Abstract

Penerapan teknologi pada produk hasil limbah ternak merupakan upaya meningkatkan nilai tambahnya. Salah satu hasil pengolahan dari kulit kaki ayam adalah gelatin. Gelatin merupakan produk pengolahan dari kulit kaki ayam yang memiliki fungsi multiguna, diantaranya sebagai bahan baku pengemas alami (edible) pada bakso. Penelitian ini bertujuan untuk mengidentifikasi nilai kesukaan panelis terhadap bakso ayam menggunakan edible dari gelatin kulit kaki ayam pada masa simpan terbaik. Penilaian panelis meliputi warna, aroma, tekstur, citarasa dan penerimaan keseluruhan. Penelitian menggunakan Rancangan Acak Lengkap (RAL) dengan 5 perlakuan. Perlakuan meliputi L0 (masa simpan 0 jam), L3 (masa simpan 3 jam), L6 (masa simpan 6 jam), L9 (masa simpan 9 jam), L12 (masa simpan 12 jam), tiap perlakuan diulang 15 kali. Hasil penelitian bakso dengan edible berbahan gelatin dari kulit kaki ayam menunjukkan nyata dipengaruhi (P<0,05) oleh masa simpan. Respon panelis terhadap masa simpan tertinggi yaitu pada masa simpan 3 jam (L3). Nilai skor bertutut turut ditunjukkan pada warna (4,20), aroma (3,53), citarasa (3,73) dan penerimaan keseluruhan (4,13). Sementara tekstur bakso tidak berpengaruh nyata selama masa simpan dengan nilai skor yaitu 3,60. Simpulan penelitian ini menyatakan bahwa bakso yang dikemas dengan edible dari gelatin kulit kaki ayam selama masa simpan 3 jam (L3) secara organoleptik diterima oleh konsumen (panelis) dengan kategori keseluruhan mengarah ke kriteria suka.

Abstract

This study aims to find out the comparative quality of organoleptic pork from landrace pigs that are fed to landfill (TPA) waste with meat from landrace pigs fed by commercial feed. The research was conducted in the Laboratory of Animal Product Technology and Microbiology Faculty of Animal Husbandry, Agrokomplek Building of Udayana University. This study used Completely Randomized Design (CRD) with a comparison of two different meat samples. Data analysis was performed by using Mann-Whitney Non-Parametric analysis with the help of SPSS 24. Organoleptic variables observed in this study include color, aroma, texture, tenderness, taste and overall acceptance. The treatment consisted of meat from landrace pigs fed on landfill waste with meat from landrace pigs fed by commercial feed. From the result of the research, it is found that panelist's favorite level of color, texture, tenderness and meat flavor of landfill pigs are fed significantly (P<0.05) with pigs given commercial feed. While the panelist's favorite level of landrace pigs aroma given by landfill-based waste feed was statistically not significantly different (P>0.05) with commercially fed pigs. Based on the results of this study it can be concluded that meat from landrace pigs fed on landfill waste has lower organoleptic quality compared to meat from landrace pigs fed by commercial feed. Abstract

This study aims to determine the physical and chemical quality of rice straw silage made by the addition of Balinese cattle rumen fluid. The study was conducted in Banjar Buda Manis, Sidemen Village, Sidemen District, Karangasem Regency. Silage analysis was carried out at the Animal Nutrition and Food Laboratory, Faculty of Animal Husbandry, Udayana University. The design in the study was complete random concoction with four treatments and four replications. Treatment A (rice straw silage without rumen fluid) "control", B (rice silage straw with additional sterile rumen fluid 50 ml / kg straw), C (silage rice straw with additional fresh rumen liquid 25 ml / kg and sterile rumen fluid 25 ml / kg of straw) and D (rice straw silage with added fresh rumen liquid 50 ml / kg straw). The variables observed were physical quality including pH, fungi, color, aroma, and silage texture, while chemical qualities were: dry matter (DM), organic matter (OM), crude fat (CF), crude fiber (CF’), crude protein (CP), and ash. The results showed, in addition to the PK and SK variables showed a non-significant effect (P> 0.05). The silage CP levels in D treatment were significantly higher than treatments A, B, and C respectively at 11.12, 8.88 and 1.27%, and CF’ levels of D treatment were significantly lower than treatments A, B, and C is 22.06, 13.64 and 8.46%, respectively. The results of this study can be concluded that rice straw silage added with rumen fluid of 50 ml / kg can reduce SK content and increase PK content, while physical quality shows differences which is not real. Abstract

Studi ini bertujuan untuk mengkaji bobot dan potongan karkas ayam kampung persilangan White Gold X Lancy yang diberi jus kulit buah naga melalui air minum. Telah dilaksanakan di kandang milik peternak yang berlokasi di Jalan Cekomaria, Peguyangan, Banjar Kedua, Denpasar. Selama 8 minggu. Penelitian dilaksanakan dengan menggunakan Rancangan Acak Lengkap (RAL) yang terdiri dari empat perlakuan, yaitu: R0: Tanpa pemberian jus kulit buah naga melalui air minum, R1: Penambahan 5% jus kulit buah naga melalui air minum, R2: Penambahan 10% jus kulit buah naga melalui air minum dan R3: Penambahan 15% jus kulit buah naga melalui air minum. Variabel yang diamati adalah bobot potong, bobot karkas, persentase karkas, bobot dada, paha, sayap, dan punggung. Hasil penelitian menunjukan bahwa pemberian perlakuan R1, R2 dan R3 masing – masing 5,64%, 8,20% dan 8,87% lebih tinggi (P<0,05) dari pada R0 (kontrol). Sedangkan perlakuan R1 2,77% lebih rendah dari R2 (P>0,05) pada bobot dada. Berdasarkan hasil penelitian dapat disimpulkan bahwa pemberian jus kulit buah naga sebanyak 5%, 10% dan 15% berpengaruh terhadap bobot dada, paha dan persentase karkas, tetapi tidak berpengaruh terhadap bobot potong, bobot karkas,sayap dan punggung ayam persilangan White Gold X Lancy umur 14 minggu. Abstract

This study aims to examine the effect of turmeric leafextract (Curcuma domestica Val.) in drinking water on the physical quality of Lohmann Brown’segg. Completely Randomized Design (CRD) was used with three treatments. Each treatment was repeated six times usethree of hen bird of 60 weeks aged perspectively. The three treatments were K0 that is Lohmann Brown was given drinking water without water extracts turmeric leaf; K1 that is Lohmann Brownwas given an additional 2% of extracts turmeric leaf; K2 Lohmann Brown was given an additional 4% of extracts turmeric leaf.The variables in this study included the average of egg weight, percentage of albumen, percentageof egg yolk, percentage ofeggshell, eggshell thickness, and egg index. The results showed that the average of egg weight, percentage of egg yolk, percentage of eggshell, and eggshell thicknesswere highly significantdifferent (P<0,05) and the percentage of albumen wassignificant different (P<0,05) lower than control.The percentage of egg yolk with level 4% did not significantly different (P>0,05) from control and also from level 2%.Based on the results concluded that turmeric leaf extract at level 2% can increase average of egg weight, percentage of egg yolk, percentage of eggshell, eggshell thickness, decrease the percentage of albumen, but none effect of the egg index. Level 4% of turmeric leaf extract can increase the average egg weight, percentage of eggshell, eggshell thickness, decrease in the percentage of egg white, but none effect of the percentage of egg yolk and index. Abstract

Penelitian ini bertujuan untuk mengetahui produktivitas tanaman Indigofera zollingeriana yang diberi jenis dan dosis air cucian beras. Penelitian ini dilaksanakan di Rumah Kaca Stasiun Penelitian Fakultas Peternakan Universitas Udayana, jalan raya Sesetan gang Markisa Denpasar, selama 3 bulan. Rancangan yang digunakan adalah rancangan acak lengkap (RAL) pola faktorial dengan 2 faktor. Faktor pertama adalah jenis air cucian beras terdiri atas C?: air cucian beras segar dan C?: air cucian beras fermentasi, sedangkan faktor kedua adalah dosis air cucian beras terdiri atas D?: tanpa air cucian beras/kontrol, D?: 50 kg N/ha, D?: 100 kg N/ha, D?: 150 kg N/ha, D?: 200 kg N/ha, D?: 250 kg N/ha. Dari rancangan tersebut didapat 12 kombinasi perlakuan dan setiap kombinasi perlakuan diulang 3 kali sehingga didapat 36 unit percobaan. Variabel yang diamati adalah tinggi tanaman, jumlah daun, jumlah bintil akar, jumlah cabang, berat kering daun, berat kering batang, berat kering akar, berat kering total hijauan, luas daun per pot, nisbah berat kering daun dengan berat kering batang dan nisbah berat kering total hijauan, dengan berat kering akar. Hasil penelitian menunjukkan bahwa faktor jenis air cucian beras secara statistik berpengaruh nyata terhadap variabel tinggi tanaman, jumlah daun, berat kering daun, berat kering batang, berat kering akar, berat kering total hijauan dan luas daun perpot, sedangkan faktor dosis air cucian beras secara statistik berpengaruh nyata terhadap jumlah daun, jumlah cabang, berat kering daun dan luas daun perpot. Berdasarkan hasil penelitian dapat disimpulkan bahwa produktivitas tanaman Indigofera zollingeriana yang diberi air cucian beras segar lebih baik dibandingkan air cucian beras fermentasi. Peningkatan dosis air cucian beras menurunkan produktivitas tanaman Indigofera zollingeriana. Pada dosis D? memberikan hasil yang terbaik kecuali pada jumlah bintil akar, nisbah berat kering daun dengan berat kering batang dan nisbah berat kering total hijauan dengan berat kering akar. Terjadi interaksi antara jenis dan dosis air cucian beras terhadap variabel tinggi tanaman, berat kering daun dan luas daun perpot. Abstract

The successful implementation technology of Simantri is a state that describes the extent to which Gapoktan Simantri have successfully achieved the goal or expectation Simantri program implementation, as measured by the succesfull implementation Simantri indicator. This study aimed to determine the success rate Gapoktan Dharma Pertiwi and Cakra Buana in applying technology of  Simantri and knowing the factors that can affect the success in applying technology Simantri. The research was conducted in Lukluk and Kuwum villages, Mengwi district, Badung  regency, Bali. Data collection was conducted using a survey of 40 respondents using a questionnaire research instruments . Data were analyzed using qualitative descriptive analysis, the Wilcoxon signed rank sum test levels, tiered Spearman correlation coefficient. The results showed that: 1 ) the percentage score Gapoktan Dharma Pertiwi Lukluk Village success rate was 75,17 % (category successfully) and the success rate Gapoktan Cakra Buana Kuwum village is 68,04 % (category successfully) highly significant (P<0,01 ); 2) In Gapoktan Dharma Pertiwi knowledge factors have a very significant relationship (P<0,01), whereas other factors such as the skills, attitudes, goals, motivation and intensity of communication each have a real relationship (P<0,05) with the level of success in applying technology of Simantri in Gapoktan Dharma Pertiwi and Gapoktan Cakra Buana

Abstract

The purpose this research is to know the effect of use 20% tofu waste fermented by Saccharomyces spp in ration on fat distribution and cholesterol serum of broiler. The experiment used of Complete RandomizedDesign (CRD) with three treatments and six replicates, with three birds in each replicated. The treatments were basal diets as control (A), diets with 20% unfermented tofu waste (B), and diets with 20% tofu waste fermented by Saccharomyces spp (C), respectively. Results of this experiment showed that the fat pad of broiler in treatment C were significantly different (P < 0.05) lowerboth than treatment A and B. Total cholesterol serum of broiler in treatment C was lower significantly (P < 0.05) than treatment A, but not significant with treatment B. Mesenteric fat and  ventriculus fat real has no effect in all treatments.  It can be concluded that used of 20% tofu waste fermented by Saccharomyces spp in the ration can lower the percentage of pad fat and total cholesterol serum of broiler; and used of 20% tofu waste unfermented can be decrease total cholesterol serum of broiler.

Abstract

Penelitian bertujuan untuk mengetahui perilaku pengusaha peternakan babi landrace dalam menanggulangi dampak pencemaran lingkungan di Desa Wisata Taro, (2) Mengetahui tanggapan atau respon peternak tradisional sekitar terhadap perusahaan peternakan babi landrace ini. Penelitian dilakukan di Banjar Patas, Desa Taro, Kecamatan Tegallalang, Kabupaten Gianyar pada peternak pengusaha babi landrace modern dan peternak tradisional peternak sekitar. Responden penelitian sebanyak empat orang pengusaha babi landrace modern yang ada di desa Taro dan 40 orang peternak tradisional di sekitar usaha peternakan tersebut. Pengambilan sampel menggunakan metode sensus untuk pengusaha peternakan babi landrace, yaitu metode yang mengambil seluruh unit populasi sebagai responden. Untuk menentukan responden peternak di sekitar pengusaha peternakan babi landrace menggunakan metode pengambilan sampel secara kuota diambil 10 orang peternak tradisional yang bertempat tinggal di sekitar perusahaan peternakan dengan ketentuan jarak tempuh tertentu, kemudian dikelompokan menjadi empat (A,B,C dan D). Hasil penelitian menunjukkan bahwa: (1) Perilaku pengusaha peternakan babi landrace dalam menanggulangi dampak pencemaran lingkungan dilihat dari aspek pengetahuan, sikap dan penerapan. Rataan tingkat pegetahuan pengusaha termasuk dalam kategori tinggi, rataan sikap dalam kategori positif, dan rataan tingkat penerapan dalam kategori sedang; (2) Rataan respon kelompok peternak tradisional terhadap perilaku pengusaha babi landrace dari pengetahuannya tergolong rendah, sikap termasuk dalam kategori sangat postif, dan intensitas komunikasi sedang. Respon kelompok peternak tradisional A dilihat dari pengetahuan dan sikap mereka tentang manajemen usaha babi landrace oleh pengusaha sangat nyata lebih baik dibandingkan kelompok peternak tradisional lainnya. Intensitas komunikasi kelompok peternak tradisional B sangat nyata lebih baik dibandingkan semua kelompok peternak tradisional responden (A, C dan D).

Abstract

This study aims to determine the effect of various ingredients of chicken egg storage such as wire box, egg tray carton, and wooden box on the external and internal quality of eggs kept for 14 days. This research was carried out at Poultry Livestock Laboratory of Faculty of Animal Husbandry, Udayana University for three weeks of March 19th until April 8th, 2018. This research used Completely Randomized Design (CRD) with 3 treatment which based on egg tray carton (T), wire box (K), and wooden box (W) consists of 6 replications. Each replication consists of 5 eggs, so the eggs are used as much as 90 grains. Variable that we observed based on external quality include egg weight and egg shape index, as well as internal quality which include eggshell thickness, eggshell weight, egg yolk, egg white height, pH and HU (Haugh Unit) egg. The results show indicate that egg tray carton storage has significantly lower apparent eggshell (P<0.05) than wire box. The storage of wire box eggs and wooden boxes had significantly lower actual HU egg yields (P<0.05) than egg tray carton. Against egg weight, egg shape index, shell thickness, egg yolk, high egg white and egg pH, egg storage did not give significantly different results ??(P>0.05). Based on the result of the research, it can be concluded that the chicken eggs from egg tray carton has HU (Haugh Unit) and eggshell weight is better than chicken egg that is stored on wire box and wooden box for 14 days storages. : chicken egg races, egg storages, egg quality, long storages
