Abstract

Penelitian ini bertujuan untuk menganalisis perbandingan efektivitas madu, air kelapa, dan metil testosteron dalam proses maskulinisasi ikan nila (Oreochromis niloticus). Metode yang digunakan adalah eksperimen dengan empat perlakuan, yaitu kontrol (P1), metil testosteron (P2), air kelapa (P3), dan madu (P4). Parameter yang diamati meliputi persentase maskulinisasi, survival rate (SR), berat mutlak, specific growth rate (SGR), serta kualitas air. Hasil penelitian menunjukkan bahwa perlakuan metil testosteron menghasilkan tingkat maskulinisasi tertinggi sebesar 90,29% ± 3,97, diikuti oleh madu sebesar 70,79% ± 13,34, air kelapa 49,29% ± 8,61, dan kontrol 35,97% ± 8,64. Nilai SR berkisar antara 68–78% dan masih tergolong baik. Pertumbuhan ikan yang diamati melalui berat mutlak dan SGR tidak menunjukkan perbedaan nyata antar perlakuan, meskipun nilai tertinggi cenderung diperoleh pada perlakuan madu. Parameter kualitas air selama penelitian berada dalam kisaran optimal untuk pemeliharaan ikan nila. Berdasarkan hasil tersebut, metil testosteron merupakan perlakuan paling efektif dalam maskulinisasi, sedangkan madu berpotensi sebagai alternatif bahan alami yang lebih ramah lingkungan.

Abstract

This study evaluated the effect of Alkali-Treated Carrageenophyte (ATC) derived from Kappaphycus alvarezii on the quality characteristics of kekian, a traditional surimi-based product. ATC was incorporated at four different concentrations (0%, 5%, 10%, and 15%) and analyzed based on proximate composition, sensory acceptance, texture properties, and microbiological quality. The results showed that ATC significantly influenced moisture content and texture, while its effect on ash, fat, protein, and carbohydrate content was not statistically significant. Increasing ATC concentration reduced moisture content, indicating enhanced water-binding capacity of carrageenan, while ash and carbohydrate content increased due to mineral and polysaccharide contributions. Sensory evaluation revealed that the addition of 5% ATC resulted in the highest overall acceptance in terms of appearance, aroma, taste, and texture. Texture analysis (folding and bite tests) confirmed that this formulation produced the optimal gel structure. Higher concentrations (10% and 15%) led to decreased sensory quality, likely due to excessive gel formation, darker color, and stronger seaweed aroma. Microbiological analysis indicated that all treatments met food safety standards, with total plate counts below the maximum allowable limit. Overall, ATC from Kappaphycus alvarezii demonstrates strong potential as a functional food ingredient for improving the texture and consumer acceptance of surimi-based products, with an optimal concentration of 5%.

Abstract

This study evaluated the effect of polyvinyl chloride (PVC) microplastic exposure through broodstock rearing water on the fertilization rate (FR), hatching rate (HR), and survival rate (SR) of zebrafish (Danio rerio). Fish were exposed for 30 days in a completely randomized design with four PVC doses, namely 0, 5, 10, and 15 mg/L, each with three replicates. After exposure, broodstock were spawned to obtain FR and HR data, whereas SR was calculated during the rearing period. One-way ANOVA showed that PVC dose significantly affected FR (F(3,8)=53.48; P<0.001), HR (F(3,8)=70.44; P<0.001), and SR (F(3,8)=9.33; P=0.005). Duncan’s multiple range test separated all FR and HR treatments into different homogeneous subsets, indicating a clear dose-related decline. FR decreased from 90.83% in the control to 68.43% at 15 mg/L, whereas HR declined from 94.77% to 75.17%. SR showed a more moderate pattern: the control, 5 mg/L, and 10 mg/L remained in the same homogeneous subset, while 15 mg/L formed a distinct subset with a mean of 81.67%. Water quality remained relatively stable during the experiment, with temperature at 29.1-29.3 °C, pH at 8.29-8.49, and dissolved oxygen at 7.0-7.5 mg/L. These findings indicate that, under the present experimental conditions, early reproductive endpoints were more sensitive to PVC microplastic exposure than survival.

Abstract

Growing public awareness of health, animal welfare, and environmental sustainability, lead to significant increase in demand for healthy and sustainable nutritious food segment. Plant-based meat analog (PBMA) has been development as alternative food ingredients that are in accordance with the current demands of the world community. However, currently raw materials of PBMA is still dominated from terrestrial plants which have limitations in terms of sustainability, land requirements, and specific nutritional profiles. These circumstances highlight the urgent need to diversify the raw material of PBMA and require further investigation. This paper focuses on potential and challenge of fishery resources as meat analog’s raw material alternative. Fishery resources emerge as promising alternative source offering sustainability and high quality nutrient values. Microalgae are a promising source, rich in protein, essential fatty acids, providing vitamins, minerals, and offering various bioactive compounds with health benefits and potentially improve the quality of meat analog. Hydrocolloids derived from algae such as carrageenan and alginate act as thickening, gelling, and stabilizing agents which improve the overall structure and texture of PBMA. Amino acid and natural pigment in algae enhance sensory acceptance of PBMA by masking undesirable taste and mimicking meat like color. This review will be helpful in highlighting the potential fishery resources in attempt to diversify material sources for PBMA.

Abstract

This study aims to assess the quality of frozen loin center cut products in relation to the Indonesian National Standard (SNI) and export requirements, considering the increasing demand for quality and food safety in international markets. A descriptive quantitative approach was employed through direct observation, interviews, and analysis of primary and secondary data collected from a fish processing industry in Bali. Quality evaluation was conducted based on organoleptic, chemical, and microbiological parameters. The results indicate that the production process was carried out systematically by implementing proper fish handling practices, including a consistent cold chain system and appropriate stock management. Organoleptic assessment showed that the product had excellent quality with a high level of freshness. Chemical analysis revealed low histamine levels in both raw materials and final products, indicating effective temperature control and handling during processing. Microbiological testing demonstrated that total plate counts and pathogenic bacteria such as Escherichia coli and Salmonella spp. were within acceptable limits, confirming good sanitation and hygiene practices. Overall, the evaluated parameters comply with SNI and export standards, indicating that the product is safe and suitable for international markets. However, histamine content and microbiological contamination remain critical factors that require strict control to ensure consistent product quality. This study highlights the importance of maintaining cold chain integrity, sanitation, and quality control systems to enhance competitiveness in the global seafood market.

Abstract

Intensive aquaculture of Nile tilapia (Oreochromis niloticus) frequently faces water quality deterioration problems due to ammonia accumulation from feed residues and fish metabolism. This study aimed to determine the effect and optimal dose of Nitrogen Cyclic Bacteria (NCB) probiotic on ammonia accumulation in Nile tilapia aquaculture. An experimental method with a Completely Randomized Design (CRD) consisting of 5 treatments and 3 replications was used, namely control (without probiotic) and probiotic addition at doses of 0.5, 1, 1.5, and 2 ml/L for 40 days. Parameters observed included growth, survival rate, and water quality, particularly ammonia. The results showed that probiotic addition significantly affected (p<0.05) fish growth, with the best dose at treatment D (1.5 ml/L), producing the highest absolute growth of 6.67 ± 0.32 g, relative growth of 46.70%, and daily specific growth rate of 0.96%/day. Survival rate was not significantly different among treatments (p>0.05), but tended to be higher in probiotic treatments compared to control. Ammonia content was not significantly different among treatments, but all values remained within the safe range (<0.1 ppm), with lower tendency at the highest dose (treatment E, 0.055 ppm). It was concluded that NCB probiotic can improve Nile tilapia growth and help maintain water quality, although its effect on ammonia reduction was not statistically significant.

Abstract

Processed fishery products, such as boneless milkfish, are increasingly in demand among consumers due to their convenience and nutritional value. This study aims to analyze consumer perceptions of boneless milkfish products in Lamongan Regency and to measure the level of customer satisfaction using the Importance–Performance Analysis (IPA) and Customer Satisfaction Index (CSI) methods. The research employed a quantitative approach, utilizing an online questionnaire distributed to 115 respondents who had previously consumed boneless milkfish products. The results of the IPA indicate that attributes such as taste, price, packaging, presentation, stock availability, as well as safety and consumer trust, fall into Quadrant I (high importance–low performance), signifying that these aspects require immediate improvement. Attributes including texture and overall product quality are categorized in Quadrant II (high importance–high performance), indicating that their performance should be maintained. Meanwhile, accessibility and ease of transaction are placed in Quadrant III (low importance–low performance), suggesting lower priority for improvement, whereas product size is categorized in Quadrant IV (low importance–high performance), indicating potential overinvestment. Furthermore, the Customer Satisfaction Index (CSI) value was calculated at 79.76%, demonstrating that consumers are generally satisfied with boneless milkfish products. In conclusion, several key attributes require strategic improvements by business actors in order to enhance overall consumer satisfaction and competitiveness in the market.

Abstract

Angelfish (Pterophyllum scalare) is a freshwater ornamental fish with high economic value and intensive trade, which increases its susceptibility to infectious diseases. This study reports the first documented case of co-infection by Pseudomonas putida and Staphylococcus epidermidis in angelfish cultured in an aquarium in South Kalimantan, Indonesia. Mortality was recorded in September 2022 and occurred exclusively among angelfish exhibiting lethargy, darkened body coloration, abnormal swimming, and bottom-remaining behavior. Five moribund fish were subjected to clinical examination, post-mortem analysis, bacterial isolation, Gram staining, VITEK 2 Compact identification, and histopathological evaluation of eye and brain tissues. Bacterial isolation revealed P. putida from liver samples and S. epidermidis from blood samples. Histopathological findings showed severe cerebellar lesions, including spongiosis, Purkinje cell necrosis, granular layer degeneration, hemorrhage, and bacterial infiltration. Ocular lesions were characterized by cataract formation and bacterial presence within the lens. These findings indicate a systemic bacterial infection with central nervous system involvement. The results suggest that P. putida is the primary pathogen, while S. epidermidis acts as an opportunistic co-infecting bacterium. This report emphasizes the importance of comprehensive diagnostic approaches for mixed bacterial infections in ornamental fish to support effective disease management in aquaculture.

Abstract

Red tilapia is a fishery commodity with high demand and relatively rapid growth. To meet this demand, productivity must be increased by focusing on growth performance and colour. The use of feed made from local resources is thought to improve these aspects. Fe’i banana is a local resource of the Maluku region, characterised by its upright bunch, reddish-orange peel when ripe, and high carotenoid content. To date, fe’i banana peel has never been utilised as a feed ingredient in sustainable aquaculture efforts. The objective of this study was to analyse the growth performance and colour of red tilapia using feed on fe’i banana peel flour. The study employed a completely randomised design with treatments involving different concentrations of fe’i banana peel flour in the feed, comprising 0%, 10%, 20% and 30%. The stages of this study included feed preparation, analysis of the feed’s proximate and antioxidant content, fish collection and rearing, growth measurement, and analysis of the test fish’s colour. The data obtained were analysed using ANOVA in SPSS 22.0. The results showed that the highest protein, fat and carbohydrate content were found in the 10% treatment, whilst the highest fibre content was found in the 30% treatment. The highest body size and weight resulting from feed administration were found in the 10% treatment, with average total length, standard length, body width and body weight of 9.269±0.14 cm; 7.280±0.15 cm; 2.761±0.09 cm; 10.93±0.06 g. Fish in this treatment also exhibited a predominantly red colour. It is hoped that this study will contribute in the development of local materials as feed to help accelerate growth mechanisms and colour quality in red tilapia.
