Abstract

ABSTRACT Formaldehyde in salted fish processing is used to extend the shelf life of salted fish, potentially causing harmful effects on health. Before processing, such as soaking using pineapple peels can be done to reduce formaldehyde levels so that it is not harmful to health. The purpose of the study was to determine the decrease in formaldehyde levels in salted fish before and after soaking using a pineapple peel solution. This research is a pre-experimental study with a group Pretest and Posttest Design. The object of research is salted fish soaked in pineapple peel solution concentrations of 20%, 40%, 60%, and 80% with 4 replications. Soaking time is done for 60 minutes. The method of checking formaldehyde levels using the spectrophotometer method. The data that has been obtained is then analyzed using a paired t-test. The results of the examination of formaldehyde levels of salted fish before soaking amounted to 13.30 mg/kg. In contrast, after soaking the pineapple peel solution concentration of 20%, 40%, 60%, and 80% respectively amounted to 6.58 mg/kg, 4.16 mg/kg, 0.15 mg/kg, and 0.11 mg/kg, and tap water of 8.14 mg/kg. The Paired t-test obtained the P < α (0.05), meaning there is a significant difference in decline. The highest formaldehyde content reduction of 99.14% occurred in the treatment of soaking in pineapple peel solution with a concentration of 80% with a soaking time of 60 minutes. There is a significant difference between formaldehyde levels in salted fish before and after soaking using a pineapple peel solution. The use of pineapple peel solution can be an alternative effort in reducing formaldehyde levels in salted fish before processing for consumption and using other fruit peels with different concentration variations and different soaking times in salted fish.

Abstract

Cholesterol is one of the essential molecules in humans. An imbalance in cholesterol levels in the body, such as high levels of triglycerides and low-density lipoprotein (LDL) or total cholesterol, can contribute to one of the leading causes of death in Indonesia. Diseases caused by high cholesterol levels include cardiovascular diseases, atherosclerosis, hypercholesterolemia, hyperlipidemia, coronary heart disease, hypertension, and stroke [6,9,14]. As a result, additional intake from sources like omega-3-rich supplements or herbal remedies is recommended. Historically, plant-based treatments have been used as pharmacological therapies. Researchers have explored the use of purslane (Portulaca oleracea) leaves, which contain unsaturated fatty acids and antioxidants, including omega-3 fatty acids, vitamins A and C, and minerals such as magnesium and potassium, offering cardiovascular benefits. The researchers utilized purslane extract as an herbal tea blend, serving as a natural alternative to supplements in capsule form, which may be more expensive. In extract form, purslane leaves are hygienically processed and mixed with herbal tea, creating a convenient health drink for daily consumption. The purslane leaf extract was obtained through method maceration using 96% food-grade ethanol. Proximate tests were conducted to assess total energy, energy from fat, ash content, moisture content, carbohydrates (by difference), total fat, and protein content [5,24]. Sensory evaluation was conducted by semi-trained panelists to assess the color, aroma, and taste of herbal tea blends containing purslane leaf extract. This evaluation aimed to collect subjective feedback from potential consumers regarding the organoleptic characteristics of the product.

Abstract

The One Health paradigm, with its integral recognition of human, animal, and environmental health interdependencies, has garnered increasing endorsement in recent years. Equally important is the agro-maritime sector, given its crucial role in food security and international commerce, which is now acknowledged as a fundamental component within the One Health strategy. Contemporary complex health issues such as zoonotic diseases, antimicrobial resistance, and food safety threats necessitate a holistic, interdisciplinary approach that considers the trifecta of human, animal, and environmental health. The amalgamation of agro-maritime and One Health strategies is paramount in addressing burgeoning challenges that imperil global health security. These encompass the proliferation of zoonotic diseases, the surge in antimicrobial resistance, and escalating concerns surrounding food safety. The significance of advancing surveillance, monitoring, and control measures, along with fostering innovative technologies and strategies, is underscored to pre-empt and mitigate the impacts of these health threats. Spanning agriculture, aquaculture, and fisheries, the agro-maritime sector's substantial role in global health security is highlighted due to its profound influence on food production, nutrition, and environmental sustainability. The One Health model, a comprehensive approach acknowledging the intertwined nature of human, animal, and environmental health, provides a robust framework to confront emerging global health threats such as antimicrobial resistance, zoonotic disease spread, and climate change-induced health impacts. The discourse emphasizes the criticality of interdisciplinary collaboration and the deployment of a holistic perspective to tackle complex global health challenges. By strengthening the argument for the convergence of One Health and agro-maritime sectors, this paper seeks to galvanize proactive and collaborative efforts among stakeholders to fortify global health security in an increasingly unpredictable world
