Abstract

This community service activity was carried out in Gampong Gosong Telaga Selatan, Aceh Singkil District. The target partners were a group of fishermen who made shrimp paste and women who processed shrimp paste (baring). Based on the preliminary survey, the fishermen group faced two main problems, namely production and marketing aspects. Abstract

Bullying in elementary schools is a common issue that can negatively impact children's psychological, social, and academic development. Therefore, preventive efforts through socialization activities are necessary to raise awareness and understanding among students, teachers, and parents regarding bullying prevention. This community service was carried out at Seumantok Public Elementary School, West Aceh Regency, aiming to provide education on the effects of bullying and strategies for its prevention. The methods used included interactive presentations, group discussions, and bullying scenario simulations to provide participants with a comprehensive understanding. The results showed that this socialization successfully increased students' awareness of the importance of mutual respect and the adverse effects of bullying. Teachers were also trained to recognize signs of bullying and implement strategies to manage classroom conflicts. Additionally, parents were provided with guidance on creating a family environment that supports children's emotional development. Program evaluation through surveys indicated that 85% of participants felt more prepared to prevent and handle bullying cases. Abstract

This study investigates the influence of flour type (Segitiga Biru and Cakra) and yeast ratio (5 grams and 10 grams) on the sensory quality of fermented donuts, using proofing durations of 30 and 60 minutes. An experimental design was employed with eight treatment combinations. The donut-making process included ingredient mixing, proofing, and frying. Organoleptic evaluations were conducted on taste, texture, and aroma, with panelists comprising university students aged 20–30 years. The findings reveal that donuts made with Cakra Flour, 5 grams of yeast, and proofing durations of 30 minutes (C1) and 60 minutes (C2) exhibited the best quality, receiving a preference score of 65. In contrast, donuts using Segitiga Biru Flour with 10 grams of yeast and proofing times of 30 minutes (B3) and 60 minutes (B4) resulted in suboptimal texture and aroma. These results underscore the significance of selecting high-quality raw materials and optimizing fermentation conditions to enhance the sensory attributes of fermented donuts.

Abstract

This study focuses on the importance of zinc (Zn) as an essential micronutrient in the health of toddlers, especially in children under five years of age. Zinc plays a role in repairing bone tissue and function, and zinc deficiency can lead to stunted growth and potential stunting in toddlers. To address this, this study examines the effects of providing additional food based on Moringa oleifera leaves and seawater fish to toddlers with stunting. The study was conducted on 30 toddlers with stunting and severe stunting nutritional status For 30 days, the toddlers were given additional food based on Moringa leaves and seawater fish. The results of the study showed that after the intervention, blood zinc levels and average height of toddlers increased. There was also a significant relationship between zinc levels and toddler height, indicating that increased zinc levels are closely related to increased height. In conclusion, the provision of additional food based on moringa leaves and sea fish has a positive impact on zinc levels and height of stunted toddlers at the Sedan Health Center, Rembang Regency.
