Journal of SAGO Gizi dan Kesehatan (Nutrition and Health) is a peer-reviewed journal of a scientific nature contained in the Polytechnic of Health Ministry of Health of Aceh, who publish high quality of nutrition and health-related individuals, populations, groups and communities who are vulnerable to malnutrition and health and risk issues. The scope of the journal study associated issues of nutrition, food technology, nutrition and maternal and child health, environmental health, hygiene and sanitation, oral health, treatment of individuals/families and communities, and safety of medical drugs. The journal also seeks to raise awareness of the interrelationship between nutrition, exercise, physical activity, and lifestyle for improving health across the lifespan and to demonstrate how healthcare outcomes and policies can be improved with the adoption of a more nutrition-oriented approach. In this way, it aspires to provide an invaluable resource to nutrition and healthcare practitioners, as well as researchers and academics of nutrition studies. SAGO Gizi dan Kesehatan (Nutrition and Health) provides an initial rapid review of all submissions to determine suitability for external peer review. Abstract

Background: The development of nutritious snack bars is expected to provide a viable solution for offering popular snacks that meet the nutritional needs of adolescents. Therefore, the development of locally sourced snack bars like Puanchi Bar, which substitutes fish glue flour, becomes a promising solution to support government nutrition programs.Objectives: This study aims to analyze the nutritional content and formulation accuracy of three snack bar formulations. Methods: The research design used in this study is a laboratory experimental design with proximate tests, including analysis of protein content, fat content, moisture content, ash content, and carbohydrate content. The study was conducted from May to November 2023 in three laboratories, using three snack bar formulations: F3, F6, and F9. This research utilizes both secondary and primary data. Secondary data was obtained from previous studies, while primary data was obtained through laboratory testing. The data were analyzed using ANOVA, Duncan, and Kruskal-Wallis testsResults: The results showed that formulation F9 has the highest overall nutritional content, particularly in protein and minerals, with an average protein content of 5,10%, ash content of 2,48%, and moisture content of 5,66%, which are higher than F3 and F6. Meanwhile, formulations F3 and F6 excel in carbohydrate and fat content, with F3 and F6 having carbohydrate levels of 64,52% and 64,73%, respectively. The fat content of F3 and F6 is 27,8% and 24,5%, respectively. Formulation F9 is considered more suitable for fulfilling protein and mineral needs, but attention must be given to its moisture content, which could affect shelf life. On the other hand, F3 and F6 are superior in taste and energy but require adjustments to their fat content to maintain a balanced nutritional profile.Conclusion: Formulation F9 is more suitable for meeting protein and mineral needs, while F3 and F6 are better for providing energy and preferred taste. Each formulation has different potential depending on specific nutritional requirements.

Abstract

Background: Snack food is typically prepared and served in open spaces, such as in food courts or by the roadside, which makes it highly susceptible to bacterial contamination. If consumed in certain amounts, these bacteria can cause foodborne illnesses (foodborne diseases).Objective: This study aims to assess the quality of food sold at the Pujasera Canteen of Pattimura University, Ambon, based on microbiological parameters by calculating the Total Plate Count (TPC).Method: This research is a descriptive quantitative study with an observational approach. The samples used consisted of five types of snack foods: noodle with meatballs, egg noodles, chicken rice, fried tubers, and fried rice, which were randomly sampled from sales stands. The study was conducted in May 2024 at the Microbiology Laboratory of the Faculty of Medicine, Pattimura University. Statistical analysis was carried out by calculating the total colonies using the formula TPC (Total Plate Count).Results: The results showed the TPC values for sample A at 1 × 10^6 colonies/g, sample B at 2,5 × 10^7 colonies/g, sample C at 1,2 × 10^7 colonies/g, sample D at 7,3 × 10^7 colonies/g, and sample E at 4,6 × 10^4 colonies/g. Based on these values, four out of the five samples did not meet the criteria set by BPOM (Indonesia’s National Agency of Drug and Food Control), referring to SNI 7388:2009, as they exceeded the maximum microbial contamination limit of <1 × 10^5 colonies/g. Only one sample met the criteria.Conclusion: Four out of the five samples were categorized as having poor quality, as the microbial count exceeded the maximum contamination limit set by SNI.

Abstract

Background Probiotic banana milk is a product containing potassium from Ambon Banana developed to address gastrointestinal motility issues in surgical patients. However, two important parameters to be considered for surgical patients are viscosity and energy density.Objectives: To analyze the viscosity and energy density of probiotic banana milk and its potential as a nutritional intervention for surgical patients.Methods: This study employed an experimental design with a Completely Randomized Design (CRD) with 3 treatments and 3 replications in laboratory test. The treatment in this study was to differentiate the proportion between Green Ambon Bananas (Musa acuminata colla) and starter before cooking, which was divided into 3 formulations. Viscosity measurement was assessed using a digital viscometer NDJ-5 (Vevor, Shanghai, China) according to the manufacturer's recommendations. The energy density of probiotic banana milk was measured using the energy ratio formula [kcal] to weight (g). Energy density data were analyzed using ANOVA test.Results: The results showed that both the highest viscosity and density were in F3 (1630 m.pa.s with 0,35 kcal/g) and the lowest was in F1 (472 m.pa.s with 0,31 kcal/g). The ANOVA test showed a difference in energy density in the three formulations with a p-value of 0,003. The results of the post-hoc test showed that there was a difference between each formulation (F1 and F2; F1 and F3; F2 and F3).Conclusion: Sample F3 has the highest viscosity and energy density compared to F1 and F2, so it has the highest potential to be given to pre-and post-surgical patients to help speed up the recovery process.

Abstract

Background: The high protein content in hybrid corn is needed by the body to support health, so the quality of production must be carefully maintained. Terra preta is a type of fertile soil that can enhance nutrient retention through biochar, thereby improving agricultural production both in terms of quality and sustainable quantity.Objective: To analyze the potential use of Terra Preta in increasing the protein content of hybrid corn.Methods: The research was conducted from September to December 2023. This study used a Randomized Block Design (RBD) method with 2 treatment levels (0 tons/ha and 15 tons/ha of terra preta). Each treatment was replicated 3 times, resulting in 12 experimental plots. Corn planting was carried out in Tolengas Village, Sumedang, and protein content testing was conducted at the UPTD Testing and Application of Product Quality (PPMPP) of the Fisheries and Marine Office, Cirebon City, West Java Province.Results: Hybrid corn treated with terra preta showed better growth in terms of plant height, stem diameter, and number of leaves compared to corn without terra preta. There was a significant difference in the protein content analysis of hybrid corn (p = 0,01, 95% CI = 7,322–11,001). The protein content of hybrid corn seeds treated with 0 tons/ha of terra preta (9,31%) was higher than that treated with 15 tons/ha of terra preta (9,02%). Conclusion: The highest protein content was observed in the 0 tons/ha treatment (9,31%). Terra preta benefits plant growth but does not contribute to increased protein content.

Abstract

Background: Teenagers' high consumption of packaged drinks can trigger obesity, so they need to be able to identify nutritional content through the nutritional labels on the packaging. The use of nutritional labels is a form of nutrition education that can help teenagers make food choices as an effort to prevent obesity.Objectives: Analyzing the correlation of practice in nutrition labelling with the nutritional status of junior high school students in Bandung.Methods: This study used a quantitative descriptive design with cross-sectional methods. In October 2024, we conducted this study at public and private junior high schools in Pasirkaliki District, Bandung City, involving 60 students. This study employed a purposive sampling technique for selecting participants. The variables analyzed in this study include the practice of using nutrition labels, frequency of consumption of packaged drinks, and nutritional status. The research data were analyzed using univariate tests and multivariate tests using path analysis to see the correlatio between variables.Results: The results of the study indicated that there was a moderate correlation between the frequency of consumption of packaged drinks and nutritional status (p=0,020; b=0,405), the practice of using nutritional labels with the frequency of consumption of packaged drinks (p=0,003; b=0,470), and the practice of using nutritional labels with  nutritional status (p=0,023; b=0,383). Meanwhile, there was a weak correlation between the practice of using nutritional labels with nutritional status through the frequency of consumption of packaged drinks as an intervening variable (p=0,048; b=0,190).Conclusion: The study's results stated that the practice of using nutritional labels correlated with nutritional status, with the frequency of consumption of packaged drinks as an intervening variable.

Abstract

Background: Nutritional problems among toddlers remain a public health challenge in many regions, including Indonesia. Locally-based Supplementary Feeding (PMT) is often utilized to address nutritional issues, particularly in improving toddler weight and nutritional status.Objectives: This article aims to evaluate the effectiveness of locally-based supplementary feeding in improving toddler weight and nutritional status through a literature review.Methods: This literature review applied a narrative review approach by searching articles in PubMed and Google Scholar (2015–2024). Articles were selected based on inclusion criteria, including RCTs and observational studies discussing the impact of local PMT on toddler weight and nutritional status. Study quality was assessed using the Newcastle-Ottawa Scale and GRADE. Data were analyzed descriptively without quantitative meta-analysis.Results: Most studies reported that local PMT effectively increased toddler weight. However, its impact on nutritional status was often insignificant within a short intervention duration. Key factors determining the success of the intervention included nutrient composition, intervention duration, and adherence level.Conclusion: Local food-based PMT is effective in improving toddler weight, although it may not significantly change nutritional status in the short term. This intervention can serve as a relevant alternative to support toddler nutrition, especially in areas with limited access to nutritious food.

Abstract

Background: Prevention of anemia can be done by consuming foods that are sources of iron. One source of animal food that contains heme iron and has a higher biovalidity value than other sources of iron is chicken liver.  One vegetable that has a high iron content is Moringa (Moringa oleifera). White oyster mushrooms are low in fat but high in protein.Objectives: The study aims to analyze the nutritional quality and organoleptic quality of dimsum formulations of chicken liver, moringa leaves and oyster mushrooms as snacks for anemic teenage girls.Methods: This research uses an experimental research type with a completely randomized design (CRD). The research was conducted at the Food Technology Science Laboratory (ITP) of the Malang Health Polytechnic Nutrition Department on June 2024. Organoleptic quality testing was carried out using a hedonic test using 25 semi-trained panelists. Determination of the best treatment level using the effectiveness index method. Statistical tests used the Kruskal Wallis test and the Mann Whitney advanced test.Results: Shows that the dimsum formulation of chicken liver, oyster mushrooms and Moringa leaves meets the nutritional requirements of adolescent girls aged 13-15 years with a snack percentage of 10% (empirically). There were significant differences in the organoleptic quality parameters of taste (p=0,030) and texture (p=0,036), while color (p=0,076) and texture (p=0,319) showed no significant differences. At the best treatment level, namely P1, it can meet the energy and nutritional needs of adolescent girls.Conclusion: The formulation of chicken liver, oyster mushroom and moringa leaf dimsum shows significant differences in organoleptics taste and texture.

Abstract

Background: One plant that can be a source of natural healing for various ailments is the kirinyuh (Chromolaena odorata). This plant can grow in geothermal areas. Plants grown in geothermal areas have the potential to produce higher levels of active substances. The kirinyuh plant is rich in flavonoid compounds. Flavonoids have antioxidant, anti-inflammatory, antibacterial, antiviral properties, and have potential as anticancer agents. The level and quality of flavonoid compounds are influenced by the type of solvent.Objectives: This study was conducted to determine the total flavonoid content of kirinyuh leaf extract from the Ie Seum geothermal area of Aceh Besar based on different types of solvents.Methods: Determination of total flavonoid content using UV-Vis spectrophotometry and quercetin was used as a standard in the measurement. Each measurement was repeated three times. The results were analyzed using an independent t-test.Results: The results of the determination of total flavonoid levels obtained in kirinyuh leaves using ethanol solvent were 10,65 mg QE/g and ethyl acetate was 8,97 mg QE/g. Based on the results of the Independent T-test, a significance result of 0,000 (P<0,05) was obtained. These results indicate that there is a difference in total flavonoid levels between ethanol and ethyl acetate solvents.Conclusion: The total flavonoid content using ethanol solvent types were higher than ethyl acetate.

Abstract

Background: Dengue Hemorrhagic Fever (DHF) is a health problem in Indonesia, transmitted by the Aedes aegypti mosquito. Bitter melon leaves contain active compounds such as saponins, alkaloids, and flavonoids belived to be effective as larvacides and are expected to serve as a more environmentally friendly alternative for mosquito control in preventing the spread of DHF.Objective: To determine the potential of natural biolarvacide from bitter melon leaf extract (Momordica charantia L.) against Aedes aegypti larvae.Methods: An experimental study was conducted at the Public Health Laboratory of Tanah Bumbu in July 2024. This experimental research used 375 Aedes aegypti larvae with five treatments and three repetitions, observing the number of larvae that died after 24 hours. The data were analyzed using the Shapiro-Wilk test, Levene's test, Kruskal-Wallis test, Mann-Whitney test, and probit analysis.Results: Bitter melon leaf extract at concentrations of 0,3% and 0,6% did not cause larval death, so it was not effective in inhibiting the growth of Aedes aegypti. While at concentrations of 0,9% showed a significant effect in inhibiting larval growth. The results of the Kruskal-Wallis test on the death of larvae treated with bitter melon leaf extract obtained a significance value of 0,008 (p <0,05). The results of the Mann-Whitney test showed that there was a significant difference between the concentration of 0,9% bitter melon leaf extract and the positive control abate, as well as between the negative control aquadest and the concentration of 0,9% bitter melon leaf extract. The results of the probit analysis test obtained an LC50 value of 1,202%.Conclusion: The 0.9% concentration of bitter melon leaf extract can inhibit the growth of Aedes aegypti larvae. However, it is not yet suitable as an alternative bio-larvicide.

Abstract

Background: Lower back pain is a common issue during pregnancy, especially in the third trimester, affecting approximately 50%-80% of pregnant women. This discomfort can arise from excessive bending, prolonged walking without rest, and frequent heavy lifting.Objective: This study aims to determine the effect of gym ball therapy on lower back pain among third-trimester pregnant women at Posyandu Desa Pardasuka, under the jurisdiction of Puskesmas Katibung, South Lampung Regency.Methods: The study used a pre-experimental method with a one-group pretest-posttest design. It was conducted in July 2024 at Posyandu Desa Pardasuka, involving a population of all third-trimester pregnant women (15 individuals), selected through purposive sampling. Data collection consisted of several stages, starting with a pre-test where the researcher obtained research permissions, provided informed consent, and measured the intensity of lower back pain using a Numerical Rating Scale (NRS).Results: The results showed that the average lower back pain score among third-trimester pregnant women before gym ball therapy was 5,60, with a standard deviation (SD) of 0,507. After the therapy, the average score significantly decreased to 2,93, with an SD of 0,258. Statistical analysis using the t-test indicated a significant reduction in pain, with a p-value of 0,000 (p < 0,05). This demonstrates that gym ball therapy is effective in reducing lower back pain in third-trimester pregnant women.Conclusion: Gym ball therapy is effective in reducing lower back pain among third-trimester pregnant women. Pregnant women are encouraged to perform this therapy regularly under the guidance of healthcare professionals.
