Abstract

Stunting is a condition in which toddlers have a length or height that is less than their age. The purpose of this study was to determine the relationship between intake of protein,vitamin A, zinc, and iron with the incidence of stunting in children aged 1-3 years. The design used in this study is quantitative by using the Case Control approach. Subjectsinvolved in the study were 60 toddlers aged 1-3 years. 30 toddlers as the case group and 30toddlers as the control group at the North Raman Health Center, East Lampung Regency.Bivariate analysis in this study used the Chi Square Test.The results of the analysis using the Chi Square test showed that there was a relationshipbetween protein intake and the incidence of stunting (p = 0.000); there is a relationship betweenzinc intake and the incidence of stunting (p = 0.001); there is a relationship between BSI intakeand the incidence of stunting (p = 0.005). However, there was no relationship between vitamin Aintake and the incidence of stunting (p = 0.078). The conclusion of the research that the genesisof stunting was correlated to the intake of protein, zinc and iron but it was not correlated to theintake of vitamine A.Keywords: Stunting, Protein, Vitamin A, Zinc, and Iron

Abstract

The food is handled by individuals, thereby increasing the chances of food contaminationdue to improper handling. Deliberating or accidental contamination of food might endangerthe health. The purpose of this study was to evaluate the food safety knowledge, attitudes,and practices among housewives. The study was conducted using quasi experiment with aone group pretest posttest group design. The research respondents involved 41 housewiveswho live in RT 4 RW 1, Patemon Village, Gunungpati District, Semarang City. Therespondent filled questionnaire and have trained about sanitation, hygienic and how tomanage the food. The questionnaire was structure into distinctive parts to collectinformation on knowledge on food safety, attitudes towards food safety and food hygienepractices. In our study, the food-handlers were knowledgeable about hygienic practices,cleaning and sanitation procedures, such as hand washing, using gloves and proper cleaningof the utensils. In generally, the housewives have satisfactory knowledge in food safety.Key words: food, behavior, hygiene, sanitation

Abstract

The prevalence of adolescents with obesity is 4.8%. Nutrition knowledge andadolescent attitudes are the factors that can affect obesity. Video plays a vital media forconveying nutrition-related information. This was  experimental with pre-posttest control group design. Subjects were 48 juniorhigh school students  divided into 2 groups randomly. The treatment group receiving nutritioneducation by video (n=24) and the control group using poster (n=24). A statistical analysis ofWilcoxon and paired t-test were used to analyze difference before and after treatmentrespectively, while the group different was analyzed using Mann Whitney and independent ttest.Theaverageknowledgescoreintreatmentgroupincreasedby17.29points(p=0,000)andin control group by 7.71 point (p=0.000) from baseline. The average attitude score intreatment group increased by 10.16 points (p=0.000) and in control group by 3.96 point(p=0.003) from baseline. A significant different in the score of knowledge between thetreatment and control group (p=0.015) was observed. The score of attitude between thetreatment and control group was also significantly different (p=0.012).  Nutrition education using video media may an effective approach to increaseknowledge and attitudes of obesity aspect in the adolescence.  Keywords: Obesity; Knowledge; Attitude; Video; adolescents

Abstract

Taro leaves (Colocasia esculenta L. Schoot) are widely used as vegetables and herbal medicines. In proving taro leaves as herbal medicine, taro leaves are changed in the form ofextract preparations. The choice of extraction method will affect the results of flavonoid levelsand antioxidant activity. Extraction methods that are widely used to extract taro leaves aremaceration and soxhletation. Maceration extraction method, the sample was immersed in 1000ml of ethanol and 1000 ml of n-hexane for 3 x 24 hours. Every 24 hours replaced with a newsolvent. Extracts were made by soxhletation method using ethanol as solvent and the other usingn-hexane as solvent. The material that has been submerged in petroleum ether is wrapped infilter paper and then tied with thread. Then it is put into the socket extractor. Furthermore, theflavonoid and antioxidant levels were tested. The highest flavonoid content in taro leaves wasobtained by maceration method with ethanol solvent, as much as 12.836 mg QE/g. The highestantioxidant activity was 91.812% by maceration method and n-hexane solvent. The macerationmethod with n-hexane solvent can obtain taro leaf extract which has high antioxidant activity. Abstract

Anemia is a health problem with little progress in its management, even thoughthe global prevalence of anemia is relatively high. Anemia due to iron deficiency affectsweight gain in children. Giving catfish oil to anemic rats was done to see the effect onHb levels and body weight.This research is a true experiment with a randomized pre-post-test design witha control group. Male Wistar rats were divided into four groups, namely K- (rats fedstandard), K+ (rats fed standard without iron), P1 (rats fed standard without iron,getting catfish oil 0.039 ml/day), P2 (rats fed standard without iron, supplemented withferrous sulfate 0.126 mg/day) for 14 days. Hb levels were measured before and aftertreatment using the ELISA method. The rats were weighed every day.Paired t-test was conducted to determine differences in Hb levels and changesin body weight before and after the intervention. In addition, the Anova test followedby Post Hoc Bonferroni was carried out to analyze the difference in effect on the fourgroups.There were significant differences in body weight changes before treatment and aftertreatment (p=0.00, p<0.05) on K-(13 gram ± 0.81), K+(5.5 gram ± 1.04), P1 (12 grams± 0.7), P2 (13 grams ± 0.63). In addition, the study showed a significant increase inHb levels before and after treatment (p=0.00, p<0.05) at P1(4.7 g/dL ± 0.76) andP2(5.13 g/dL ± 0.15 ), as well as a decrease in K- (0.09 g/dL ± 0.19) and K+ (0.37g/dL ± 0.18).There was an effect of giving catfish oil on Hb levels and changes in bodyweight, which increased significantly in iron deficiency anemia Wistar rats.Keyword: body weight, catfish oil, Hb levels iron deficiency anemia

Abstract

The high prevalence of anemia in pregnant women in the second and third trimesters increasesthe risk of complications during pregnancy and childbirth. Diet is one of the causes of anaemiain pregnant women. Therefore, the purpose of this study was to identify the level of adequacyof carbohydrates, protein, iron, and vitamin C as well as to determine the relationship betweendiet and the incidence of anemia in pregnant women in the second and third trimesters inSalatiga City. This research method uses a cross-sectional research design with the researchlocation at the Sidorejo Lor Health Center, Salatiga. Sampling using purposive samplingtechnique with the calculation of the minimum number of samples using the Slovin formula.The research instrument used was repeat recall 24h. Bivariate analysis test using Pearson'stest with normality test using Kolmogorov-Smirnov. The results showed that the level ofadequacy of energy, protein, vitamin C, and iron was not significantly related to hemoglobinlevels. In addition to the level of nutritional adequacy, other aspects such as the environmentand sosio-economic need to be reviewed further in the causes of anaemia during pregnancy.Keyword: Anaemia, Dietary, Nutrition Adequacy, Pregnancy

Abstract

Many young athletes have undernourished nutritional status, lack of knowledge, and improperselection of nutritional intake. It has an impact on the success of athletes when conducting games.One of the contributing factors is the suboptimal use of educational media for athletes.Educational media, Cakram is one of the alternative media that needs to be developed and appliedto young athletes. Cakram Asupan Makan dan Cairan Atlet (CAMCA) is an educational mediainnovation that makes it easier for athletes. This study aims to analyze the level of mediaacceptance of Cakram Asupan Makan dan Cairan Atlet (CAMCA) conducted on experts in thefield of Sports Nutrition as a solution to athletes' health independence, especially optimizing thenutritional status of adolescent athletes. This research was a quantitative descriptive study. Thisresearch began with the manufacture and development of cakram by looking at the level ofacceptance of Cakram Asupan Makan dan Cairan Atlet (CAMCA) media by experts in the field ofSports Nutrition. Data were analyzed descriptively. Nutrition education media in the form ofCakram Asupan Makan dan Cairan Atlet (CAMCA) is very interesting media to be developed andapplied to young athletes related to the fulfillment of nutritional intake.Keywords: young athletes; cakram gizi; educational media; athlete performance

Abstract

Malnutrition in older people is brought on by a number of circumstances, including dentalissues that restrict food intake. Due to the strong connection between this issue and thenutritional status of the old, it requires careful consideration. As a result, new food productsthat are simple for the elderly to consume but provide a balanced diet are required. This studyis an experimental one conducted in a lab setting with three different treatments and acompletely randomized design. The Food Technology Science Laboratory of the NutritionDepartment of the Health Polytechnic of the Ministry of Health Palembang prepared the SoyaBustul healthy drink and conducted organoleptic tests there, while the Proximate Analysis testwas conducted at the Food Technology Laboratory, Sriwijaya University, Palembang. Thepanelists enjoyed the taste, aroma, texture, and color of the F1 treatment with the addition of25 grams of rice bran, 30 grams of snakehead fish meal, and 35 grams of soybean flour,according to the results of the organoleptic test using the hedonic scale. The overallacceptability of Soya Bustul is more despised the more snakehead fish meal, rice bran, andsoybean flour are added. The overall look of color, scent, taste, and texture has an impact onthis circumstance. The finest Soya Bustul beverage formulation has proximate analysis valuesof 5.20 percent fiber, 75.52% water, 1.10 percent ash, 3.72 percent fat, 5.84 percent protein,and 13.82 percent carbohydrates.Keyword : Elderly, Soybean, Snakehead Fish, Bran

Abstract

With age, the ability of body tissues decreases gradually in maintaining normal functions. Hypertension or the “silent killer” is state of blood pressure ≥140/≥90 mmHg. The worst consequence is death. The purpose is to know correlation of nutritional status, body fat percentage, waist-to-hip ratio (WHR), and sodium intake with hypertension in elderly women at Posyandu Lansia Gading Rejo, Lampung. Design of research was cross sectional with Simple Random Sampling technique. The research subjects were 76 people. Height was measured using a microtoice, body weight and body fat percentage using Bioelectrical Impedance Analyze (BIA), WHR using met-line, sodium intake using the Semi Quantitative-Food Frequencies Questionnaire. The data that has been obtained then tested for normality of the data with the Kolmogorov-Smirnov test and continued with the Spearman Rank Correlation Coefficient test. Based on the Spearman Rank Correlation test, there was a significant relationship between; nutritional status with hypertension (p=0,000 r=0,425), body fat percentage with hypertension (p=0,001 r=0,376), WHR with hypertension (p=0,012 r=0,268), and sodium intake with hypertension (p=0,000 r=0,496). The conclusion is nutritional status, percent body fat, waist-tohip ratio, and sodium intake have a significant relationship with hypertension in elderly women.Keywords: body fat percentage, elderly of woman, hypertension, nutritional status, sodium intake, waist-to-hip ratio

Abstract

Tea picking workers are a population who often perform physical activities in a hot environment for a long time so that they have the potential to experience lack of fluids and intake due to excessive sweating or exertion. The low work productivity of each individual is influenced by poor nutritional status and health status. Therefore, efforts to improve the quality of human resources are one of the important things for increasing the work productivity of an employee or employee according to WHO. The purposeof this study was to determine the relationship between the level of consumption of protein, zinc, and vitamin C with work productivity of tea pickers at PT. Duta Agrinti. This type of research is analytical researchwith a cross sectional study design. The sampling technique used the Simple Purposive Sampling method with a sample size of 46 respondents. Data collection of protein, zinc, and vitamin C consumption levelswas obtained from filling out the Recall form 2x24 hours for 2 days not consecutively, and work productivity was obtained from observation sheets of tea pick weighing results. The data normality test used the Kolmogorov-Smirnov test while the relationship test used the Rank Spearman correlation test. There were 93.5% of respondents who picked tea had a weight deficit level of protein consumption, with an average of 75,92% ± 26,89. About 93.5% of respondents who picked tea had a low zinc consumption level, with an average of 53.93% ± 19.29. About 95.7% of respondents who picked tea had a low level of vitamin C consumption, with an average of 22.31% ± 32.13. About 23.9% of respondents who picked tea had low work productivity, with an average of 6.58 kg / hour ± 2.33. There is a relationship between the level of protein consumption and the level of zinc consumption with the work productivity of women who pick tea. There is no correlation between the level of vitamin C consumption and the work productivity of women who pick tea (p=0,177). Keywords: Productivity of Tea Pickers, Protein, Zinc, Vitamin C.
