Abstract

Tofu is one type of food made from the soybean. Protein content and high water content make tofu easily damaged. Solving this problem is needed the right way to be able to maintain the quality of knowing physically, so that can be stored for a long time without experiencing quality changes and can be accepted and safe for consumers. The purpose of this study was to determine the optimal temperature and storage time of tofu to maintain the quality of tofu in according to the quality requirements of knowing in SNI by looking at the physical changes that have been known during the shelf life. This type of study is a descriptive study to determine the organoleptic properties of tofu which include odor, taste, color, and appereance of tofu during the storage period with the help of panelist of three people. Observation data were analyzed descriptively using tables and explained in narrative form. Tofu samples were taken from three factories in Kupang Regency. The results showed that the ideal of tofu storage temperature was at 40C with a storage time of up to 6 days. The seller and factory owner they should pay attention to the storage temperature and sanitation, so that the tofu sold can survive without reducing the value of quality and taste from tofu.

Abstract

Acute respiratory infection (ARI) is an infectious disease that is a health problem experienced by children, especially children under five because of the presence of bacteria that enter and multiply in the body until symptoms of the disease appear ranging from nose to lungs. Radamata Health Center was ranked first with the highest cases of suffering from ARI in children under five from the 16 health centers in Southwest Sumba Regency. The purpose of the study was to determine the factors associated with cases of ARI in children under five. The research method is analytic observation with a case control design approach. The research was conducted from December 2021 to January 2022 in the working area of ​​the Radamata Health Center, Southwest Sumba Regency. The sample amounted to 96 toddlers, namely there were case samples of 48 toddlers and control samples of 48 toddlers with a ratio of 1:1. The sampling technique used simple random sampling.data analysis technique used the chi-square test. The results showed that there was a relationship between LBW (p-value= 0.024, immunization (p-value= 0.041), exclusive breastfeeding (p-value= 0.007) and the presence of smokers (p-value= 0.004 while the research variable that had no relationship was nutritional status (BW/TB) (p-value= 0.608), vitamin A capsules (p-value= 0.218), preventive behavior (p-value= 0.680) with the incidence of acute respiratory infections in toddlers in the working area of the Radamata Health Center, southwest Sumba District. It is hoped that the health office and puskesmas officers will improve health promotion to the community, especially the community. in remote villages far from health care facilities

Abstract

Eksklusif breastfeeding menurut WHO ialah pemberian Air Susu Ibu kepada bayi hingga usia 6 bulan kecuali obat dan vitamin. Sehingga menjadi hal yang penting bagi bayi untuk diberikan ASI eksklusf. Secara global, bayi umur nol bulan hingga usia enam bulan yang mendapatkan exclusive breastfeeding hanya 44% (2015-2020). Cakupan bayi yang diberikan Air Susu Ibu eksklusif di Indonesia mengalami penurunan dari 69,7% di tahun 2021, menjadi 67,9% ditahun 2022. Puskesmas Sikumana dengan angka cakupan ASI eksklusif sebesar 16,8% menjadikannya terendah diantara puskesmas-puskesmas di Kota Kupang. Penelitian ini bertujuan guna mengidentifikasi faktor-faktor yang berhubungan dengan pemberian exclusive breastfeeding pada bayi usia 6-12 bulan di wilayah kerja puskesmas Sikumana tahun 2024. Penelitian masuk dalam jenis penelitian analitik observasional menggunakan rancangan penelitian potong lintang. Ibu menyusui dengan bayi berusia 6-12 bulan per-maret 2024 di wilayahkerja puskesmas Sikumana merupakan subjek dalam penelitian dengan hasil sampel 132 orang. Analisis data dilakukan melalui uji chi-square dengan level signifikan α = 0,05. Penelitian mendapatkan hasil terdapat keterikatan antara pengetahuan (p=0,043), status pekerjaan (p=0,000), stres (p=0,000), Serta dukungan suami (p=0,015) dengan praktik pelaksanaan Air Susu Ibu eksklusif. Namun, status gizi memperoleh nilai p=0,836 yang memiliki makna tidak ada keterikatan status gizi dengan praktik pelaksanaan ASI eksklusif. Petugas puskesmas diharapkan mampu menyusun program edukasi yang efektif guna meningkatkan pengetahuan dan minat ibu hamil maupun menyusui tentang pelaksanaan Air Susu Ibu eksklusif. Abstract

Stroke merupakan penyakit yang muncul saat aliran darah yang menuju otak terhenti karena terjadi sumbatan atau perdarahan pada pembuluh darah arteri. Tujuan dilakukan pengabdian ini agar penyintas stroke mampu menjalani hidup setelah mereka mengalami stroke serta meningkatkan pengetahuan dan kesadaran dari masyarakat yang belum terkena stroke. Kegiatan pengabdian ini menggunakan metode ceramah dan FGD (Focus Group Discussion) dengan alat bantu media video edukasi. Responden berjumlah 57 orang yang terdiri dari 52 orang masyarakat umum dan 5 orang pasien penderita stroke. Evaluasi tingkat keberhasilan kegiatan ini diukur dengan menggunakan pre-test dan post-test terhadap tingkat pengetahuan masyarakat. Hasil kegiatan menunjukan bahwa terdapat peningkatan pengetahuan sebesar 21% terhadap pemahaman masyarakat umum tentang penyakit stroke dan kualitas hidup pasien stroke meliputi gaya hidup sehat, seperti pola makan, aktivitas fisik, dan rutin skrining. Berdasarkan hasil, edukasi kesehatan mengenai penyakit stroke melalui video sangat efektif karena lebih mudah untuk dipahami.

Abstract

Background: Rabies is an acute infectious disease of the central nervous system caused by the rabies virus and transmitted through the bites of Rabies Transmitting Animals (HPR), especially dogs. The bite of an unvaccinated rabies-infecting animal is the cause of most cases of rabies which can lead to death. This study aimed to determine the factors related with the prevention of rabies in the community in the working area of the Nangapanda Community Health Center, Ende, East Nusa Tenggara. Subjects and Method: This cross-sectional study was conducted in the working area of the Nangapanda Public Health Center, Ende Regency from August to September, 2022. A total of 116 families were selected for this study. The dependent variable is rabies prevention measures and the independent variable is knowledge and attitude. Data were analyzed using the chi-square test. Results: Good knowledge (OR= 19.25; 95% CI= 5.94 to 62.36; p<0.001), and positive attitude (OR= 0.11; 95% CI= 0.02 to 0.53; p= 0.001) are associated with rabies prevention measures. Conclusion: There is a significant relationship between knowledge and attitude toward rabies disease prevention measures. Keywords: rabies, action, prevention. Correspondence: Yuniarti Prihartini.
