Abstract

Sate aci made from tapioca flour can be given culinary variations by adding dried rebon shrimp which can enrich the flavour and nutrients contained in it. Especially the protein content in dried rebon shrimp can increase the nutritional quality of aci satay. This study aims to see the effect of the addition of dried rebon shrimp on the increase in protein and organoleptic tests on aci satay with 4 parameters namely colour, aroma, texture and taste. The making of dried rebon shrimp aci satay with 6 treatments of dried rebon shrimp addition (0 g, 10 g, 20, g, 30 g, 40 g and 50 g) will be tested by kjeldahl method to determine the protein content and taste test to 30 panellists. This research design applies a completely randomised design with 4 replications. Sate aci without the addition of dried rebon shrimp will be used as a control. The results of this study showed an increase in protein content in dried rebon shrimp aci satay with the highest value of 7.26% in the treatment of adding dried rebon shrimp 50 grams. Organoleptic test results from the most preferred and accepted panellists were in the treatment of adding 10 grams of dried rebon shrimp.

Abstract

Sugarcane (Saccharum officinarum L.) as a raw material in the sugar production process is one of the basic needs of the Indonesian population. This research was conducted at the HGU Plantation C.11 Djengkol PG Islamic Boarding School, the new PT Perkebunan Nusantara X. Ploso Klaten District, Kediri Regency. This research was conducted from May to July 2023. This design used a one-factor randomized block design (RBD) of 9 treatments, consisting of 7 sugarcane clones and 2 sugarcane varieties consisting of K1 (Clone SB01 UMG.NX), K2 (Clone SB03 UMG.NX), K3 (Clone SB04 UMG.NX), K4 (Clone SB11 UMG.NX), K5 Clones (SB12 UMG.NX), K 6 (Clone SB19 UMG.NX), K7 (Clone SB20 UMG.NX), K8 (Variety PS862), K9 (Variety Bululawang). The parameters observed were growth variables (stem length, number of stems, number of leaves and diameter) and yield (brix). The analysis used was descriptive statistics, ANOVA followed by 5% DMRT follow-up test, correlation test, genetic diversity and heritability test. From the 5% DMRT results, there is a significant difference in the variables of plant height and diameter of the sugar cane plant. Clone SB12 UMG.NX had the best growth with a stem length of 257.33 cm, number of stems 8.33, number of leaves 8.22 and a diameter of 26.22 mm. There is no significant difference in the outcome variables. The highest Brix was obtained by the SB19 UMG clone. NX with a value of 27.00%.

Abstract

Kebutuhan produk makanan bergizi terutama produk makanan asal hewani saat ini terus mengalami peningkatan. Untuk mencapai produktivitas ini harus di dukung oleh pakan yang berkualitas salah satunya memanfaatkan limbah kulit nanas terfermentasi. Tujuan dari penelitian ini untuk mengetahui pengaruh pemberian tepung kulit nanas terfermentasi terhadap komposisi fisisk karkas ayam kampung super umur 10 minggu. Rancangan yang digunakan dalam penelitian ini adalah Rancangan Acak Lengkap (RAL) dengan 5 perlakuan dan 3 ulangan. Adapun perlakuan yaitu N0= Ransum tanpa kandungan tepung kulit nanas terfermentasi, N1= Ransum mengandung 5% tepung kulit nanas terfermentasi, N2= Ransum mengandung 10% tepung kulit nanas terfermentasi, N3= Ransum mengandung 15% tepung kulit nanas terfermentasi, N4= Ransum mengandung 20% tepung kulit nanas terfermentasi. Hasil penelitian menunjukan bahwa tidak terjadi pengaruh yang signifikan (P>0,05) kecuali pada perlakuan N0 berbeda nyata (P<0,05) dengan penambahan kulit nanas terfermentasi dalam ransum terhadap komposisi fisik karkas ayam kampung super 10 minggu. Pemberian tepung kulit nanas terfermentasi pada level 5% menunjukan hasil rataan yang paling baik terhadap komposisi fisik karkas ayam kampung super umur 10 minggu kecuali pada perlakuan N0 berbeda nyata. Dari hasil penelitian dapat disimpulkan bahwa Pemberian tepung kulit nanas terfermentasi dalam ransum berpengaruh tidak nyata terhadap komposisi fisik karkas (berat daging paha, berat kulit paha, berat daging dada, berat tulang dada, berat kulit dada kecuali berat tulang paha pada perlakuan N0 berbeda nyata) ayam kampung super 10 minggu.

Abstract

Ban Village, Kubu, Karangasem has an advantage in its natural potential, namely coconut trees. The natural potential in the form of coconut trees in Ban Village, Kubu, Karangasem has not been optimized to the fullest because the majority of people only utilize it by selling it in the form of coconut fruit, it has not been used as a superior food product that can increase the value of the economic potential of the village community. The purpose of this service is so that the community can utilize the natural potential in the village of Ban, Kubu, Karangasem so that it can have economic value with the hope that in the future this natural potential can be used as a superior food product that can increase the value of the economic potential of the Ban village community, Kubu, Karangasem. Abstract

This research is a case study which aims to determine the condition of water quality in seeding ponds for Carp Fish(Cyprinus carpio L.). This research was conducted 21 days in June 2023 at the UPTD. Produksi Perikanan Budidaya Provinsi Bali. This research design is divided into 4 stages, start with preparation, implementation, data analysis and conclusions. Water quality observations include several physical, chemical and biological parameters. The variables observed were temperature, brightness, pH, ammonia and plankton abundance. The aim of this research is to determine the condition of water quality at the research location, determine daily water quality fluctuations and also determine the relationship between water quality variables. Based on the results of observations, it is known that the average temperature value reached 27.7°C, the average brightness was 36.7 cm, the average pH was 7.2, the average ammonia was 0.15 and the average abundance plankton reached 1,119 cells/L. Abstract

This study aims to determine the growth and production of milkfish seeds (Chanos-chanos) in several intensive concrete ponds in Gerokgak District, Buleleng. The study was conducted in October-December 2023 in 3 different locations located in the Gerokgak District, Buleleng. This research method uses a descriptive research method that is exploratory in nature, namely a study that aims to make systematic, factual, and accurate recording of facts that are population or certain areas. The results of the study showed that the Daily Weight Growth Rate (SGR%) of several intensive concrete ponds in Gerokgak District obtained an average result of 3.83% where at location 1 the daily weight growth rate was 4.14%, at location 2 it was 3.48%. And at location 3 the daily weight growth rate was 3.86%. Milkfish seed production in several intensive concrete ponds in Gerokgak District obtained an average result of 88.8% where at location 1 the milkfish seed production value was 98%. Furthermore, at location 2 it was 83%, and at location 3 the milkfish seed production value was 85%. All water quality parameters that have been tested show that the parameters of temperature, pH, nitrite, nitrate, phosphate and alkalinity are still within safe limits according to SNI 01.6148.1999, and can be said to be appropriate because with the values obtained, these parameters are still in conditions that are appropriate for the living conditions of milkfish

Abstract

The issue of quality and food safety of fishery products is something that cannot be negotiated. It turns out that final product monitoring techniques have not been able to provide quality assurance that food products are free from danger and contamination. Through the implementation of Hazard Analysis Critical Control Point (HACCP) at each stage of the process flow, it is possible to increase operational efficiency, reduce the risk of pollution and prevent hazards through identifying and controlling risk factors. In this regard, PT. Bahari Lancar Abadi, hereinafter referred to as the Fish Processing Unit (UPI), has been carrying out fresh grouper export activities since 2022 with production volumes continuing to increase. The aim of the research is to identify the implementation of HACCP on fresh grouper fish at UPI as a guarantee of the quality and safety of fishery food products so that export activities run effectively and efficiently without any special product rejection in the destination country. For 3 weeks, observations and assessments were carried out regarding the suitability of HACCP implementation in the handling of fresh grouper products throughout the production process. Based on the research results, it is known that UPI implements the HACCP system starting from the basic requirements in the form of implementing good fish processing methods (GMP) and fulfilling the requirements for sanitation standard operating procedures (SSOP) with conditions that meet the requirements based on KP Ministerial Regulation Number 17 of 2019 and implementing 5 (five) steps and 7 (seven) HACCP principles properly in accordance with SNI 01-4852-1998 as a form of consumer protection in the consumption of fishery products through food safety quality control throughout the production process so that export activities run effectively and efficiently without any special product rejection in the destination country.

Abstract

This study is a reference to ensure the quality of the white snapper fillet process. Snapper is a type of fish that has economic value and is widely consumed by the public in fresh form. In the process of white snapper fillet in several UPIs, GMP and SSOP processes are applied in receiving raw materials, quality evaluation for export purposes is at Ud. Damena Bali. The snapper process flow starts from receiving raw materials, checking, weighing I, removing scales, washing I, filleting, tidying, weighing II, packaging, storage. Organoleptic and temperature raw material requirements, organoleptic export test results above 7, microbiology starting from ALT (5,000,000), E- Coli, Coliform, Salmonella spp, vibrio meet quality requirements and chemistry meets requirements. Conclusion GMP and SSOP are very important activities to be implemented in companies to produce good products.

Abstract

Ikan Tuna (Thunnus sp.) mempunyai kandungan gizi penting bagi tubuh manusia, terutama protein dan asam lemak omega 3. Salah satu bentuk olahan tuna yang diamati pada penelitian in yaitu ikan tuna segar bentuk loin. Unit Pengolahan Ikan (UPI) dalam menjamin produk hasil perikanan menerapkan GMP dan SSOP. Tujuan dari penelitian ini yaitu untuk megetahui mutu dari bahan baku ikan tuna hingga menjadi produk tuna loin di PT. Bahari Lancar Abadi. Metode deskriptif dilakukan dalam penelitian ini dengan pendekatan kualitatif dan kuantitatif dimana data dikumpulkan dengan partisipasi aktif langsung terhadap implementasi atau penerapan Good Manufacturing Practices (GMP) dan Standard Sanitation Operating Procedure (SSOP) serta melakukan pengujian organoleptik, pengujian kimia, pengujian mikrobiologi, pengujian air dan es. Hasil penelitian menunjukkan bahwa PT. Bahari Lancar Abadi telah menerapkan sistem kelayakan dasar GMP dan SSOP yang telah memenuhi syarat, dan untuk pengujian organoleptik di peroleh rata – rata 8,5 hasil uji, pengujian kimia, pengujian mikrobiologi, pengujian air dan es telah memenuhi Standar Nasional Indonesia (SNI). Kesimpulan dari penelitian ini bahwa PT. Bahari Lancar Abadi telah menerapkan 18 aspek GMP dan 8 kunci SSOP.

Abstract

Transportation of fish seeds is the best way to move fish seeds from farmers to buyers. Proper transportation of live tilapia fish can ensure that the fish remain alive, healthy and fresh until their destination. The aim of this research is to determine the effect of density and size on fish seed catch in tilapia seed transport and to determine the interaction between density and size on tilapia seed catch in semi-open transport. Research location: Transportation was carried out from the seed source at the tilapia hatchery business in Patas Village, Gerokgak District, Buleleng Regency and ended at the Mina Anakan Jepun Fish Cultivator Group, Bebetin Village, Sawan District, Buleleng Regency, Patas, Gerokgak District, Buleleng Regency, Bali. This research used a Completely Randomized Design (CRD) with a factorial pattern with 2 factors consisting of Factor 1, namely fish density consisting of 3 levels, namely 50 fish/liter, 75 fish/liter, and 100 fish/liter. Factor 2 is the size of the fish which consists of 3 levels, namely 5-6 cm, 7-8 cm, 9-10 cm. Based on the results of treatment research, the density of fish numbers and fish size showed a very significant influence (P<0.01) on the survival rate of tilapia fry during semi-open transportation. The interaction between fish density and fish size showed no significant effect (P>0.05) on the survival rate of tilapia fish seedlings. A fish density of 100 fish/liter and a fish size of 5-7 cm resulted in the highest survival of tilapia fry during semi-open transportation.
