Abstract

Background: The reduction of stunting by 14% is one of the national targets which refers to the National Action Plan to Accelerate the Reduction of Stunting (RAN PASTI). The percentage of stunted babies in Bataan Village was 16.36%. This percentage exceeds the stunting reduction target percentage. This service activity aims to help prevent stunting in Bataan Village, Tenggarang District, Bondowoso Regency by increasing mother's knowledge and creativity regarding children's balanced nutritional needs according to their age based on my plate guidelines. Method: Emotional Demonstration (Emo-Demo) to improve eating patterns through the contents of my plate and continued with the cooking class as a form of implementation. Results: There is a difference in the pre-test and post-test results from the effects of emo-demo activities, namely 32% to 84%. In the cooking class activity, the value of mother's creativity is 91.25%. Conclusion: Mother's knowledge about a balanced nutritional diet increased after education was carried out using the emo-demo method and the mother's creativity in serving food according to the guidelines for the contents of my plate also reached the predetermined targets.Keywords: balanced nutrition, fill my plate, stunting, emo demo.

Abstract

Chronic Energy Deficiency (CED) is  a condition-of inadequate nutritional intake that persists over a long period (chronic), leading to health risks for pregnant women such as anemia, abortion, premature birth, intrauterine fetal death, intrauterine growth retardation (IUGR), and it is an indirect cause of maternal mortality. CED is caused by direct and indirect factors. Direct factors. This study aims to analyze the relationship between konsumsi patterns and socio-cultural factors with the incidence of CED in pregnant women in the working area of the Pakem Health Center in Bondowoso Regency. This study is a quantitative research using a cross-sectional method. The study was conducted in the working area of the Pakem Health Center in Bondowoso Regency with a simple random sampling of 49 respondents. The research was carried out from March 26, 2023, toJune 6, 2024. Primary data in this study was obtained through questionnaires covering age, education, knowledge, family income, consumption patterns, dietary restrictions, age at marriage, and direct measurements of upper arm circumference (LILA) in pregnant women. Secondary data was obtained from the Dinas Kesehatan Bondowoso and the Puskesmas Pakem related to the incidence of CED in pregnant women. Data analysis was performed using descriptive statistical analysis. The results showed that the majority of 41 respondents (83.7%) were aged 21-35 years. Most respondents completed their education up to high school/vocational school (42%). Most respondents had moderate knowledgeabout balanced nutrition and CED, with 36 respondents (73%). Most respondents (55.1%) had a low income, below the regional minimum wage of Rp 2,183,590. The consumption patterns of respondents were mostly in the poor category, with 32 respondents (65.3%). Some respondents practiced dietary restrictions during pregnancy (51%), such as avoiding ice, shrimp, durian, pineapple, squid, fermented cassava, banana hearts and chicken intestines. Some respondents had early marriages, with 18 respondents (36.7%) citing arranged marriages and societal views on the appropriate age for marriage.A total of 25 respondents (51%) experiencedCED in the working area of the Pakem Health Center in Bondowoso Regency. There was a significant relationship between consumption patterns and the incidence of CED in pregnant women in the working area of thePakem Health Center in Bondowoso Regency, with a p-value of 0.001. There was a significant relationship between socio-cultural dietary restrictions and the incidence of CED in pregnant women in the working area of the Pakem Health Center in Bondowoso Regency, with a p-value of 0.001. However, there was no significant relationship (p-value 0.196) between early marriage and the incidence of CED in pregnant women in the working area of the Pakem Health Center in Bondowoso Regency

Abstract

Pendahuluan: Balita rentan terhadap kekurangan gizi, penyakit ataupun infeksi. Masalah gizi yang sering dijumpai pada balita yaitu gizi kurang. Faktor utamanya adalah asupan gizi yang kurang. Dalam upaya pencegahan gizi kurang di Desa Jumpong, Tim Praktik Belajar Lapangan (PBL) 18 FKM UNEJ dilakukan demonstrasi pembuatan camilan pisang barongko berbahan dasar pangan lokal. Studi ini bertujuan untuk meningkatkan pengetahuan mengenai PMT berupa camilan untuk mencegah gizi kurang di Desa Jumpong. Metode: Wawancara, tahap percobaan, penyuluhan, demonstrasi, dan evaluasi. Hasil: Berdasarkan hasil pretest dan postest yang telah dilakukan, terjadi peningkatan pengetahuan responden sebesar 9,38%. Kesimpulan: Kegiatan demonstrasi pembuatan camilan pisang barongko memberikan dampak positif bagi ibu dan balita  dan meningkatkan pengetahuan mengenai camilan sehat untuk balita.

Abstract

Hipertensi merupakan salah satu penyakit tidak menular yang mengalami peningkatan setiap tahunnya. Hipertensi tidak dapat disembuhkan, sehingga diperlukan pengontrolan tekanan darah dengan melakukan pengendalian hipertensi seperti perawatan diri atau self care. Self care merupakan perilaku perawatan diri dan pencegahan terjadinya keparahan suatu penyakit sehingga dapat meningkatkan status kesehatan manusia. Penderita hipertensi disarankan untuk melaksanakan self care sebagai salah satu bentuk pengendalian tekanan darah yang berfokus pada bagaimana melakukan perawatan diri pada diri sendiri. Tujuan dari penelitian ini untuk menganalisis hubungan antara perilaku self care hipertensi dengan tekanan darah pada penderita hipertensi di Desa Pohsangit Kidul Kota Probolinggo. Jenis penelitian adalah analitik observasional dengan pendekatan cross sectional. Teknik pengambilan sampel menggunakan simple random sampling berjumlah 67 orang. Hasil penelitian menunjukkan bahwa penderita hipertensi memiliki tekanan darah terkontrol sebesar 64,2% dan tidak terkontrol sebesar 35,8. Berdasarkan uji statistik diperoleh hasil p value = 0,331 yang menunjukkan bahwa tidak terdapat hubungan antara self care hipertensi dengan tekanan darah pada penderita hipertensi di Desa Pohsangit Kidul Kota Probolinggo. Kesimpulan dari penelitian ini adalah tidak terdapat hubungan antara self care hipertensi dengan tekanan darah pada penderita hipertensi di Desa Pohsangit Kidul Kota Probolinggo.

Abstract

Anemia is a common health issue among adolescent girls, including female students. Adolescents tend to experience various behavioral changes that affect their health, including anemia. Good health behaviors are shaped by positive attitudes and knowledge. This study aimed to analyze the relationship between knowledge, attitude, and behavior related to nutritional anemia and the incidence of anemia among female undergraduate students at the Jember Regency. This observational study used a cross-sectional design. This study was conducted between February and May 2024 at the University of Jember. The sample consisted of 109 respondents, selected through multistage sampling. Data were collected through questionnaires, anthropometric measurements, and hemoglobin levels using point-of-care testing (POCT) blood tests. Data analysis was performed using the chi-squared test. Significant relationships were found between behaviors related to anemia and anemia (p=0,009; PR= 1,58), knowledge of anemia and anemia (p=0,013; PR= 1,45), and attitudes toward anemia and anemia (p=0,013; PR= 1,52). These findings indicate that behavior, knowledge, and attitudes related to anemia are associated with the incidence of anemia.  We expected adolescents to be more proactive in preventing anemia and in seeking more information about it. Educational institutions should integrate anemia prevention education (nutrition, importance of iron supplements, and healthy eating patterns) into campus curricula. Moreover, they provide iron-rich foods and vitamin C source meals for faculty canteens.

Abstract

Introduction: Stunting remains a major public health issue in Indonesia, with long-term impacts on children’s physical and cognitive development. Optimal nutrition during the first 8000 days of life from conception to early adulthood is critical for preventing stunting. Innovative and engaging educational strategies are essential to raise awareness in rural communities. Objective: The purpose of this service was to improve knowledge and awareness regarding nutrition during the first 8000 days of life as a strategy to prevent stunting through the use of the educational board game Monopoly NutriBoard in Harjomulyo Village. Method: This community service activity was implemented through interactive educational sessions involving adolescent and children in Forum Anak Desa (FAD) Harjomulyo. The Monopoly NutriBoard game was used as a participatory learning medium. Pre- and post-intervention questionnaires were administered to evaluate changes in participants’ knowledge and perceptions. Result: The educational intervention using Monopoly Nutriboard effectively increased participants’ understanding of the importance of nutrition in the first 8000 days of life. Participants demonstrated improved awareness of stunting risks and healthy nutrition practices. Engagement with the game facilitated interactive learning and community involvement. Conclusion: Monopoly NutriBoard proved to be an effective educational tool for promoting nutrition knowledge and stunting prevention awareness in a rural setting. Its interactive nature encourages community participation and can be scaled for broader use in public health education.

Abstract

Di negara berkembang, komplikasi kehamilan yang paling umum terjadi pada wanita hamil adalah anemia. Prevalensi anemia dalam kehamilan yang terjadi di Indonesia masih cukup tinggi termasuk di wilayah Jawa Timur. Permasalahan ibu hamil di Polindes Kaliwining wilayah Puskesmas Rambipuji Jember adalah status anemia tidak terdeteksi pada tiap trimester kehamilan. Kacang hijau mengandung zat besi yang membantu pembentukan eritrosit untuk meningkatkan kadar hemoglobin. Pengabdian kepada masyarakat ini bertujuan untuk memberikan edukasi gizi dan pemanfaatan kacang hijau dalam mencegah anemia dalam kehamilan. Pelaksanaan pengabdian ini menggunakan metode penyuluhan dengan menggunakan pendekatan media video. Selain itu, dilakukan juga pemeriksaan kadar hemoglobin darah pada ibu hamil sebagai deteksi dini anemia. Suplementasi besi diberikan dalam bentuk tablet tambah darah pada ibu hamil. Selain itu, pemberian minuman sari kacang hijau sebagai pelengkap suplementasi besi untuk mencegah anemia dalam kehamilan.  Pendekatan edukasi melalui video terbukti efektif dalam meningkatkan pengetahuan ibu hamil sebesar 25% terkait anemia dan manfaat kacang hijau. Kadar hemoglobin darah berdasarkan hasil pemeriksaan dalam kegiatan pengabdian ini didapatkan 2 responden mengalami anemia pada trimester tiga kehamilan.Pemeriksaan Hb secara berkala sangat penting selama masa kehamilan. Kombinasi konsumsi tablet tambah darah dan kacang hijau dapat mengurangi insiden anemia dalam kehamilan.

Abstract

Pendahuluan: Stunting menjadi permasalahan gizi prioritas yang perlu dilakukan tindakan pencegahan atau penanggulangan secara optimal karena berdampak terhadap peningkatan risiko terjadinya morbiditas dan mortalitas anak. Tujuan: Menganalisis efikasi diri ibu, dukungan sosial ibu, dan PMBA sebagai faktor risiko kejadian stunting pada anak usia 6-23 bulan. Metode: Penelitian ini menggunakan jenis penelitian kuantitatif dengan rancangan studi case control. Sampel penelitian secara keseluruhan adalah 72 orang yang terdiri dari 36 baduta stunting pada sampel kasus dan 36 baduta tidak stunting pada sampel kontrol. Data diperoleh melalui pengukuran menggunakan infantometer dan wawancara dengan responden menggunakan kuesioner yang sudah valid dan reliabel. Data dianalisis menggunakan uji Chi-Square dengan confidence interval 95%. Hasil: Sebagian besar ibu baduta stunting memiliki efikasi diri yang rendah (52,8%), dukungan sosial yang rendah (55,6%) dan melakukan PMBA yang kurang (86,1%). Penelitian ini menunjukkan bahwa terdapat hubungan antara efikasi diri ibu (p-value < 0,001; OR = 8,941), dukungan sosial (p-value < 0,001; OR = 7,750), dan PMBA (p-value < 0,001; OR 10,989) dengan kejadian stunting. Kesimpulan: Terdapat hubungan antara efikasi diri ibu, dukungan sosial ibu dan PMBA dengan kejadian stunting pada anak usia 6-23 bulan. Abstract

Crackers are a snack often favored by toddlers. Commercially available crackers predominantly use wheat flour, which is high in carbohydrates but low in nutritional value, particularly in protein content. Therefore, innovative formulations are needed to enrich the nutrition, notably protein and iron, by substituting edamame flour and mackerel tuna protein hydrolysate into crackers to help address stunting. This study aims to analyze the protein content, iron content, and acceptability of crackers made with a substitution of edamame flour and tuna protein hydrolysate. This research was conducted at the University of Jember from February to April 2024 using a completely randomized design at four levels. Protein analysis used the Kjeldahl method, and iron content was examined by atomic absorption spectrometry. The acceptability was tested using the hedonic scale test on 30 semi-trained panelists. The results were analyzed using SPSSv24. Results showed statistically significant differences in protein content, iron content, color acceptability, aroma, and taste. The highest protein content is found in A3, while the highest iron content is found in A1. The best formulation, determined by the exponential comparison method, was treatment A2. In conclusion, substitution with edamame flour and tuna protein hydrolysate in all treatment variations significantly affected protein content, iron content, and acceptability in terms of color, aroma, and taste; however, it did not substantially impact texture or overall acceptability. Substitution of edamame flour and mackerel tuna protein hydrolysate in crackers can increase protein content and therefore could be an effective measure in preventing stunting.

Abstract

ABSTRAKLatar Belakang: Stunting keadaan kurang gizi paling umum yang terjadi di Indonesia dan masih menjadi permasalahan yang harus ditangani saat ini. Salah satu upaya untuk memperbaiki kondisi stunting pada balita yaitu dengan memenuhi kebutuhan protein melalui PMT yang tinggi protein. Biskuit dapat menjadi salah satu media dalam perbaikan zat gizi apabila ditambahkan dengan bahan tertentu. Pangan lokal yang dapat ditambahkan dalam bahan pembuatan biskuit adalah kacang kedelai edamame yang dioah menjadi tepung edamame dan ikan tuna yang dijadikan hidrolisat protein ikan (HPI).Tujuan: Tujuan dari penelitian ini adalah untuk mengetahui formulasi terbaik dari biskuit tepung edamame dengan tambahan HPI tuna untuk memperbaiki kondisi stunting pada balita.Metode: Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) faktor tunggal dengan tiga sampel, yaitu perbandingan formulasi tepung edamame dengan HPI tuna dengan 3 taraf (F1 30:10, F2 25:15, dan F3 20:20). Penelitian dimulai dengan pembuatan tepung edamame, HPI tuna, dan biskuit tepung edamame dan HPI tuna. Selanjutnya biskuit tepung edamame dan HPI tuna diuji organoleptik yang meliputi kesukaan warna, rasa, aroma, tekstur, dan keseluruhan pada 25 panelis semi terlatih. Formulasi terpilih akan dianalisis kadar protein, lemak, dan karbohidrat.Hasil: Berdasarkan uji organoleptik dan total hasil pembobotan didapatkan bawah formulasi biskuit terpilih adalah F3. Hasil uji Kruskal Wallis menunjukkan bahwa penambahan tepung edamame dan HPI tuna berpengaruh nyata terhadap kesukaan warna (p<0,05). Berdasarkan uji laboratorium diketahui jika formula biskuit terpilih (F3) memiliki kandungan gizi per 100 gram: protein 16,81±0,07 gram; lemak 19,66±0,14 gram; karbohidrat 49,05±0,06 gram.Kesimpulan: Penelitian ini menunjukkan bahwa formulasi biskuit terpilih adalah F3 dengan kandungan tepung edamame 20% dan HPI tuna 20%. Local foods that can be added to biscuits are edamame soybeans which are processed into edamame flour and tuna which is made into fish protein hydrolyzate (FPH).Objectives: To find out the best formulation of edamame flour biscuits with the addition of tuna FPH to improve stunting conditions in toddlers.Methods: This research used a single factor Completely Randomized Design (CRD) with three samples, which were a comparison of edamame flour formulation with tuna FPH with 3 levels (F1 30:10, F2 25:15, and F3 20:20). The research began with making edamame flour, FPH tuna, and the biscuits. Furthermore, edamame flour and tuna FPH biscuits were tested organoleptically which included color, taste, aroma, texture, and overall preferences of 25 semi-trained panelists. The selected formulation will be analyzed for protein, fat, and carbohydrate levels.Results: Based on organoleptic tests and the total weighting results obtained the selected biscuit formulation was F3. The results of the Kruskal Wallis test showed that the addition of edamame flour and tuna FPH had a significant effect on color preference (p<0.05). Based on laboratory tests, it is known that the selected biscuit formula (F3) has nutritional content per 100 grams: protein 16.81±0.07 g; fat 19.66±0.14 g; carbohydrate 49.05±0.06 gConclusions: The selected biscuit formulation is F3 with 20% edamame flour content and 20% tuna FPH.
