Abstract

Background: Physical inactivity is one of the most crucial global problems in spite of the approved impact of physical activity in enhancing health and preventing NCDs, osteoporosis and many other diseases. Thus, WHO encouraged the countries to set their own physical activity guidelines based on the international physical activity recommendations, however, many countries do not have their national Physical activity recommendations such as Yemen in Eastern Mediterranean Region.Objectives: To suggest proper physical activity recommendations for adults in Yemen based on physical activity recommendations in different countries in WHO regions particularly the Eastern Mediterranean Region.Discussion: Prevalence of national physical activity guidelines and physical activity factors vary among WHO regions. The absence of physical activity recommendations and statistical data in Yemen is obvious and surveillance using validated tools should be done to assess the recent PA and related factors. However, although Yemen has its own issues such as Khat chewing habit and conflict, it shares many factors with other Eastern Mediterranean Region countries in general and Qatar in particular such as unsupportive physical activity environment and limited outdoor activities for women. Conclusion:  Qatar national physical activity guidelines can be suggested as applicable and affordable guidelines for adults in Yemen. According to Qatar guidelines, adults should do (30–60) min of moderate exercise ≥ 5 days per week or (20–60) min of vigorous exercise for ≥3 days per week and in case of promoting or maintaining weight loss, they should do (50-60) minutes daily exercise. Abstract

Latar Belakang: Sarkopenia erat kaitannya dengan aktivitas fisik dan komposisi tubuh terutama persen lemak tubuh. Tujuan: Penelitian ini bertujuan untuk mengetahui hubungan aktivitas fisik dan persen lemak tubuh dengan indikator sarkopenia.Metode: Penelitian ini merupakan studi cross sectional dengan 40 subjek usia 50-59 tahun yang dipilih dengan metode consecutive sampling pada warga penghuni rumah susun Karangroto. Subjek diukur tinggi badan dan berat badan untuk mengetahui status gizi. Indikator sarkopenia diamati dengan mengukur massa otot, kekuatan otot dan performa fisik. Massa otot dan persen lemak tubuh diukur dengan Bioelectrical Impedance Analysis (BIA), kekuatan otot diukur dengan Electronic Hand Dynamometer, performa fisik diukur dengan tes Time Up and Go (TUG), aktivitas fisik diukur dengan kuesioner self-report International Physical Activity Questionnaire (IPAQ) Short Form, dan asupan makanan diukur dengan kuesioner semi kuantitatif Food Frequency Questionnaire (FFQ). Analisis data menggunakan Tes Mann Whitney U, korelasi Pearson Product-Moment dan Rank Spearman.Hasil: Sebesar 62,5%; 47,5%; 52,5%; 52,5%; 2,5%; 40%; 5% subjek secara berurutan memiliki Indeks Massa Tubuh kategori obesitas, persen lemak kategori obesitas, aktivitas fisik sedang, asupan lemak lebih, massa otot rendah, kekuatan otot rendah dan performa fisik rendah. Terdapat perbedaan signifikan pada massa otot dan kekuatan otot antara laki-laki dan perempuan (p<0,001). Aktivitas sedentary berkorelasi negatif dengan massa otot (r -0,434; p 0,005), serta persen lemak dengan massa otot (r -0,356; p 0,024).Kesimpulan: Terdapat hubungan yang signifikan antara aktivitas sedentary dan persen lemak tubuh dengan indikator sarkopenia yaitu massa otot pada penghuni rumah susun Karangroto, Semarang.

Abstract

Background: Diarrhea disease is one of gastrointestinal disorders which is the second leading cause of death in children under five years. Food and beverage contamination is the biggest cause of diarrhea in developing countries. Nanas madu (Ananas comosus Merr.) and cinnamon (Cinnamomum burmannii) have antibacterial properties that can inhibit the growth of Escherichia coli and Salmonella typhi causing diarrhea.Objective: This study aimed to analyze the total differences of Lactic Acid Bacteria (LAB) and antibacterial activity in yoghurt with the addition of nanas madu and cinnamon extract.Methods: This was an experimental study with various treatment in adding honey cream pineapple (0%, 20%, 40%, and 60%) and cinnamon extract (4% and 6%). Total LAB was calculated using the Total Plate Count (TPC) method and antibacterial activity was tested using Kirby Bauer method.Results: There was no significant difference in yoghurt with the addition of honey cream pineapple and cinnamon extract. Yoghurt with the highest LAB was yoghurt with addition 40% of honey cream pineapple and 6% of cinnamon extract (N40M2) with total LAB 1,43 x 1019 CFU/ml. The results of the antibacterial activity showed no significant difference of inhibition zone against S. typhi¸ while there was significant difference of inhibition zone against E. coli. The highest activity against S. typhi was yoghurt with addition 60% of honey cream pineapple and 4% of cinnamon extract (N60M1) resulting 6,81 mm inhibition zone and the highest activity against E. coli was N40M1 resulting 6,77 mm of inhibition zone. Conclusion: Total LAB yoghurt with the addition of nanas madu and cinnamon extract have met FAO and SNI standards with LAB minimum 107 CFU/ml. Antibacterial activity of all yoghurt treatment categorized as medium inhibition (5-10 mm).

Abstract

Background: BPOM stated that in 2017, small and micro food enterprises were responsible for 49,5 % food borne disease in Indonesia. Indonesian government had provided guidance about good handling standard for food product (GMP) by UU No.18 Tahun 2012. ALOJA as Small and Medium Enterprise (SME) had lot of limitation to meet the standard. HACCP analysis was needed to give recommendation in arranging SOP that meet the standard.Objectives: The objective of this research was to do and set HACCP analysis as a way to collect data to give recommendation in setting the SOP that meet food safety standard regulation.Methods: Research done by applying 7 of 14 steps in HACCP implementation. Judgment taken based on the level of severity (3 level) and level of occurrence probability (3 level). From the matrix derived from it, SOP recommendation was taken if the level of control was medium and above.Results: Recommendation given for Pest Control procedure, washing and dipping, cooling, packaging and sealing process.Conclusions: The result shown that pest control procedure, washing and dipping, cooling, packaging and sealing process was on medium risk or above. SOP recommendation done by adding nylon net sized 80 mesh and check it regularly, control the concentration of lime betel, limit and regulate the cooling room strictly, and to apply aseptic condition. If this not possible, the best option was to apply washing hand and feet procedure with soap/hand sanitizer, masker, cover the hair of worker during packaging and sealing.ABSTRAK  Latar Belakang: Pada tahun 2017 BPOM menyebutkan bahwa Industri Kecil Makanan berkontribusi terhadap 49,5% kasus keracunan pangan di Indonesia. Pemerintah melalui UU No. 18 Tahun 2012 telah mengatur mengenai prosedur pengolahan pangan yang baik (CPPB). ALOJA sebagai UKM produsen minuman siap saji Aloe vera memiliki keterbatasan dalam sarana-prasarana dan SDM sehingga pemenuhan standar produksi pangan yang baik sulit untuk diterapkan. Analisis HACCP perlu diterapkan untuk memberikan masukan dalam penyusunan SOP dalam alur produksinya sehingga memenuhi standar produksi pangan yang baik.Tujuan: Penelitian ini bertujuan untuk melakukan analisis dan menetapkan aturan HACCP sebagai bahan rekomendasi dalam penyusunan SOP yang memenuhi persyaratan standar produksi pangan yang baik.Metode: Metode yang digunakan dalam penelitian ini adalah dengan menerapkan 7 dari 14 langkah dalam HACCP. Metode penilaian didasarkan pada keparahan (Severity) skala tiga dan tingkat kemungkinan terjadinya (probability) skala 3. Rekomendasi SOP disusun pada resiko medium hingga tinggi yang diperoleh dari matriks severity vs probability.Hasil: Dalam analisis HACCP ini ditemukan bahwa tahap yang masih memiliki resiko menengah ke atas adalah tahap pengendalian hama, pencucian dan perendaman, pendinginan, dan pengemasan-penyegelan. Rekomendasi yang diberikan adalah dengan menambahkan jala nilon ukuran 80 mesh pada ventilasi udara dan melakukan pengecekan rutin terhadap kondisi jala nilon pengontrolan konsentrasi kapur sirih yang digunakan, dengan menyusun regulasi yang ketat untuk ruang pendinginan,dan penerapan kondisi aseptis atau minimal dengan adanya penyuci hama untuk tangan, masker, penutup kepala, apron yang bersih, dan kaki yang bersih.Kesimpulan: Rekomendasi SOP diberikan pada proses pengendalian hama, pencucian dan perendaman, pendinginan, dan pengemasan-penyegelan.

Abstract

Background: According to the World Health Organization, healthy aging is the process of developing and maintaining functional abilities that make the elderly happy. The increase in the elderly population requires more attention. In particular, health services at the primary health care level face problems related to the limited capacity of overall health services, especially in terms of health promotion and preventive health issues. It is necessary to improve the quality of health care services for the elderly to prevent greater health problems among the elderly population.Objectives: Understand the need to provide holistic health services for healthy aging and use their capabilities, and strengthen cooperation among health professionals in achieving healthy aging.Discusion: Primary health care is pointed out that primary health care should provide comprehensive services in a holistic manner to support a healthy aging process. Therefore, a well-structured, integrated, and cross-industry collaborative primary care system is needed. The system should include changes in professional behavior, coordination of care, and participation of patients' families and communities in comprehensive health care. This can be achieved through inter-professional education, continuous training and education of primary health care professionals, as well as primary health care services and cross-level health care technology innovation.Conclusions: Healthy aging is not just the absence of disease. Everyone in health and social care at all levels can play a role to help improve healthy aging. To make the elderly healthy, starting from the prevention of young health problems, it requires collaboration between health workers, primary health care and other health service levels, and health care that cooperates with patients, families, and communities.Keywords: healthy aging, primary care, preventive, health worker

Abstract

Latar Belakang: Kanker payudara dapat disebabkan oleh berkembangnya Reactive Oxygen Species (ROS) di dalam sel yang memicu stres oksidatif dan oksidasi pada DNA. DNA akan kehilangan kemampuannya untuk memperbaiki diri dan terjadi mutasi. Mutasi dapat menyebabkan pertumbuhan dan perkembangan sel tumor. Asupan antioksidan seperti β-karoten pada penderita tumor dimungkinkan dapat menurunkan stres oksidatif dan risiko berkembangnya kanker.Tujuan: Penelitian ini bertujuan untuk menganalisis hubungan asupan dan kadar serum β-karoten, aktivitas SOD, TNF-α dan 8-isoprostan serum dengan ukuran tumor payudara.Metode: Penelitian ini menggunakan desain cross-sectional. Data yang digunakan adalah data baseline dari penelitian utama yang diambil pada bulan November-Desember 2018. Sebanyak 15 orang wanita yang terindikasi tumor payudara dan memenuhi kriteria inklusi serta eksklusi diikutsertakan dalam penelitian ini. Data dianalisis menggunakan uji korelasi Pearson dan spearman.Hasil: Usia subjek berkisar antara 22-52 tahun dengan rata-rata usia 36 tahun. Hasil penelitian menunjukkan asupan β-karoten per hari masih kurang. Terdapat hubungan antara asupan β-karoten dengan aktivitas SOD (p=0,025; r=0,408) dan aktivitas SOD dengan ukuran tumor payudara (p=0,018; r=-0,430). Hal ini menunjukkan bahwa terdapat hubungan tidak langsung antara asupan β-karoten dengan ukuran tumor payudara. Kadar serum β-karoten, TNF-α dan 8-isoprostan serum tidak berhubungan signifikan dengan ukuran tumor payudara (p=0,107; r=-0,430 | p=0.061; r=0,347 | p= 0,217; r=0,232).Kesimpulan: Terdapat hubungan antara asupan β-karoten dengan aktivitas SOD dan aktivitas SOD dengan ukuran tumor payudara.

Abstract

Background: Data Riskesdas 2013 shows that the average amount portion of vegetable consumption in people aged 10 years or older is only 0.5 portions while the vegetable consumption category is said to be "sufficient" is at least 5 portions per day for 7 days a week. Banana blossom is a vegetable and commonly found in Bangka Belitung Islands Province. Banana blossom processing as a source of vegetables rich in antioxidant compounds and chicken meat as a source of animal protein, needs to be done by processing into shredded banana blossom-chicken meat.Objectives: To determine the acceptability and antioxidant activity level of shredded banana blossom-chicken meat.Methods: This research is true experimental. Shredded banana blossom-chicken meat, made using 3 treatment, banana blossom 75%:chicken meat 25% (F1), banana blossom 50%: chicken meat 50% (F2), and banana blossom 25%:chicken meat 75% (F3). Furthermore, the acceptance of taste, colour, aroma, texture, overall, and antioxidant activity level of shredded banana blossom-chicken meat. Results: There was a significant difference in the acceptance of the colours of shredded F1, F2 and F3 (p = 0,00), while aroma, taste, texture and overall of the shredded F1, F2 and F3 were not significant (p> 0.05). Shredded F3 (banana blossom 25%: chicken meat 75%) is most preferred based on the parameters of colour, aroma, taste, texture and overall, and has the highest antioxidant activity value are 53.74%.Conclusions: Shredded banana blossom-chicken meat has a good acceptability and has a high antioxidant activity level.[AN1]

Abstract

ABSTRACT Background: Every hospital has high demand of nutritional support for patient but limitation of hospital funding to get commercial enteral nutrition that may influence the hospital of making its own enteral nutrition. It has some weakness such as not ready to use, not durable, and unstandardized nutrition content. Pumpkin, fish cork, and tempeh are less costly local food which contain high protein and antioxidant that may lead nutritional status improvement. Objectives: Determining total fungal count, total bacterial count and organoleptic properties of instant local food based-enteral nutrition.Methods: Pure-experimental study with completely random design was conducted on March-August 2018.  There are 4 flavors of the instant formula such as vanilla, ginger, cinnamon, and original. Total fungal count (TFC) and total bacterial count (TBC) were used for microbiological analysis. Organoleptic properties was evaluated by 80 panelists from Yayasan Stroke Indonesia. Inclusion criterias: aged 19-years or above and signing the informed consent. Organoleptic evaluation determined by 5 score of appearance, taste, texture, odour and overall formula. Statistical analysis used Kruskal Wallis to determine the difference of enteral nutrition acceptability for each flavor. Results: Mean of TBC of local food based-enteral nutrition was 3.5 x 104 ± 0.14 cfu/mg and mean of TFC was 1.65 x 102 ± 0.21 cfu/g. The acceptability of local food based-enteral nutrition was significantly different based on taste, odour, and overall aspect.Conclusions: Based on microbiology analysis showed that local food based-enteral nutrition was desirable. Panelist liked original flavor most based on appearance, taste, and texture. While the vanilla flavor was liked the most based on the odour and overall aspect. The score of acceptability showed significantly different on ginger, vanilla, and original flavors based on taste, odour, and overall aspect.ABSTRAKLatar Belakang: Tingginya kebutuhan dukungan gizi pasien namun terbatasnya biaya penyediaan makanan enteral komersial mendorong Rumah Sakit (RS) untuk membuat formula enteral sendiri. Kekurangan dari formula enteral buatan RS diantaranya tidak praktis, tidak tahan lama, dan nilai gizi yang tidak terpantau. Labu kuning, ikan gabus dan tempe merupakan bahan pangan lokal yang terjangkau dengan kandungan protein dan antioksidan tinggi  bermanfaat untuk perbaikan status gizi.Tujan: Mengetahui angka total mikrobia (bakteri dan jamur) dan sifat organoleptik dari makanan cair instan berbasis pangan lokal.Metode: Penelitian eksperimental dengan rancangan acak lengkap dilakukan pada Maret-Agustus 2018. Formula makanan cair memiliki 4 varian: vanilla, jahe, kayu manis, dan original. Analisis mikrobiologi menggunakan metode angka lempeng total (ALT) untuk bakteri dan jamur. Pengujian sifat organoleptik formula dilakukan oleh  80 panelis tidak terlatih dari anggota  Yayasan Stroke Indonesia. Kriteria inklusi untuk panelis uji organoleptik antara lain bersedia menjadi panelis dengan mengisi informed consent, usia ≥19 tahun. Uji organoleptik dengan 5 skala kesukaan berdasarkan aspek warna, aroma, rasa, tekstur, dan keseluruhan. Uji statistik menggunakan Kruskal Wallis untuk melihat perbedaan tingkat kesukaan dari tiap varian formula makanan cair.Hasil: Hasil analisis mikrobia dari formula menunjukkan rerata ALT bakteri 3,5 x 104 ± 0,14 cfu/mg, dan ALT jamur 1,65 x 102 ± 0,21 cfu/g. Terdapat perbedaan yang signifikan pada tingkat kesukaan varian formula makanan cair dari segi rasa, aroma, dan keseluruhan formula.Kesimpulan: Uji mikrobia formula makanan cair masih dalam batas aman untuk dikonsumsi. Responden paling menyukai varian rasa original dari aspek warna, rasa, dan tekstur, sedangkan secara keseluruhan dan aroma formula rasa vanilla yang paling disukai. Perbedaan rerata skor yang signifikan ditunjukkan pada varian rasa jahe, vanilla dan original dari segi rasa, serta varian rasa jahe dengan vanilla dari segi aroma dan keseluruhan.
