Abstract

Sweet bread is a food which is made from fermented wheat flour mixture and baked. Purple sweet potato has not been widely used as flour added to the sweet bread with a protein content of 2.62%, which can be recommended for the PMT-Recovery on nutritional problems KEP. The more purple sweet potato flour is added to the mixture the wheat flour less , this means that less gluten with an important role in the development volume and organoleptic sweetbreads. This study aims to analyze the influence of the proportion of wheat flour and purple sweet potato flour on the protein content, the volume and the development of organoleptic sweet bread. This study was an experimental study with RAL and three times the replication report (100%: 0%, 97.5%, 2.5%, 95%, 5%, 92.5: 7.5%, 90%: 10%). This study was conducted on 25 qualified speakers somehow STIKES Husada Borneo Banjarbaru. Receiving data for data analysis of protein levels using ANOVA, and to test the organoleptic quality (color, aroma, texture and taste) use traditional Friedman data analysis. The results showed that the average value of the highest protein content of the test on P0 (3.24%) and the lowest in the P4 (2.92%), the average value of the test volume higher P0 (35.58) and the lowest in P4 (25.42%) and the maximum development at P0 (36.5%) and the lowest in Q4 (24.7%) significantly influenced the sweet bread product as p <α = 0.05. Sweetbreads organoleptic quality tests that include the color with the highest average in P3 (3.28%) and the lowest in the P4 (2.92%), flavor with the highest average value P0 (3.24% ) and the lowest on P4 (2.76%), the texture with the highest average value to P0 (3.4%) and the lowest in the P4 (2.44%), taste with the smallest average high in P3 (3.32%) and lowest in the P4 (3.04%). Poses the most preferred by the speakers is P3 proportion of flour and flour purple sweet potato that is 92.5%: 7.5%.

Abstract

Diarrhea disease remains a major cause of health problems for Indonesian people, both in terms of morbidity and mortality rate. This disease can affect all age groups with morbidity rates ranging from 280 per 1000 population and for children under five suffer from one to one and a half times the episodes of diarrhea each year. Incidence of diarrhea is still a major cause of infant mortality as in the previous period. The aim of this study is correlation of the incidence of diarrhea with formula feeding for 0-1 years old infants in Banjarbaru working area 2013. This research uses the analytical method with cross sectional design. This research was conducted on 42 respondents. Based on the results of the statistical test using the chi-square indicates that there is a correlation of diarrhea case with the consumption of milk formula for infant 0-1 years old in the working wrea of Banjarbaru Public Health Centre Catchment Area 2013.

Abstract

Nutrition is one determinant of the quality of human resources. The food is given daily nutrition should contain as needed, so that support optimal growth and can prevent deficiency diseases, prevent poisoning, and also help prevent diseases that can interfere with the survival of children. The main factor cause of malnutrition is unbalanced food intake and infectious diseases. Both of these factors are closely related to lack of food availability at household level, poor parenting and inadequate health care. This study aims to determine the relationship mother Knowledge About Helminthiases Against Infection Toddler Nutritional Status in Puskesmas Gambut Regency Banjar in 2015. This study used analytic survey with cross sectional study with sampling techniques performed Accidental Sampling. This study was conducted on 47 respondents mothers and children aged ≥ 2 years - ≤ 5 years. Results of statistical analysis using SPSS spaerman test on a computer p value = 0,000, this value is smaller than α = 0,05. Which is interpreted H0 is rejected, it means that there is a correlation mother knowledge about worm infection with nutritional status of children.

Abstract

The infant morbidity rate has become the first indicator to determine the status of children's health, because it is a reflection of the current state of children's health. Statistically, the morbidity and mortality in developing nenonatus is high. The root cause is associated with low birth weight. LBW rate worldwide has reached 14%. Some of the factors that influence the risk of low birth weight include nutritional status, maternal age ( 35 years), parity, spacing pregnancies and chronic diseases too tight. This study was analytical with an unparalleled design case-control study. This study population all the mothers who have children/toddlers in Puskesmas Pelaihari 2015. Samples were taken from purposive sampling with 54 LBW and 54 normal children using secondary data. In general, women with a weight gain of 39 people are at risk of low birth weight (36,1%), pregnant women are at risk of low birth weight amounted to 45 (41,7 %) and anemia pregnant numbered 36 people at risk of low birth weight (33,3%). There is a correlation between the increase of pregnant women weight with LBW (p = 0,000, α = 0,05 and OR = 6,250), there is correlation between the circumference of the upper arm (LLA) pregnant women with LBW (p = 0,000 α = 0,05 and the value of OR = 6,645) and there is correlation between the levels of hemoglobin (Hb) of pregnant women with LBW (p = 0,000, α = 0,05 and OR = 6,192).

Abstract

One of the basic asset is human resources and productive potential. Nutrition is one of the major determinants of the quality of human resources (HR). The vision is to realize the nutritional self-aware to realize optimal nutrition Healthy Indonesia 2010. The purpose of this study is to know a relationship among the level of knowledge, level of energy consumption, protein and students’ nutritional status of junior haigh shcool 3 Jorong Districk Tanah Laut. Research methods, analytic with cross sectional study, the population in this study were all students aged 12-16 totaled 107 in junior haigh shcool 3 Jorong Districk Tanah Laut by the number of samples 57 people. Analysis conducted descriptive and statistical chi-square test. The results obtain There was correlation between knowledge and nutritional status with p = 0.044, There was correlation between energy consumption and nutritional status with p = 0.003, and there is correlation between the level of protein intake and nutritional status of students in junior high scool 3 Jorong District Tanah Laut with p = 0.008. It’s expected to increase knowledge about proper nutrition and apply it in everyday life, so as to have a good nutritional status.

Abstract

Minimum standard service is provision of the type and quality of basic services which is a matter for obligated area that every entitled obtained minimum of citizen. That also represent the technical specification about measuring rod of minimum service given by public service body to society. To know the minimum standard service in RSUD Pambalah Batung Amuntai conducted by analysis about service give taking care of to lodge the underwriter doctor reply, availibility of service take care of to lodge the clock of visite doctor, death of patient > 48 Hours, occurence come home to force and to take care of outpatient is the availibility of service to take care it , Time to open the service to take care of outpatient , lay of time taken care outpatient , satisfaction of Costumer and straightening of diagnosed of TB through microscopic inspection TB.Research type used is descriptive by using interview, observation and document study to know the service standard take care of to lodge and take care outpatient in RSUD Pambalah Batung Amuntai. this Sampel Research is service take care of to lodge, service take care of outpatient and patient. this Data presentation in form of tekstular. Pursuant to result of research of service type take care of the service take care of to lodge which not yet fulfilled the time of standard visite doctor and for the service of take care of outpatient which not yet fulfilled the minimum service standard is giving service to outpatient open time of the service and the time of took care wait. the Service type not yet fulfilled the standard because lack of specialist doctor and lack of registration worker in RSUD Pambalah Batung Amuntai.

Abstract

Introduction: Every organization wants to have high motivated labors and optimal productivity, punctuality and objectified implementation, all in harmony, so that the labor productivity can be acquired maximally. Thus, the objective of this research is to find out the correlation between labor’s working status and working period with their productivity in Dr. H. Moch. Ansari Saleh State Hospital Banjarmasin.Method: Type of research used in this research is correlation research with cross-sectionaldesign. The research is done to 18 correspondents in medical record unit; the instrumentations are observation and questioner.Result: Based on the research on working status, there are 38,8% state labors and 61,1 non - state labors. While the research for working period acquires data that < 1 year working period is 16,6%, 1-5 years working period is 33,3% and > 5 years working period is 50%. As for the labor productivity, there are 77,77% in high productivity, 11,11% in average productivity and 11,11% in low productivity.Based on the statistic calculation with several variables using exact fisher test shows the correlation between working status and labor productivity is P= 0,137 > alpha=0,05. It means there is no significant correlation between those two variables. In addition, the exact fisher test calculation between working period and labor productivity is P=0,471 > alpha=0,05. It means there is no significant correlation between those variables.

Abstract

According to the basic health research in 2010, childbirths assisted by midwives in poor target groups reached approximately 69.3%. While childbirth is performed by health workers in health facilities reached 55.4%. One important obstacle to access childbirths assisted by midwives in health facilities is limitations and unavailability of cost so that makes breakthrough policy to improve the childbirth helped by health workers in health facility through a policy called assurance of childbirth. The assurance of childbirth is intended to eliminate the financial barriers for pregnant women toobtain childbirthassurance, which includes pregnancy examination, childbed care including family planning after childbirth, andnewborn care. This study aims to determine description of the rate of childbirth satisfaction using BPJS services in regional public hospital of Banjarbaru 2015. Thisresearchusesdescriptive methodwith cross sectional approach. The research samplesare 50 respondents with Non-Probability Sampling techniques by accidental sampling. The results showed the satisfaction level of childbirth is 81.5% satisfied, BPJS service in regional public hospital of Banjarbaru. ,50 respondents use childbirth assurance card of BPJS. From these results it can be concluded that the description of the rate of childbirth satisfaction using BPJS in hospitals Banjarbaru BPJS 2015 generally said satisfied.

Abstract

Autism is a severe developmental disorder in children, their development becomes impaired, especially in communication, interaction, and behavior. Role of parents in the treatment of children with autism is the inporter. Mother as one of the parents of children with autism is very important in knowing a child's development. Design used in this study is a cross sectional analytic approach, sample size of 41 people and the purpose of this study was to analyze the relationship between maternal attitudes towards motivation in caring for children with autism. The results showed that there is a relationship between maternal attitudes towards motivation in caring for children with autism. Recommendations for future research is to further analyze other factors that may affect maternal motivation in caring for children with autism.

Abstract

Chicken and the heart banana is a resource with the possibility of producing a new food products that rich in proteins contained from chicken meat and crude fiber contained in the heart of the banana favorable economic value and high, because the consumption of plant fibers directly even less attractive company. This study aims to analyze the influence of the proportion of the chicken (Gallus gallus) and banana (Musa paradisiaca) on the content of protein, crude fiber, the water and acceptability of shredded. This study was experimental with randomized design. This study used four treatments and three times replication for analyze content of protein, fiber, and 2 times replication for the water content. Test methods for acceptability were hedonic organoleptic method (hedonic test). Method for analyze protein contents was Kjedahl, while crude fiber and the water content was the gravimetric method, statistical tests for acceptability using Friedman test. Data content of protein, crude fiber, and water content is one way ANOVA. Search results obtained any influence between the proportion of chicken and bananas in the protein shredded (p = 0.049) in the treatment p0 (43.05%) and p3 (30.45%), crude fiber content (p = 0.007) in the treatment p0 (6.66%), p3 and (13.72%) and water levels p = 0.000 for treatment p0 (5.82%) and p3 (30.85%). There is influence of color acceptability p = 0.001 in p0 treatment: 3,08 and 72% p3, there is no effect on the treatment p0 p1 p2 and p3 aroma (p = 0.188) , texture (p = 0.501), and taste (p = 0.138) shredded. Referring to the ISO standard on quality required of proteins are already qualified, while the crude fiber and the water do not meet the quality requirements.
