Abstract

This study aims to determine the concentration of clove powder (Syzygium aromaticum) in meat slimming and the effect of the characteristics of broiler meat. The research was conducted in November 2019 - January 2020 at the Laboratory of Animal Product Technology and Microbiology, Faculty of Animal Husbandry, Udayana University. This study used a completely randomized design (CRD) with 4 treatments and 3 replications. The four treatments were: (P0) chicken meat without clove powder coating, (P1) chicken meat coated with 0,25% clove pow- der, (P2) chicken meat coated with 0,50% clove powder, (P3) chicken meat coated with powder cloves 0,75%. The variables observed were pH , water content, water binding capacity and total bacteria. The results showed that the broiler meat coated with clove powder in treatment P0, P1, P2, and P3 obtained pH of 5,04 - 4,83; moisture content 68,97% - 74,45%; water holding capacity 67,90% - 69,16%; and total bacteria 5,00x106cfu/g – 2,00x104cfu/g. The conclusion of this study indicated that clove powder with a concentration of 0,75% was able to be a natural preser- vative for broiler meat with a characteristic pH 4,83; water content 74,45%; water holding capacity 69,16%; and total bacteria 2,00x104cfu/g.

Abstract

Penelitian ini bertujuan untuk mengetahui saluran pemasaran babi bali di Kecamatan Nusa Penida, peran dan fungsi lembaga pemasaran, besarnya marjin pemasaran serta efisiensinya secara ekonomis. Lokasi penelitian di- tentukan secara purposive sampling yakni di Kecamatan Nusa Penida, Kabupaten Klungkung. Analisis data yang digunakan adalah analisis deskriptif kuantitatif, analisis saluran pemasaran, analisis marjin pemasaran, farmer’s share dan efisiensi pemasaran. Hasil penelitian menunjukkan bahwa di Kecamatan Nusa Penida terdapat 4 pola saluran pemasaran babi bali dengan 2 lembaga pemasaran yang teridentifikasi antara lain pedagang besar Nusa penida dan pedagang besar dari luar Nusa Penida. Dari hasil analisis dapat dinyatakan bahwa margin pemasaran tertinggi adalah pada saluran pemasaran III yaitu sebesar 55,6% dan terendah pada saluran pemasaran II sebesar 28,6%, tingkat farmer share tertinggi adalah 100 % yaitu saluran pemasaran I, yang terendah adalah pada saluran pemasaran III yaitu sebesar 44,44%, dan efisiensi pemasaran babi bali di Kecamatan Nusa Penida adalah efisien.

Abstract

This experiment was conducted to evaluate the fiber fraction of banana peel meal fermented by goat rumen flu- id. The experimental design used was completely randomized design with four treatments and six replicates. Four treatments were CR0: kepok banana peel meal + 0% goat rumen fluid, CR30: kepok banana peel meal + 30% goat rumen fluid, CR40: kepok banana peel meal + 40% goat rumen fluid, CR50: kepok banana peel meal + 50 % goat rumen fluid. This fermentation process during seven days. The variables observed were NDF, ADF, hemycellulosa, cellulose, and lignin. The data on the fiber fraction of banana peel meal was analyzed by analysis of variance and continued with Duncan s multiple range tests. NDF, ADF, cellulose, hemicellulose, and lignin of banana peel meal fermented by goat rumen fluid was lower than that without goat rumen fluid. The conclusion in this study was that the use of 30% goat rumen fluid contained ADF of 31.84%, NDF of 45.03%, cellulose of 13.27% and hemicellulose of 13.53% of kepok banana peel meal.

Abstract

This research was conducted to determine the organoleptic quality of landrace pork, which is preserved by tradi- tional sui wu’u method from East Nusa Tenggara. The research was conducted from September to October 2020 at the Laboratory of Animal Product Technology and Microbiology Faculty of Animal Science, Udayana University. The experimental design used a Completely Randomized Design (CRD) with three treatments and five replicati- ons. The three treatments were: landrace pork preserved with the addition of 0.5 kg of corn flour (P1), landrace pork which was preserved with the addition of 1 kg of corn flour (P2), landrace pork which was preserved with the addition of 1.5 kg of corn flour (P3). The variables observed by flavour, color, aroma, texture and overall accep- tance. The results of the organoleptic test were analyzed using the Kruskal Wallis test and if there was a significant difference (P<0.05) then continued with the Mann-Whitney test. The results showed that the organoleptic quality (flavour, color, aroma, texture and overall acceptance) of treatments P1, P2 and P3 were not significantly different (P>0.05). The results of the study can be concluded that, the difference in the addition of corn flour in the process of preserving pork landrace with the method of preserving sui wu’u in bamboo petung for one month gives the same influence on organoleptic quality.

Abstract

This study aims to determine the effect of adding papaya leaf extract (Carica papaya L.) on drinking water to physical quality of Joper chicken meat. This study used a completely randomized design (CRD) with four treatmen- ts and four replications. Every unit was contained 3 Joper chickens. The treatments were drinking water without papaya leaf extract (P0), drinking water with 25 ml of papaya leaf extract in 1 liter of water (P1), drinking water with 30 ml of papaya leaf extract in 1 liter of water (P2), drinking water with 35 ml papaya leaf extract in liters of water (P3). The variables observed were pH, color, water holding capacity, cooking loss, and weep loss. The results showed that the addition of papaya leaf extract had a significant effect (P<0.05) on the physical quality of Joper chicken meat. Papaya leaf extract decreased the physical quality of Joper chicken meat in terms of water holding ca- pacity, cooking loss, and weep loss in P2 and P3 treatments. However, this papaya leaf extract treatment improves the quality of the flesh color to become brighter. The conclusion of this study is the addition of papaya leaf extract in drinking water affects the physical quality of Joper chicken meat compare without papaya leaf extract. The treat- ment that gave the best results was P1 treatment with the addition of 25 ml of papaya leaf extract.

Abstract

In order to conserve turtles carried out by the community through the Turtle Conservation and Education Center (TCEC), PT Pertamina (Persero) DPPU Ngurah Rai through the Corporate Social Responsibility Program strongly supports the conservation and conservation of turtles on Serangan Island. The purpose of this study was to analyze the social and CSR impact of Pertamina on public interest in preserving the turtle economy on Serangan Island. This research was conducted on Serangan Island and the selection of this location was determined purposively. The population in this study found 137 people while the sampling technique in this study used a simple random sampling method of 42 people. Data analysis in this research is descriptive qualitative and quantitative. The resul- ts showed that the social impact of Pertamina’s CSR on public interest in turtle conservation on Serangan Island was seen from community development, community participation, and preservation of conservation programs in the good category with a score of 3.96. Meanwhile, the economic impact of Pertamina’s CSR on public interest in turtle conservation on Serangan Island which consists of indicators of employment, increased income, and tourism potential is in the good category with a score of 4.02. Suggestions for the community are expected to continue to monitor the conservation and preservation of turtles in order to increase tourism potential on Serangan Island.

Abstract

Livestock waste containing untreated protein feed can affect soil, air and air pollution and be a source of toxins. Chickens and those around them will know this by free ammonia. Broiler manure waste can be used as a high nitro- gen nutrient that can be used as a fertilizer with additives needed by plants to increase soil fertility. The purpose of this study was to create and analyze nitrogen-rich fertilizers from broiler manure that affect plant growth or fertili- zer efficiency on productivity, growth efficiency of water spinach (Ipomoea reptans Poir.). As a result, poultry com- post contained water (63.38), nitrogen (N) (2.400%), P2O5 (3.914%), and K2O (1.113%), so N levels, P, K (7.447%). It was performed for 14 days with 3 different nutritional sources. The most effective treatment for growing aquatic spinach was the use of a combination of soil and fertilizer applied in specific proportions to obtain stem height (23.55 cm), leaf number (6.2 leaves) and leaf width (3.1 cm). Results were better compared to other treatments.

Abstract

This research was conducted to determine the organoleptic quality of kefir incubated in light green coconut shells (Cocos nucifera L. var. viridis Hassk) with and without coconut meat, conducted from August to October 2020 at the Laboratory of Animal Product Technology and Microbiology, Faculty of Animal Husbandry, Udayana University. The experimental design used in this study was a completely randomized design (CRD) with three tre- atments and five replications. The three treatments were: P0 used a jar (control), P1 used light green coconut shell (Cocos nucifera L. var. viridis Hassk) without coconut meat, P2 uses light green coconut shell (Cocos nucifera L. var. viridis Hassk) with coconut meat. The variables observed: color, taste, aroma, texture and overall acceptance. The results of the organoleptic test were analyzed using the Kruskal Wallis test, if there was a significant differen- ce (P <0.05) followed by the Mann-Whitney test. The results showed that the organoleptic quality of cow’s milk kefir incubated in light green coconut shells (Cocos nucifera L. var. viridis Hassk) was not significantly different (P>0.05) in all treatments (P0, P1, P2). The conclusion from the results of this study shows that, incubated cow’s milk kefir in light green coconut shell (Cocos nucifera L. var. viridis Hassk) with and without coconut meat did not affect the organoleptic quality of kefir but panelists gave a response that led to preference.

Abstract

Human Resources (HR) in the beef cattle sector is one of the important factors needed and has a role in the sus- tainability and success of the livestock farming business. The purpose of this study was to analyze the influence of beef cattle human resources on sustainable livestock farming business development. The research variables consist of human resources (X) and 5 (five) dimensions of sustainable livestock farming business development, namely the ecological dimension (Y1), the economical dimension (Y2), the social and cultural dimension (Y3), the institutional dimension (Y4), and technological dimension (Y5). The research was conducted in Purnama Village, Tegalampel Sub-Districts, Bondowoso District. The research was conducted using by the observation method, Focus Group Discussion (FGD), and surveys and interviews with respondents. Analysis of the data used in this study is by using a simple linear regression method with SPSS 26.0. The results showed that the ecological dimension was positively and significantly influenced by beef cattle farmers HR by 0.202, the economical dimension was positively and sig- nificantly influenced by beef cattle farmers HR by 0.194, the institutional dimension was positively and significantly influenced by beef cattle farmers HR by 0.198, and technologal is positively and significantly influenced by the cattle farmers HR of beef cattle farmers by 0.174. The conclusion of this study is that beef cattle farmers HR have an effect on the sustainable livestock farming business development, especially on the ecological dimensions, economical dimensions, institutional dimensions and technological dimensions.

Abstract

Tujuan penelitian ini untuk mengetahui karakteristik kimia kefir susu sapi yang difermentasi dalam tempurung kelapa hijau muda (Cocos nucifera L. var. viridis Hassk). Penelitian dilaksanakan pada bulan Agustus sampai Oktober 2020 di Laboratorium Teknologi Hasil Ternak Fakultas Peternakan Universitas Udayana. Rancangan per- cobaan yang digunakan dalam penelitian adalah rancangan acak lengkap (RAL) dengan tiga perlakuan dan lima ulangan. Ketiga perlakuan tersebut yaitu susu sapi yang difermentasi dalam wadah toples sebagai kontrol (P0), susu sapi yang difermentasi dalam tempurung kelapa hijau muda (Cocos nucifera L. var. viridis Hassk) tanpa da- ging kelapa (P1), susu sapi yang difermentasi dalam tempurung kelapa hijau muda (Cocos nucifera L. var. viridis Hassk) dengan daging kelapa (P2). Variabel yang diamati dalam penelitian yaitu total asam, kadar laktosa, kadar lemak, dan kadar protein. Data penelitian dianalisis menggunakan sidik ragam, apabila pengaruh perlakuan berbe- da nyata (P<0,05), dilanjutkan dengan uji jarak berganda Duncan. Hasil penelitian menunjukkan bahwa total asam pada perlakuan P2 dan P1 nyata (P<0,05) lebih tinggi sebesar 36,05% dan 29,07% dari perlakuan P0, akan tetapi antara perlakuan P2 dengan P1 tidak berbeda nyata (P>0,05). Kadar laktosa, kadar lemak, dan kadar protein pada semua perlakuan (P2, P1 dan P0) menunjukkan perbedaan yang tidak nyata (P>0,05). Kesimpulan dari penelitian ini kefir susu sapi yang difermentasi dalam tempurung kelapa hijau muda (Cocos nucifera L. var. viridis Hassk) berpengaruh terhadap total asam akan tetapi tidak berpengaruh terhadap kadar laktosa, lemak, dan kadar protein.
