Abstract

Background: Hypertension is a condition where arterial blood pressure is constantly high and influenced by various factors. High blood pressure in adolescent years increases the risk of hypertension in adulthood. The taste sensitivity which affects the food intake can be observed by conducting the salty taste threshold test. Objectives: This study was conducted to observed the association between the salty taste threshold and the incidence of hypertension in adolescents in Surabaya. Methods: This study used a cross-sectional design and simple random sampling technique for subjects. Primary data were collected through a questionnaire for subject characteristics and salty taste threshold using 3-AFC method with 5 different sodium concentration. The association between the salt taste threshold and hypertension was tested using correlation spearmann. Results: The results of this study were 4.2% of male respondents had both high salty taste threshold and were classified as hypertension. The results of the association test between high salty taste threshold and hypertension in adolescent boys showed a p-value of 0.027 (r=0.320) for systolic blood pressure and a p-value of 0.003 (r=0.422) for diastolic blood pressure. Conclusions: There is significant association between the salty taste threshold and hypertension.

Abstract

Background: In adolescent girls, sexual development is indicated by menarche. The irregular menstrual cycle is a sign of reproductive organ dysfunction. Negative body image and nutritional status are factors that can cause the menstrual cycle to be disrupted due to interference in estrogen hormone production. One of the nutrition status indicators that can be used is waist-hip ratio. Objectives: To analyzed the association between body image and waist-hip ratio with the menstrual cycle in adolescent girls at X High School Sidoarjo. Methods: This study was conducted with a cross-sectional design. The respondents enrolled in this study were 66 female students in X High School Sidoarjo. Body image data was collected using the Multidimensional Body Self Relation Appearance Scales (MBSRQ-AS) questionnaire, waist-hip ratio (RLPP) was measured with midline, and menstrual cycle was collected with menstrual cycle questionnaire. Data analysis used the Rank-Spearman correlation test. Results: The analysis showed that the average body image score was 80.4, the waist-hip ratio was 0,75, and the menstrual cycle was 34 days. The analysis also explained a significant association between body image and menstrual cycle (p-value=0.033, r-value=-0.262) and a significant correlation between waist-hip ratio and menstrual cycle (p-value=0.000, r-value=-0.504). Conclusions: There was a significant correlation between body image and waist-hip ratio with the menstrual cycle in adolescent girls at X High School Sidoarjo.

Abstract

Background: There is a continued increase in the fatality rate of COVID-19 pandemic despite the apparent containment of the virus. In September 2022, the death toll from this disease has exceeded 150 thousand individuals. Furthermore, Vitamin D has been observed for its correlation with the immune system. Objectives: This study aimed to analyze correlation between blood vitamin D levels, completeness of COVID-19 vaccine, and compliance with health protocols for recurrent infection. Methods: This analytical observational study with a cross-sectional method examined correlation between blood vitamin D levels, vaccine completeness status, as well as compliance with health protocols, age, and gender. The population consisted of 62 lecturers at Malahayati University, Bandar Lampung, who were willing to volunteer as subjects. The method used was non-probability sampling and the inclusion criteria were individuals infected with COVID-19 in 2022, resulting in 47 samples. The collected data was analyzed using the chi-square test and logistic regression test. Results: The results showed that there was a significant correlation between the completeness status of COVID-19 vaccine (p-value=0.001) with an OR of 8.24 and 8.47, as well as low levels of vitamin D in the blood (p-value=0.007) and recurrent infection. Conclusions: The possibility of recurrent COVID-19 infection was increased when there were lower levels of vitamin D in the bloodstream and a less comprehensive response to vaccine.

Abstract

Background: A Modisco is PMT-P as treatment for malnutrition and severe malnutrition. To increase acceptance and function of nutritional sources, Modisco is done by modifying shape and composition to become Modisco slurp pudding with the addition of carrot juice. Objectives: The purpose of this study was to analyze the content of vitamin A and the results of the favorite test of the modisco suction pudding with the addition of carrot juice variations of 0%, 5%, 10%, and 15%. Methods: The research design applied was true experimental with 12 experimental units. The vitamin A (beta carotene) content of the samples was determined using Atomic Absorption Spectrophotometry (AAS), and the acceptance test used the Hedonic Scale Test on 80 student aged 9-10 years. The Friedman and Wilcoxon Signed Ranks tests were used to examine the acceptance test results. Vitamin A content were determined using the One Way Anova and multiple comparisons Turkey HSD with a 5% (= 0.05) significant level. The proportion of extract carrot on Modisco slurp pudding was 0% (X0), 5%, 10% and 15% (X1, X2, and X3). Results: The results of the study of vitamin A levels through statistical tests using one-way ANOVA showed that there was a significant difference in vitamin A content compared to variation in the addition of carrot extracts in modisco slurp pudding (p value = 0.0001 <0.05). The results of the hedonic test showed a significant difference in aroma and taste, while color and texture did not differ significantly. Conclusions: The addition of carrot juice to modisco slurp pudding increases vitamin A levels and is preferred in terms of aroma and taste. Based on the vitamin A content test, the addition of 5% (X1) of carrot extracts is more preferred and closest to the daily vitamin A needs of toddlers.

Abstract

Background: According to the National Basic Health Research of Indonesia (Riskesdas) in 2018, the prevalence of non-communicable diseases (NCDs) in Central Sulawesi Province surpassed the national rate. This province is also home to 31.3% of active smokers. The main risk factor for NCDs is an unhealthy lifestyle such as physical inactivity, smoking, alcohol consumption, and unhealthy diet pattern. Objectives: This study aims to investigate diet patterns and nutritional status of adults in Central Sulawesi based on their smoking status. Methods: This is a cross-sectional study using data from Riskesdas 2018. Smoking status, diet pattern and nutritional status were the variables assessed from 12,211 respondents. The statistical analyses used in this study were chi-square test and Generalized Linear Model (GLM). Results: Thirty-six-point two per cent of the respondents were active smokers. The prevalence of overweight (BMI ≥25 kg/m2) and central obesity in smokers were significantly lower than that in the non-smoker group (p<0.05). The smoker group consumed sweetened drinks at least once a week, which increased the prevalence ratio as the weekly consumption frequency increased (PR=1.17 to 1.49; p<0.05). They also had a lower prevalence ratio of consumption a maximum of 3-4 portions/day of vegetable and consuming salty food (high sodium) 1-2 times a week. Conclusions: Although the prevalence ratio of overweight and central obesity are lower in smokers, they have unhealthy diet patterns, which are shown in lower consumption of vegetables and high in salty food. In the future, an advanced longitudinal study with representative number of respondents is needed to explore the causality of these variables.

Abstract

Background: The kembang goyang snack has relatively good nutritional content but is considered to have less fiber. This has prompted efforts to substitute white rice flour, the main ingredient of kembang goyang snack, with red rice flour, which has higher fiber content. Objectives: The research objective was to determine the best formulation of the kembang goyang snack based on dietary fiber content and texture. Methods: The study was divided into two stages, the production of red rice flour (organic and non-organic) and the making of kembang goyang snack using various ratios of organic or non-organic red rice flour and white rice flour (0:100; 20:80; 40:60; 60:40; and 80:20). The analysis parameters included yield, moisture content, dietary fiber content, resistant starch content, and texture. The study was designed using a Completely Randomized Design, and data were analyzed using ANOVA. Results: The study results showed that organic red rice had a lower yield, but higher dietary fiber and resistant starch content compared to non-organic red rice. In contrast, the moisture content was relatively similar between the two types of red rice. Kembang goyang snacks made with the addition of organic or non-organic red rice flour had higher dietary fiber content compared to the control. However, increasing the amount of organic or non-organic red rice flour in various ratios resulted in similar toughness to the commercial product. Conclusions: The best formulation of the kembang goyang snack was obtained at a 40:60 ratio of organic red rice flour and white rice flour. This best kembang goyang snack formula can be classified as a fiber-rich product because it has 6.30% dietary fiber content and 6.30% resistant starch content. Also, it has a similar texture to commercial products.

Abstract

Background: Herbal tea Is one of the herbal drinks that has been widely consumed by Indonesian people and known as tea that have functional properties, one of them is source of antioxidants. Antioxidants can be obtained from a lot of sources, such as the mixture of mangosteen pericarp, cinnamon, and cloves. The use of cinnamon and clove expected to increase the consumers' preference towards this tea. Objectives: This research aims at evaluating the acceptance level of several sensory parameters of tea made of mixture of mangosteen pericarp, cinnamon, and clove. Methods: The experimental design used in this research was completely randomized design with three replications, resulting in 27 samples of herbal tea. Besides, the data obtained from panelists will be analyzed by using Analysis of Varian (ANOVA) and followed by Duncan's Multiple Range Test (DMRT) in SPSS 25.0 software. Results: The results show that the addition of cinnamon and cloves showed a significant difference. The more addition of spices will lower the panelist score. It can be seen in the sample containing 24 grams of mangosteen pericarp, 3 grams of cinnamon (B4) which had the highest panelist score in color, taste, and bitterness aspects. While the lowest panelist score was obtained by a sample containing 12 grams of mangosteen pericarp, 3 grams of cinnamon and cloves (A1). Conclusions: The more spices added, especially cloves will reduce the liking score. The result obtained by this research can be used for optimization of the best formula so maximum points can be known.

Abstract

Background: During the COVID-19 pandemic, the risk of computer vision syndrome (CVS) increased due to the prolonged use of digital devices. According to a study in 2018, the adult population in Indonesia suffered from micronutrient deficiency which is essential for the anatomy and physiology of the eye. Objectives: This study aims to compare the micronutrient intake among students with and without CVS. Methods: This study used a cross-sectional design. The data were collected online from 34 students of the Nutritional Science Program, Faculty of Health Sciences, Universitas Pembangunan Nasional “Veteran” Jakarta using 24-hour dietary recalls and questionnaires. The data collection was repeated four times. The diagnosis of CVS was established using the Computer Vision Syndrome Questionnaire (CVS-Q) which consists of 16 questions about the frequency and intensity of each symptom. The micronutrient intake was analyzed using an application, namely NutriSurvey 2007. A univariate analysis was carried out to describe the characteristics of the variables. An unpaired t-test or Mann-Whitney test was carried out to test the hypothesis about the difference in micronutrient intake between the non-CVS group and the CVS group. Results: From a total of 34 subjects, 22 subjects (64.7%) had CVS, most of whom suffered from micronutrient deficiency. The results showed no significant difference in subject characteristics and computer usage between the CVS group and the non-CVS group (p > 0.05). The two groups that showed no significant difference in micronutrient intake included Fe, Mg, Cu, vitamin E, vitamin A, retinol, vitamin C, and omega-3 (p > 0.05). However, the results of unpaired t-test showed a significant difference in Zn intake between the two groups (p = 0.036; CI = 0.125-2.716). Conclusions: Zn intake plays an important role in preventing CVS. Further research on the benefits of Zn supplementation in preventing CVS is necessary.

Abstract

Background: Buffalo milk curd, a native probiotic source from Indonesia, is dominated by live indigenous Lactic Acid Bacteria known for their ability to lower blood glucose levels. Edamame contains amino acid arginine, chromium, antioxidants, and fibre, aiding in blood glucose control and lipid profile reduction. Objectives: This study aimed to assess the effects of buffalo milk curd and edamame-based pudding snacks on fasting blood glucose levels and lipid profiles in Type 2 diabetes mellitus (T2DM) patients. Methods: This study used a True Experiment Design with Pretest-Posttest Control Group Design. The study involved 32 patients divided into treatment and control groups. During the study, the treatment group received 250 g of snacks in the morning and evening for one week. Blood glucose levels and lipid profiles were measured using the enzymatic colourimetry method. Results: The results showed decreased fasting blood glucose levels before and after treatment in both control (-17.06 ± 40.17) and treatment (-48.38 ± 40.27 mg/dl) groups (p=0.036). Total cholesterol levels also decreased in control (-15.87 ± 23) and treatment (-41.4 ± 19 mg/dl) groups (p=0.001). There were decreased LDL levels in control (-6.81 ± 29.09) and treatment (-27.3 ± 25.09 mg/dl) groups (p=0.04). However, HDL and TG levels showed no differences at the end of the study. Conclusions: Buffalo curd milk-edamame pudding snacks can reduce fasting blood glucose levels and lipid profiles, particularly total cholesterol and LDL levels, in Type 2 DM patients.

Abstract

Background: The three main nutritional problems in adolescent girls are chronic energy deficiency, obesity, and anemia. These problems are associated with food quality or dietary diversity, often influenced by family characteristics. Objectives: This study aimed to determine the association of dietary diversity among adolescent girls in Denpasar City with family characteristics, such as parents' occupation, education and income, type and size of family, government social programs, and food security. Methods: This cross-sectional study was conducted involving 516 adolescent girls selected through a multistage sampling. The first stage involved the selection of 12 villages in 4 sub-districts, and the second involved using simple random sampling to select respondents from each village. Data were obtained using the Minimum Dietary Diversity for Women questionnaire, and Multiple logistic regression was applied to identify the determinant of dietary diversity. Results: The result showed a mean score of 6.7 (SD±1.7) with a maximum of 8.4, and the proportion of inadequate dietary diversity was 11.4%. Based on a bivariable test, six variables were found to be significantly associated with dietary diversity among adolescent girls. After including these variables in a multiple logistic regression model, it was observed that family size (AOR=6.986; 95% CI: 2.718 -17.957; p-value=0.000), mother's education (AOR =1.904; 95% CI: 1.029-3.525; p-value=0.04), and household income (AOR=0.422; 95% CI: 0.227-0.784; p-value=0.006) were significantly associated with dietary diversity. Conclusions: In conclusion, family characteristics, such as having a family size of five or more, a lower level of mother’s education, and household monthly income below the district minimum wage, were significantly associated with inadequate dietary diversity. This condition required intervention in the form of promoting food diversification at the family level.
