Abstract

Super free-range chicken which is currently a very lucrative new business opportunity because the demand for free-range chicken has increased significantly due to high consumer demand. The type of agricultural waste that can be used as ration material is sweet potato stove. The purpose of this study was to determine the effect of the use of fermented sweet potato stover flour in the ration on the carcass crumbs of super free-range chicken aged 10 weeks, to find out what percentage of the level of use of fermented sweet potato stover flour in the ration that was able to provide the best results on the super-fried free-range chicken carcass. 10 weeks old. The research design used was a completely randomized design (CRD) which consisted of 5 treatments, namely: R0 (without the addition of sweet potato stover flour), R1 (addition of non-fermented sweet potato stover flour 3%), R2 (addition of fermented sweet potato stover flour 3), %), R3 (addition of fermented sweet potato stover flour 6%), R4 (addition of 9% fermented sweet potato stover flour). Each treatment was repeated 3 times. The use of sweet potato stover flour in the ration had no significant effect (P>0.05) on carcass weight, thigh weight, chest weight, back weight and wing weight. The use of sweet potato stover flour in the ration tends to be higher at the 3% level of fermented sweet potato stover flour, but it does not give a significant effect.

Abstract

“Lekun” cake is a traditional East Maumere cake that is specially made during engagement ceremonies to weddings or mourning ceremonies (Lodo Huer). “Lekun” cake has the potential to be used as souvenirs at this time. However, the "lekun" cake experienced changes in texture hardness and fungal contamination during storage for more than one day at room temperature. This study aims to determine which type of packaging produces the best characteristics of "lekun" cakes and to determine the shelf life of "lekun" cakes packaged in primary packaging (bamboo, dried banana leaves, corn husks, polypropylene plastic) and secondary packaging (besek) at room temperature. The design used was a completely randomized design with two factors and three replications, the first factor was the type of packaging consisting of four treatments, namely bamboo and plastic packaging, dried banana leaf packaging and besek, corn husks and besek packaging, and polypropylene plastic packaging and plastic bags. . The second factor was storage time which consisted of two treatments, namely the second day and the fourth day. Observations were made objectively covering water content, fat content, protein content, ash content, carbohydrate content, acidity (pH), total anthocyanin content, texture hardness level and subjectively covering color, taste, aroma, texture, overall acceptance and visual test. mold growth. The results showed that bamboo as primary packaging and besek as secondary packaging produced the best "lekun" cake characteristics. The shelf life of “lekun” cakes packaged in bamboo and corn husks is two days, while the dried banana leaves and polypropylene plastic packaging is one day at room temperature

Abstract

Tomatoes are one of the perishable vegetable commodities. One of the efforts to utilize tomatoes is to be processed into tomato dates. This tomato-based sweet is processed in such a way that it has a taste and shape like dates. There are several stages in the manufacture of tomato dates, one of which is the drying process. Temperature and drying time are important factors to produce the right product formulation in the manufacture of tomato dates. Drying with high temperatures will speed up the drying process, but can cause damage to the nutritional content. Drying at low temperatures will result in the drying process taking a longer time. This study aims to determine the effect of temperature and drying time on the characteristics of tomato dates and to determine the proper temperature and drying treatment in order to produce good characteristics of tomato dates. This research was conducted at the Laboratory of Processing and Basic Sciences, Faculty of Agriculture, Warmadewa University. This study is a factorial experimental study with a Randomized Block Design (RBD) consisting of two factors. Factor I (drying temperature): K1(70˚C) and K2 (80˚C). Factor II (drying time): S1 (12 Hours), S2 (16 Hours), S3 (18 Hours), S4 (24 Hours ). Variables observed on tomato dates were color analysis, browning intensity, acidity, moisture content, vitamin C, antioxidant activity, reducing sugar content, texture, and sensory characteristics. The results showed that the treatment at a drying temperature of 80˚C for 16 hours produced tomato dates with the best characteristics with an average rating of 5.33 (slightly like), taste 5.60 (like), texture 5.33(slightly like), color 5.60 (like), overall acceptance 5.60 (like), brightness level (L*) 20.03, redness level (a*) 40.39, yellowness level (b*) 8.23, browning intensity 23.26, acidity degree (pH) 4.40, water content 27.80%, vitamin C 3.75 mg/100gr, antioxidant activity 22.95%, reducing sugar content 71.28 mg/100gr, texture 3.50 kg/cm2, yield 26.50%.
