: Caffeine, antioxidants, and vitamin C are important compounds found in coffee beans. These chemical compounds affect the taste and aroma of coffee. The research aims to examine the effect of hormone application on the chemical content of coffee beans. Methods: The research was carried out at the people's coffee plantation in Kwadungan Gunung, Kledung, Temanggung, Central Java. The research uses an experimental method with two factors. Factor I variety consists of two varieties, namely Sigararutang and Yellow Catura. Factor II of the Plant Growth Regulators (PGR) application consists of four levels, namely: Control, ethrel, NAA, and gibberellin. Each treatment combination with 5 replications. The parameters observed were the number of fruit/ tree, the number of ripe fruit/ tree at the first harvest, caffeine content, vitamin C, antioxidant activity, sugar, and protein. Data were analyzed using ANOVA with the DMRT further test. Results: The number of coffee cherries of the Yellow Catura was better than the Sigarar Utang. The caffeine is better in Sigararutang in all PGR applications compared to other combinations. The antioxidant activity of Yellow Catura with the application of NAA and GA3 is better than other combinations. Vitamin C in Yellow Catura with GA3 application and control is better than other combinations. The protein in Yellow Catura with NAA application is better than other combinations. The sugar in Yellow Catura with all applications of PGR is better than the other combinations. Conclusion: PGR application and differences in varieties affect the chemical content namely caffeine, antioxidant activity, vitamin C, protein, and total sugar.

Abstract

Introduction: Performance evaluation is essential in defining supply chain strategies because the firm can find out how the business processes in the supply chain are running and formulate strategic policies. Kayumas coffee is one of Indonesia’s specialty coffee with a unique aroma and flavor originating from Kayumas Village, Situbondo District, East Java. Kayumas coffee supply chain needs to be evaluated because of the lack of competitiveness with other specialty coffees. Strategies are needed to improve supply chain performance, improve product quality, and reduce costs. This study aims to configure the supply chain of Kayumas specialty coffee structure, evaluate its performance, and determine performance improvement strategies. Methods: This study uses descriptive analysis to configure the supply chain structure and flow. Analysis of supply chain performance based on Supply Chain Operation Reference (SCOR) model then weighted with Analytic Network Process (ANP). Performance improvement strategies were formulated by a discussion with experts and then weighted with ANP. Results: The research results show that the Kayumas specialty coffee supply chain comprises farmers, farmer groups, distributors or resellers, and consumers. There are 6 performance indicators (metrics) to measure performance: perfect order fulfillment, order fulfillment cycle time, flexibility, total supply chain management cost, cost of goods sold, and cash-to-cash cycle time. Performance measurement shows that Kayumas specialty coffee supply chain performance is in the inferior category. Conclusion: The strategy needed to improve supply chain performance by reducing cost is a partnership between supply chain members to reach a price agreement.

Abstract

Introduction: This study examines the food consumption patterns and food security status of corn farming households in Paterongan Village, Galis Subdistrict, Bangkalan Regency, Madura Island, Indonesia. The research is conducted within the context of the low food security levels in Indonesia, despite the implementation of the Sustainable Development Goals (SDGs) since 2015. Paterongan Village serves as an interesting case study due to its high corn production but also a high poverty rate, which raises concerns regarding household-level food security. This study aims to identify the factors influencing food security among corn farmers in the area. Methods: This research uses a descriptive quantitative approach, collecting data through interviews and questionnaires with 76 female corn farmers. The 24-hour food recall technique was applied to assess food consumption patterns and calculate the Household Dietary Diversity Score (HDDS). Binary logistic regression analysis was conducted to identify the factors influencing food security. Results: The findings indicate that the food consumption patterns are relatively limited in diversity, with most households primarily consuming cereals, vegetables, oils, legumes, and fish. The average HDDS score is 7.1, with 67% of households classified as food insecure. Conclusion: The logistic regression analysis identified education level, household income, and the utilization of home gardens as significant factors that improve food security.

Abstract

Introduction: Fruit peel is one of the natural ingredients that has not been optimally utilized and can be used as a raw material for making dish soap because it has antibiotic, antiseptic, and antibacterial content. This study aims to make dish soap using dragon fruit peel extract, papaya fruit, and banana fruit as natural ingredients and determine the quality characteristics of dish soap and business feasibility analysis. Methods: This research was conducted in two stages. The first stage selected the best fruit skin dish soap based on the quality characteristics and organoleptic tests on the product. The second stage then analyzed the business feasibility of the best fruit peel extract dish soap product. Results: The quality characteristics of dragon fruit peel, banana, and papaya skin extract dish soap with pH test parameters, FFA content, and free alkali content are in accordance with SNI standards, but the viscosity test shows that it is not suitable and has a value below SNI, and the results of the organoleptic test show that dragon fruit peel extract dish soap is preferred by panelists compared to banana and papaya skin extract soap with an average value of 4.3 color parameters; aroma 3.5; texture 3.6; and overall 4.1. Conclusion: Dragon fruit peel extract dish soap has the best organoleptic test value compared to banana and papaya peel dish soap. The results of the feasibility study analysis of the dragon fruit peel extract dish soap business have a BEP Unit value of 31, BEP Rupiah of IDR.462,185, ROI of 81.64%, and R / C of 1.82 where this business is considered feasible if developed.

Abstract

Introduction: The transition from traditional charcoal production to sustainable coffee farming in Jatiarjo Village, Prigen, Pasuruan, Indonesia, highlights a critical effort to achieve environmental sustainability and improve socio-economic conditions. This study explores behavioral changes and socio-economic impacts while integrating eco-friendly agricultural practices, providing a model for similar transformations globally. Methods: A mixed-methods approach was used, combining quantitative data from local economic reports with qualitative insights from interviews and focus group discussions with farmers and stakeholders. SWOT analysis (using IFAS and EFAS frameworks) was employed to identify key strengths, weaknesses, opportunities, and threats shaping the transition. Results: Findings indicate that Jatiarjo Village benefits from internal strengths, such as fertile land, traditional agricultural knowledge, and strategic partnerships. These are complemented by external opportunities, including global demand for sustainable coffee and supportive government policies. Quantitative analysis shows significant increases in household income and biodiversity, while qualitative data highlight enhanced community resilience and environmental stewardship. However, barriers like inadequate infrastructure, dependence on external funding, and climate risks persist. Literature supports these findings, emphasizing the importance of community engagement, institutional support, and capacity building in achieving sustainable rural development. Conclusion: Jatiarjo Village's transition showcases how rural communities can align environmental and economic goals through eco-friendly coffee farming. By addressing socio-economic challenges and leveraging community strengths, this initiative provides actionable insights for scaling sustainable agricultural practices globally. Future research should focus on quantifying long-term socio-economic impacts and exploring adaptive strategies to mitigate climate and market risks.
