Abstract

Nata is an organic food product that has a high fiber content. Nata is a fermented produce by Acetobacter xylinum. There is very limited review article that discussed the making process of nata using different starter, raw material, and the length of incubation time in once. So that, this review discusses the comparison of various parameters that affect the fermentation process of nata. This review aims to discuss the effect of using several types of microorganisms, different raw materials, and different fermentation time on nata production. Factors that influence the success of nata fermentation process include fermentation time, the addition of ingredients (sugar, vinegar, and urea), the use of hollow caps, avoiding products from shocks, and the use of sterile equipment. The bacteria that can be used for making nata include Acetobacter xylinum and Acetobacter sp. Several raw materials can be used to make nata, such as coconut water, seaweed, banana peels, tofu water, cassava, and jackfruit straw. The best raw material to make nata from color parameters is seaweed, aroma parameter is jackfruit straw, and taste parameter is cassava. Based on chemical and physical tests, the best raw material for moisture content parameters is seaweed, fiber content parameter is cassava, thickness parameter is banana peel, and yield parameter is coconut water followed by cassava. The length of fermentation affects the thickness and weight of nata, chewier texture of nata, and the darker color of nata. The best thickness of nata produced on the 14th day of fermentation was 1.7 cm. The best overall weight of nata on produced the 10th day of fermentation was 600 g/L. The texture of nata was the chewiest in the fermentation time of 14 days with the value was 72.33 g/5mm. The lowest degree of nata whiteness produced on the 14th day of fermentation with the value was 72.307%.

Abstract

Buah naga super merah (Hylocereus costaricensis) mempunyai umur simpan 7-14 hari pada suhu 14-20°C. Umur simpan buah naga relatif singkat disebabkan karena kandungan air yang tinggi sebesar 90% sehingga perlu dilakukan pengolahan lanjutan menjadi sirup. Karakteristik sirup yang dihasilkan keruh, berkabut dan tidak jernih karena pektin dan selulosa. Kekeruhan tersebut dapat diatasi dengan enzim poligalakturonase dan selulase sehingga dihasilkan sirup yang jernih.  Tujuan dari penelitian ini adalah untuk mengetahui pengaruh penggunaan variasi konsentrasi enzim poligalakturonase Bacillus licheniformis GD2A AR2 dan selulase Bacillus subtilis Krakarya_1S6 terhadap kualitas sirup, mendapatkan  konsentrasi  terbaik  dari  kombinasi  kedua  enzim  tersebut terhadap efektivitas klarifikasi dalam pembuatan sirup buah naga super merah berdasarkan pH, viskositas, total padatan terlarut dan transmitansi. Penelitian ini menggunakan Rancangan Acak Lengkap Faktorial (RALF) dengan dua faktor. Faktor  pertama  yaitu  jenis  enzim  terdiri  atas  poligalakturonase  dan  selulase. Faktor kedua konsentrasi enzim yang digunakan yaitu 0%; 0,06%; 0,09%; 0,1% (poligalakturonase) dan 0%; 0,1%; 0,13%; 0,16% (selulase). Penelitian ini dilakukan dengan tiga kali ulangan sampel dan satu kali ulangan analisis. Data yang diperoleh dianalisis secara statistik dengan SPSS menggunakan two way Analysis of Varian (ANOVA) dan dilanjutkan dengan Duncan Multiple Range Test (DMRT) pada tingkat signifikansi 5%. Hasil penelitian menunjukkan bahwa enzim poligalakturonase dan selulase mempunyai   aktivitas enzim 0,32 U/ml dan 0,06 U/ml. Penambahan enzim poligalakturonase dan selulase serta kombinasinya berpengaruh nyata terhadap penurunan pH dan viskositas dna peningkatan total padatan terlarut dan transmitansi sirup yang dihasilkan. Perlakuan terbaik terdapat pada penambahan enzim poligalakturonase 0,09% dan selulase 0,1% karena dapat menurunkan pH (4,24) dan viskositas (10,6 cP) serta meningkatkan total padatan terlarut (43,5°brix) dan transmitansi (66,2%T).

Abstract

Umur simpan produk pangan merupakan hal yang sangat penting karena merupakan parameter ketahanan produk selama selang waktu antara produksi hingga konsumsi. Penelitian ini bertujuan untuk menentukan umur simpan dari snack bars beras ketan hitam dan labu kuning yang dibuat dengan perbandingan 75:25 (w/w) dengan metode ASS (Accelerated Storage Studies). Penelitian ini menggunakan RAL faktorial 2 faktor dengan 2 kali ulangan. Faktor yang digunakan yaitu suhu penyimpanan 25ºC, 35ºC dan 45oC (298 K, 308 K dan 318 K) dan lamanya penyimpanan selama 20 hari. Hasil penelitian menunjukkan bahwa snack bars pada suhu 25ºC (298 K) mempunyai umur simpan 22 hari. Pada suhu 35ºC (308 K) umur simpan produk adalah 20 hari dan pada suhu 45ºC (318 K) umur simpannya adalah 19 hari.

Abstract

Curing is a method that can be used to maintain the quality of beef. The curing method uses nitrate and nitrite compounds, which have useful roles in the curing process. However, those compounds have a side effect on the body if consumed continuously, which causes cancer disease (carcinogenic). This harmful carcinogenic property can be controlled by the addition of ascorbic acid. Ascorbic acid is commonly found in several fruits, one of which is red guava (Psidium guajava L). Therefore, this study aims to find out the most optimal addition of red guava extract in maintaining the beef qualities with curing treatment on the parameters of water content, pH, whc, texture, color, ascorbic acid, and nitrite residue. This study was conducted using a Completely Randomized Design with the various concentration of red guava extract (0%-5%) and observed at soaking times of 0, 2, 4, and 6 days. The analysis was performed by twice of sample repetition and analysis repetition. The results of the analysis were statistically analyzed by One Way ANOVA continued with the DMRT test if the results were significantly different (α = 0.05). Based on the results of the study, the higher of concentration in red guava extract, the pH, water content, whc, b* color, a* color, nitrite residue were smaller while the hardness, springiness, cohesiveness, L* color, a* color, the ascorbic acid content in curing were higher. The chosen treatment due to the test parameter in this study was the addition of 4% concentration in red guava extract in the curing process with 2 days soaking times.

Abstract

Shrimp crackers are a type of dry food made from tapioca flour, shrimp and other additives. Shrimp crackers with the addition of fish bone flour nanocalcium is an alternative food that can be developed as a source of calcium. The purpose of this study was to determine the effect of adding nanocalcium tilapia bone flour to physico-chemical characteristics and the best concentration of tilapia nanocalcium bone in shrimp crackers to be accepted by panelists. This study used a Completely Randomized Design (CRD) with one factor, namely the concentration of addition of tilapia nanocalcium bone, namely 0%, 5%, 10%, and 15% which was done 3 times. Data were analyzed using ANOVA and continued by Tukey test if there were significant differences. The results showed that the addition of tilapia nanocalcium bone significantly affected the increase in the ash and calcium levels of shrimp crackers, while the water content, protein and developmental power decreased with the addition of increasing tilapia bone nanocalsium. The addition of 10% tilapia bone nanocalcium is the best concentration based on panelist acceptance with the category of very fond of the parameters of smell, taste, and texture, while for the panelist appearance parameter accepts in the like category. Shrimp crackers with the addition of 10% nanocalcium contain 10.76% water content; ash content 13.81%; protein content 2.40%; 2.12% calcium content and 42.62% swelling power.

Abstract

Keripik singkong adalah salah satu makanan ringan popular di Indonesia. Deep frying merupakan metode penggorengan yang sering digunakan dalam industri keripik dan dapat meningkatkan serapan minyak pada produk akhirnya, sehingga kajian untuk mengurangi serapan minyak pada produk hasil penggorengan perlu dilakukan. Salah satunya dengan aplikasi edible coating sebelum penggorengan. Hidroksi propil metil selulosa (HPMC) dan metil selulosa (MC) merupakan derivat selulosa yang dapat digunakan dalam aplikasi pangan dan farmasi, sehingga aplikasinya sebagai edible coating pada keripik singkong diharapkan dapat mengurangi serapan minyak selama penggorengan, dilihat dari penurunan kadar lemak produk akhirnya. Pengaruh perlakuan aplikasi edible coating HPMC dan MC terhadap penurunan serapan minyak dan karakteristik fisikokimia keripik singkong pada penggorengan dengan minyak baru dan minyak jelantah dikaji dalam penelitian ini dengan menggunakan desain penelitian rancangan acak lengkap satu faktor, yaitu jenis derivat selulosa. Hasil penelitian menunjukkan bahwa keripik singkong perlakuan edible coating dengan HPMC dan MC mampu menurunkan serapan minyak keripik singkong dibanding kontrol dengan persentase penurunan HPMC (26,03%) dan MC (17,23%), pada penggorengan dengan minyak baru, sedang persen penurunan pada penggorengan keripik dengan menggunakan minyak jelantah HPMC (24,41%) dan MC (17,07%). Pengaruh aplikasi edible coating HPMC dan MC pada karakteristik fisikokimia keripik singkong yang dihasilkan dibanding keripik kontrol berupa peningkatan kadar air, penurunan kadar lemak, peningkatan kadar abu, dan tekstur semakin keras (berkurang tingkat kerenyahan) baik pada penggorengan dengan minyak baru maupun minyak jelantah. Analisis warna menunjukkan hasil yang berbeda pada tingkat perbedaan kecil untuk produk hasil goreng dengan minyak baru, dan tingkat perbedaan warna sedang pada produk hasil goreng dengan minyak jelantah.

Abstract

Cinnamon is one of the natural flavor commodities that has not been utilized optimally. One of its derivatives product is essential oil. Essential oils are obtained through the distillation process. The by-product of the distillation process is hydrosol. Hydrosol is an emulsion from essential oil which is bound by water molecules. The hydrosol used in this research was a by-product of processing of cinnamon bark essential oils using Pilot Plan-scale steam distillation. The Pilot Plant-scale steam distillation is using 50 % of destilation tank capacity, with a variety of valve openings (¼, ½, and ¾). The study aimed determine characterization of cinnamon bark hydrosols including total phenol, antioxidant activity of reducing power method, antioxidant activity of radical scavenging (DPPH) method, total flavonoids, and antimicrobial activity against Pseudomonas fluorosence; Aspergillus niger; Bacillus plantarum; Staphylococcus aureus; and E.coli. The results showed that variety of valve openings effected the chemical characteristics of cinnamon bark hydrosols including total phenol, total flavonoids, antioxidant activity (reducing power and DPPH methods). The hydrosols of ¾ valve openings treatment showed antimicrobial activity against Escherichia coli, Staphylococcus aureus, and Pseudomonas fluorescens. All hydrosol samples showed no antimicrobial activity against Aspergillus niger and Lactobacillus plantarum. This hydrosol characterization will be used for further recommendations related to the use of hydrosols in the food.

Abstract

Durian (Durio zibethinus Murray) is a tropical, delicious and expensive fruit with specific aroma. Indonesia is among the biggest and the best durian fruit producer in the world. There are various types of Durian in Indonesia, coming from different areas. Based on the data released by the Central Bureau of Statistic, it was demonstrated that the main provinces producing durian in 2019 were East Java, Central Java, West Java, North Sumatera, West Sumatera, Banten, South Sulawesi, and South Sumatera with the total harvest of  289,334 ton, 172,939 ton,  94,183 ton, 90,105 ton, 62,564 ton, 46,436 ton, 45,729 ton, and 42,048 ton, respectively. The high production of durian fruit is beneficial for the agroindustrial and economic sectors. On the other hand, it also results in the abundance waste during the harvest time which causes many problems to the environment. The percentage of durian flesh of fruit is only 20.52%, meaning that the 79.48% of durian is unutilized parts such as shell and seeds. The waste resulted from durian is about 556,360 ton per year. Durian waste, especially durian shell, is difficult to degrade. Hence, the proper waste management of the durian shell is crucial. The strategic way to manage the durian shell is by upgrading this waste into various valuable products. In this work, the innovation of the durian shell waste conversion into diverse product to support the national food security during the covid-19 new normal era is discussed.  Durian shell is potential to be used for the production of food products such as candy, pectin, edible film, and crackers, flour, and noodle. It also has potency to be utilized in the production of products which support the development of food crop agriculture and animal husbandry, such as biopesticides, organic fertilizer, and animal feed, which strongly associated with the food supply security.
