Abstract

Roti Ganda is a typical bread from Pematangsiantar, white bread made from flour, sugar, eggs, margarine, and other ingredients. Toko Ganda is shops that have long been established and still exists. So the researcher wants to know the opinions of consumers regarding the attributes of Toko Ganda that need to be improved again so that it becomes a store that still exists. This study aims to analyze Roti Ganda's customer satisfaction at Toko Ganda and analyze the attributes of Roti Ganda that need to be improved. The respondents used in the study were based on the results of Slovin's calculations of 96 people. The data collection method was carried out using the accidental sampling method. The location of this research was carried out purposively in Pematangsiantar City. The research method used is the Customer Satisfaction Index (CSI) Method and the Potential Gain in Customer Values (PGCV) Method. The results showed that the CSI value in this study was 82.60%, which was included in the very satisfied category. The PGCV index value shows attributes that need to be improved again, namely the parking location. The results showed that the CSI value in this study was 82.60%, included in the category of very satisfied. In contrast, the attributes of Toko Ganda that need to be increased are found in the location attributes, namely parking lots. The need for parking space is getting more significant because the volume of traffic that leaves or goes to the activity center increases. Parking space that cannot meet the needs results in roadside around the area; thus, expected more parking spaces.

Abstract

Red Palm Oil Olein (RPOO), obtained from Crude Palm Oil (CPO) processing, can be a potential source of provitamin A due to its high carotene. Water degumming and Alkali refining are alternative methods that are not widely used to remove gum and Free Fatty Acids (FFA) in making RPOO with relatively low heating temperatures. This study aims to determine the effect of increasing the amount of NaOH during neutralization on RPOO yield, FFA levels, β-carotene content, vitamin A, and preference level for RPOO. This study used Complete Randomized Design (CRD) with one treatment factor, namely variations in the addition of the amount of NaOH. The results showed that the variation of the addition of NaOH had a significant effect on decreasing FFA RPOO to range from 0.24 to 0.07. The content of β-carotene produced ranges from (635.87 to 645.54 ppm) and the content of provitamin A ranges from (105.97 to 107.59 μgRE). In addition, the RPOO yield decreased with an increase in NaOH use, ranging from (53.24 to 42.26%). Organoleptic tests showed that adding NaOH significantly affects the level of liking for the color and aroma of RPOO. Increasing the use of NaOH in alkaline refining could produce RPOO with good quality, but at the same time, it could reduce the yield of RPOO produced.

Abstract

Permasalahan yang terjadi pada agroindustri pisang terdiri dari proses pengadaan bahan baku dari pemasok pisang belum dapat memenuhi kebutuhan industri. Proses pemilihan pemasok pisang belum menjadi faktor yang dipertimbangkan oleh industri dalam perencanaan strateginya. Teknologi yang digunakan seharusnya dapat menghasilkan produk olahan pisang yang berkualitas, tetapi pada kenyataannya produksi masih di bawah kapasitas normal yang tersedia. Distribusi produk olahan pisang kepada konsumen yang belum teridentifikasi dengan baik dan akses pasar yang masih terbatas berdampak pada perkembangan industri yang stagnan. Tujuan penelitian ini untuk mengidentifikasi permasalahan yang berkaitan dengan kinerja yang ada pada rantai pasok agroindustri pisang, melakukan pengukuran kinerja rantai pasok agroindustri pisang, serta memberikan dan mengevaluasi solusi yang dapat digunakan untuk perbaikan kinerja rantai pasok agroindustri pisang. Metode yang digunakan adalah pengukuran kinerja rantai pasok menggunakan pembobotan dengan metode multiple criteria decision-making (MCDM) terdiri dari AHP (Analytical Hierarchy Process), menentukan alternatif solusi dengan metode VIKOR (Vise Kriterijumska Optimizacija I Kompromisno Resenje). Hasil menunjukkan bahwa identifikasi permasalahan pada rantai pasok agroindustri pisang terdiri dari 5 kriteria utama dan 20 sub kriteria serta 7 solusi yang ditawarkan. Pengukuran kinerja rantai pasok diperoleh nilai 32.032 (poor) yang artinya kinerja rantai pasok agroindustri pisang masih rendah. Alternatif solusi yang diberikan untuk perbaikan kinerja rantai pasok agroindustri pisang adalah dibentuk kolaborasi dan kemitraan antar pelaku rantai pasok.

Abstract

The stembel tofu industry is a micro business located in Stembel Village, Gambiran District, Banyuwangi Regency. The industry was founded in 2000 until now. The workforce in this tofu industry is 10 workers. In the tofu industry, it employed enough labor starting from the production process to distribution which means as a service provider. Tofu shaping activities were carried out by workers manually using human power. Activities that were carried out continuously can cause the risk of musculoskeletal disorders in workers. The used of the Nordic Body Map questionnaire identified workers experiences in the process of tofu making process. The OWAS and RULA methods were implemented to evaluate and analyze worker activities that caused injuries to musculoskeletal disorders. Some of the activities in the tofu shaping process included the flattening of the fabric sheet, the stage of taking lumps of tofu, pressing, reversing I and II, transferring the printed product to cutting, and cutting the tofu. From the seven activities, the results of calculating the OWAS and RULA methods were high risk at the stage of collecting tofu lumps, pressing, and cutting tofu with an OWAS score obtained a level 4 score and a RULA risk level score of 4. The analysis results showed that some worker postures caused musculoskeletal risk so that need to be repaired. The suggestion for improving work posture was to design a tool in the form of a tofu lump retrieval tool and a tofu mold tool to reduce risk of musculoskeletal injuries to the workers.

Abstract

Cepat sajit noodles are a processed food product as energy sources that are popular in Indonesia. The existence of the “Pilihan Lebih Sehat” logo issued by BPOM in 2019 on pasta and cepat sajit noodles, provides another alternative in product selection by consumers. This study aims to assess the quality factors of cepat sajit noodle products (health claims, performance, aesthetics, and conformance quality) to purchasing decisions. Four exogenous variables, X1 for health claims, X2 for performance, X3 for conformity, and X4 aesthetics were analysed using The Partial Least Square (PLS) method. Thus, the purchase decision (Y) as endogenous variable were analysed from 2 types of noodle samples, namely the “A” and “B” brands, the two big brands of cepat sajit noodle with “mi goreng” flavor. A total of 100 respondents in each sample of noodles had filled out an online questionnaire. The results showed that “B” noodles received higher purchase decision assessment than “A” noodles, which was 3.86 against 3.71 on scale of 1 to 5. All exogenous variables had a positive and significant effect on “A”'s purchasing decision. In “B”, all variables except X1 had a positive and significant effect. Indonesian consumers still tend to prioritize the quality of performance (taste, texture, color, aroma) and the quality of conformity related to price and weight, especially in “B” noodle products. Going forward, adhering the BPOM’s health claims will give added value of products and may increase the market of innovate cepat sajit noodle products.

Abstract

Loss of oil during crude palm oil (CPO) extraction occurs among other things, due to the use of high temperature and pressure in the boiling process so that the oil from the fruit is absorbed and remains in the empty fruit bunches (EFB). This oil loss is generally measured using Soxhlet method. However, recently in several palm oil mills (POM), the Soxhlet method has been replaced by the Near Infrared Spectroscopy (NIRS) method which is equipped with free and open-source software (FOSS). Therefore, the purpose of this study was to examine the application of NIRS in measuring oil loss in EFB and to test its accuracy compared to the Soxhlet method. The data is from primary source of POM during April-June 2022 period (peak harvest times). Normality test and paired T test is used to analyze data. This research also cites case studies of CPO processing companies in Indonesia in the last 10 years (2013-2022) with a focus on oil loss in EFB. The results showed that the oil loss in EFB using NIRS and Soxhlet were 0.50% and 0.49%, respectively. These two values are below the company's oil loss standard (0.62%). Both data are normally distributed and based on the paired T test, it was found that there were no significant differences in the results of oil loss analysis using the NIRS and Soxhlet methods. Compared with data for the last 10 years, they are also below the standard limit of other companies which reaches 3%. Therefore, NIRS is more recommended in terms of time efficiency, safe and does not damage the material.

Abstract

The tobacco agroindustry in Indonesia has the potential to be developed. Tobacco products and their derivatives are products of high value so that in the economic aspect they have a big involvement in the national economy as a provenience of government revenue (taxes), a foreign exchange, income for farmers, and a provider of employment in the on-farm sector. Despite of its provenience, the presence of tobacco products and their derivatives has been widely opposed by the community in line with increasing public awareness of health. Based on this, it is necessary to diversify processed tobacco products into new products other than cigarettes that have high economic value. However, efforts to develop the non-smoking tobacco agroindustry have problems including the high costs of process technology, farmers' technical knowledge, capital, competition with other regions, and the lack of government’s coordinated strategy to develop the non-smoking tobacco agroindustry. In addition, the competitiveness of the non-smoking tobacco agroindustry is still low, so this study aims to formulate a non-smoking tobacco agroindustry development strategy in Jember Regency. Analysis of research data was carried out using the Exponential Comparison Method, Interpretative Structural Modeling and Analytical Hierarchy Process. The main priority result of the selection of superior non-smoking tobacco agroindustry products is tobacco perfume. The key sub-elements to the element are facilities and infrastructure for the non-smoking tobacco agroindustry such as investment and access to capital for farmers and entrepreneurs; The key sub-elements to the constraints element are the limited capital and technology of the non-smoking tobacco agroindustry; the key sub-elements to the institutional element are local governments; and the key sub-elements in the activity elements carried out are increasing market access and partnerships for non-smoking tobacco products. Alternative strategies to increase market access and partnerships have the highest priority in selecting a development strategy for the tobacco perfume agroindustry.

Abstract

  Ginger and secang can be developed into functional food products in the form of spice drink powder. The process of making ginger and secang spice drink powder can be done using the foam drying technique. This research aims to obtain the optimum formula for ginger and secang spice drink powder using the foam mat drying technique, as well as knowing the physical and chemical characteristics of the ginger and secang powder spice drink in the optimum formula. The experimental design used the mixture design method in the application of Simplex Lattice Design with Design Expert version 13 software. The formulation of ingredients was carried out using two factors, namely variations of maltodextrin and secang extract. The research results showed that the optimum ginger and secang spice drink powder formula was formula 5 (10% maltodextrin; 40% secang extract) with a desirability value of 0.722. Results: The optimum physical and chemical characteristics of the formula are water content of 3.76%; hygroscopicity of 13.68%; a* value of 8.24; aroma hedonic quality of 3.93; color hedonic quality of 4.67; °hue value of 46.74°; solubility 88.018%; and antioxidant activity 31.8%.

Abstract

Clitoria ternatea L.  flower with an attractive bright blue color possible as an alternative to natural dyes. This study aims to evaluate the effect of addition vanilla and telang flower extract to quality characteristics of ice cream. The research design used two factors, the type of vanilla (N1 = vanilla powder and N2 = liquid vanilla) and the concentration of telang flower extract (A1 = 0%, A2 = 15% and A3 = 30%). The addition of telang flower extract affects the antioxidant activity, melting time and hedonic color of the ice cream. The higher the telang flower extract added, the higher the antioxidant activity and preference for color but decreased the melting time of the ice cream. The melting time did not meet SNI No. 01-3713-1995. The type of vanilla affects the overrun value and texture of hedonic ice cream. The use of liquid vanilla provides an overrun value that is in accordance with the home industry ice cream standard with a preferred texture. Based on the overall characteristics, the best ice cream was obtained by using liquid vanilla and 30% telang flower extract. Further research is needed to optimize the melting time of the ice cream.

Abstract

Coffee is an agricultural commodity that is used as a source of livelihood for the people in Benuang Galing Village, Seberang Musi Districts, Kepahiang Regency. The supply chain of coffee bean  is used to determine the activities of the relationships involved in distributing goods. The aim of this research is to identify the processes provided in each supply chain distribution flow and determine the quality at each level of the coffee supply chain on Benuang Galing Village. This research is a type of survey research with the snowball sampling method. A sample size of 25 respondents was obtained after no more new information was obtained from respondents regarding process data and other required data. The quality of coffee bean is determined using the method of the National Standards Agency. The research result shows the processes carried out at each level of the supply chain lead to an increase in the quality of coffee bean.  Supply chain pattern I, the quality of coffee bean at collecting traders is included in grade 6 and for wholesalers the quality of coffee bean is included in grade 5, while in supply chain pattern II the quality of   coffeen bean at wholesalers is included in grade 5.
