Abstract

Guava juice is one of the healthiest drinks and can be used as a healthy snack. However, people tend to wait for a certain period of time to consume juice. This can affect the levels of vitamin C in it. The purpose of this study was to identify the effect of temperature and storage time on vitamin C levels in guava juice (Psidium guajava L.). The research design was a factorial randomized block design (RAK) with a 2 x 3 pattern, which consisted of two factors, namely: The influence of storage temperaturewhich consisted of 2 levels, namely cold temperature (6.6 -10°C) and roomtemperature (28 -32 °C) and the storage time factor consisted of 3 levels, namely 30 minutes, 60 minutes, and 90 minutes so that the total treatment in this study amounted to 6 treatments. Analysis of vitamin C in this study used the UV-VIS spectrophotometry method. Each treatment will be repeated measurements of vitamin C levels 3 times. The data that has been obtained were analyzed using the Friedmann test with the MannWhitney advanced test (CI = 95%). The results showed that there was an interaction between the combination of temperature and storage time which significantly affected the decrease in vitamin C levels in guava juice (Psidium guajava L.). The lowest vitamin C content in guava juice (Psidium guajava L.) was found in the L2S2 treatment, namely storage at room temperature with a storage time of 60 minutes. In waiting for consumption, people should store fruit juice in the refrigerator so that the vitamins they get are more optimal.Keywords: Vitamin C, Fruit Juice, Guava, Temperature, Storage Time, Spectrophotometry.

Abstract

One of the causes of improper nutritional intake of athletes is that athletes have not received education/knowledge about nutrition in sport performance for athletes. Inadequate nutritional intake of athletes is one of the triggers for fatigue and risk of injury. This activity aims to increase to knowledge and attitudes of athletes regarding proper nutritional intake and proper handling of injuries in athletes. Community service activities are carried outthrough education and simulation of food and drink selection in handling injuries to athletes, as many as 22 PS Sleman Development Center athletes who are members of the U-16 groups on 7 July 2022 at Macanan Squarem Prambanan, Yogyakarta . Community service activities are carried out in several stages in their implementation, starting from preliminaru studies,coordination with coaches, making materials, simulating food dan drink selection in handling athlete’s injuries. The increase in knowledge was measured from the average value of the pretest before being given educational on question number 2, which was 72,64 and after being given education it increased to 81,72. The increase in knowledge was measuredfrom the average value of the pretest before being given educational on question number 5, which was 90,8 and after being given education it increased to 95,34. The maximun posttest score at the end of session after being given education is 80 with a minimum score of 20. Nutrition education activities for athletes are expected to be carried out on an ongoing basisas an effort to assist appropriate nutritional interventions for athletes, especially when athletes experience injuries. Abstract

Traditionally, cardamom seed has been widely used by the community as herbal medicine. Cardamom seed has been phenomenologically proven to cure several types of diseases. This property is determined by the type of compounds contained in cardamon seed. The purpose of this research isidentification of the types of bioactive compounds contained in cardamom seed. These bioactive compounds are extracted using solvents: ethanol, methanol and water. Then, these bioactive compounds were identified using gas chromatography-mass spectroscopy (GC-MS) technique. The results obtained indicated that there were 13 types of compounds produced from ethanol extract, 6 types of compounds from methanol extract, and 2 types of compounds from aqueous extracts. From all these compounds, 1,8-cineole and alpha-terpineol compounds are the two most dominantsequentially. Referring to these results and the literature search that has been done, cardamom seed is potential to be developed in the future as herbal medicine to treat diseases, such as: diarrhea, cardiovascular disease, digestive disease, Alzheimer's, tumors, inflammation, cancer, pneumonia, neurodegenerative and respiratory diseases.Keywords : Compound identification, extract, cardamom seed, cineole, terpineol.

Abstract

Background: Have a good nutritional status, ideal body fat percentage and normal hemoglobin levels are needed for maintain physical endurance, physical fitness and help to improve the performance of football athletes. When the nutritional status and body fat levels are not ideal, it will interfere athlete mobility. Low hemoglobin levels could disrupt the metabolism of energy that can make an athlete have downgrade quality.  Purpose: Know the relationship of nutritional status, body fat percentage, and hemoglobinlevels on the quality of VO2 max student levels from Sport Supaya Sehat (SSS) football school Semarang.  Methods: This research was conducted with a cross sectional design at Sport Supaya Sehat (SSS) football school Semarang. All population is a sample which is has 56 respondent. Themeasured data are nutritional status was assessed with body mass index by age, body fat percentage was assessed using Bioelectrical Impedance Analysis, hemoglobin levels was measured using Easytouch GCHb tools and cardiorespiratory endurance was assessed using Yo-Yo test method. Bivariate analysis used Gamma test. Result: The majority characteristics of respondents are have a good nutritional status(69,6%), moderate fat percentages(62,5%), normal hemoglobin levels(71,4%), and good quality of VO2 max levels(55,4%). Bivariate analitical result are nutritional status and body fat percentage has no significant relationship with VO2 max quality levels (p>0,05). Hemoglobin level has significant relationship with VO2 max quality levels (p<0,05). Conclusion: There is a significant relationship between hemoglobin levels with VO2 max quality levels.Key words: Nutritional status; body fat percentage; hemoglobin; VO2 max

Abstract

The prevalence of anemia in adolescent girls aged 15-24 years is 32%, the impact is lack of concentration in receiving lessons at school, often not attending school, stunted physical growth, decreased immunity, susceptible to infection, and reduced productivity. The purpose of this study was to analyze the consumption of iron inhibitors and diluents as a risk factor for the incidence of anemia in adolescent girls in the city of Semarang. The type of research is observation with case control design, hemoglobin level examination using cyanmethemoglobin method, consumption of enhancers and enhancers using Semi Quantitative Food Frequency Questinore. Analysis using Chi Square. The prevalence of anemia in Semarang City is 29.59%. There is relathionship inhibitor consumption with the incident of anemia   in adolescent girls (p= 0.004 ), and inhobitors as a risk factor for anemia in adolescent girls (OR = 4.94).  Enhancers were not retathionship with the incident of anemia   in adolescent and not a risk ( p = 0,18, OR= 0,49). Relathionship inhibitor with anemia and .Enhancers were not a risk factor for anemia in adolescent girls.  Improvement of food consumption for adolescent girls by reducing consumption of inhibitors. Abstract

Background: Diabetes mellitus is a metabolic disease due to problems in insulin production. Less insulin produced by the pancreas results in an imbalance of sugar in the blood. Diabetes mellitus is one of the serious diseases that we must prioritize, especially for the prevention of diabetes mellitus, especially to prevent it, one of which is by conducting education using innovative media. Objectives: The purpose of this study was to determine how effective the dissemination of information about diabetes mellitus through the media of posters, animated videos and podcas. Method: This type of study is called a quasi-experimental pretest-posttest. The study sample was 45 people. By using a questionnaire consisting of 20 questions. Test analysis using paired sample t-test.  Results:This study showed that respondents' knowledge before and after education using poster media, animated videos and podcasts increased with each p-value of 0.001.  Conclusion: posters, animated videos, and podcasts effectively increase adolescents' knowledge about diabetes mellitus.   Keyword : Diabetes Mellitus, Education, Podcast, Poster, Video Animation

Abstract

Background : Hypertension is a blood pressure disease, where there is an increase in systolic (≥140 mmHg) and/or diastolic (≥ 90 mmHg) blood pressure quickly or slowly. Objective : This study aims to determine the relationship between potassium intake and the incidence of hypertension in inangkabau ethnic women. Methods : This research is a type of analytical research with a case control research design. The population in this study were all Minangkabau ethnic women who suffered from hypertension who went to the Air Padang Children's Health Center, with 114 samples that met the inclusion and exclusion criteria. Bivariate and univariate data analysis is presented in the form of frequency distribution and percentage, and the data is processed using the SPSS program. Result : This study showed that as many as 112 people (98.2%) of Minangkabau ethnic women with less potassium intake, and 2 people (1.8%) with adequate potassium intake. The average potassium intake in the hypertensive women group was 855.0146 mg, while the nonhypertensive women group was 1699.5777 mg. Hypertensive women have an average systolic blood pressure of 151.44, while a diastolic blood pressure of 92.09. Women without hypertension had an average systolic blood pressure of 111.49, while a diastolic blood pressure of 76.93. Less potassium intake was found in the hypertensive women group, namely 57 people (100%) compared to the nonhypertensive women group, namely 55 people (96.5%). Conclusion : There is no significant relationship between potassium intake and blood pressure in Minangkabau ethnic women.  Keywords: Hypertension, Potassium, Minangkabau

Abstract

Adolescence is a unique period in terms of behavior to meet nutritional needs. The nutritional status of the adolescent is interfered with by sociodemographic variables. This study aims to analyze the relationship between mother’s nutritional knowledge, income, and household food security with the nutritional status of students at MTs Muhammadiyah 02 Pemalang. A cross-sectional study was conducted on 76 students selected by systematic random sampling. The respondents of this study are the mother and the family. Data on mothers’ nutrition knowledge, family income, and food security were collected using questionnaires. The relationship of the variables was analyzed by Pearson correlation. The study found that 22.4% of students are underweight, and 11.8% of students are overweight. 52.6% of respondents haveadequate nutrition knowledge, 40.8% of respondents' families have low income, and 57.9% are food insecure. There is no relationship between mothers’ nutritional knowledge and family food security (p =0.099), there is a relationship between mothers’ nutritional knowledge and student nutritional status (p =0.014), there is a relationship between family income and student nutritional status (p = 0.000), there is no relationship between food security families with the nutritional status of students (p = 0,888). Mothers’ nutritional knowledge and family income are related to the nutritional status of the student.Keyword : Food security, income, mother’s nutritional knowledge, nutritional status

Abstract

Background; The health of the digestive tract is very important for maintaining the body's immune system, in maintaining the health of the digestive tract there are two components of probiotics and prebiotics are needed. Probiotics are good bacteria that are beneficial for the health of the digestive tract. Probiotics can be obtained through food or drink that has gone through a fermentation process using gram-positive bacteria. Probiotics produce bacteriocins and several compounds needed by the body such as lactic acid, acetic acid, hydrogen peroxide, lactoperoxidase and lipoperoxide, pyridoxine, niacin, folic acid, cobalamin and biotin which are useful for boosting the body's immune system. Objectives; The purpose of this study was to make a probiotic drink with fruit-based ingredients (guava, lemon, melon, beet) as a probiotic product that can be an alternative health drink. Material and Method; This study used an experimental design with a completely randomized design, where there were three formulas that had differences in the addition of sugar (F1: 10% sugar, F2: 20% and F3: 30%). The materials used in this study included: Guava, Lemon, Melon,Beets, Sugar and used the Lactobacillus plantarum bacterial starter. The tests carried out included: organoleptic test, total plate count test and acidity test Results; the organoleptic test results, it was found that Formula 3 was the most preferred with organoleptic qualities: slightly sour, slightly muddy and very red in color. The red color comes from beets. The acidity level of each formula includes: F1 (3.43), F2 (3.39), F3 (3.34). The results of the total plate number test showed that the average total plate number of the product was 1.7 x 10 8/CFU/ml.Keywords: Beets, Guava, Healthy drink, Lemon, Melon, Probiotics

Abstract

Background: Physical fitness is a person ability to carry out physical activities. Physical fitness is very important for athletes to improve athlete performance and athlete quality. Sports with aerobic and anaerobic systems require cardiovascular endurance (VO2 max). Physical fitness will run well with adequate energy and macronutrient intake.  Objectives: This study aims to determine the relationship between energy intake, macronutrients and nutritional status with the physical fitness (VO2 Max) of athletes in gaming sports at BPPLOP Central Java.  Method: The research was conducted using analytical observation with a cross sectional design. The research sample was 47 people using a total sampling technique. Data on athletesmacronutrient intake uses the 3x24 hour food recall method, physical fitness (VO2 max) measurements use the bleep test. Data analysis was carried out using the Pearson Correlation Test.  Results: The results of the Pearson correlation test showed that there was no significant relationship between energy intake (p=0.921 R=-0.015), protein (p=0.276 R=-0.162), fat (p=0.778 R=-0.042), and carbohydrates (p= 0.923 R=0.015) on athletes' physical fitness (VO2 max).  Conclusion: It was found that there was a significant relationship between nutritional status (p=0.021 R=-0.335) and physical fitness (VO2 max) of game sports athletes at BPPLOP CentralJava.Key words : carbohydrates, energy, nutritional status, physical fitness (VO2 Max), protein
