Abstract

Skipjack tuna (Katsuwonus pelamis) is a fishery commodity that is highly susceptible to quality deterioration, thus requiring proper handling to maintain product quality and food safety, particularly in frozen products. This study aimed to examine the conformity of raw material handling processes of skipjack tuna into frozen products at PT X based on the Indonesian National Standard (SNI). The study employed a qualitative descriptive method using gap analysis and a compliance-based scoring system approach. Data were collected through direct observation, interviews, and literature studies. The observed processing stages included raw material receiving, sorting, weighing, glazing or non-glazing, packaging (labeling), and storage. The results showed that all production process stages achieved a conformity level of 91,6 %, categorized as highly compliant with the SNI standards. Meanwhile, supporting materials obtained a conformity level of 75%, where the use of water met the required standards, while the use of ice was not fully compliant due to the unclear documentation of the water source used for ice production. In conclusion, the handling process of frozen skipjack tuna at PT X generally met the requirements of sanitation, quality, and food safety standards; however, improvements are still needed in the control of supporting materials.

Abstract

Ulu Lalimbue Village, Kapoiala District, Konawe Regency, Southeast Sulawesi Province, is known as a milkfish producer, where fish commodities are one of additional sources of income for farmers outside the main income of farmers. This study aims to determine the amount of income of milkfish farmers and find out how much the contribution of milkfish pond business income to farmer household income. Determination in this sampling uses the census sampling technique (saturated sampling). This study took respondents as many as 20 milkfish pond farmers. Primary data in this study were obtained using direct observation, interviews, and documentation. Secondary data are obtained from records and documentation from parties or agencies related to this study. The results of this study show that the average income of the milkfish pond business in Ulu Lalimbue Village, Kapoiala District, Konawe Regency is Rp. 6.999.813/production, and the average income of the main or outside the pond business is Rp. 24.549.800. The contribution of the milkfish farming business average 22,19% of the total household income of farmers. Keywords: Milkfish, Production Costs, Contribution, income

Abstract

This study was conducted in October - November 2023, aiming to determine the cost of selling dry harvested grain and the minimum selling price of dry harvested grain in Wowasolo Village, Wanggeduku District, Konawe Regency. Data collection using a structured interview method with each respondent. The data analysis method used to calculate the total production costs is calculated using the formula TC = FC + VC, while to calculate the cost of goods sold the author uses the formula: Cost of goods sold (Rp / kg) = total cost (Rp) divided by the amount of production produced (Kg). To calculate the minimum selling price of dry harvested grain the author uses the formula: 10% x HPP. The results of the study obtained the total cost of Rp. 6,431,989 / farmer and the cost of goods sold: Rp. 2.859 Kg / Kg. The minimum selling price of dry harvested grain obtained results of Rp. 3,145 / Kg. This farmer's HPP is much smaller than the HPP set by the government at IDR 4,200/kg (Decree of the Minister of Trade No. 24 of 2020

Abstract

This study aims to analyze the effectiveness of rice seed assistance to determine its effect on production results at three irrigation sites in the rice fields of Amohalo Village, Baruga Village, Baruga District, Kendari City. This research was conducted from June to September 2022 with respondents as many as 30 farmers. The sample in this study was determined using cluster sampling and problem solving in this study using quantitative descriptive analysis and cluster analysis. The results of this study show that seed assistance in three irrigation sites in Baruga Village has been effective but the effectiveness has no real effect on production results, This can be seen from the results of cluster analysis obtained by cluster 1 with dummy characteristics (effectiveness of seed assistance) is not effective but factors and production results are high and cluster 2 has dummy characteristics (effectiveness of seed assistance) is effective but factors and production results are low

Abstract

The growth of coffee shops in Kendari City has increased significantly in recent years, driven by the high demand for places to relax and gather socially. This research aims to analyze the entrepreneurial motivation of Coffee Shops in Kendari City. Using a qualitative approach, data was obtained through interviews with Coffee Shop owners and managers as well as observations of their business operations. The results of the research show that economic motivation and social motivation in Coffee Shop entrepreneurship each obtained a total average score of 2.33 in the high category, while affiliate motivation obtained a total average score of 2.67 in the high category. Abstract

This research aims to analyze the contribution of sago and household staple food security in Labela Village, Besulutu District, Konawe Regency. There were 40 households as samples and were obtained using a simple random sampling method to determine the sample studied. Data collection uses primary and secondary data methods. Data analysis is calculating income and frequency of sago consumption using the contribution formula. To analyze household food security, the HFIAS (Household Food Insecurity Access Scale) measurement method was used and to measure food diversity, the HDDS (Household Dietary Diversity Score) method was used. To determine the level of difference between sago and rice consumption, a one-sample t-test statistical analysis was used. The results of this research are that the average household income in Labela Village is IDR. 3,160,000.00 from agriculture and IDR. 2,970,000.00 non-agricultural income. The food security analysis consists of 4 categories, namely 20% of households are food insecure, 17% are mildly food insecure, 28% are moderately food insecure, and 35% are severely food insecure. The results of food diversity consist of 3 categories, namely 45% of low food diversity households (food groups 1-6), 37% medium food diversity (food groups 7-12), and 18% high food diversity (food groups 13-16). The contribution of sago, namely 40%, shows that sago is included in the medium contribution and the results of the T-test analysis show a significance value of 0.000 < 0.05, there is a correlation between sago consumption and rice as the family's staple food. Abstract

The purpose of this study was to determine the situation of household food security in Prowal Village, Besulutu District, Konawe Regency, and to identify factors that influence household food security when consuming sago. The study was conducted in Pulowaru Village, Besulutu District, Konawe Regency. The location was selected intentionally (purposive). This survey was conducted for approximately two months from August to September 2022. The number of samples used was 60 respondents using the simple random sampling method. The data obtained included primary data and secondary data. The analysis used was multiple linear regression analysis. The results of the analysis showed that variables such as age, house area, income, and consumption had a significant effect on food access. The coefficient of determination showed 0.992, which means that age, house area, income and consumption affect food access at 99.2% of food security. 0.8% is influenced by other factors not included in this study.
