Abstract

Bali pigs are germplasm that must be preserved, therefore various efforts to maintain Balinese pigs continue to be made. Genetically, Balinese pigs grow slower than imported pig breeds. One of the factors that affect the growth of pigs is the quality of the ration given. Therefore, this research needs to be done to determine the effect of protein level in the ration on the commercial yield of Balinese pigs. This research was conducted at Mr. Ketut Darka's farm located in Nyitdah Village, Kediri District, Tabanan Regency, Bali for 12 weeks of rearing. The research design used was a completely randomized design (CRD) consisting of four treatments and four replications, resulting in 16 experimental units. Each experimental unit contained one pig. The four treatments were: P1 (ration with 14% protein level), P2 (ration with 16% protein level), P3 (ration with 18% protein level) and P4 (ration with 20% protein level). The variables observed were: slaughter weight, carcass weight, carcass percentage, UDMR, and commercial ingredients including thighs, bacon belly, loin, picnic, boston buff, and spare ribs. The results showed that slaughter weight, carcass weight, carcass percentage, UDMR, and commercial carcass fractions fed with protein levels from 14% to 16%, 18% and 20% showed different but not significant among treatments (P>0.05). It can be concluded that the provision of rations with protein levels of 14%, 16%, 18%, and 20% did not have a significant effect on the components of commercial carcasses of Balinese pigs. This indicates that differences in protein levels within this range are not enough to affect carcass yield. ABSTRAK Babi bali merupakan plasma nutfah yang harus dilestarikan, oleh karena itu berbagai upaya untuk mempertahankan babi bali terus dilakukan. Secara genetik babi bali pertumbuhannya lebih lambat dibandingkan dengan babi ras impor. Salah satu faktor yang berpengaruh terhadap pertumbuhan babi adalah kualitas ransum yang diberikan. Oleh karena itu, penelitian ini perlu dilakukan untuk mengetahui pengaruh level protein dalam ransum terhadap recahan komersial babi bali. Penelitian ini dilaksanakan di kandang milik Bapak Ketut Darka yang berlokasi di Desa Nyitdah, Kecamatan Kediri, Kabupaten Tabanan, Bali selama 12 minggu pemeliharaan. Rancangan penelitian yang digunakan ialah rancangan acak lengkap (RAL) yang terdiri atas empat perlakuan dan empat kali ulangan, sehingga terdapat 16 unit percobaan. Setiap unit percobaan berisi satu ekor babi. Keempat perlakuan tersebut, yaitu: P1 (ransum dengan level protein 14%), P2 (ransum dengan level protein 16%), P3 (ransum dengan level protein 18%) dan P4 (ransum dengan level protein 20%). Variabel yang diamati yaitu: berat potong, berat karkas, presentase karkas, UDMR, dan recahan komersial yang meliputi paha, bacon belly, loin, picnic, boston buff, dan spare ribs. Hasil penelitian menunjukan bahwa bobot potong, bobot karkas, presentase karkas, UDMR, dan recahan karkas komersial yang diberikan pakan dengan level protein dari 14% menjadi 16%, 18% dan 20% menunjukkan berbeda tetapi tidak nyata di antara perlakuan (P>0,05). Dapat disimpulkan bahwa pemberian ransum dengan level protein sebesar 14%, 16%, 18%, dan 20% tidak memberikan pengaruh yang nyata terhadap komponen recahan komersial karkas babi bali. Hal ini menunjukkan bahwa perbedaan kadar protein dalam kisaran tersebut belum cukup untuk mempengaruhi hasil karkas.

Abstract

This research aims to determine the carcass fraction of commercial Bali pigs fed commercial rations with chicken farm waste protein concentrate (KPLA). The research was carried out for 2.5 months in the pig pen at the Bukit Jimbaran Research Station/Farm, Faculty of Animal Husbandry, Udayana University. The design used in this research was a Completely Randomized Design (CRD) with three treatments and each treatment was repeated five times. The three treatments consisted of A: Ration without KPLA (Control), B: Ration with 12% KPLA, and C: Ration with 24% KPLA. The variables observed in this research were carcass weight and commercial carcass fragments. The results of this study showed that substitution of commercial rations with chicken farm waste protein concentrate (KPLA) gave the same results as the control except, for the ham fraction has decreased. Therefore, KPLA at a level of 24% can be used for Bali pig farming, because it gives the same results as commercial concentrate (control). ABSTRAK Penelitian ini bertujuan untuk mengetahui recahan karkas komersial babi bali yang diberi ransum komersial dengan konsentrat protein limbah peternakan ayam (KPLA). Penelitian dilaksanakan selama 2,5 bulan di kandang babi Stasiun Penelitian Bukit Jimbaran Fakultas Peternakan Universitas Udayana. Rancangan yang digunakan pada penelitian ini adalah Rancangan Acak Lengkap (RAL) dengan tiga perlakuan dan masing-masing perlakuan diulang lima kali. Ketiga perlakuan tersebut terdiri dari A: Ransum dengan tanpa KPLA (Kontrol), B: Ransum dengan 12% KPLA, dan C: Ransum dengan 24% KPLA. Variabel yang diamati adalah berat karkas dan recahan karkas komersial. Hasil penelitian ini menunjukkan bahwa substitusi ransum komersial dengan konsentrat protein limbah peternakan ayam (KPLA) memberikan hasil yang sama dengan kontrol,kecuali recahan ham mengalami penurunan. Maka dari itu KPLA dengan taraf 24% dapat digunakan untuk ternak babi bali, karena memberikan hasil yang sama dengan konsentrat komersial (kontrol).

Abstract

Since the prohibition of the use of Antibiotic Growth Promoter (AGP) in livestock because the use of this antibiotic can produce residues in broilers that settle in the body, then another alternative is needed using natural feed additives, one of the natural feed additives is papaya peel. This study has the aim of establishing the effect of producing papaya skin extracts from drinking water for broilers internal organs which was carried out at Sesetan Farm, Faculty of Animal Husbandry, Denpasar, Bali in 2 months. This study uses a completely random design (CRD) which is divided into 4 treatments, and 5 replication makes it has 20 experimental units and each replication is divided into the top 4 broilers. The treatments given were broilers served drinking water without papaya peel extract (P0), broilers given 4% papaya peel extract through drinking water (P1), broilers served 6% papaya peel extract through drinking water (P2), broilers served 8% papaya peel extract through drinking water (P3). Observed variables included the percentage of heart, liver, spleen, gallbladder, and pancreas. The study's findings indicate that the presentation of papaya peel extract at 4%, 6%, and 8% levels had no significant effect (P>0.05) on the percentage of heart, liver, spleen, gallbladder, and pancreas. The study findings suggest that administering 4% and 6% papaya peel extract through drinking water can improve the health of broiler internal organs. ABSTRAK Sejak adanya pelarangan penggunaan Antibiotic Growth Promoter (AGP) pada ternak dikarenakan penggunaan antibiotik ini dapat menghasilkan residu terhadap broiler yang mengendap pada tubuh, maka diperlukan alternatif lain menggunakan feed additive alami, salah satu feed additive alami iyalah kulit buah pepaya. Studi ini memiliki tujuan mengetahui pengaruh pemberian ekstrak kulit pepaya melalui air minum terhadap organ dalam broiler yang dilakukan di Farm Sesetan, Fakultas Peternakan, Denpasar, Bali dalam 2 bulan. Studi ini memilih Rancangan Acak Lengkap (RAL) yang terbagi atas 4 perlakuan, serta 5 ulangan menjadikan adanya 20 unit eksperimen serta masing-masing ulangan terdiri dari 4 ekor broiler. Perlakuan yang diberikan ialah broiler yang disajikan air minum tidak adanya ekstrak kulit buah pepaya (P0), broiler yang disajikan 4% ekstrak kulit buah pepaya melalui air minum (P1), broiler yang disajikan 6% ekstrak kulit buah pepaya melalui air minum (P2), broiler yang disajikan 8% ekstrak kulit buah pepaya melalui air minum (P3). Variabel yang diamati meliputi persentase jantung, hati, limpa, empedu serta pankreas. Temuan studi ini mengindikasikan jika penyajian ekstrak kulit buah pepaya pada level 4%, 6% dan 8% berbanding tidak nyata (P>0,05) atas persentase jantung, hati, limpa, empedu serta pankreas. Menurut temuan studi dinyatakan jika pemberian ekstrak kulit buah pepaya 4% dan 6% melalui air minum dapat menyehatkan organ dalam broiler.

Abstract

Broilers are the main source of animal protein and an important commodity in Indonesia. However, fat accumulation in broiler bodies remains a problem that needs to be addressed. This study aims to determine the effect of adding papaya peel extract to drinking water on broiler abdominal fat. This study was conducted at Sesetan Farm, Faculty of Animal Husbandry, Udayana University in February 2025. This study involved 80 broilers given papaya peel extract in drinking water at different concentrations, namely 4%, 6%, and 8%. The study was designed using a Completely Randomized Design (CRD) method of 4 treatments, 5 replications, P0 as a control (drinking water without the addition of papaya peel extract), P1 (drinking water with the addition of 4% papaya peel extract), P2 (drinking water with the addition of 6% papaya peel extract) and P3 (drinking water with the addition of 8% papaya peel extract). Observed variables included the percentage of fat in the pads, mesentery, ventricle, and abdominal area. The findings of the study of serving papaya peel extract at concentrations of 4%, 6%, and 8% showed no significant difference (P>0.05) on pad and mesenteric fat, but had a significant impact (P<0.05) on reducing ventricular fat. Compounds in papaya peel extract were proven to be metabolically effective in reducing the percentage distribution of ventricular fat. It can be concluded that administering papaya peel extract up to 8% in drinking water did not have an impact on reducing pad, mesenteric fat, and abdominal fat, but at 6-8% levels it was able to reduce total ventricular fat in 35-day-old broilers. ABSTRAK Broiler merupakan sumber utama protein hewani dan menjadi komoditas penting di Indonesia. Namun, penumpukan lemak pada tubuh broiler masih menjadi masalah yang perlu diatasi. Studi ini memiliki mengetahui pengaruh penambahan ekstrak kulit buah pepaya dalam air minum terhadap lemak abdominal broiler. Studi ini dilakukan pada Farm Sesetan, Fakultas Peternakan Universitas Udayana di bulan Februari 2025. Penelitian ini melibatkan 80 ekor broiler yang diberikan ekstrak kulit buah pepaya dalam air minum secara konsentrasi berbeda, yaitu 4%, 6%, dan 8%. Penelitian dirancang menggunakan metode Rancangan Acak Lengkap (RAL) dari 4 perlakuan, 5 ulangan, P0 sebagai kontrol (air minum tidak adanya penambahan ekstrak kulit buah pepaya), P1 (air minum dengan penambahan 4% ekstrak kulit buah pepaya), P2 (air minum secara penambahan 6% ekstrak ekstrak kulit buah pepaya) dan P3 (air minum secara penambahan 8% ekstrak kulit buah pepaya). Variabel yang diamati mencakup persentase lemak pada bantalan, mesenterium, ventrikulus, serta area abdominal. Temuan studi penyajian ekstrak kulit buah pepaya pada konsentrasi 4%, 6%, dan 8% tidak menunjukkan perbedaan tidak nyata (P>0,05) terhadap lemak bantalan dan mesenterium, tetapi berdampak nyata (P<0,05) bagi penurunan lemak ventrikulus. Senyawa dalam ekstrak kulit buah pepaya terbukti efektif secara metabolik dalam menurunkan distribusi persentase lemak ventrikulus. Dapat disimpulkan, pemberian ekstrak kulit buah pepaya hingga level 8% pada air minum tidak berdampak bagi penurunan lemak bantalan, lemak mesenterium dan lemak abdomen tetapi pada level 6-8% sanggup mengurangi total lemak ventrikulus di broiler berumur 35 hari.

Abstract

Rice straw is an agricultural by-product characterized by high crude fiber content and low crude protein levels, necessitating nutritional enhancement through the addition of protein-rich supplements. This study aimed to evaluate the effect of Cnidoscolus aconitifolius leaf meal. supplementation on the nutritional composition of rice straw silage. The experiment was conducted at the Sesetan Research Station and the Animal Feed Nutrition Laboratory, Faculty of Animal Science, Udayana University. A completely randomized design (CRD) was applied, consisting of four treatments with four replications, totaling 16 experimental units. The treatments were as follows: P1 (95% rice straw + 5% molasses), P2 (85% rice straw + 10% Cnidoscolus aconitifolius leaf meal + 5% molasses), P3 (75% rice straw + 20% Cnidoscolus aconitifolius leaf meal + 5% molasses), and P4 (65% rice straw + 30% Cnidoscolus aconitifolius leaf meal + 5% molasses). Observed variables included pH, dry matter (DM), organic matter (OM), crude protein (CP), and crude fiber (CF). Statistical analysis revealed that the addition of Cnidoscolus aconitifolius leaf meal decreased the dry matter and crude fiber content, while increasing the organic matter and crude protein content. However, the pH value of the silage was not significantly affected. Treatment P4 yielded the highest crude protein and organic matter content and the lowest crude fiber content. It can be concluded that supplementation with 30% Cnidoscolus aconitifolius leaf meal provided the most favorable improvement in the nutritional quality of rice straw silage. ABSTRAK Jerami padi merupakan limbah pertanian dengan kandungan serat kasar tinggi dan protein kasar rendah, sehingga perlu peningkatan kualitas nutrisi melalui penambahan bahan berprotein tinggi. Penelitian bertujuan untuk mengetahui pengaruh penambahan tepung daun pepaya jepang (Cnidoscolus aconitifolius) terhadap kandungan nutrisi silase jerami padi. Penelitian dilaksanakan di Stasiun Penelitian Sesetan dan Laboratorium Nutrisi Pakan Ternak Fakultas Peternakan Universitas Udayana, penelitian ini menggunakan rancangan acak lengkap (RAL) dengan empat perlakuan dan empat ulangan, perlakuan terdiri atas: P1 (95% jerami padi + 5% molases), P2 (85% jerami padi + 10% daun pepaya jepang + 5% molases), P3 (75% jerami padi + 20% daun pepaya jepang + 5% molases), dan P4 (65% jerami padi + 30% daun pepaya jepang + 5% molases) sehingga terdapat 16 unit percobaan. Variabel yang diamati meliputi pH, bahan kering, bahan organik, protein kasar, dan serat kasar. Hasil penelitian menunjukkan bahwa penambahan tepung daun pepaya jepang menurunkan kandungan bahan kering dan serat kasar, serta meningkatkan bahan organik dan protein kasar, namun tidak berpengaruh terhadap nilai pH. Perlakuan P4 dengan penambahan 30% daun papaya jepang menunjukkan kandungan protein kasar dan bahan organik tertinggi, serta serat kasar terendah. Dapat disimpulkan bahwa penambahan 30% tepung daun pepaya jepang memberikan hasil terbaik terhadap peningkatan kualitas nutrisi silase jerami padi.

Abstract

The need for Balinese duck meat continues to increase, but is still hampered by the low level of productivity of Balinese ducks as meat producers in terms of quality and quantity. This study aims to determine commercial cuts of Bali duck carcasses that were given moringa leaf juice fermented by cellulolytic probiotic bacteria through drinking water. This research was carried out at the Sesetan farm, Faculty of Animal Husbandry, Udayana University, located on Jln. Raya Sesetan Gang Markisa, Denpasar, lasts for 8 weeks. The research used a completely randomized design (CRD) with four treatments and four replications and each treatment unit contained 3 individuals, so that 48 male Bali ducks were used. The treatments given were: Drinking water without giving Moringa leaf juice fermented by cellulolytic probiotic bacteria (A); Drinking water with administration of Moringa leaf juice fermented by cellulolytic probiotic bacteria 2.5% (B); Drinking water with Moringa leaf juice fermented by cellulolytic probiotic bacteria 5 (C); Drinking water with Moringa leaf juice fermented by cellulolytic probiotic bacteria 7.5% (D). The variables observed were the percentage of upper thighs, lower thighs, wings, chest and back. The results showed that the percentage of upper thighs, lower thighs, wings, chest and back decreased. Based on the results of this study, it can be concluded that giving Moringa leaf juice fermented by cellulolytic probiotic bacteria through drinking water at a level of 2.5 - 7.5% has not been able to increase the percentage of upper thighs, lower thighs, wings, thighs and backs of Bali ducks. ABSTRAK Kebutuhan terhadap daging itik bali terus meningkat, namun masih terkendala oleh rendahnya tingkat produktivitas itik bali sebagai penghasil daging secara kualitas dan kuantitas. Penelitian ini bertujuan untuk mengetahui potongan komersial karkas itik bali yang diberi jus daun kelor terfermentasi bakteri probiotik selulolitik melalui air minum. Penelitian ini dilaksanakan di farm Sesetan Fakultas Peternakan Universitas Udayana yang berlokasi di Jln. Raya Sesetan Gang Markisa, Denpasar, berlangsung selama 8 minggu. Penelitian menggunakan rancangan acak lengkap (RAL) dengan empat perlakuan dan empat ulangan serta setiap unit perlakuan diisi 3 ekor, sehingga itik bali jantan yang digunakan sebanyak 48 ekor. Perlakuan yang diberian yaitu : Air minum tanpa pemberian jus daun kelor terfermentasi bakteri probiotik selulolitik (A); Air minum dengan pemberian jus daun kelor terfermentasi bakteri probiotik selulolitik 2,5% (B); Air minum dengan pemberian jus daun kelor terfermentasi bakteri probiotik selulolitik 5 (C); Air minum dengan pemberian jus daun kelor terfermentasi bakteri probiotik selulolitik 7,5% (D). Variabel yang diamati adalah persentase paha atas, paha bawah, sayap, dada, dan punggung. Hasil penelitian menunjukkan bahwa persentase paha atas, paha bawah, sayap, dada, dan punggung mengalami penurunan. Berdasarkan hasil penelitian ini dapat disimpulkan bahwa pemberian jus daun kelor terfermentasi bakteri probiotik selulolitik melalui air minum pada level 2,5 – 7,5% belum mampu meningkatkan persentase paha atas, paha bawah, sayap, paha, punggung itik bali.

Abstract

Feeding chicken farm waste protein concentrate (KPLA) can increase the quality and edible offal weight of bali pigs . This research aims to determine the edible offal weight of bali pigs based on KPLA. The research was carried out for 2 months and 2 weeks in the pig pen at the Bukit Jimbaran Research Station/Farm, Faculty of Animal Husbandry, Udayana University, using a completely randomized design with 3 treatments and 5 replications. Treatment consisted of T0: 24% CP-152+0% KPLA; T1: 12% CP-152+12% KPLA; T2: 0% CP-152+24% KPLA. The variables observed were the percentage of percentage of liver weight, percentage of lung weight, percentage of small intestine weight, percentage of large intestine weight, percentage of stomach weight, and percentage of blood weight. The results showed that the percentage of liver weight and lung weight in T2 treatment tended to be higher at 1.224±0.031%; 1.928±0.097%. The percentage of small intestine weight tended to be higher in the control treatment 1.712±0.04%. The percentage of large intestine weight and stomach weight tended to be higher in the T2 treatment at 1.494±0.035% and 0.864±0.018%, while the percentage of blood weight was significantly highest (P<0.05) in the T2 treatment at 3.682±0.112%. It was concluded that KPLA replacement was able to maintain the edible offal weight of bali pigs. ABSTRAK Pemberian pakan konsentrat protein limbah peternakan ayam (KPLA) mampu menambah kualitas dan berat organ dalam babi bali. Penelitian ini bertujuan untuk mengetahui pemberian KPLA terhadap organ dalam babi bali. Penelitian dilaksanakan selama 2 bulan 2 minggu di kandang babi Stasiun Penelitian/Farm Bukit Jimbaran Fakultas Peternakan Universitas Udayana yang menggunakan rancangan acak lengkap dengan 3 perlakuan dan 5 ulangan. Perlakuan terdiri dari T0 : Ransum 24 % Konsentrat CP-152 + 0% KPLA (Kontrol); T1 : Ransum 12% Konsentrat CP-152 + 12% KPLA; T2 : Ransum 0% Konsentrat CP-152 + 24 % KPLA. Variabel yang diamati adalah persentase berat hati, persentase berat paru-paru, persentase berat usus halus, persentase berat usus besar, persentase berat lambung, dan persentase berat darah. Hasil penelitian menunjukkan persentase berat hati, berat paru-paru pada perlakuan T2 adalah cenderung lebih tinggi sebesar 1,224 ± 0,031%; 1,928 ± 0,097%. Persentase berat usus halus adalah cenderung lebih tinggi pada perlakuan kontrol (T0) sebesar 1,712 ± 0,04%. Persentase berat usus besar dan berat lambung adalah cenderung lebih tinggi pada perlakuan T2 sebesar 1,494 ± 0,035% dan 0,864 ± 0,018%, sedangkan persentase berat darah adalah nyata tertinggi (P<0,05) pada perlakuan T2 sebesar 3,682 ± 0,112%. Abstract

While providing forage by utilizing shaded land is not entirely ideal for plant growth, it still has potential if planted with plants tolerant to light stress. Pennisetum purpureum cv. Mott and Clitoria ternatea have high productivity and nutrient content, and these two forages have the potential to complement each other through a mixed cropping system (association). This study aimed to determine the effect of shade level on the yield of the association of Pennisetum purpureum cv. Mott and Clitoria ternatea. The research was conducted in Sading Village, Mengwi District, Badung Regency, from September to December 2024. The study used a completely randomized design (CRD) with four shade treatments: N0 = 0% shade; N1 = 20% shade; N2 = 40% shade; and N3 = 60% shade, with each treatment replicated seven times. Observed variables included: leaf dry weight, stem dry weight, total forage dry weight, leaf dry weight to stem dry weight ratio, and leaf dry weight to total forage dry weight ratio. The results showed that increasing the shade level decreased the association yield of Pennisetum purpureum cv. Mott and Clitoria ternatea for all observed variables, while 0% shade (N0) provided the best results for all variables. It can be concluded that increasing the shade level can reduce the yield of the association of Pennisetum purpureum cv. Mott and Clitoria ternatea, and a shade level of 0% gives the best results. ABSTRAK Usaha menyediakan hijauan pakan dengan memanfaatkan lahan di bawah naungan, walaupun tidak sepenuhnya ideal untuk pertumbuhan tanaman, namun tetap memiliki potensi jika ditanami tanaman yang toleran terhadap cekaman cahaya. Jenis rumput gajah kate dan bunga telang memiliki sifat produktif dan kandungan nutrien tinggi, serta kedua hijauan tersebut memiliki potensi saling melengkapi melalui sistem pertanaman campuran (asosiasi). Penelitian yang bertujuan untuk mengetahui pengaruh tingkat naungan terhadap hasil asosiasi Pennisetum purpureum cv. Mott dan Clitoria ternatea. Penelitian dilaksanakan di Desa Sading, Kecamatan Mengwi, Kabupaten Badung, dan penelitian berlangsung dari bulan September - Desember 2024. Penelitian yang menggunakan rancangan acak lengkap (RAL), dengan empat perlakuan tingkat naungan, yaitu: N0 = naungan 0%; N1 = naungan 20%; N2 = naungan 40%; dan N3 = naungan 60%, serta setiap perlakuan diulang tujuh kali. Variabel yang diamati, meliputi: berat kering daun, berat kering batang, berat kering total hijauan, nisbah berat kering daun dengan berat kering batang, dan nisbah berat kering daun dengan berat kering total hijauan. Hasil penelitian menunjukan bahwa peningkatan tingkat naungan dapat menurunkan hasil asosiasi Pennisetum purpureum cv. Mott dan Clitoria ternatea pada semua variabel yang diamati, sedangkan pada naungan 0% (N0) memberikan hasil terbaik pada semua variabel. Dapat disimpulkan bahwa peningkatan tingkat naungan dapat menurunkan hasil asosiasi Pennisetum purpureum cv. Mott dan Clitoria ternatea, dan tingkat naungan 0% memberikan hasil terbaik.

Abstract

Consumer perception is the stage where a person selects, determines, and interprets information to produce a meaningful description of a product, in the context of traditional food, this perception includes taste, appearance, and cultural values ​​​​inherent in the food. The purpose of this study is to determine consumer perceptions of quality, taste, appearance, price, service and environmental cleanliness in roast pork restaurants in Badung Regency. The study was conducted for 2 months in five roast pork restaurants in Badung Regency. The research respondents were consumers of roast pork restaurants selected by purposive sampling of 75 people, with a quota of 15 people for each restaurant, the methods used were quantitative and qualitative methods. The study findings indicate that product quality obtained a mean score of 4.22 which is classified as good, product taste produced a mean score of 4.35 with a very good classification, appearance obtained a mean score of 4.30 which is classified as very good, price obtained an average score of 3.97, location produced a mean score of 4.20 which is classified as good, service obtained a score of 4.10 which is classified as good, and environmental cleanliness obtained a mean score of 4.25 which is classified as very good. According to the research findings, it was concluded that consumers were very satisfied with the quality, taste, appearance, price, location, service, and environmental cleanliness. ABSTRAK Persepsi konsumen merupakan tahapan yang mana seseorang memilih, menetapkan, serta menginterpretasikan informasi agar menghasilkan deskripsi yang berarti tentang suatu produk, dalam konteks makanan tradisional, persepsi ini meliputi rasa, tampilan, dan nilai budaya yang melekat pada makanan tersebut. Tujuan penelitian mengetahui persepsi konsumen terhadap kualitas, citarasa, tampilan, harga, pelayanan dan kebersihan lingkugan di rumah makan babi guling di kabupaten Badung. Penelitian dilakukan selama 2 bulan di lima warung babi guling di Kabupaten Badung. Responden penelitian adalah konsumen warung babi guling yang di pilih secara purposive sampling sebanyak 75 orang, dengan quota masing- masing rumah makan sebanyak 15 orang, metode yang di gunakana metode kuantitatif serta kualitatif. Temuan studi mengindikasikan jika kualitas produk memperoleh skor mean 4,22 yang tergolong klasifikasi baik, citarasa produk menghasilkan skor mean skor 4,35 dengan klasifikasi sangat baik, tampilan mendapatkan skor mean 4,30 yang tergolong klasifikasi sangat baik, harga memperoleh nilai rata-rata 3,97, lokasi menghasilkan skor mean 4,20 masuk klasifikasi baik, pelayanan mendapatkan skor 4,10 masuk kategori baik, dan kebersihan lingkungan mendapatkan skor mean 4,25 yang masuk klasifikasi sangat baik. Menurut temuan penelitian disimpulkan bahwa konsumen sangat puas terhadap kualitas, citarasa, tampilan, harga, lokasi, pelayanan, dan kebersihan lingkungan.

Abstract

The shaidiing level treaitments were: N0 = 0% shaidiing; N1 = 20% shaidiing; N2 = 40% shaidiing; aind N3 = 60% shaidiing. The observed vairiiaibles iincluided the growth pairaimeters of Penniisetuim puirpuireuim cv. Mott aind Cliitoriiai ternaiteai, naimely: viine length, plaint heiight, nuimber of tiillers, nuimber of brainches, nuimber of leaives, leaif chlorophyll content, aind stem diiaimeter. The resuilts showed thait the treaitment of 0% shaidiing for Penniisetuim puirpuireuim cv. Mott aind 20% shaidiing for Cliitoriiai ternaiteai produiced the hiighest growth.
