Abstract

Telur ayam merupakan bahan pangan hewani yang banyak dikonsumsi karena nilai gizi tinggi dan harga terjangkau. Namun, potensi kontaminasi mikroorganisme patogen seperti Salmonella sp. dan koliform pada telur menjadi perhatian utama dalam keamanan pangan. Penelitian ini bertujuan mengevaluasi kualitas mikrobiologis telur yang dijual di Pasar Tamiang Layang, Kabupaten Barito Timur, menggunakan parameter Total Plate Count (TPC), koliform, dan keberadaan Salmonella sp. Sebanyak 25 butir telur dari lima pedagang diuji di Laboratorium Kesehatan Hewan dan Kesehatan Masyarakat Veteriner, Kalimantan Tengah. Pengujian TPC dan koliform mengikuti metode SNI 2897:2008, sedangkan Salmonella sp. diuji menggunakan Kit Compact Dry SL. Hasil menunjukkan rata-rata TPC <1,0 × 10² CFU/gram dan koliform <3,6 CFU/gram, sesuai standar SNI 3926:2008, mengindikasikan bahwa telur berada dalam kondisi higienis selama distribusi dan penyimpanan. Semua sampel negatif terhadap Salmonella sp., mencerminkan praktik penanganan yang baik sudah dilakukan oleh para pedagang telur sehingga rendah dari potensi risiko terhadap penyakit bawaan makanan.

Abstract

The study aimed to analyze the effects of different feed commercials, the level of acidifier, and their interaction on carcass weight, pH of breast meat, protein, fat, and cholesterol content of broiler chickens. A total of 160 broiler chickens (21 day old, mixed of male and female) were randomly allocated to 8 groups with 4 replicates per group, and 5 chickens per replicate. Research methods using a Completely Randomized Design with a 2x4 factorial pattern involving 2 types of commercial diets (Diet A and Diet B), and 3 levels (L) of acidifier (0%, 0,5%, 1%, and 1,5%). The carcass and protein, fat, and cholesterol of breast meat were analyzed on day 35. The results showed, with the increase of acidifier level, the fat and cholesterol content significantly decreased (P<0.05), reaching the lowest value in the levels of acidifier of 1 and 1,5%. Carcass weight and protein content of breast meat were not affected by diets and the level of acidifier. Diets and the interaction between diets and the level of acidifier had no significant effect on all of the parameters measured. In conclusion, the low fat, and low cholesterol content can be obtained when the acidifier level is between 1 and 1,5% regardless of the type of commercial diets.

Abstract

Kepadatan kandang merupakan salah satu faktor manajerial yang secara langsung mempengaruhi performa, kesejahteraan, dan parameter fisiologis ayam broiler. Sistem Closed House menawarkan kontrol lingkungan yang optimal sehingga memungkinkan penerapan kepadatan tinggi tanpa mengorbankan kesehatan ayam. Meskipun demikian, batasan kepadatan optimal yang tidak berdampak negatif terhadap kondisi hematologis ayam broiler masih menjadi perdebatan. Penelitian ini bertujuan untuk mengkaji pengaruh tingkat kepadatan kandang terhadap jumlah eritrosit, kadar hemoglobin, dan nilai hematokrit ayam broiler strain Ross dalam sistem pemeliharaan Closed House. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan tiga perlakuan kepadatan yaitu 8, 10, dan 12 ekor/m²; masing-masing terdiri atas lima ulangan. Data dianalisis dengan metode analisis ragam (ANOVA) dan dilanjutkan dengan uji Duncan apabila terdapat perbedaan nyata. Hasil penelitian menunjukkan bahwa terdapat pengaruh yang tidak signifikan (P>0,05) dari tingkat kepadatan terhadap ketiga parameter hematologi yang diamati. Temuan ini menunjukkan bahwa ayam broiler mampu beradaptasi dengan rentang kepadatan 8–12 ekor/m² tanpa mengalami gangguan fisiologis yang berarti. Faktor pengelolaan lingkungan dalam sistem Closed House berperan krusial dalam mempertahankan stabilitas hematologis ayam. Oleh karena itu, dapat disimpulkan bahwa penerapan kepadatan kandang 8–12 ekor/m² pada sistem Closed House masih berada dalam batas aman dan tidak memengaruhi status hematologi ayam broiler strain Ross.

Abstract

The trend that occurred during the pandemic persisted after the Covid-19 pandemic where many people kept cats. The cat population has increased after the pandemic. Cat owners have returned to their previous activities and this condition affects their cat care practices after the pandemi. Purpose of this study was to describe the correlation between the incidence of viral infections and cat husbandry practices after the Covid-19 pandemi. This study used medical records of cat patients who came to Citrapet and Vet with viral diagnoses and 100 cat owner respondents using structured questionnaires. Cases of viral infections that occurred at Citrapet and Vet were included in the small category of 179 cases with a percentage of 0.033%. The cause of this small category of viral infection cases is the cat maintenance practices carried out by cat owners in Citrapet and vet. Parameters that are the reference include; vaccination, maintenance methods, administration of antiparasitic drugs, and medical checkup. Results of the respondents show that almost all cat owners in Citrapet and Vet understand how to perform cat maintenance practices properly and correctly. One of the parameters as a reference, namely vaccination, showed results with 88% of cats coming to Citrapet and Vet being vaccinated. This shows that vaccination can reduce the incidence of viral infections. Statistical calculations showed a significant correlation between cat husbandry practices and the incidence of viral infections in post-pandemi pet cats.

Abstract

Antibiotics such as tetracycline in the livestock industry face severe restrictions due to increasing antimicrobial resistance. Tibicos fermentation, as a natural probiotic, has the possibility to be an adequate and safe alternative for modulating gut microbiota. The study aimed to compare the effectiveness of tibicos fermentation and tetracycline in modulating the population of three major bacteria (Escherichia coli, Lactobacillus, and Salmonella spp.) in the ileum of broiler chickens. Ninety Indian River strain broilers were divided into three treatments with three replicates (n=10 per replicate): control with pure water (KN), 45 ppm tetracycline (KP), and 5% tibicos fermentation (FT). Treatments were given through drinking water ad libitum from 8 to 35 days of age. Bacterial populations were analyzed using the Total Plate Count (TPC) method on ileal samples aged 35 days. Data analysis used a multivariate approach including Bray-Curtis dissimilarity, PERMANOVA, Principal Coordinates Analysis (PCoA), and Similarity of Percentage Analysis (SIMPER). Bray-Curtis dissimilarity analysis showed moderate differences in microbiota composition between treatments with values of 0,064854 (FT vs KN), 0,069687 (FT vs KP), and 0,07451 (KN vs KP). SIMPER analysis identified E. coli as the primary contributor to differences between treatments, with contributions of 39,50% (KP vs KN, p=0,005), 65,70% (KP vs FT, p=0,001), and 41,10% (KN vs FT, p=0,001). Principal Coordinates Analysis showed apparent clustering between treatments, with tibicos fermentation producing microbiota profiles that differed from control and tetracycline. Tibicos fermentation showed comparable effectiveness to tetracycline in modulating ileal bacterial composition, particularly in controlling pathogenic populations while maintaining Lactobacillus stability.

Abstract

Dendeng is processed through salting and drying to extend its shelf life and develop a distinctive flavor. Synthetic nitrite in its processing plays a vital role in maintaining the red color and texture, inhibiting the growth of pathogenic microbes. However, the health risks due to the formation of carcinogenic nitrosamine compounds from the reaction of nitrite with amines in meat drive the search for safer natural alternatives. Celery leaves (Apium graveolens) are a potential candidate due to their natural nitrate content (1,496 ppm) that can be converted into nitrite through the activity of the enzyme nitrate reductase. Celery leaves also contain antioxidants that support product quality during storage. This study aims to evaluate the effectiveness of celery leaves as a substitute for synthetic nitrites in beef jerky, particularly in terms of sensory acceptance. This study is expected to serve as a foundation for developing healthier, more natural processed meat products and reducing dependence on synthetic chemicals. This study uses non-parametric analysis, specifically the Kruskal-Wallis Hedonic test followed by the Mann-Whitney test in a spider web model with four treatments of celery leaves, including P0 (control/without celery leaves), P1 (16g celery leaves), P2 (32g celery leaves), and P3 (48g celery leaves). The analysis results show that using celery leaves as a natural curing agent significantly affects color, tenderness, and flavor. The addition of celery leaves up to 16 grams has the best effect.

Abstract

Tujuan penelitian ini untuk mengetahui efektivitas pemanfaatan acidifier asal belimbing wuluh (Averrhoa bilimbi L.) terhadap peningkatan kinerja organ pencernaan ayam broiler. Penelitian menggunakan 96 ekor ayam broiler umur sehari (Day Old Chick / DOC) dan dirancang menggunakan Rancangan Acak Lengkap (RAL) dengan 4 perlakuan dan 4 ulangan. Perlakuan yang diberikan meliputi: P0 (kontrol tanpa perlakuan), P1 berupa campuran 950 ml air minum + 50 ml belimbing wuluh, P2 berupa campuran 900 ml air minum + 100 ml belimbing wuluh, dan P3 berupa campuran 850 ml air minum + 150 ml belimbing wuluh. Variabel yang diamati dalam penelitian ini meliputi bobot hati, bobot pankreas, bobot limpa, dan bobot gizzard. Hasil analisis statistik menunjukan pemanfaatan acidifier berbahan dasar belimbing wulluh (Averrhoa bilimbi L.) dalam air minum mempengaruhi bobot hati, bobot limfa, dan bobot gizzard (P<0.05), tetapi tidak mempengaruhi bobot pankreas (P>0.05). Perlakuan P3 menghasilkan bobot hati, bobot limfa, bobot pankreas dan bobot gizzard tertinggi yaitu masing-masing sebesar 68,77 g/ekor, 1,68 g/ekor, 2,12 g/ekor dan 62,46 g/ekor. Penambahan ekstrak belimbing wuluh (Averrhoa bilimbi L.) yang digunakan sebagai acidifier dalam air minum dapat meningkatkan organ pencernaan ayam broiler seperti bobot hati, bobot limfa, dan bobot gizzard.

Abstract

Gastrointestinal nematodes are one of the common groups of parasites in ruminants, especially goats. These parasites are also affected livestock productivity. This study aims to identify gastrointestinal nematode parasites and prevalence of infection to kambing kacang in Tiakur, Moa District, Southwest Maluku. The samples in this study are fecal collected from 50 kacang goats that are raised semi-intensively by two local farms in Tiakur. The examination of parasites eggs was performed using the direct native method and the test results were analyzed descriptively. The results of this study reveal the prevalence of 80% gastrointestinal parasite in farm 1 and 92% in farm 2. Parasite species that are infected kacang goats in two local farms in Tiakur are Haemonchus contortus, Trichuris sp., and Trichostrongylus sp. Lack of knowledge from the farmers about the implementation of biosecurity and maintenance management has a significant impact on gastrointestinal parasite infections in goats. This study also supports the local farmers to increase and improve the knowledge and increase deworming schedules to prevent the animal from parasites infections.
