Abstract

Background: The trend of healthy eating continues to grow in Indonesia, particularly among Gen-Z, including pastry and bakery products. According to the Badan Pusat Statistik, the consumption of pastry and bakery products in Indonesia increased by 2,62% in 2023. However, the understanding of healthy products, such as pastry and bakery items, remains limited. This study aims to explore the perceptions and factors influencing the selection of these products among Gen-Z.Objective: To understand the perceptions and reasons behind Gen-Z’s selection of healthy pastry and bakery products in Indonesia, as there is a concern that commercially available products may not meet health standards if consumed excessively.Method: This study employs a quantitative approach, collecting data from 203 Gen-Z respondents across Indonesia. The measurement of perceptions regarding healthy products was conducted using a 10-question questionnaire, analyzed through frequency distribution. The reasons for product selection were measured using 23 questions based on the Food Choice Questionnaire, utilizing a Likert scale and factor analysis, following validity and reliability tests using SPSS.Results: 51,72% of respondents have a "moderate" understanding of healthy products. The main selection factors—Health, Weight Control, and Sensory Appeal—account for 65,131% of the Total Variance Explained. For Gen-Z in Indonesia, the most preferred products are gluten-free, low-sugar, high-fiber, low-calorie, low-carb, low-fat, and great-tasting.Conclusion: A new factor has emerged as a reason for selecting pastry and bakery products, which is a combination of Health, Weight Control, and Sensory Appeal, shaping Gen-Z’s perception of healthy pastry and bakery products in Indonesia.

Abstract

Background: Clinical nutrition guidelines aim to enhance the quality of nutritional care and support evidence-based practices in hospitals. However, their implementation faces multiple challenges at systemic, institutional, and individual levels. Globally, malnutrition affects 20% to 50% of hospitalized patients and contributes to higher mortality, prolonged hospital stays, and increased healthcare costs. Despite these consequences, integration of nutrition guidelines into routine hospital practice remains limited. Objective: This scoping review aims to identify and map the factors that influence the implementation of nutrition guidelines in hospitals based on global scientific literature published in the last five years. Methods: A scoping review was conducted using the PEO (Population, Exposure, Outcome) framework. Articles were identified through Scopus, EBSCOhost, and PubMed, focusing on open-access English-language publications from 2020 to 2025 discussing facilitators and barriers to hospital nutrition guideline implementation. Following PRISMA-ScR procedures, 25 eligible studies were included and analyzed thematically. Results: A total of 5,760 articles were identified. After screening and eligibility assessment, 25 studies were included in the synthesis. Key enablers were staff training, digital systems, teamwork, supportive policies, and patient education. Main barriers included limited dietitian involvement, poor system integration, inadequate training, administrative issues, and logistical constraints. Conclusion: The implementation of clinical nutrition guidelines is shaped by a complex interplay of supportive and obstructive factors. Enhancing success requires comprehensive, system-based strategies focusing on training, policy alignment, team communication, and digital integration tailored to institutional contexts.

Abstract

Background: Adolescence requires balanced nutrition. Therefore, the role of nutrition in this period is crucial to pay attention to. Breakfast is important for everyone, especially adolescents, before starting daily activities, as 20–25% of the energy requirements can be fulfilled by breakfast. Individuals who are not accustomed to breakfast tend to experience excessive hunger during the afternoon and evening, which leads to the consumption of low-nutrient, energy-dense foods and fast food, ultimately affecting their nutritional status. Objective: This study aimed to analyze the relationship between breakfast habits, fast food consumption, and nutritional status among adolescents in State Senior High School 2 Sukoharjo. Methods: This study employed an observational cross-sectional design. The study subjects were 77 eleventh-grade students of State Senior High School 2 Sukoharjo, Sukoharjo Regency, Central Java, selected through proportional random sampling. The research instruments included anthropometric measurements, a 7-day breakfast habit questionnaire, and a Food Frequency Questionnaire (FFQ). Data were analyzed using Spearman’s rank correlation test. Results: There was a significant relationship between breakfast habits (p = 0.019; r = -0,267) and the frequency of fast food consumption (p = 0.002; r = 0,344) and the nutritional status of adolescents. Breakfast habits and frequency of fast food consumption were found to influence the nutritional status of adolescents. Conclusion: These findings highlight the importance of promoting regular breakfast habits and healthy eating patterns to improve and maintain adolescent health.
