Abstract

Stunting is one of the chronic nutritional problems that remains a public health challenge in Indonesia, including in Majene Regency. This study aims to determine the relationship between parenting patterns and socioeconomic status with the incidence of stunting in children aged 24–59 months in Baurung Subdistrict. This research is quantitative with a cross-sectional design. The population of this study was all children aged 24–59 months in Baurung Subdistrict, with a sample of 85 subjects selected using proportional random sampling. Data were collected using questionnaires and analyzed using the Chi-Square test with a significance level of 0.05. The results showed that the prevalence of stunting was 61.2%, while normal nutritional status accounted for 38.8%. There was a significant relationship between parenting patterns and the incidence of stunting (p=0.017). In addition, maternal education (p=0.009), maternal employment (p=0.019), family income (p=0.005), and family expenditure (p=0.005) were significantly associated with stunting. The study concludes that parenting patterns and socioeconomic status are significantly associated with stunting among children aged 24–59 months in Baurung Subdistrict.

Abstract

Dysmenorrhea is a common menstrual pain complaint among adolescent girls. Turmeric–tamarind beverage has potential as an herbal alternative; therefore, the development of an instant powder using spray drying is needed to improve product practicality. This study aimed to evaluate the effect of maltodextrin concentration on the organoleptic properties of turmeric–tamarind powder and its reconstituted beverage, and to describe the proximate composition, curcumin content, and antioxidant activity of the product. A completely randomized design with one factor was applied, namely maltodextrin concentration 10% (P1 = 100 g), 20% (P2 = 200 g), and 30% (P3 = 300 g) per 1,000 g turmeric–tamarind solution prior to spray drying. Organoleptic evaluation was conducted by 35 semi-trained panelists using a 1–7 hedonic scale and analyzed using Kruskal–Wallis followed by Mann–Whitney tests. The results showed that maltodextrin significantly affected powder color, texture, and overall acceptability, while in the reconstituted beverage it significantly influenced taste and overall acceptability, with the best acceptance observed in P3. Chemical analysis of the selected formulation (P3) showed 89.02% moisture, 10.83% carbohydrate, 0.16% ash, <0.04% protein, <0.02% fat, and 20.88 mg/L curcumin content. Antioxidant activity increased from 4.16% to 6.35% inhibition after spray drying. In conclusion, 30% maltodextrin resulted in the highest sensory acceptance, and the final product retained functional potential as indicated by detectable curcumin content and antioxidant activity.

Abstract

Visits by toddlers to Posyandu (integrated health service posts) are an important indicator in monitoring child health in Indonesia. Visits by toddlers to Posyandu in Muna District are still very low, at 41.6% in 2024. Maternal knowledge and family support play a role in encouraging toddlers’ participation in Posyandu activities. This study aimed to analyze the relationship between maternal knowledge and family support on the frequency of toddlers’ visits to Posyandu in Masalili Village, Muna District. This study used a quantitative design with a cross-sectional approach. The research sample consisted of 57 families with toddlers selected randomly from Masalili Village. Data were collected through questionnaires that measured the level of maternal knowledge, family support, and the frequency of toddler visits to Posyandu. Data analysis was performed using the chi-square statistical test using the SPSS application. The results showed that there was a relationship between knowledge and toddlers’ attendance to the Posyandu (p=0.001) and that there was a relationship between family support and toddlers’ attendance to the Posyandu (p=0.024). Maternal knowledge and family support play an important role in increasing the frequency of toddlers’ attendance to the Posyandu. Therefore, efforts to increase maternal knowledge and strengthen family support should be the main focus of public health programs in the area.

Abstract

Nutritional status plays an important role in the regulation of reproductive hormones; however, its association with various aspects of menstrual disorders remains inconsistent. This study aimed to examine the relationship between nutritional status and age at menarche with composite menstrual disorders and specific menstrual characteristics among female university students. A cross-sectional design was employed, involving female nutrition students from a single cohort who completed an online questionnaire. Independent variables included nutritional status (normal and abnormal) and age at menarche (early and normal). Dependent variables comprised composite menstrual disorders, menstrual duration, menstrual cycle length, and premenstrual symptoms. Data were analyzed using the chi-square test. The results showed that nutritional status was significantly associated with menstrual cycle length (p<0.027). However, no significant associations were found between nutritional status and composite menstrual disorders, menstrual duration, or premenstrual symptoms. In addition, age at menarche was not significantly associated with any of the menstrual characteristics analyzed. In conclusion, the influence of nutritional status on menstruation appears to be specific to certain aspects, particularly menstrual cycle length. The use of composite indicators of menstrual disorders may obscure more specific associations. Therefore, separating individual components of menstrual patterns is essential to achieve a more accurate understanding of the relationship between nutritional status and reproductive health in young adult women.

Abstract

Vitamin A deficiency (VAD) is a serious health issue that can lead to night blindness, xerophthalmia, and a weakened immune system, which increases susceptibility to respiratory infections and diarrhoea in children. This study aimed to develop nugget sticks made from a combination of chicken meat and scad fish (50:50) with the addition of katuk leaves (Sauropus androgynus) as a protein-rich food product with potential provitamin A content. Protein plays a crucial role in the synthesis of Retinol Binding Protein (RBP), which is essential for transporting Vitamin A throughout the body. This experimental study tested three formulations of katuk leaf addition: F1 (5%), F2 (10%), and F3 (15%). Measured parameters included organoleptic tests (color, aroma, taste, texture), nutritional analysis using the Indonesian Food Composition Table (TKPI), consumer acceptance tests, and an evaluation of the product's economic value. The results indicated that F1 (5% katuk leaf addition) was the most preferred formulation overall. Per serving (35 g), these nuggets contain 94 kcal of energy, 6 g of protein, 5 g of fat, 7 g of carbohydrates, 41 mcg of retinol, and 296 mcg of beta-carotene. The acceptance test showed positive results, with an average food waste of less than 20% among panelists. Economically, the food cost for 50 units was Rp39,646, with a selling price of Rp1,982 per piece or Rp29,730 per 250 g package. In conclusion, these nugget sticks hold significant potential as a functional food entrepreneurship opportunity. Future research should involve laboratory-based nutritional analysis for more accurate validation.
